  • boiled eggs - 3 pcs

  • sour cream - 0.5 tbsp. spoons
  • mayonnaise - 2 tbsp. spoons
  • salt and pepper to taste

1. Clean and boil the squid.

2. Remove the carcasses from the water and let cool. Then cut into strips. You can cut it into small or large strips, depending on your preference. If you want the taste of the salad to be more uniform, cut into thin strips; if you want the pieces of meat to be more tangible, cut larger.


3. Boil the rice in lightly salted water in advance. In order for it to cook well and quickly, and not be too sticky, it must first be washed and soaked, and then rinsed again until the water becomes clear.

Or you can use parboiled rice, which does not stick together during cooking.

4. Cooked rice should also be cooled. If you use excessively “sticky” varieties of rice, you can rinse it.

This salad has a name. It’s called “Kamchatsky”, apparently there are a lot of squids in Kamchatka, and that’s why they called it that.

We will need:

  • squid – 500 – 600 gr
  • pickled cucumber - 2 pcs.
  • onion - 1 pc.
  • canned corn - 0.5 cans
  • egg - 4 pcs
  • sour cream or mayonnaise - to taste
  • salt, pepper - to taste

Preparation:

1. Peel the squid and boil it in lightly salted water, then remove it and put it in cold water for a while so that it cools quickly. Dry with paper towels, and if any films remain, peel them off.

Cut into strips and place in a bowl.

2. Cut the cucumber into small cubes and add to the bowl.

3. Chop the onion as finely as possible, also cut them into cubes and add to the already chopped ingredients.

4. Cut the egg into cubes, or you can use an egg slicer. Since using it produces fairly fine cuts, you can cut the eggs into strips.

5. Add egg and corn to the salad, from which all liquid must be drained.

6. Salt and pepper to taste, season with sour cream or mayonnaise. You can also mix sour cream and mayonnaise together.

7. Let stand for a while and serve.


The corn kernels add a positive, bright color to the salad and it looks very appetizing.

With shrimp and crab sticks

Another very tasty salad that I recommend adding to your recipe collection. The amount of ingredients is calculated for a large company. And he can prepare for any holiday. I love making this for birthdays. It turns out not only tasty, but also beautiful. And it never stays on the table; it’s all eaten without a trace.

We will need:

  • squid – 750 gr
  • shrimp – 750 gr
  • crab sticks – 300 gr
  • quail egg - 8 pcs (or 4 chicken)
  • Iceberg or Peking lettuce - 1/4 part
  • green onion - 3 - 4 feathers
  • dill - a small bunch
  • salt, pepper - to taste
  • mayonnaise - to taste

Preparation:

1. Boil squid in salted water for 2 minutes or add boiling water and soak in it. Then remove, cool and cut into strips.

2. Boil shrimp in salted water. It is best to use unpeeled shrimp, in which case the cooking time will be 3 - 5 minutes, depending on their size. There is no need to cook longer to prevent them from becoming tough.

When ready, let them cool and remove the shell. We will not cut them, but will use them entirely. With them the dish will turn out very beautiful.

3. For cooking, you can use either the Beijing variety or the iceberg variety. Both have a neutral taste and go well with all other ingredients.

Cut the salad into small strips or neat cubes.


4. If you are preparing it just for a weekday, you can use chicken eggs, and if you are preparing it for a holiday, I recommend using quail eggs. They will be a wonderful decoration for the entire dish.

Peel the quail eggs and cut them into two halves. Chicken eggs can be cut into cubes, leaving two or three yolks for decoration. Cut the yolks into two halves.

5. Cut crab sticks into small pieces.


6. Chop the dill and chop the green onions as usual.

7. Combine all the ingredients in a bowl, leaving only the eggs and some herbs for decoration. Add salt and pepper to taste. Season with mayonnaise and mix everything.

Use mayonnaise according to your taste. You can mix mayonnaise with sour cream, either in half or in a two to one ratio. It will be delicious either way.

8. Place the salad on a large flat plate in the form of a mound. Decorate with egg halves and sprinkle with herbs. Or put it in portioned bowls.

