With a recipe for lush Ukrainian steamed dumplings, I was introduced for a long time. The noble dish that Gogol mentioned in The Night Before Christmas. The neighbor who taught me the recipe very accurately explains that a real dumpling is cooked exclusively for steam. And what we cook in water is a dumpling with a filling. To be honest, I love all kinds of dishes. But I suggest you try steam cooking. Follow the step by step recipe, and you will not be ashamed even in front of N.V. Gogol. And even more so for the household.

How to steam dumplings

Cooking dumplings in a double boiler is a pleasure. A multicooker that has the function of cooking with steam is perfectly adapted. But even in the pan, having a special insert, preparing a dish will not be a problem. But if this is not available, do not get lost, replace it with gauze. In the recipe I will show how to do it.

Air dough can be made with kefir, milk, but the best is yeast. Not dumplings - a song, but too much fuss. We will go the fast way and knead the dough with kefir. Recipes for another test can be found in my articles about dumplings:

Steam Dumpling Toppings

With fillings, you can also swing. In the berry season, cook with strawberries, cherries and cherries and other fresh berries. In winter, use frozen. They put cottage cheese, potatoes, onions, mushrooms, sauerkraut and fresh fried.

Steamed dumplings recipe for kefir

You will need:

  • Kefir - 200 ml.
  • Egg yolk.
  • Sugar is a big spoon.
  • Salt - ½ teaspoon.
  • Soda - 1/3 of a small spoon.
  • Flour - 350-400 gr.
  • Any filling. I have a summer made of cherry. For her, I took 250 gr. seedless berries, a tablespoon of potato starch and sugar.

Step by step cooking:

Combine the yolk and kefir in a bowl, salt, whisk with a whisk.

Pour the sifted flour into the bowl, send the yolk mixture to it, stir. Continue to work with a spoon, kneading the mass.

Put the test mass on the table. Knead again, but with your hands. The mass should turn out to be soft, do not clog it with flour, then the dough will become magnificent. Ideally, the dough should easily come off your hands, but not stick.

In the test, it will not smell or taste soda, since in an acidic environment it will be extinguished.

Cover the finished kefir dough with a towel or plastic wrap and leave to “rest” for 20 minutes.

Divide the dough into pieces, roll each into a sausage and cut into pieces.

Roll out with small oval cakes, lay out the filling.

In my case, paying tribute to the summer, I put a little sugar, on top of a cherry berry, added starch.

Blind the dumpling, fixing the edges tightly so that it falls apart during cooking.

For steaming, take a pan of five liters, no less. Tie with gauze, as in the photo. Tie tight so that under the weight of the dumpling gauze does not sag much. Gauze ponytails can burn, so hide them under an elastic band.

Pour water 10 centimeters below the level of stretched gauze. When it begins to boil, spread the workpieces and cover with a deep plate or lid. The diameter of the lid should be the same as the pan, because you need to keep the steam inside.

Between the workpieces, make a distance in contact, they can stick. Keep in mind that during cooking they will become lush and increase in size.

Cooking in a double boiler is not difficult, decompose the workpieces and cook until cooked. There is no need to turn over.

How much to steam:

Enough 5 minutes, since the filling is ready, and the dough is cooked extremely quickly.

For the test:

3 tbsp. flour, 1 tbsp. kefir, 1 tablespoon sugar, 1 egg, 0.5 tsp salt, 1 tsp soda, 3 tablespoons vegetable oil

How to cook homemade dumplings for a couple:

    Sift flour on a clean table. From the total number, select 2 tbsp. flour and pour into a deep plate. Make a hole in the flour, put salt, sugar in it and beat the egg. Dumplings will be more magnificent if you first separate the protein from the yolk, beat, and then pour into the flour.

    Pour kefir or sour milk into a separate bowl, add soda. Stir the flour with the egg, salt and sugar in a spoon, gradually adding kefir. Put the dough from a plate on a table in flour and continue to knead it with your hands. Add flour until a fairly thick dough is obtained. Knead for at least 10 minutes. Then put the dough in the refrigerator for half an hour.

    Prepare the berries. Rinse and dry the cherries. Remove the bones. It is convenient to do this with a special device or a regular hairpin. The bone is removed as follows: hold the ends of the hairpin with your hand, and loop the part of the berry where the stalk was, and gently pry the bone.

    Take a rolling pin, lightly sprinkle the dough with flour and roll it into a layer 5-7 mm thick. Use a glass or a small cup to make dough circles. Blind the remaining dough and roll it again. You can form a “sausage” from the dough, cut it into small pieces and knead each with your hands. However, the first way the dumplings will be the same in shape and more even.

    Put a pot of water on the fire. From above, you need to fix the gauze with the help of a linen gum. Gauze should not sag. Instead, you can use a metal colander or a double boiler for pots, oiled with vegetable oil. Bring the water to a boil.

