Ayurveda: spices are the key to excellent health, longevity, and inner harmony. Properties of spices

With its undoubtedly beneficial effect on well-being at any age, cinnamon is especially good for the frail and elderly. It gives strength and strengthens the heart.

Cinnamon is good for a flu attack, it also helps with a sore throat. Known since ancient times as a breath freshener, it treats muscle spasms, bronchial asthma and skin diseases. In case of indigestion, it facilitates the digestion of heavy foods, prevents the accumulation of gases, and relieves colic. Cinnamon powder is sprinkled on washed wounds and cuts because it is a good antiseptic and also contains the natural pain-relieving component eugenol.

German scientists conducted studies showing that cinnamon completely suppresses a number of genitourinary tract infections and fungi.

TURMERIC

Effect on doshas:

  • Vata is reduced
  • Pitta decreases
  • Kapha decreases

Turmeric is from the ginger family. Several types of plants are collected under the name turmeric, the most common are long turmeric (Curcuma longa) and turmeric iedoaria.

This famous bright yellow spice with a fresh, slightly pungent taste has the unique ability to add spectacular sunny colors to dishes. Turmeric is added to soups, rice, vegetables, sauces, and dairy drinks. Turmeric is an excellent natural antibiotic. Cleanses the blood, strengthens the stomach, is useful for diabetes, asthma, anemia. Turmeric is an excellent anti-inflammatory remedy for those who are weakened by chronic diseases or are simply sick. Warm milk with turmeric is an ancient cosmetic remedy for rejuvenating the skin, giving it elasticity and a pleasant color.

Use in cooking

Curcuma longa is used in the production of alcoholic and non-alcoholic drinks, as well as in confectionery products. They are used not fresh, but dried, peeled and ground. The taste of turmeric is similar to ginger, fresh, aromatic, not hot. Yellow turmeric powder is the main ingredient in all Indian curry mixtures, and turmeric is sometimes substituted for saffron. Egg dishes, sauces, salads, and puree soups are prepared with turmeric.

Useful properties of turmeric

Ayurveda considers nutmeg one of the best spices for enhancing food absorption, especially in the small intestine. The spice has a carminative, astringent and calming effect, and increases libido. Nutmeg combines seemingly opposite qualities: tones and soothes. Soothes headaches and stomach pains and, at the same time, tones the body. The nut is used to treat diseases of the digestive tract, insomnia, and also helps with impotence and premature ejaculation.

Nutmeg is useful as a soothing agent for children when they are teething. The baby will calm down, his sleep will improve, he will stop being capricious and refusing food if you give him 0.1 g of powder with honey or milk twice a day.

The nut has a pungent, astringent taste, which is valuable in the treatment of diarrhea. If you use oak bark or raspberry - plants with an astringent taste - for the same purpose, you will most likely experience diarrhea and constipation. Nutmeg stops diarrhea and at the same time improves digestion and intestinal function. The ancient treatise of Tibetan medicine “Zhud-Shi” recommends nutmeg for heart diseases.

FENNEL

Effect on doshas: balances all three doshas.

Seeds of the plant Foeniculum vulgare. Also known as "Sweet Cumin". Its long, pale green seeds are similar to cumin and caraway seeds, but larger in size and different in color. They taste like anise or licorice. Fennel seeds are sometimes used in seasonings.

Useful properties of fennel

Fennel seeds contain a large amount of protein, phosphorus, potassium, sodium, and vitamins. Fennel improves digestion, stimulates the flow of breast milk in nursing mothers and is very useful for gastritis, stomach ulcers and other diseases of the gastrointestinal tract. Fennel improves vision in myopia and is good for reducing high blood pressure. It has a good expectorant effect.

BLACK PEPPER

Effect on doshas:

  • Vata is reduced
  • Pitta increases
  • Kapha decreases

Seeds of the tropical climbing plant Piper nigrum. One of the most widely consumed spices in the world. Gives food a spiciness and, like other hot spices, makes it easier to digest. Ground black pepper, although more convenient to use, loses its taste and aroma faster than black peppercorns. The white variety of black pepper is nothing more than unripe black pepper.

Compared to red pepper (chili pepper), black pepper is less hot and has a characteristic pleasant smell. The Sanskrit name for black pepper is maric, one of the names of the Sun.

The homeland of pepper is the Malabar coast (west coast of the Hindustan Peninsula). The spice is prepared from green unripe fruits dried in the sun. The quality of pepper is higher the harder, darker and heavier it is. Dried grains are black or black-brown, with a diameter of 3-5 mm. If they have acquired a gray color over time, this means that the aromatic and healing qualities have been lost, in a word, the pepper is spoiled. The best variety of black pepper is considered Malabar. From the Malabar coast through the Persian Gulf it was delivered to Arabia, and through the Red Sea to Egypt.

