Pie with jam is a traditional delicacy for tea. The recipe for jam pie reminds us of childhood and home comfort.

1.Pie with jam from homemade dough

Products for the test:

  • Eggs - 2 pcs.
  • Flour - 2 - 3 cups
  • Butter or margarine - 200 gr.
  • Sugar - 1 glass
  • Vanillin - on the tip of a knife
  • Baking powder - 1 teaspoon
  • Jam or jam - 150 - 200 gr.

How to make a jam pie from homemade dough:

Melt butter or margarine and cool. Pour sugar into a bowl, add melted butter, eggs, vanilla and mix everything well. Gradually add sifted flour mixed with baking powder and knead the dough (the dough should not be stiff). Divide the dough into 2 unequal parts (1/3 and 2/3).
Place a smaller portion of the dough in the freezer for ~1 hour. Spread most of the dough evenly on a baking sheet (the dough can be rolled out thinly or laid out in a thicker layer). Place a layer of jam on top of the dough and gently smooth it out with a spoon. Remove a smaller portion of the dough from the freezer and grate it onto the jam on top of a grater. Place the pie in an oven preheated to 200 degrees and bake for 20-25 minutes.

2. Yeast pie with apples and jam

Products:

  1. Water-200 gr.
  2. Powdered milk - 2 tbsp. spoons or milk - 200 gr.

How to make yeast pie with apples and jam:

Dissolve milk powder and yeast in warm water, or yeast in milk. Beat sugar and egg and combine with milk mixture. Add vegetable oil, a pinch of soda and flour. Knead well - I use a mixer attachment to make hooks. Leave to rise for about an hour. At this time, we peel the apples from the core - I didn’t peel them. We cut them into pieces. Heat butter and vegetable oil in a frying pan; add apples, sugar and cinnamon. Let's stew our apples a little.

When the dough rises, divide it into 2 parts. We roll out a large one into a layer with sides, distribute our apples on it, coat the apples on top with jam - preferably fragrant and dark, for example strawberry. From the second part of the dough we make decorations for the top of the pie - stripes, flowers, flagella... whatever your imagination suggests. Lubricate the dough with strong tea and sugar and place in an oven preheated to 180 degrees. Bake until golden brown - it took me about 30 minutes. Brush the finished pie with milk or sprinkle with water.

Divide the dough into 2 parts (I make them into sausages to make it easier to grate later) and wrap them in cling film and refrigerate for 1 hour. Grease the mold with oil, sprinkle with flour or semolina, grate 1 part of the dough on a coarse grater and spread the jam on top and distribute evenly. Take part 2 and grate it on top of the jam. Sprinkle the top of the pie with a mixture of sugar and nuts (I made hazelnuts, cashews and walnuts). Bake at 180 degrees for 25-30 minutes. Cool and cut into pieces.

Grease a mold (I used a springform pan, L = 28 cm) with butter; you can sprinkle with semolina, breadcrumbs, and crushed cookies. The pie can also be baked on a baking sheet lined with baking paper or greased with butter.

The recipe is very simple and quick, it can be prepared from ingredients that you have at home. Preparation will take only 15 minutes of your time, then 45 minutes in the oven - and the pie is ready.

Ingredients:

  • 1 glass of kefir;
  • 1 glass of any jam;
  • 2 eggs;
  • 2 cups flour (or 2.5 if the jam is liquid);
  • half a glass of sugar;
  • 1 teaspoon of soda.

Preparation:

Turn on the oven to warm up to 180 degrees. Grease the mold with butter or vegetable oil, set aside and prepare the dough.

Break two eggs into a large bowl and grind with sugar. Pour in a glass of kefir, stir, add jam, stir again. Then add the dry ingredients: first flour, then soda, mix well so that no lumps form. The dough is ready.

Bake the pie for 45 minutes at 180 degrees. You can check for doneness with a match or toothpick by piercing the pie in the center. The match must be dry. It is not possible to determine the readiness of the pie by color; it depends on the added jam.

The cooled pie can be greased with simple sour cream, served with jam, whipped cream or simply sprinkled with powdered sugar, the choice is yours.

This pie cooks even faster, in just 10 minutes, and does not require the use of dairy products. The sponge cake turns out very tender and juicy on its own; it doesn’t have to be coated with cream, you can eat it just like that.