Squid with champignons

This salad is also quite easy to prepare and contains a minimum of ingredients. But don’t look at it, it turns out very tasty with this composition of ingredients.

We will need:

  • squid – 4 carcasses
  • champignons – 200 gr
  • onion - 1 pc.
  • dill - a small bunch
  • salt, pepper - to taste
  • mayonnaise - to taste
  • bay leaf - 3 - 4 pcs
  • peppercorns - 5 - 6 pcs
  • vegetable oil - for frying

Preparation:

Squid can be boiled not only with the addition of salt. To give it a piquant taste, you can use the simplest spices.

1. Pour water into a saucepan and bring it to a boil, add bay leaf, peppercorns, salt and two to three sprigs of dill to the water. Boil for 5 minutes.

2. Place a couple of squid carcasses into the water and boil them for 2 - 3 minutes. Immediately remove and place in cold water to stop the heating process.

When the carcasses have cooled completely, cut them into strips.

3. Cut the champignons into small pieces. Then fry them in a small amount of vegetable oil until they become slightly soft and golden brown. Don't overcook.


4. Cut the onion into small cubes and add to the mushrooms. Fry everything together a little more until the onion is lightly browned. Add salt to taste. Let cool.

5. Mix chopped squid and cooled mushrooms with onions. Add a little pepper for taste and the remaining chopped dill.

7. Serve in a heap on a flat plate. You can sprinkle with fresh herbs.


If you prepare this salad for the holiday, you can decorate it with canned corn or green peas. Or pomegranate seeds look very beautiful and festive on a white background; you can use them for decoration.

Squid with tomatoes and cheese

Another tasty and beautiful option that will decorate any holiday table and will also be a pleasure to eat on weekdays.

We will need:

  • squid – 350 g (3 carcasses)
  • hard cheese - 150 gr
  • tomatoes - 2 pcs.
  • green onion - 3 - 4 feathers
  • eggs - 3 pcs
  • pepper, salt - to taste
  • olive oil - 2 tbsp. spoons
  • Dijon mustard - 1 tbsp. spoon

For decoration:

  • olives
  • lemon
  • lettuce leaves

Preparation:

1. Clean the squid from films and entrails and boil in salted water for 2 minutes. You can boil it in water with the addition of bay leaf, peppercorns and dill, as was done in the previous recipe.

After the allotted time, remove the carcasses and place them in cold water to stop the heating process.

Then dry with a paper towel, removing any remaining films if necessary. Cut the carcass into two parts and cut into strips.

2. Cut the tomatoes into two parts, cut off the stem and remove the core along with the juice and seeds with a tablespoon. Cut the remaining pulp into cubes.

3. Cut hard cheese into not very small cubes.

4. Cut the eggs into strips; if you have an egg slicer, you can use it.

5. Chop the green onions.

6. Combine all ingredients in a bowl and mix.

7. Line a flat plate with lettuce leaves and place the contents on them. Mix olive oil with mustard and pour on top.


8. If you are preparing a salad for a holiday, then for decoration you can use halves of olives or olives and lemon slices

Squid with carrots and garlic

This salad probably has Korean roots, and is made, as they say, “based on it.” These options are prepared using Korean carrots. The proposed recipe is prepared with fresh carrots, but with some elements typical of Korean cuisine.

A distinctive feature of this recipe is that it is seasoned not with mayonnaise, but with vegetable oil.

We will need:

  • squid – 3 carcasses (350 g)
  • carrots - 1 piece (small)
  • onion - 0.5 pcs
  • garlic - 1 clove
  • salt, pepper - to taste
  • sugar - 0.5 tsp
  • ground coriander - 0.5 tsp
  • vegetable oil - 2 tbsp. spoons

Preparation:

1. Peel the carrots and cut into very thin long strips, cut as for, but much thinner. Then sprinkle it with sugar and add a pinch of salt. Stir the carrots and leave for a while so that the carrots release their juice, and at the same time they become slightly marinated, if such an expression is permissible for salt and sugar.

