Preparation:

Mix cottage cheese with egg, sour cream, vanilla from the bag. Add pre-steamed and dried seedless raisins. Thaw the finished puff pastry without yeast, cut in half. Roll each part into a rectangle, grease with half the amount of curd filling, do not reach the edges. Roll into rolls, wrap from the narrow edge, pinch, turn over with the seam down and cut into pieces three to four centimeters thick.
Place both rolls on a parchment-lined baking sheet, brush with a little beaten raw egg, and sprinkle with sesame seeds. Bake the puff pastry with curd filling at 200 degrees until done, you should get a golden crust. Cool the finished baked goods and sprinkle with powdered sugar.

5. Puff pastries with cottage cheese in the form of dumplings


Ingredients:

For the test

  • Butter - 100 g
  • Chicken egg—1 pc.
  • Lemon juice - 1/2 tsp.
  • Salt - 1/4 tsp.
  • Wheat flour/Flour (200 ml glass) - 1.5 cups.
  • Water - 1/3 cup.

For filling

  • Cottage cheese (You may need a little less filling, i.e. 150-200 g) - 200 g
  • Egg yolk—1 pc.
  • Sugar - to taste

For greasing pies before baking

  • Chicken egg—1 pc.
  • Powdered sugar

Preparation:
Add cold butter (100 g) cut into pieces into a bowl, add flour (1.5 cups). I would like to point out that you may need a little more flour. The quality of flour varies. The dough should be soft, tender and pliable.
Chop the butter and flour into medium-sized crumbs. Add an egg (1 pc.) to a glass, add cold boiled water (1/3 cup), add 1/2 teaspoon of lemon juice, add 1/4 teaspoon of salt. Beat the mixture with a fork. Add the beaten egg mixture to the bowl with the butter-flour crumbs. Replace the dough. Wrap the dough in cling film and place in the refrigerator for 20-30 minutes.

Rub cottage cheese (200 g) through a metal sieve, add egg yolk, add sugar to taste. Stir the cottage cheese until smooth. Dust the surface of the table with flour and lay out the cooled dough. Roll out the dough into a layer 3-5 mm thick, cut out a circle with a diameter of 9-11 cm using a punch. Place the curd filling. Connect the edges. Place the pies on a baking sheet lined with baking paper. Yield of pies - 10-11 pcs. Brush the pies with beaten egg and place in an oven preheated to 180-190C. Bake until done. Sprinkle the finished cooled pies with powdered sugar.

6.Curd envelopes with pineapple made from puff pastry


Ingredients:

  • Cottage cheese 400g
  • Eggs 2 pcs.
  • Can of canned pineapples 290 g
  • Sugar 3-5 tbsp.
  • Puff pastry 500 gr

Preparation:

Prepare the filling: beat the eggs with sugar (the amount of sugar is up to you - from 5 tablespoons of sugar I got a very sweet filling). Add the egg mixture to the cottage cheese and stir thoroughly. Cut the pineapples into small cubes and drain the excess juice well. Add pineapples to cottage cheese and mix. The filling is ready! Place 1 heaping tablespoon of filling in the middle of the square, pinch the opposite corners of the square to form an envelope. If you see that the filling may leak out of a corner, pinch the corner. Prick the envelopes with a fork. Grease a baking sheet with oil and place the envelopes there, let them stand for 20-30 minutes. 4) Bake for about 20 minutes at 190-200 0C.

7. Sweet puff pastries with cottage cheese and vanilla


A variant of the simplest and fastest puff pastries with cottage cheese, for which ready-made vanilla mass is used. For more flavor, you can add more vanilla sugar to the filling.

Ingredients

8.Puff pastry pie with cottage cheese and apple

A variation of an amazing puff pastry pie with curd and apple filling. For preparation we use a medium package of 500 grams. It is wiser to make the cake in a square or rectangular shape so that there are no scraps.


Ingredients

  • . 1 packet of vanilla;
  • . 0.2 kg sugar;
  • . 2 eggs.

Preparation

Grind the cottage cheese with sugar and vanilla. Add one whole egg and one white. For now, place the second yolk in a plate and leave for surface finishing. Peel the apples, cut into cubes, mix with cottage cheese. Roll out the dough, cut into two layers. We roll up the edges of each one so that they become thinner. We transfer the bottom of the pie to a baking sheet, lay out the filling, not reaching the thin edges. On the second piece of dough we immediately make several cuts to allow steam to escape. Transfer to the pie. We twist the thin edges together and pre-moisten them with water. It will give strength to the connection and the product will not break during baking. Grease the top and reachable sides with yolk and bake.