Ingredients:

  • 4 eggs (if large, you can take 3);
  • ¾ cup sugar;
  • 1 cup flour;
  • 1 glass of any jam;
  • 1 packet of baking powder;
  • vanilla sugar (optional).

Preparation:

Separate the whites from the yolks. Add a pinch of salt to the whites and beat until strong foam. Separately, beat the yolks with sugar (you can add vanilla sugar). Add the yolks into the whites, carefully stirring with a spatula from bottom to top, then gradually add the jam and mix gently. Add dry ingredients (flour and baking powder) and mix.

Pour the dough into the prepared pan and place in a cold oven. The pie is baked at 180 degrees for about 40 minutes. It is better not to open the oven before so that the biscuit does not shrink due to the cold air. It is better to check for doneness once or twice at the end of cooking. This biscuit is best eaten chilled.

This dough is also suitable for a slow cooker and can be cooked in baking mode.

The dough for this fluffy, airy and aromatic pie is prepared very quickly, in just 10 minutes. The secret of preparation is that soda must be added to kefir in advance so that the reaction occurs and bubbles appear, giving the dough fluffiness.

Ingredients:

  • 2 eggs;
  • 1 cup of sugar;
  • 1 glass of kefir;
  • 2-2.5 cups flour (depending on the consistency of the jam);
  • 1 teaspoon of soda;
  • vanilla sugar to taste.

Preparation:

Add soda to a glass of kefir (it should be slightly warmer than room temperature) and leave for 5 minutes. At this time, grind the eggs with sugar, add jam, and sift the flour separately. Then pour kefir into the mashed eggs, mix, add flour there and knead the dough so that there are no lumps of flour left. If the dough turns out too liquid due to jam, add a couple more tablespoons of sifted flour.

Grease the multicooker bowl with oil and pour out the dough. Set the baking mode for an hour, then add another 20 minutes. Baking time for the pie in a slow cooker is 80 minutes.

For this pie, you can use milk, kefir, whey or even water - whatever you have in the refrigerator or whatever you like. The base of this pie is jam, vegetable oil, flour and soda, the rest is optional.

Ingredients:

  • 1 glass of jam;
  • half a glass of vegetable oil;
  • 2 cups of flour;
  • 1 teaspoon of soda;
  • ¾ glass of milk (or kefir, water, whey of your choice);
  • vanilla sugar (optional).

Preparation:

Turn on the oven to warm up to 180 degrees. Grease the mold with oil or dust with flour, set aside and prepare the dough.

In a large bowl, mix all the liquids. Add vanillin and flour, mix. Add soda and vanillin, mix. The dough is ready. You can add dried fruits, nuts, and spices of your choice.

Bake for 20-30 minutes. It depends on the power of the oven and the thickness of the walls of the mold.

Ingredients:

  • 3 chicken eggs;
  • 3/4 cup sugar;
  • 60 grams of potato starch;
  • 1.5 cups (250 ml) premium wheat flour;
  • 1 packet of vanilla sugar;
  • 1/2 teaspoon baking powder or baking soda;
  • plum jam;
  • butter for greasing the baking sheet.

Preparation

Place the eggs in a bowl suitable for beating. It is important that they are at room temperature. Then the dough will turn out fluffy. Therefore, I advise you to take them out of the refrigerator in advance.

Add sugar and start beating well. You can use a whisk or a mixer, whichever you prefer. Only if you use a mixer, beat for 2 minutes at medium speed. If you beat longer, the dough will become too dense. When finished, it will be more stale. So don't overdo it.

Add sifted flour, starch and baking powder to eggs beaten with sugar.

Beat again according to the same pattern. Starch is added so that the baked goods do not quickly become stale and are more tender. If you use a whisk, then you need to focus on the density of the resulting dough. It should be homogeneous, without obvious grains of sugar. The density should be medium so that it flows slowly from the spoon.

Add jam to the finished dough, you can make it from whole plums. Mix well.

Well, that's all, all that remains is to pour the dough onto a baking sheet and bake.

Pre-set the temperature to 180 degrees and bake for 20 minutes. After time, you will receive rosy, aromatic tea cakes with a delicate plum flavor.

Quick pies with jam will help you please yourself, your family or unexpected guests and significantly save time and effort. In addition, such baking leaves free rein to the imagination - different creams, powders, fruits or nuts can change them beyond recognition and each time you will be surprised by new taste combinations. Happy and fast cooking!

An open pie with delicious jam - apple, cherry, apricot, blueberry - will conquer even the most fastidious gourmets with its simplicity and taste. You can use any dough - shortbread, yeast, or lean.