2. Meanwhile, prepare the squid. Clean them from films and entrails and pour boiling water over them, hold in it for 2 - 3 minutes, then drain the water. Leave them to cool.


Once cooled, cut into fairly large strips so that you can feel the pieces when you eat them.

3. Cut the onion into thin half rings, which then cut in half again, you should get thin quarters. Chop the garlic as finely as possible.

4. Meanwhile, the carrots should have released their juice, so they need to be squeezed out and mixed with the chopped squid.

5. Place all this beauty and deliciousness in a shallow bowl. Place the onion in a mound on top, separating it into individual rings. And put garlic on top of everything.

6. Sprinkle pepper over the entire surface of the salad, and sprinkle ground coriander on top of the onions and garlic.

7. Heat oil in a small frying pan. Pour hot oil over the garlic and coriander, thereby revealing the taste of the coriander and lightly frying the garlic and part of the onion. Let the salad stand for 10 - 15 minutes.


8. Then mix everything together and serve. You can decorate with fresh herbs.

In this recipe, all products retain their original taste; they are not seasoned with mayonnaise. In addition, the taste and smell of garlic and coriander add piquant spicy flavor notes, which makes this salad simply unforgettable in taste.

2. Peel the onion, cut into half rings or quarters, but thinner. Pour in a small amount of water, add sugar and vinegar. Leave to marinate for 20 minutes.

3. Peel the boiled eggs and cut into small cubes.

4. Grate the cheese on a coarse grater.

5. Mix squid, cheese, egg and squeezed onion in a bowl, add carrots and corn, from which all liquid must first be drained.

3. It’s better to choose unsalted Adyghe cheese; salty cheese will not allow all the other flavors to come through. We need to cut it into thin strips.

4. We also cut the pepper into strips, having previously removed its stalk along with the seeds.

5. Combine all chopped ingredients in a bowl. Add sugar, salt to taste, about half a teaspoon.

6. Season with sour cream and stir. Let stand for 10 minutes, then stir again and place in a heap on a flat plate or in a not very deep salad bowl.

We will need:

  • squid - 2 pcs
  • crab sticks – 250 gr
  • mussels – 200 gr
  • peeled shrimp – 300 gr
  • red caviar - 3 tbsp. spoons
  • egg - 4 pcs
  • mayonnaise - 200 - 250 ml
  • salt - to taste

For decoration:

  • green onions
  • parsley
  • olives

Preparation:

1. Clean the squid from the film and entrails, place in boiling salted water and cook for 2 minutes. Then remove the carcasses and place in cold water until completely cool.

2. Cut them into strips.

3. Place shrimp and mussels in boiling salted water and cook for 2 - 3 minutes, then turn off the heat and let the seafood soak in the water for another 5 minutes. This way they will be even juicier and tastier.

4. Boil the eggs, cool and peel. Then remove the yolk, we will need it for other dishes, and cut the white into small cubes.

5. Chop the crab sticks as well.

6. Combine all the seafood and chopped egg, add half the caviar. Add salt to taste and season with mayonnaise.


7. Place on a plate, top with remaining caviar, whole shrimp, olive halves and parsley leaves. Serve to the table. Enjoy eating!

The combination of products in this salad is very unusual. When I first saw this recipe, I thought that there was too much of everything in it, it would probably turn out to be “too much of a taste.” But since I like to experiment in the field of cooking, I prepared it somehow for the holiday.

  • mayonnaise - 250 gr
  • mustard - 1 tbsp. spoon
  • salt - to taste

Preparation:

1. Clean the squid and boil in salted water for 2 minutes. Then briefly immerse in cold water. Then remove, dry with a paper towel and cut into cubes.

2. Boil the tongue until tender and remove the skin. Cool and cut it into strips. Cut the cheese in the same way.

3. Cut mushrooms into cubes, bell pepper into strips.

4. Boil potatoes and eggs until tender, cool, peel and cut into small cubes.

5. Place the peas in a sieve to drain all the liquid.

6. Mix mustard with mayonnaise.

7. Mix all ingredients in a bowl, add a little salt and season with mustard and mayonnaise sauce. Stir, taste and add more salt if necessary.