Use in cooking

The kitchen brought him greater fame than medicine. Black pepper is perhaps the most versatile and widespread spice. Of the classic spices, only it can be found on every table, in every home. It is used in both cold and hot dishes. However, it is recommended to add it to hot dishes at the end or at the very end of cooking. Unlike other types of pepper, black pepper is also used for preparing sweet dishes - cookies, gingerbread, puddings. It goes well with salads made from cucumbers and other fresh vegetables. Black pepper is added when sauerkraut, making marinades, smoking cheeses, to various sauces, and also to vegetables when canning. The first and second courses, which lack pepper, seem somewhat colorless and tasteless.

Introduction

The way to a man's heart is through his stomach. Our life is woven from food and they are given by God so that we become healthy and live a long and happy life.

Inept and barbaric use of unhealthy products, such as meat, fish, lost, old, stolen, etc. causes negative effects in our minds and bodies, which are easily removed by Vedic dietetics, based on purity, health, non-violence and faith in God.

God is the original man and the path to his heart is also paved through proper nutrition. For this reason, an integral aspect of the science of nutrition is the science of the sanctification of food.

The entire Ayurvedic cuisine is entirely built on spices and spices not only add flavor to food, but are also, as a rule, additives that facilitate our digestion and give a person energy and strength. Therefore, spices are very important. Diet food is food with properly used spices.

How to treat with spices?

Basic Rules

  • The spice becomes medicinal when the person being treated turns to the Absolute Truth with a request to forgive him for wrong behavior and with the obligatory acceptance of a promise never to do this again.
  • The spice becomes medicinal if a person forever stops using intoxicating substances, such as alcohol, tobacco or drugs in any, even the smallest quantities; if a person cheats and after recovery returns to his former ungodly life, then the overall result of treatment only worsens.
  • The spice becomes medicinal only if a person stops deceiving, cheating, gambling and committing financial fraud.
  • Spices will never work if a person lives a dissolute life, cheating on his spouse or making plans for extra-family sex life.
  • The use of spices in combination with slaughter food will not bring the desired success, since all major diseases are caused by the karmic consequences of killing innocent animals and there is no point in being treated without eliminating the root of the disease - violence against the innocent.
  • All food consumed must be sanctified. In fact, only consecrated food is medicinal.
  • In general, we can conclude that healing with spices and other medicines truly begins from the moment when a person thinks about the meaning of life, what the soul is and who God is. Up to this point, the treatment is like bathing an elephant, which, upon emerging from the river, immediately rolls around in the dust.
  • This entire section can be overcome by using the practice of mantra meditation, daily repeating Vedic mantras consisting of the holy names of God, which will be the beginning of your healing. Both the real doctor and the real patient begin their day by repeating the basic mantra, ridding the soul of all the dust that has accumulated in it over the years: Hare Krishna Hare Krishna Krishna Krishna Hare Hare Hare Rama Hare Rama Rama Rama Hare Hare.

Auxiliary rules.

Spices become medicinal when a person helps them manifest their healing powers. This is expressed as follows.

The Manu Samhita and the Charaka Samhita provide basic rules for eating food, aimed at its normal assimilation, food hygiene and, ultimately, ensuring that food contributes to spiritual progress and not degradation.