    Blind the dumplings: put 2-3 cherries and 1 tsp in the center of the dough circle. sugar, put together the edges of the dumpling. When the water in the pan begins to boil, put the dumplings on cheesecloth so that they do not touch each other, and cover them with a lid on top. Water should boil.

    Cook the dumplings for 5-7 minutes, then put them on a plate and grease with butter or pour sour cream. The dish is served hot.

Steamed dumplings can also be cooked with other fillings: with cottage cheese, potatoes, mushrooms, cabbage, eggs, fruits. You can use both fresh and frozen berries, which must be thawed before cooking.

  1. cooled dumplings are less tasty, so it is recommended to calculate the required amount in advance;
  2. to make the dough more airy, you need to use only sifted fresh flour;
  3. steamed dumplings can be made in a pressure cooker, slow cooker, double boiler, however they will turn out not so magnificent.

Steam dumplings - a traditional Ukrainian dish, a favorite in every family! Steamed dumplings are prepared on kefir with the addition of soda, due to which the dough is perfectly molded, it turns out tender and magnificent. Under the influence of hot steam, dumplings increase in size by 4-5 times, while keeping their shape perfectly and do not fall apart.

This recipe for steamed dumplings is suitable for a slow cooker and an electric double boiler. With a power of 800 watts, the cooking time is only 7 minutes. The filling can be salty or sweet, always at room temperature.

Ingredients

  • wheat flour - 700 g
  • kefir - 0.5 l
  • salt - 0.5 tsp.
  • baking soda - 1.5 tsp.
  • chicken egg - 1 pc.
  • filling - 500 g.

Cooking

1. Drive a chicken egg into kefir, add salt and soda, mix and gradually introduce flour into the resulting mixture, sifting it through a sieve. Knead the dough for dumplings - it should not be very tight, but not stick to your hands.

  2. Divide the dough into 3 parts, each of which is rolled into a thin layer, sprinkling the working surface with flour. Using a glass, we cut out small circles, from which in the future we will sculpt dumplings.

  3. Each circle is rolled out a little using a rolling pin, after which we put the filling in the center - a little more than 1 teaspoon.

  4. Gently pinch the edges of each dumpling, forming a “pigtail” around the edge, which will give a more elegant look. If the dish is prepared for the future, at this stage, you can freeze the dumplings for the winter, placing them on a cutting board in the freezer for 2-3 hours, then remove, generously pour flour, tie a bag tightly, return to the freezer and store for 2-3 months.

  5. We spread the finished products from the dough into the bowl of a double boiler (or multicooker) at a certain distance from each other, since during the preparation they will greatly increase in size.

  6. Place the dumplings in a double boiler and keep it until completely ready - for 20-25 minutes, depending on the power of the equipment.

Many housewives prefer to cook dumplings just for steam, because during the cooking process they lose their shape, fall apart and turn out unappetizing. Steamed dumplings always come out neat, beautiful and whole. The principle of cooking dumplings in a double boiler differs little from ordinary dumplings. The difference is only in the method of heat treatment. First, from flour, water (milk or kefir), salt and eggs (sometimes without it) you need to knead the dough. Separately, the filling is prepared: it can be cottage cheese, cherry, strawberries, blueberries, cabbage, potatoes with mushrooms, etc. The dough is rolled into a thin layer and cut out with a glass of mug, after which the filling is laid out in the middle of each circle. The edges must be densely sealed so that the dumplings do not fall apart. Dumplings can be frozen and cooked immediately before serving.

Steamed dumplings - preparing food and utensils

From utensils you may need a bowl, pan, sieve, rolling pin and a glass with sharp edges. If there is a double boiler, the cooking process is much simpler. If there is no appliance in the household, you will need, again, a sieve and clean gauze.

Before cooking, you need to measure the required amount of ingredients, sift the flour and prepare the filling. The berries are washed and chopped. Cabbage, potatoes and other vegetables are pre-cooked.

Recipe 1: Steamed Dumplings

Steamed dumplings are whole, neat and very tasty, as they do not fall apart during the heat treatment. During cooking, dumplings are often stuck, respectively, filling follows. This does not happen in a double boiler.

Ingredients Required:

For the test:

  • 2.5-3 cups flour;
  • Half a glass of milk or water;
  • 1 egg
  • A bit of salt.

For filling:

  • 1 yolk;
  • 2 tablespoons of sugar;
  • 2 tablespoons butter;
  • A pound of cottage cheese;
  • Sour cream or syrup - for serving.

Cooking method:

Preparation of the test:

Break the egg into a glass with milk or water and mix thoroughly, salt the mixture. Sift the flour and combine with the egg mixture. Knead the dough from the ingredients - it should turn out pretty steep.