8. Place in a flat dish. Decorate with the reserved mushrooms, sprigs of herbs, or as your imagination tells you.

How to clean squid easily and simply

As you may have noticed, each recipe begins with the fact that you first need to clean and boil the squid. The cooking time and, of course, the taste of the finished dish as a whole depend on how quickly and correctly we cope with this task.

So, probably everyone knows that if you overcook squid, its meat will become tough, difficult to chew and tasteless. Therefore, in order not to spoil the product, you need to know a few basic rules

I suggest you watch the video, which shows one of the traditional methods of cleaning and boiling squid, and below I will describe other ways in which this can be done.

As you can see from the video, everything is done quite simply. And now I will describe everything in more detail.

Our store shelves mostly sell already peeled frozen squid, and we are more accustomed to dealing with just such a product. Unfrozen shellfish are sold with their heads and tentacles. Therefore, the cleaning methods for these two products are slightly different.

If you purchased whole carcasses, then you need to cut off their tentacles. After cleaning, they can also be used for cooking. Then, holding the carcass with one hand and the head with the other, you need to lightly pull it. This action will allow you to easily remove the head along with the entrails.


Now, in both cases, we have whole carcasses with which we still have to work.

If you use frozen carcasses, then, of course, they must first be thawed. It is better to do this at natural room temperature. There is no need to use a microwave, so as not to destroy the delicate structure of the meat.


There are three cleaning methods:

The film is removed from a fresh carcass in one motion. But with a frozen one you will have to tinker a little.

  1. Such carcasses have a characteristic brownish-pink surface film. It can be removed simply by picking it up with a knife. But this takes a significant amount of time.
  2. Therefore, you can use the method suggested in the video, that is, put the carcasses in boiling water and boil for 2 minutes.
  3. But, personally, I prefer to use the third method. It involves pouring boiling water over the shellfish. As a rule, with this method, the top film immediately begins to curl up. It is necessary to keep the carcasses in boiling water for two minutes, but no more.


After which the carcasses should be immediately placed in cold or ice water. Or you can put them in a colander under running water. In this case, part of the film can be easily washed off with water, and another part can be easily removed with a knife, simply by scraping the surface.

The fact is that if you leave them to cool naturally, the heat treatment process will continue until the meat has completely cooled. And our task is only to remove the films; we do not need additional heating of the meat. We'll deal with this a little later.

Already cleaned and washed carcasses are usually white or slightly creamy in color. However, there is still a very thin film on the outer and inner surfaces, which you simply won’t see, but if you carefully pick it up from the edge, it will easily stretch into a rather long layer. This film must also be removed.


This almost invisible thin film, if not removed, can play a cruel joke on us. It is this that makes it impossible to obtain tender and tasty meat. This is a secret that not everyone knows and naturally not everyone removes it. And then they say that squid should not be cooked at all, since it has no taste.

And so before us is a whole carcass, cleaned from the outside. If you use it for salad, you can make a transverse cut and also clean it from the inside. If you use the carcass for stuffing, you will not be able to cut it, so you will need to carefully turn it out and clean it from the inside.

Inside we will definitely have to remove the chitinous chord; it has a transparent color and is quite long and dense, but by pulling it from below, it is quite easily removed.

Also, sometimes there may be remains of entrails inside, which also need to be removed. And again, we need to remove the thin transparent film.

After all manipulations, the carcasses should be thoroughly washed again.

How to cook squid

There are also three ways to cook squid. And now we will look at them all.

  • 1. Place the carcasses in cold water, salt the water, bring it to a boil, and cook for 1 minute. Such carcasses will cool at room temperature.

The disadvantage of this method is that it is not recommended to leave the pan during the entire process. Squids should be cooked for exactly a minute, and no more. The time is calculated from the moment when the first “bulls” appear on the water. Otherwise the meat will turn out tough.