  • Never eat without feeling hungry.
  • They take food only during peaks of agni, otherwise it will not be digested and will give birth to Ama.
  • Food should be prepared with love and devotion to the Lord. Food, like a sponge, absorbs the cook's emotions, and if he is irritated, his irritability can spread to those who later eat this food. If food is not offered to God, then a person eats only sin and after death suffers due to sinful reactions.
  • Before you start eating, you need to read a prayer of gratitude. This rule is followed by all religious people of all faiths.
  • Before eating, be sure to wash your face and feet. The fact is that negative energy accumulates on the feet, and when a person washes his feet, he gets rid of it and feels cheerful, fresh and relieved.
  • You cannot start a meal with any negative emotions, or in a state of fatigue, since at this time Agni is suppressed and does not burn with the necessary force.
  • Before starting a meal, a family person must feed someone or throw some food out the window for animals and birds.
  • There is a need to face east. One who eats facing east develops the qualities of goodness and religiosity.
  • Before starting a meal, it is recommended to eat a mixture consisting of a pinch of ginger, half a pinch of salt and seven drops of lemon juice. This mixture cleanses the tongue to improve its perception of the taste of food. Ginger will kindle Agni, and salt will increase salivation. The first portion of food should taste salty.
  • One should rejoice in eating and treat it as a favor from God.
  • You have to eat in silence.
  • You should eat in a secluded place, with your family or alone, avoiding public dinners, restaurants, and cafes.
  • You cannot eat while standing or walking.
  • You need to eat with your hands, not with a spoon and fork. This is a prerequisite for good digestion.
  • Food should be beautifully presented, pleasing not only the stomach, but also all other senses.
  • Under no circumstances should you taste food while cooking, as this will contaminate it. You can only put food on plates with a clean mouth and hands.
  • After eating, be sure to drink buttermilk or diluted kefir. Buttermilk regulates the burning process of Agni, normalizes digestion and prevents the formation of Ama.
  • Food must be chewed thoroughly: solid food must be drunk, and liquid food must be chewed. Then Agni will always burn evenly.
  • Under no circumstances should you sleep within two hours after eating. After eating, be sure to take a walk consisting of at least 3,000 steps (about one and a half kilometers).
  • You should not eat after sunset, as well as at dusk and at sunrise. It is not recommended to eat Kapha-increasing foods at night.
  • One fourth of the stomach is for water, two quarters for food and one fourth for air.
  • If you have a Kapha constitution, then drink after meals, if you have a Pitta constitution, then during meals, and if you have a Vata constitution, then before meals.
  • Never have a bowel movement immediately after eating. This destroys the body and upsets the balance of Vata dosha. It is much better to do this before meals and eat with a clean intestine. This will be a very good habit.
  • “One who eats very much or very little, and sleeps very much or very little cannot be a yogi.”
  • Observe Ekadashi - on the eleventh day of the new and full moon, fast completely or eliminate pulses from your diet. These days, direct all your activities to comprehend God.
  • The diet should suit your individual constitution and maintain Tridosha balance, as well as increase Ojas. Products that increase Ojas include: milk, ghee, fresh fruits grown with manure and other natural fertilizers, rice and legumes, sesame and coconuts, cashews, dates, honey, sugar cane, saffron, rose water.

In Bhagavad Gita Lord Krishna says:

yajna-sishtasinah santo muchyante sarva-kilbishayh

bhunjate te tv agham papa e pachanti atma-karanat

(Bhagavad Gita. 3.13.)

"The devotees of the Lord who eat the food first offered to God are purified from all sins. Those who prepare food for their own sense gratification actually eat only sin."

How to use mantras for spices?

  • The spice brings benefits when the mantra is read with an understanding of its meaning.
  • After the mantra for the spice, it is necessary to recite the Hare Krishna Maha-mantra.
  • Before any meal, you must read a special mantra-prayer:

Vedic dietetics is divided into two schools.

One recommends not frying spices in oil, but mixing them in at a certain time when the dish is ready. For example, bay leaves, allspice, black cardamom, cinnamon sticks and other “large” spices are added at the beginning of cooking. Shambhala, black pepper, cumin, fennel, green cardamom - in the middle. Asafoetida, ginger, spices in powder form and ready-made mixtures - immediately before removing from heat. This method preserves the medicinal properties in their original completeness and does not cause their destruction or release of toxins.

  • You should not put too much spices; they should not overwhelm the natural taste of the dish, but should complement, improve and emphasize it.
  • Whole spices must be sorted from stones and sticks.
  • On Ekadashi, do not consume vanilla, shamballa and asafoetida.
  • The best option would be not to buy ground spices, but to grind them yourself. Cheap Indian ground spices may contain added “weighting agents” for weight or low-quality, old spices, which is unlikely to have a good effect on your health. For the same reason, learn how to make your own mixtures.

Spices storage

Herbs are best stored in dark glass or clay containers.

They should be protected from too high temperatures, moisture, direct sunlight, because... under the influence of all these factors, the chemicals contained in herbs are broken down and oxidized. If the area is humid, it is best to store herbs on flat wooden trays to keep them dry.

If the room is damp and cold, you should store them in dry jars with tightly closed lids. Small bugs often live in containers containing certain types of plants, as well as in seeds and grains. This can be somewhat counteracted by adding a few spiced bay leaves or dried red pepper flakes to the jar.

As a rule, dried plant leaves lose a significant part of their beneficial properties if stored for more than 6 months.

Odorless roots and bark retain their properties for one to two years. Ground spices and herbs are best used within one to three months.

Keep small portions for daily use, and try to open larger portions of spices as rarely as possible.

Ajamoda (scented celery)

In home medicine it is used as a lactogonic, analgesic, choleretic, carminative and peristalsis enhancing agent.

A mixture of fatty and essential oils of celery is part of a mixture of medicinal oils used for massage for various skin diseases.