Ingredients:

  • 350-450 gr. wheat flour;
  • a stick of butter;
  • a glass of sugar;
  • a pair of eggs;
  • half a teaspoon of soda;
  • a teaspoon of wine vinegar;
  • a pinch of vanillin;
  • 350-450 gr. thick currant jam.

Step-by-step recipe for open jam pie

Melt the butter in a water bath or in the microwave. Cool and beat with sugar using a mixer.

Add a pinch of vanillin to the butter and sugar and beat in two chicken eggs, mix with a whisk. Quench the soda with vinegar as usual and add to the rest of the ingredients.

Sift the flour several times until it becomes airy. Add to the butter mixture in small portions and stir all the time. The end result should be a soft dough. Wrap it in a plastic bag or cling film and put it in the refrigerator for 1 hour.

Take a round springform baking dish with a diameter of 22 cm. Place baking paper on the bottom.

Divide the dough into two unequal parts. Put the smaller one back in the refrigerator.

Lightly dust the table with flour and roll out the dough on it into a circle suitable in size for the baking pan. Carefully place the circle of dough into the pan and use your hands to lift up the small edges.

Make several pricks on the dough with a fork. Pour in the entire portion of jam and smooth it out.

Roll out a small portion of the dough thinly and cut into strips. Place them on top of the pie in a lattice pattern.

Heat the oven to 200-210 degrees and leave the pie for 25-30 minutes.

The pie is already prepared and you can set the table for tea. Instead of currant jam, you can use thick apple or cranberry jam.

Option 2: Quick recipe for open jam pie

A pie cooked in a frying pan rather than in the oven is an excellent solution for quick baking for tea. The jam must be thick so that it does not spread. It only takes half an hour to cook, which can save the hostess if guests unexpectedly arrive.

Ingredients:

  • 100-120 gr. sour cream;
  • 50-60 gr. Sahara;
  • egg;
  • half a teaspoon of soda;
  • 5 g salt;
  • 5-6 g of baking soda or baking powder;
  • 5-7 tablespoons of flour;
  • a glass of plum jam;
  • vegetable oil.

How to quickly make an open-faced jam pie

In one cup, combine sour cream and sugar, beat a little with a whisk.

Add soda - there is no need to extinguish it, since the acid that is in sour cream is enough for this. Beat the egg into the mixture and stir.

Sift the flour thoroughly through a sieve and add to the sour cream mixture. Knead the dough and place it in a frying pan lightly greased with vegetable oil.

Pour jam over the dough and smooth with a spoon.

Place the frying pan over medium heat and cook the pie for about twenty minutes. When the dough turns golden brown, the stove can be turned off.

Cool the baked goods slightly, then transfer to a plate and serve with tea. You can sprinkle some decorating powder and starch on top to prevent the jam from spreading.

Option 3: Open pie with jam on yeast dough

This pie perfectly combines soft, fluffy and sweet pastry with thick blueberry jam. The top of the baked goods can be decorated with a lattice of dough strips or various figures.

Ingredients:

  • a packet of dry yeast;
  • a glass of kefir;
  • a packet of vanillin;
  • half a kilogram of flour;
  • a third of a glass of vegetable oil;
  • salt;
  • 100-120 gr. Sahara;
  • chicken egg yolk;
  • 300-350 gr. blueberry jam.

How to cook

Lightly warm the kefir in the microwave, or before cooking, remove it from the refrigerator in advance so that it comes to room temperature. Pour kefir into a deep bowl, add yeast to it, 30 g. sugar and mix with a tablespoon. Set aside until mixture foams.

Sift the flour through a fine sieve to fill it with oxygen. Add vanilla and a teaspoon of salt to it and mix.

Add kefir-yeast mass, remaining sugar and vegetable oil to the flour. Mix everything thoroughly and cover with a thin towel. Set the dough aside in a warm place for a couple of hours.

Grease the baking dish with vegetable oil.

Divide the dough into two pieces of different sizes. Distribute the larger one over the bottom of the mold, lifting the small sides with your hands.

Pour jam onto the dough and smooth with a spatula. Make thin strips of the remaining dough and place them in a lattice pattern on top of the blueberry layer. Leave the cake for half an hour so that it rises a little.

Beat the egg yolk a little. Grease the surface of the future pie with it and place the pan in the oven for 35-40 minutes.

