Chocolate spread with nuts recipe. Homemade chocolate-nut butter

Nutella chocolate and nut spread is known to everyone. It was a favorite treat for children and adults in post-Soviet times. Life really does seem to go on a spiral, and my kids are crazy about it these days. When we go to the store, their only request is: “Mom, buy Nutella!”

But it is still not the cheapest product in the store. In addition, reading its composition, there is absolutely no desire to buy this paste for children.

Therefore, I decided to cook it only at home, so that my household would not eat store-bought chemicals, but a relatively harmless product. Moreover, the ingredients for the recipe are inexpensive, affordable for any family, and the preparation itself is very simple and does not take more than 15 minutes.

Older children can prepare their own treats. The recipe is just a dream for any housewife!

We will need

  • milk - 1 glass (200-250 ml),
  • flour - one and a half tablespoons with a slide,
  • sugar - 1 glass 250 ml,
  • cocoa - 2 tbsp. l. with a slide,
  • butter - 50 g or 1 tbsp. l.,
  • nuts - approximately 5 tbsp.

Take thicker milk, at least 3.2 fat content. The thickness of the paste will depend on the amount of milk. I take 250 ml.

You can also take any quantity of nuts, and even make a mix as desired - walnuts, hazelnuts, almonds, peanuts, cashews. To your taste.

Use good quality and fresh butter in the recipe. I once mixed a cheap one, and the paste tasted sour.

Preparation

First we will heat the milk. We don’t need to boil it, but only heat it so that the dry ingredients dissolve faster.

Pour in warm milk.

Mix everything well so that there is no lump. You can use a spoon, you can use a blender - whichever is more convenient for you.

Grind the nuts in a coffee grinder.

You don’t have to let them turn into nut dust, since lumps of nuts are quite acceptable in homemade Nutella.

    My child has a terrible sweet tooth, but due to allergies to all kinds of E and other unnatural additives, I cannot resort to using store-bought desserts. Yes, I spoil myself (I’m lazy, did I tell you? It’s easier for me to buy 100 g of sweets than to create them myself for my beloved, but one person), but I have to feed the baby with homemade delicacies.

    In general, this is not what we’re talking about - rather, it’s about how to make a delicious paste in 20 minutes that you can spread on bread in the morning. Or which you can enjoy after a light lunch snack. Well, with the help of which you can easily manipulate children: if you brush your teeth, you get a sandwich, if you don’t put away the toys, there will be no dessert.

    1 cup of sugar;

    70 g butter;

    vanilla or cinnamon to taste.

    First - nuts. There can be many variations - do what you like best. My family prefers roasted nuts. It also seems to me that this way their taste reveals itself more clearly, but if you think that raw ones are healthier, no problem, take raw ones. We love hazelnuts best, but often I make this cream with peanuts, walnuts, and a mixture of what we have at home.

    Blender (or coffee grinder), 5 minutes - and you have a nut mixture ready. The finer the ground hazelnuts, the more uniform the paste will be, well, I like it when it’s even visually noticeable that the product is exclusively homemade, so I leave the nuts a little grainy - and the paste will turn out, as one of my friends once said , “slightly brutal.”

    In a saucepan (which will then need to be put on fire) mix the dry products (flour, cocoa and sugar), add the egg and grind well. If there is not enough liquid, add 1-2 tablespoons of boiled and cooled milk. Knead. When the mixture becomes homogeneous, dilute it with the remaining milk. Add ground nuts.

    We put it on the stove. Stirring constantly, cook until it thickens or begins to puff. Turn off, add butter, vanilla or cinnamon, stir and pour into jars.

    At one time I got used to making sweet gifts for the New Year - I poured the paste into beautiful jars, decorated them and gave them to friends under the Christmas tree. It was unusual, pleasant and joyful. Will you try it?

    1. hazelnuts – 300 g
    2. almonds - 100 g
    3. honey - ? glasses
    4. cocoa - ? glasses
    5. milk - half a glass
    6. coconut oil - 1 tbsp.

    Preparation

  • Grind the peeled nuts in a blender until the consistency of sour cream is obtained. Select the degree of grinding according to your taste.
  • Add butter and honey to the nuts.
  • Beat the resulting mixture well, then add a little milk and cocoa to it.
  • Beat again and add the remaining milk. Use the blender until the mixture is smooth.
  • In general, the delicious chocolate-nut butter is ready! Prepared with your own hands, it is definitely healthier than the one you buy in the store. The natural products you selected for the paste and the absence of preservatives make it a safe product for your beloved children.

    The paste can be spread on bread, toast, waffles, used as a layer for a cake or a filling for croissants. Take a piece of fruit, such as a strawberry. Place it on a toothpick or thin stick and place it in a mold with chocolate-nut butter. Let them harden a little in the freezer and you're ready to make some great DIY ice cream!

    In any form, the whole family will love it!

    Recipe for “Chocolate-nut butter”:

    Rinse nuts under running water.

    Grind the nuts in a blender.

    Add coconut oil, cocoa powder and a little milk. Grind.

    Grind with a blender, gradually adding milk, until the desired consistency is obtained. My mixture is not very liquid; there are pieces of nuts left.

    With this amount of milk, the paste turns out plastic. You can make candies from it, and use dried fruits as a filling for sweetness. Or, alternatively, add honey.

    Since it contains milk, this paste does not last long: 2-3 days in the refrigerator in a jar with a closed lid.