Asafoetida (stinking gum)

The taste is reminiscent of garlic, but significantly surpasses it in healing properties.

Asafoetida is always consumed in very small quantities and is usually fried in oil before being added to a dish.

Asafoetida is especially useful in dishes made from peas, beans and other beans, as it helps in the absorption of vegetable protein and prevents the accumulation of gases.

In Ayurveda it is used:

  • Mustard plasters, compresses and poultices relieve muscle and joint pain. Crush the seeds, mix with warm water and put through a cloth onto the sore spot. This compress can relieve a severe headache if you hold it for 30 minutes in the calves and neck at the same time.

Monosodium glutamate

Initially, all types of glutamine were obtained from glutamine, which is found in beets, pumpkin, and green peas. According to scientific research, glutamate is a permanent component of animal tissue.

Glutaminate can also be obtained by chemical synthesis from plants. Glutamines are used in the treatment of diseases associated with damage to the central nervous system, epilepsy, etc.

The use of medications that contain glutamine does not bring final recovery, but only temporarily alleviate the patient’s serious condition.

Glutaminates are contraindicated for diseases of the kidneys, liver, and gastrointestinal tract.

Ginger

Ginger is perhaps the healthiest of spices. In Sanskrit it is called "vishvabhesaj", which means "universal medicine".

Pungent in taste, it belongs to the category of “hot spices” that kindle the fire of digestion and improve blood circulation.

Dry ginger flakes and ground ginger are slightly spicier than fresh ginger and more penetrating.

In his book The Book of Spices, Rosengarten writes that in the fifth century AD, ginger plants were grown in pots that sailors took with them on long sea voyages to protect themselves from scurvy and, by adding ginger to food, to preserve its freshness for a long time. .

In the first century AD, ginger was the subject of study by scientists such as Dioscorides and Pliny; the latter often refers to it in his work De Materia Medica, describing its warming effect, its benefits for digestion and even mentioning it as an antidote.

In the 16th century, English doctors noted the effective healing properties of ginger: Henry VIII, who especially valued ginger for its healing properties, recommended it as a medicine against the plague.

Later, ginger bread became very popular in cooking. It was considered a luxurious delicacy and was one of the favorite delicacies of Queen Elizabeth I and her courtiers.

And gingerbread cookies, famous throughout Rus', received the name “gingerbread” due to their spicy taste.

The spicy, tart aroma of ginger is due to the essential oil it contains (1.2 - 3%), and its pungent taste depends on the presence of the phenol-like substance gingerol.

In addition, ginger contains all the essential amino acids, including tryptophan, threonine, leysine, methionine, phenylanine, valine, etc.

It tastes spicy and sweet. Active components: essential oils(1-3%), camphin, phelandrin, cineole, borneol, citral, gingerol. Rich in vitamins C, B1, B2 and A, magnesium, phosphorus, calcium salts, iron, sodium, potassium and zinc.

According to its therapeutic effect, it is carminative, diaphoretic, analgesic (painkiller), expectorant, antiemetic.

The latest research indicates that ginger has an extremely beneficial effect on the stomach.

All these miraculous properties of ginger are due to the fact that it contains a large amount of agni - biological “fire” that controls metabolism.

Regular use of ginger in food in small quantities increases internal heat, awakening appetite and stimulating digestion, warming the stomach and blood.

It is especially useful in cold weather and cold climates.

Ginger makes food light and easily digestible and gives it a slightly pungent, spicy taste.

For treatment it is used in the form of infusion, decoction, powder (250-500 mg).

For this reason, ginger is very useful for people engaged in intellectual work, journalists, artists. Recommended: a quarter teaspoon of ginger, for example, before creative meetings."
  • Ginger is a simple and effective remedy for relieving headaches, bruises, sprains, back pain (sciatica): ginger is used for these purposes in the form of a paste (ginger powder + a few drops hot water), in compresses and medicinal baths.
  • Ginger is also used for paralysis, jaundice, helminthic diseases, diarrhea and food poisoning.

Such a bath will restore your strength and beauty, create a state of freshness and relaxation and relieve body pain. Ginger juice (or ginger decoction) is used for bathing for pain in the spine and joints, neuralgia, nervous excitement and some skin diseases.

  • If, while boiling milk, you add one slice of dry ginger (about 2 cm long), you will not have problems with its absorption.
  • If you are determined to rid your stomach of toxins and improve your digestion, Ayurveda recommends eating a little ginger daily.
  • One of its main qualities is its ability to normalize and maintain the digestive fire at the required level. Ginger does not cause its imbalance, so in small doses it can be taken even for gastritis with high acidity.