Cool the finished pie slightly and remove from the mold. It will also be delicious the next day. If you don’t have kefir in stock, you can replace it with regular warm water.

Option 4: Open pie with jam on curd dough

If you combine strawberry jam and cottage cheese, you will get a real delicious meal with a beautiful two-layer filling of white and dark red color. And the dessert is prepared as simply as a regular open pie.

Ingredients:

  • three glasses of flour;
  • a stick of butter;
  • four tablespoons of sugar;
  • 400-450 gr. cottage cheese;
  • half a teaspoon of soda;
  • three tablespoons of starch;
  • 250-300 gr. strawberry jam.

Step by step recipe

200 gr. Grind cottage cheese with two tablespoons of sugar and one egg. It’s good if the cottage cheese remains in the form of small grains. If there is cream in the cottage cheese, it must be drained before kneading.

Melt the butter in the microwave and pour into the mixture of cottage cheese and sugar. Add soda and mix everything well with a spoon.

Sift the flour and add to the cottage cheese. Knead the dough with your hands, wrap it in cling film or a bag and put it in the refrigerator for half an hour.

Carefully divide the dough into two parts: large and small.

Roll out a large piece of dough with a rolling pin and place it on the bottom of the mold in which the pie will be prepared. Form low sides from a small piece.

Mix the remaining cottage cheese with the egg, add a spoonful of starch and the remaining granulated sugar. Mix everything thoroughly until smooth.

Sprinkle the cake in the mold with a spoon of starch and spread the curd mass over it, smoothing it with a spatula.

Stir starch into the jam. Pour it onto the curd layer. Place the pan with the cake in the oven, preheated to 180-190 degrees for 40 minutes.

A wonderful pie with two layers of filling is ready! You can serve it immediately with tea, or you can cool it first.

Option 5: Open pie with jam on puff pastry

Puff pastry is perfect for baking light tea pies. It is easiest to purchase this dough ready-made so as not to waste time kneading it. You can use any jam, but the pie is especially delicious with cherry jam, in which whole berries float.

Ingredients:

  • packaging of puff pastry without yeast;
  • 450-500 ml. cherry jam;
  • some milk;
  • a couple of tablespoons of butter or margarine;

How to cook

Thaw the dough slightly at room temperature. Divide into two parts - large and small.

Carefully roll out most of the dough to fit the baking pan. Do not press hard so that the dough rises well in the oven.

Grease the bottom and sides of the pan with butter or margarine.

Place the rolled out prepared dough on the bottom of the mold so that the edges of the dough cover the sides and extend slightly outward.

Make several pricks with a fork and spread the jam over the cake in an even layer.

Roll out the remaining small piece of puff pastry with a rolling pin and cut into thin strips with a knife. Use a lattice on top of the jam layer. Pinch the edges with the first layer of dough.

Using a pastry brush, brush the edges of the dough with milk so they brown nicely while baking.

Heat the oven to 180-200 degrees and place the mold for 50-60 minutes.

Cool the finished pie slightly, remove from the pan and divide into portions. Serve with tea. Bon appetit!

Recipe for a delicious pie with a jam layer

Let's look at the next version of our delicacy. It will look like a sponge cake, but only with a layer. The filling can consist of any jam. It is desirable that it be thick. This way it won't spread. And you're easier to bake.

We will need the following ingredients:

  • Milk - 200 milliliters
  • Flour - 400 grams
  • Sugar - 200 grams
  • Eggs - 3 pieces
  • Vegetable oil - 90 milliliters
  • Baking powder - 2 teaspoons
  • Salt - 1/2 teaspoon
  • Vanillin
  • Jam 200-300 grams

Cooking process:

1. First we need a deep bowl. Break eggs into it. Add salt and beat with a mixer until foam appears.

2. Once the foam has formed, we begin to add the remaining ingredients. Thus, we continue to beat and add the products one by one. Sugar comes first.

Pour in the sugar in small portions, while continuing to beat.

3. Beat until it is in the same state as shown in the picture below. The eggs should be well beaten. The sugar will completely dissolve. And the end result is a lush mass.

4. Continue to beat in the same way and add a little vegetable oil. And then pour in the milk in the same way.

Remember, we add all the ingredients in portions. This will give you a wonderfully soft baking dough.

5. Now add baking powder and vanillin to the flour. Mix well. Then pour in the rest of the products in portions. Add a little and mix. Repeat until all the flour has been poured out.

