A recipe for cottage cheese casserole without flour and without eggs is perfect for vegetarians, or rather lacto-vegetarians, since there are no eggs in it. It uses agar-agar (seaweed extract) instead of gelatin, and you can use pectin.

This casserole is very similar to jelly soufflé.


Ingredients:

  • Cottage cheese – 1 kg
  • Yogurt (or sour cream) – 200 g
  • Butter – for greasing the pan
  • Oranges – 2-3 pcs.
  • Condensed milk (can be sugar) – 2 tbsp. spoons (to taste)
  • Agar-agar (pectin, gelatin) – 2 tbsp. heaped spoons (12-15 g), plus 1 teaspoon for orange filling

Preparing the casserole:

1. Pour yogurt into the cottage cheese and mix.



2. Also add orange zest.



3. Pour in condensed milk - a couple of spoons, if desired - it can be replaced with sugar.



Agar-agar is a natural product made from seaweed. Gelatin is of animal origin, but there is also a synthetic one, which is very harmful to health, in my opinion...

4. Add agar-agar and beat our curd mixture. It can be dissolved in hot liquid, poured into cottage cheese and stir. But to avoid lumps, it is better to heat it in the oven, then the curd dough will be more homogeneous.


If agar-agar is not used, the casserole will not hold its shape. It can be replaced with pectin, cake jelly or gelatin (but this is not a vegetarian product).

With an agar concentration of 1200, you will need 8 g, and if it is less concentrated, then maybe 20 g. So first you can experiment :)

5. Pour our dough into the prepared form. To do this, lubricate it with vegetable or butter.



6. Chop oranges and orange peels (optional). Place in a saucepan.



7. If oranges are sour, you can add a little sugar. We put them on the fire. When our oranges release juice, add 1 teaspoon of agar-agar.



8. Boil for several minutes. Leave until completely cool.


9. Take our cottage cheese casserole out of the oven. She baked for 15 minutes.


10. The casserole separates perfectly from the edges of the pan.



When using gelatin:

We look at the proportions on the gelatin packaging. We dilute the gelatin in a small amount of liquid, heat it, pour it into the cottage cheese, and put it in the oven. After cooling, put it in the refrigerator and only then remove it from the mold.

11. Remove our cottage cheese casserole. It turned out more like a cottage cheese soufflé.


12. Place cooled oranges on top.


If we use pectin:

Mix it with a small amount of liquid (water or juice), heat it until it dissolves, and pour it into the curd mass, whisking immediately. Transfer to a mold and place in the refrigerator. No need to bake

Making a delicious cottage cheese casserole, just like in kindergarten:

1. Knead the cottage cheese. If the curd is soft and homogeneous, you can use a regular masher and there is no need to rub it through a sieve or use a blender.


2. Beat eggs with sugar, vanilla sugar, cinnamon (if desired), adding a little salt.



3. Soak the semolina for 20-30 minutes in milk and add to the cottage cheese. The amount of semolina is determined by the thickness of the curd mass. The result should be a mass with the consistency of thick sour cream.


4. If desired, add washed and then dried raisins to the curd dough. Stir well. If dry semolina was added to the dough, then we leave our mixture to stand for about 20 minutes so that the semolina swells.



5. If desired, you can use starch in the recipe.


6. Also add the remaining ingredients and mix thoroughly.


7. Melt the butter and grease the pan in which we will bake our cottage cheese casserole. The remaining butter can be used to grease the top of our casserole or added to the dough.


8. Sprinkle the mold with semolina or grated breadcrumbs.

9. Carefully spread out and smooth out the curd mass.


10. Grease the top of the casserole with sour cream (2-3 tablespoons) and yolk so that a thick crust does not form during the baking process and the casserole does not settle after it is pulled out of the oven.

11. Sprinkle with vegetable oil.


12. Place in an oven preheated to 180 degrees. The baking time depends on the thickness (height) of our dough and on the shape in which we bake. On average it is 40-50 minutes. Check readiness with a toothpick.


The casserole turned out very tender, very airy, very homemade.


If the cottage cheese is grainy, the casserole will be denser. If the cottage cheese is soft, the casserole will turn out tender and airy.

  • Sugar – 5 tbsp
  • Sour cream – 200 g

  • Cottage cheese – 1 pack
  • Eggs – 2 pcs.
  • Semolina – 2 tbsp. l
  • Sugar – 2 tbsp. l
  • Sour cream – 2 tbsp. l
  • Salt – 1/3 tsp (to taste)
  • Soda – 1/2 tsp
  • Vanillin - to taste

How to cook the casserole:

1. Place cottage cheese and eggs in a microwave-safe bowl.


2. Add 2 tbsp. spoons of semolina, 2 tbsp. spoons of sugar, salt to taste, a pinch of soda and 2 tbsp. spoons of sour cream. You can add cinnamon, raisins, and any dried fruits to the dough.

For caramel apples you will need:

  • Apples – 3 pcs.
  • Butter – 25-30 g
  • Brown sugar – 2 tbsp
  • Water – 1 tbsp. l

Preparation:

1. Place a small piece of butter (20-30 g) in a frying pan, add a couple of tablespoons of brown sugar (ordinary sugar is fine) and 1 tbsp. spoon of water.



2. Place our apples and cook over medium heat for at least 5 minutes. Leave them until they cool.



3. In a separate bowl, beat eggs with sugar until fluffy, adding a pinch of salt. The amount of sugar and salt is to taste.


4. Mix flour with semolina, add baking powder and vanillin. Stir until smooth.



5. Add to the egg mixture.


6. Mix the prepared raisins and dry cranberries (washed and dried) with a couple of tablespoons of flour.



7. Add lemon zest and 1 tbsp to the cottage cheese. spoon of lemon juice, mix.


8. Also pour half of the egg-semolina mixture into the cottage cheese.


9. Add raisins with cranberries, the second half of the egg-semolina mixture. Add dried fruits to your taste. In our case, raisins add sweetness, cranberries add sourness.



10. Place caramel apples in a mold greased with butter.


11. Add our curd dough.


12. Place our pie in an oven preheated to 180 degrees and bake for 35-40 minutes. Check readiness with a toothpick or match.




Serve with honey, condensed milk, jam, sour cream. To your taste!

  • Sugar – 1/3 cup (to taste)
  • Semolina – 4 tbsp. spoons
  • Milk – 100 ml
  • Cocoa – 3 tbsp
  • Vanillin

Let's prepare a very tasty and very beautiful casserole:

1. Add two eggs, sugar, milk to the cottage cheese. Mix with a fork.



2. To make the mixture more homogeneous, stir it with an immersion blender.


3. Add semolina and a pinch of vanillin. Stir and let the semolina swell for 20-30 minutes.


4. Pour our dough into two containers, into two equal parts (you can have unequal ones, it will turn out more white or dark). Add cocoa to one of them and mix.


5. We will add dough one tablespoon at a time into the prepared silicone mold, gradually alternating dark and white dough. If you apply two or three spoons at a time, the stripes will turn out wider (higher).



6. We will draw patterns with a sushi stick or toothpick. From the center we draw to the edge of the form, and back. You can draw patterns that your imagination allows.



7. Place in the oven for 40-50 minutes, preheated to 180 degrees. Check readiness with a toothpick.
