In addition, the presence of cocoa is an additional guarantee of a successful dough, because cocoa powder binds and strengthens the baked goods.

In addition to the chocolate taste, this recipe also features a large amount of butter, so the cake will be especially tender and aromatic. It is better to serve the dessert immediately after baking, before it has completely cooled down.

Ingredients:

  • wheat flour – 200 g;
  • white sugar – 200 g;
  • baking powder for dough – 2 tsp;
  • butter – 250 g;
  • store-bought low-fat cottage cheese – 200 g;
  • egg – 3 pcs.;
  • cocoa – 80 g.

Preparation

1. Prepare all the necessary ingredients for the cottage cheese cake.

2. Soften the butter and pour sugar into it, kneading slowly.

3. Gently mix the flour into the creamy mixture.

4. Combine the dough and cottage cheese, beat in three eggs, mix everything thoroughly.

5. Add cocoa to the resulting dense curd mass.

6. Knead a homogeneous dough, it should turn out chocolate color. Add baking powder to it.

7. Mix the dough very thoroughly, the consistency should be homogeneous.

8. Take a baking dish with sides, grease it with oil and pour in the dough. Bake in a well-heated oven (about 180 degrees) until a thick crust forms (about 30 minutes).

For 15 cupcakes:
Dough:

  • 2 cups of flour;
  • half a glass of cocoa powder (you can do less, 2-3 tablespoons, but the more cocoa, the more chocolatey the taste!);
  • 2 teaspoons baking powder;
  • 1 cup of sugar;
  • a pinch of salt;
  • 1 glass of milk;
  • half a glass of sunflower oil (I think you can pour not half, but one third of a glass);
  • 2 eggs.

Filling:

  • 200 g cottage cheese;
  • 1 tablespoon sugar;
  • a bag of vanilla sugar (and if vanillin, then a small pinch!);
  • 2-3 tablespoons of sour cream or cream.

How to bake:

According to the cooking technology, these are more likely not cupcakes, but muffins, since the dry ingredients are mixed first and then the liquid ones are added.

Mix flour and cocoa powder.

Add sugar, salt and baking powder, stir again.

Now pour in vegetable oil, milk, add eggs and mix well.

This is the kind of chocolate dough you get!

We prepare the filling by beating all the ingredients in a blender - then it will turn out more tender. If you don’t have a blender, you can rub the cottage cheese through a colander or just mash it well with a fork with sugar and cream.

Let's move on to the most interesting stage - putting it in molds.

First, pour 1 tablespoon of chocolate dough.

Then place 1 teaspoon of curd filling in the middle of each mold with dough.

And again pour 1-1.5 tablespoons of dough on top so that it covers the curd filling. We fill the molds not to the brim, but to 2/3, so that the cupcakes do not escape when they rise during baking.

Place the molds on a baking sheet and bake at approximately 200C for 30-35 minutes.

Test for doneness with a wooden stick. Let the finished chocolate curd muffins cool slightly before you remove them from the molds - they are very tender.

Incredibly simple and using affordable ingredients, the cake is moist, spongy, flavorful and truly delicious.

The entire cooking process will take very little time, and the result will definitely please you. There are different variations of this baking, some varieties of the recipe will be discussed below.

This curd cake with cocoa is made from a small set of ingredients, but the taste is still excellent.

You will need

  • 1-2 eggs
  • 150 g sugar
  • 1 tbsp. l. cocoa powder (with a slide)
  • 150-170 g flour
  • 250 g cottage cheese
  • 100 g soft butter
  • 1 tsp. baking powder (heaped)
  • 70 g raisins

Let's prepare step by step

    1. First, let's prepare the dough. At this stage it is better to use a mixer. If you feel more comfortable using a whisk, use it. But then pay attention to ensure that the resulting mass is fluffy and homogeneous.
    2. Combine sugar and eggs and beat with a mixer for 3-5 minutes.
    3. Add butter to the egg mixture and mix well.
    4. Pour in the orange juice and beat with the mixer one more time. The best option would be freshly squeezed juice, then the cake will be especially aromatic. But it can be replaced with bagged ones.
    5. Add the zest and flour in several additions, mix everything well. At the very end, we extinguish the soda with vinegar and send it to the dough.
      For the filling, combine cottage cheese, powdered sugar, sour cream and cocoa. And let's move on to the final stage.
    6. Grease the mold with oil (preferably butter) and place half of our dough there. We spread all the filling, and for a rich taste, place small pieces of chocolate on top. Fill with the remaining dough and place in the oven for 50 minutes, its temperature should reach 180 °C.

For the chocolate-curd cake, we use homemade cottage cheese, full-fat and well pressed from the whey. If the cottage cheese is soft and creamy in consistency, then you may need a little more flour than indicated in the recipe. Add 3 tbsp to the cottage cheese. l. sugar and a masher, grind everything until smooth.




Cut the soft butter into cubes and mix with the rest of the sugar. Mix with a fork or whisk until the sugar dissolves a little and the mass becomes like a thick cream.




Add the beaten egg to the curd mixture. Mix. The result should be a liquid mass that is almost homogeneous in consistency.






Add mashed butter and sugar to the curd mass. Mix everything thoroughly again.




We begin to add flour in parts, mixing it into the dough. Watch the thickness of the dough; under no circumstances should it be dense.




The finished dough for cottage cheese cake with raisins and chocolate will be creamy in consistency. When stirring, noticeable streaks and streaks remain on the surface; if they disappear quickly, it means there is not enough flour, you need to add more. Add baking powder when all the flour is mixed into the dough.






Pour boiling water over the raisins for 2-3 minutes, dry on a towel. Divide the dough into two parts. Add prepared raisins to one.