Use a sieve. In this way you will saturate the dough with oxygen and the cake will turn out fluffy.

6. The dough should turn out to be liquid and thick at the same time.

7. Prepare the baking dish. Lubricate it with vegetable oil. Grease the side walls well too. Sprinkle with additional flour. The entire form needs to be powdered.

If you're unsure about your baking pan, you can use parchment paper. That will be nice too.

Pour out half of our dough. Maybe a little more than half. Let's level it out.

Meanwhile, preheat the oven to 180 degrees.

Place the filling on top, i.e. jam. Be sure to use thick jam. Try to keep the minimum amount of syrup on the dough. For example, lay out berries or pieces. Distribute them evenly.

8. And pour the second part of the dough on top. Distribute evenly. Lightly level it out.

9. Place in a preheated oven. Once the mold is placed, reduce the temperature to 160. And cook until fully cooked. The cake takes about 50 minutes to bake. Almost the same time as a sponge cake. But you need to keep an eye on how the surface turns rosy, then immediately take it out.

The pie is ready. Check for doneness like a regular sponge cake. Pierce with a toothpick. If there is no test, then everything is ready. The cake is very tender at the moment, so it needs to be allowed to cool. Otherwise, it will all fall apart while you take it out of the mold. Once taken out, sprinkle with powdered sugar.

Delicious grated shortcrust pastry pie

Let's now prepare the delicacy in one more way. The recipe is simple. My family loves it. Especially when there is not enough time. Sometimes you want something tasty for tea. My aunt taught me how to make this pie. Whenever you come to visit her, she puts his name on the table. Well, I won't bore you. Let's start the analysis. Don’t think that if the description is long, it will take a long time to prepare. I like to describe each step in detail, which is why there are so many stages of preparation.

We will use the simplest and most affordable ingredients.

Instead of jam, you can use jam or marmalade. It would be better if it had some sourness so that it would set off the sweetness of the shortcrust pastry.

Products:

  • Sugar - 300 grams
  • Flour - 420 grams
  • Jam - 300 grams
  • Butter - 180 grams
  • Eggs - 2 pieces
  • Baking powder - 2 teaspoons
  • Salt - a pinch

Cooking process:

1. Place room temperature butter, a pinch of salt and sugar into a deep bowl. Beat everything with a mixer for about 5-6 minutes until light and fluffy.

It is better to get the butter a couple of hours before cooking. Let it warm up to room temperature. The same applies to eggs. They also need to be at room temperature.

2. Once the butter and sugar are well beaten, begin adding one egg at a time. After each addition, beat for 2-3 minutes at high speed. This is the kind of fluffy and light mass we should end up with, as shown in the figure below.

If you are using a stand mixer, change the attachment to a paddle or paddle.

4. Sift the remaining flour. And quickly knead with your hands or mix with a silicone spatula. There is no need to knead for a long time. Shortbread dough doesn't like this. It turns out not so tender and crumbly.

As soon as the mass has become more or less homogeneous, stop kneading.

5. Next, put the dough on the table. Lightly sprinkle the work area with flour. The dough will be very tender and slightly sticky. The main thing is not to worry and do not add additional flour. Next, we will put the dough in the refrigerator and it will acquire the desired structure.

Form the dough into a small sausage or rectangle. We will need to visually divide into three parts. 1/3 of the dough will serve as decoration for our jam pie, and 2/3 will serve as the base for it.

We wrap 1/3 of the dough in a plastic bag and put it in the freezer for now. And we give the rest of the dough a slightly flattened shape. We also put it in a bag or cover it with cling film and put it in the refrigerator. This way it will cool faster and become denser. Place in the refrigerator for 40 minutes.

6. Now take a baking dish. Cover with food paper. We lay out the part of the dough that is intended for the base. And distribute it over the entire surface. The dimensions of the form are 40 by 27 centimeters.

Then spread the jam. Distribute in an even layer over the entire surface.

7. Now we take out that piece of dough that was in the freezer. By this point it should be very dense. And grate it on a coarse grater.

Spread the grated dough over the entire surface in an even layer.

8. And send the pie to a preheated oven to 180-190 degrees. On average, baking time is 35-40 minutes. You are guided by the appearance of the pie. It should be covered with a beautiful golden brown crust.

Take out the pie. Using paper, transfer it to a cutting board. It will be very soft now, but as it cools it will become firmer and crispier. Cut into portions and serve.