    A sweet soft mass of chocolate and nuts is one of the most favorite treats not only for children, but also for adults. But the cost, even of a small jar, noticeably bites the pocket. And the benefits of such desserts (which include, among other things, preservatives and cheap palm oil) are very doubtful. But why deprive a child of joy? After all, it is quite possible to make chocolate spread at home.

    Preparing a thick sweet with chocolate flavor does not require any culinary skills. However, there are some tricks here too, thanks to which the chocolate paste from cocoa will turn out tender, aromatic and indistinguishable from the store bought one:

    Before you make chocolate spread with cocoa powder, think about what you will use as a filling: walnuts, peanuts, sesame seeds, regular sunflower seeds? The most popular is pasta made with the addition of peanuts. For example, this is the recipe used by Ferrero Rocher, which produces the famous Nutella.
    Take milk with the maximum percentage of fat content. The most delicious dessert is made from homemade milk.
    Before you start cooking, rinse the nuts from the husks and dry them thoroughly. It is better to grind them using a blender or coffee grinder. Although this is an optional rule - rather, the features of the classic recipe. If you like the feel of small pieces of peanuts on your teeth, you can use a regular mixer.
    Use only dry dishes to mix cocoa with sugar, otherwise the sticky mass will smear on the walls and curl into lumps during cooking.
    Chocolate spread at home does not require virtually any equipment, except for a small heat-resistant container and a spatula for mixing. But if possible, it is still better to cook this product in a water bath to avoid burning the chocolate.
    Depending on the nuances of the recipe, the cocoa treat can be fatty or dietary, sweet or have a bitter aftertaste. In short, everyone will find an option to their liking!

    DIY chocolate mass

    There are a whole lot of ways to prepare a soft treat from cocoa. Despite the simplicity of each of them, some are quite time-consuming. But the simplest recipe for chocolate paste takes no more than 20 minutes.

    To prepare it you will need:

    • a glass of milk;
    • 10 tbsp. spoons of cocoa powder;
    • the same amount of sugar (if desired, the paste can be made more or less sweet);
    • 2 teaspoons flour;
    • 70–80 g butter;
    • a little vanillin or vanilla sugar for flavor;
    • as well as half a cup or more of ground nuts, sesame seeds and other toppings to taste.

    1. Mix sugar and cocoa in a small saucepan, add vanillin and pour in 2 tbsp. spoons of milk. Now the mixture must be thoroughly stirred until smooth. Only after this can you pour out the rest of the milk. Place the pan on the fire and wait until the mixture begins to boil, add butter to it.
    2. Next, a lot of attention and patience is required. The butter in homemade pasta should boil, but not cook. Otherwise, the finished product will remain semi-liquid after cooling.
    3. Remove the pan from the stove and add flour to the chocolate mixture in small doses, stirring thoroughly. Then bring to a boil again and add the nuts. Homemade treat is ready! All that remains is to pour it into pre-prepared jars and leave to cool.

    Making Nutella with your own hands

    For fans of the popular sweet from Ferrero Rocher, you can prepare an impromptu Nutella. It is in no way inferior in taste to store-bought, but its benefits are much higher. After all, you yourself can control both the cooking process and the quality of the necessary ingredients.

    According to the recipe, this paste includes:

    • Milk - 250 ml;
    • Cocoa powder – 3 tbsp. spoons;
    • Butter – 125 g;
    • Flour – 1.5 teaspoons;
    • sugar – 5 tbsp. spoon;
    • and, of course, grated nuts in a quantity convenient for you.

    1. To begin, leave the butter in a warm place until it melts a little. Cut it into pieces and place in a saucepan; pour all the milk there. While it is boiling, start preparing the mixture: stir sugar and flour into dry cocoa powder. You can add a small pinch of salt there to highlight the sweet taste of the dessert.
    2. As soon as the milk has boiled, pour this mixture into it and, stirring continuously, bring to a boil over low heat. Add nuts to hot cocoa. Remember that homemade Nutella requires patience. You need to cook it until it thickens to the desired consistency.

    Dietary nut butter

    For those who are concerned about their own weight, there are less nutritious recipes. For example, you can make a paste from cocoa and nuts without using butter at all. Thanks to this, the calorie content of the product will be even lower than in regular dark chocolate.

    You will need the following ingredients:

    • 200 ml milk;
    • 6 teaspoons of cocoa and the same amount of milk powder;
    • 300 ml odorless olive or sunflower oil;
    • 150 g of powdered sugar (if you don’t have it, you can use regular sugar);
    • 1 cup peanuts or walnuts;
    • And a pinch of vanillin.

    1. Roast and chop the nuts. Heat the milk without bringing it to a boil; Dissolve sugar in it and pour in vegetable oil. Take a blender and blend the mixture for 5-8 minutes. If everything was done correctly, the mass will acquire a white color and a thick consistency. After this, you need to add cocoa, milk powder and nuts mixed with vanillin. And, of course, mix until a homogeneous viscous paste is formed.
    2. Homemade chocolate cream is almost ready. All that remains is to put it in jars and put it in the refrigerator to infuse. After 10 – 12 hours it will thicken enough for consumption.

    A thick paste of cocoa and milk can not only be spread on bread, but also used to make chocolates, filled cupcakes, pour it over cakes and pies... In a word, the ways to use this sweet delicacy depend only on your imagination!
