The most delicious borscht with fresh cabbage will be ready in just 10-15 minutes if you cook it in advance and use the microwave. Let’s not argue with the assertion of some housewives that cooked on the stove is much tastier, because taste is a subjective concept. And if we also take into account the negative (unfounded) attitude towards microwaves, then the concept of “delicious” moves into a different plane altogether.

Prepared in a microwave with a maximum power of 700 W

Recipe Ingredients

  • 1 small beet;
  • 1 carrot;
  • 1 onion;
  • 2 potatoes;
  • ¼ fork fresh cabbage;
  • broth (water);
  • 1-2 tbsp. l. vegetable oil;
  • 3-4 pinches of salt;
  • 1 tsp. granulated sugar;
  • 0.5 tsp. vinegar 9%;
  • 2 bay leaves.

How to cook delicious borscht (with photo)

Peel the potato tubers and rinse them in water, cut into large cubes, place in a saucepan/deep microwave-safe bowl.

Peel the onion and rinse. Cut into small cubes and place in a container.

Grate the peeled and washed carrots on a coarse grater. Hers too – for vegetables.

Do the same with beets.

Mix all the fresh ingredients, add salt, granulated sugar and vegetable oil. Granulated sugar will add sweetness to the boiled beets. Vegetable oil is needed more if you cook with water.

Pour in the broth (hot water), leaving it a few fingers short, so that you can skim off the foam during cooking. Add bay leaves for flavor. You can add a few peas of allspice and ready-made seasonings for borscht (soup).

Place the container in the microwave and turn it on for 7-10 minutes, setting it to maximum.

At the signal from the device, remove and skim off the foam. Shred fresh cabbage and place in a bowl. Immediately pour in 9% vinegar - it will help the dish maintain its burgundy color, since when adding cabbage, borscht tends to change color from dark red to orange, and acid prevents this!

Place the container back into the microwave for 3-5 minutes. After taking it out, taste it and adjust it with salt or sugar if required.

Pour the hot first dish into portioned plates and serve. For spicy lovers, offer hot peppers, garlic or green onions. Don’t forget about sour cream or mayonnaise – they add incredible flavor to borscht with fresh cabbage!

Enjoy your hot and tasty lunch!