9.Puff pastry triangles with cottage cheese and raisins

A variation of amazing triangles of puff pastry with cottage cheese, to which steamed raisins are also added. To taste, the filling can be supplemented with small candied fruits.


Ingredients

  • . 0.5 kg of dough;
  • . 0.4 kg cottage cheese;
  • . 80 grams of raisins;
  • . sugar, egg.

Preparation

Pour hot water, but not boiling water, over the raisins. Keep the grapes in water until they cool, throw them into a colander. Combine cottage cheese with sugar, quantity to taste. Add raisins, you can add vanilla, throw in some candied fruits. Stir. Roll out the dough, cut into 15 centimeter squares. Beat the egg, grease the places of future joints. Spread the filling on one side, visually divide the layer diagonally. Roll up the triangle, pinch the joints. Can be pressed with the tines of a fork for added strength.

Bake until golden brown; the finished triangles can be sprinkled with powder.

10.Puff pastries with cottage cheese and banana

An incredibly aromatic baking option that requires a ripe banana. Curd puffs according to this recipe are baked in the oven.


Ingredients

  • . 1 layer of dough;
  • . 1 banana;
  • . 300 grams of cottage cheese;
  • . 60 grams of sugar;
  • . vanilla, egg.

Preparation

Peel the soft banana, mash it with a fork and combine it with cottage cheese. Sugar, season with vanilla, stir the filling. Lightly roll out the dough layer on the table. Spread the curd filling, stepping back three centimeters from the opposite edge. Brush this strip of dough with water and let it soak for a while.

We roll up the roll, you don’t have to do it too tightly, let the puff pastry be a little empty and loose. Cut into pieces of five centimeters. Place on the prepared sheet, make a seam at the bottom. Brush the rolls with egg, bake for 12 minutes at 200 degrees. If necessary, take it out earlier or keep it a little longer, it all depends on the resulting thickness of the rolls.

11.Puff pastry pie with cottage cheese and peaches

A version of a very beautiful puff pastry pie with canned peaches. If you don’t have peaches, you can take cherries, cherries, and apricots from the compote.


Ingredients

  • . 0.3 kg cottage cheese;
  • . 0.2 kg of peaches;
  • . 4 spoons of sugar;
  • . 1 pinch of vanilla;
  • . 500 grams of dough;
  • . egg.

Preparation

We cut the peaches into neat strips and leave them aside. Beat the egg whites with vanilla until fluffy, a mixer is the easiest and fastest way to do this. Grind the recipe cottage cheese, sweeten it, add the whites. Stir. Lay out the melted dough on the table, roll it up a little with a rolling pin and cut off a third part. Place a large piece on a baking sheet. Spread the curd filling.

Place the peaches on top in an even layer. Take a third of the dough and use a knife to make small but through cuts in a checkerboard pattern. We stretch the piece, it will look like a mesh. We put it on the pie, connecting the edges of the top to the bottom. Take a brush, moisten it in egg and pass over the entire surface of the pie. All that remains is to bake and cool.

Preparation:

Mix cottage cheese with egg white. Roll out the dough and cut into 8 squares, cut each square from the corners to the center. Place 1 tablespoon of cottage cheese and 1 teaspoon of apricot jam onto the squares. Carefully form an envelope.Place the envelopes on a baking tray lined with baking paper. Bake in an oven preheated to 200°C for 15 minutes.

13.Puff bagels with curd filling


Ingredients:

  • Puff pastry (purchased or homemade) - 350 g.
  • Fat cottage cheese- 200 g (not less than 9%)

    Egg- 1 pc (whipped, for greasing baked goods)

    Sugar- 50 g (for filling and for sprinkling)

    Raisin- 40 g (for filling)

Preparation:

Prepare the filling: rub the cottage cheese through a sieve. Soak the raisins in boiling water.
Add soft raisins to the cottage cheese. Add half of the entire sugar to the cottage cheese. Roll out the dough, cut it into triangles. Put a spoonful of cottage cheese with raisins into each triangle. Roll up a bagel, dip it in sugar and place it on a baking sheet with the side without sugar. Brush the bagel with yolk.
Bake the bagels for no more than 20 minutes until golden brown. The oven temperature should be no more than 190-200 degrees.

14.Puff pastries with cottage cheese and pumpkin



Combine cottage cheese, raisins, pumpkin with sugar, mix well. Cut the dough into equal parts, roll out into a square, lay out the filling and fold as desired into an envelope, rectangle or triangle. Seal the dough around the edges. Bake in the oven at 180-200 degrees for 15-20 minutes. Before baking, if desired, the dough can be greased with beaten yolk, sweet water or not greased with anything. Cool the finished baked goods, sprinkle with powdered sugar and cinnamon. Excellent baked goods are ready for tea.