Cooking Dumplings:

Pass the cottage cheese through a meat grinder and mix with one egg yolk and sugar, add a spoonful of melted butter to the mass. Stir all components thoroughly. Beat the remaining protein from the egg in a separate cup. Roll the dough thinly and cut it out with a glass with the sharp edges of the mug. Grease each circle with protein and put in the middle a small amount of curd filling. Connect and clamp the edges. Dumplings can be frozen and cooked immediately before serving. Steaming dumplings for steam is very simple: 10 minutes before serving, they need to be placed in a double boiler. If there is no double boiler, you can place a sieve in a pot of boiling water, and put dumplings in it. Pour dumplings with melted butter, sour cream or syrup.

Recipe 2: Steamed Dumplings with Strawberries

Strawberry dumplings are very fond of both children and adults. Try to cook this healthy tasty dish in a double boiler. Steamed dumplings with strawberries are neat, beautiful and very tasty.

Ingredients Required:

For the test:

  • Wheat flour - 6 tablespoons with a hill;
  • 150 ml of kefir or sour milk;
  • Some salt;
  • 3 g of baking soda.

For filling:

  • Fresh strawberries to taste;
  • Sugar.

Add salt and soda to the sifted flour, stir. Make a small hole in the flour and add kefir or sour milk. Stir the ingredients with a spoon and knead a homogeneous dough.

Cooking Dumplings:

Form a sausage from the dough and cut it into small equal parts. Using each finger, make a small cake. Sort strawberries, wash and cut into several parts. Sprinkle each cake with sugar and put in a cent strawberries (small can be placed whole). Connect the edges as tight as possible so that the dumpling does not fall apart. Before serving, cook dumplings in a double boiler or steamed in a saucepan (for this you need to boil water in a saucepan, place the dumplings on a gauze or sieve). Recipe 3: Steamed Dumplings with Cabbage

Steamed cabbage dumplings are an ideal dish for the whole family. They are prepared quite quickly and simply, the main thing is to prepare the filling in advance. For the filling, cabbage, onions and carrots are used.

Ingredients Required:

  • Half a liter of kefir;
  • A teaspoon of soda;
  • Flour - 850-900 g;
  • salt.

For filling:

  • 600 g of cabbage;
  • Carrots - 100 g;
  • 1 onion;
  • Vegetable oil;
  • Pepper;
  • Salt.

Cooking method:

Preparation of the test:

Add soda and salt to kefir, then pour flour in small portions and knead a uniform, dense dough (but not too hard).

Cooking Dumplings:

Chop the cabbage and stew in vegetable oil. Grate the cabbage, finely chop the onion and fry, then put the vegetables in the cabbage. Pepper and salt to taste to taste. Roll out the dough, cut a glass of mug. Put a filling in the middle of each circle, close the edges. Steam the dumplings using a pot or a double boiler. Serve with fried onions and sour cream.

What if the farm does not have a double boiler, but really want to cook delicious steamed dumplings? Everything is very simple. You need to take a large pot, pour water into it and put on fire. Tie the top of the pan with several layers of wet gauze so that it does not sag. After the water boils, put the dumplings and cover with an enamel bowl. Instead of gauze, you can also take a sieve.

I remember how my mom steamed dumplings for a couple, these are childhood dumplings - lush, plump, with sweet cottage cheese. This is the stuffing that our family loves.

Today I will try to cook steamed dumplings on kefir in the old way, without a double boiler and special appliances. And I need to steam a piece of regular gauze.

To knead the dough for steam dumplings, take simple products.

Pour kefir into a bowl, add sugar, salt, soda and stir to let the reaction go.

Add the egg and stir again.

Pour 2 cups sifted flour with baking powder (soda) and knead soft dough. Leave a little flour on the bedding, a little less than half a glass.

Knead the dough on the table, sprinkling a little flour so that it sticks off your hands, but remains soft and supple. This is important, otherwise dumplings will not rise during cooking. Cover the dough with a towel and prepare the filling.

Dumplings can be prepared with any filling - berry, cottage cheese, cabbage, etc. I have potato. To do this, boil the potatoes and mix it with fried onion, salt and pepper to taste.

Separate a small piece from the dough, roll it into a tourniquet and cut into equal parts. It is not necessary to roll out the dough - if it is kneaded correctly, it should turn out to be very soft. It is enough to flatten each piece by hand, dipping into flour so that it does not stick. The thickness of the cake is at least 2-3 mm.

Put the potato filling in the center of each cake and cover with a dumpling.

Dumplings can be glued for the future and frozen, and then boiled as needed. Or cook all at once.

For steam cooking, we will build such a structure: you need to take a pan with a wide top, pour one third of water into it and pull the gauze along the edge so that it slightly sags without touching the water and holds tight. Cover the pan and bring the water to a boil. When boiling water, the gauze will become wet, this is normal.

Arrange the dumplings on the gauze so that when covered with a lid, they do not touch it. Steam dumplings on kefir with constant boiling water for about 10 minutes, without opening the lid. Cooking time depends on the size of the dumplings. You can get one dumpling and cut it, checking if the dough is ready.

Dumplings should increase in size and become lush. After removing one batch, immediately cook the next.

Serve steamed dumplings on kefir on the table immediately! Hot!