  • 2. Place the carcasses in boiling salted water, cover with a lid, and bring to a boil again. Then open the lid and cook for another one and a half to two minutes. Then immediately place in cold or ice water to stop the thermal cooking process.


This is the easiest and fastest way, in which the meat turns out tender, soft and very tasty.

  • 3. Pour boiling water over the cleaned carcasses and let them sit for 1 minute. Then drain the water and rinse the carcasses thoroughly. Then pour boiling water over again and leave again for 1 minute. Then do everything again.

In the last pour, the water must be salted.

You should always cook shellfish in salted water. The structure of the meat is such that later it will no longer be possible to salt it; it will not absorb the required amount of salt. And you will no longer get the desired taste.

The disadvantage of this method is that it takes the longest time. You need to boil the water three times, and let it sit for a minute three times. However, if there are a lot of carcasses, then this method may be justified. I'll explain why.

Squid should be cooked in a large volume of water. Moreover, put no more than two carcasses into the water each time.

This is necessary so that the water heats up faster and the heat treatment process is minimal. If you put three or more carcasses in a pan, the heating process will take longer, and the meat will simply sit in hot water, not really cook to the desired state, and may become tough before it has time to cook.

Therefore, if there are a lot of squids, then with the second method it will also take a long time.

Squids prepared by any of these three methods do not differ in taste and softness of meat. Therefore, you can safely use any of them.

Sometimes people ask the question - what to do if the squid turns out tough? We didn’t time it, forgot about them and overcooked them...

Do not throw it away under any circumstances! Cook them over low heat for at least another hour, or even better, two hours. The meat will become soft again, this is how a canned product is prepared. But this is only as a last resort, all the benefits and taste are in a properly prepared product..

From all that has been said, we can conclude that cleaning and cooking squid is not so difficult. Once you try it, you will understand it yourself. It is enough to know only the basic techniques and rules, however, as elsewhere.

But the correct use of this product, useful in every sense of the word, will allow you to prepare many tasty, healthy and dietary dishes. Such, for example, as today’s salads offered to your attention.

Mostly frozen squids are sold. You should choose carcasses that have never been defrosted, otherwise they will spread and have a bitter taste and smell of old frozen fish.

If the squid is sold in briquettes, then a properly frozen carcass can be easily separated from the briquette. Another criterion is appearance. The carcass should be dense, the upper skin of the squid can be pinkish, lilac, or slightly brown, but the squid meat itself must be white. If it is yellow or purple, the squid has definitely been defrosted.

How to defrost

It's best in the air, and even better - in the refrigerator.

How to clean

The squid has two skins: an outer, colored one, and a second, transparent one. Both need to be removed. If the squid is sold with tentacles, cut them off near the squid's eyes, then remove the beak and ink sac.

The skin of the carcass will be easier to remove if you scald it with boiling water before defrosting. The outer skin will peel off on its own, but the second one needs to be picked up from the wide end of the carcass and removed like a stocking. Then rinse the carcass and leave to continue defrosting.

Finally, turn the squid inside out, remove the chord and inner membrane and rinse thoroughly again.

Squid soups

There is a simple pattern: the squid remains soft for the first 3 minutes of cooking, then it becomes tough. After 30-40 minutes it becomes soft again, but loses volume.

This is the basis for preparing squid soup. Most often, squids are boiled separately, then set aside, vegetables, cereals, pasta and other ingredients are boiled in the resulting broth, and when serving, squids, cut into rings or strips, are added again. Below we will give a simple but tasty example of such a soup.

Homemade soup with squid

Ingredients:

500 g potatoes

250 g frozen squid

1 onion

1 carrot

1 parsley root

2 tablespoons vegetable oil

Salt, spices and herbs to taste.

Thaw, clean and rinse the squid. Throw them into boiling salted water and cook for no more than 3-5 minutes. Cut the boiled and cooled squid into strips. Finely chop the onion, carrots and parsley root and fry in vegetable oil until the onion becomes transparent. Throw the vegetables and diced potatoes into the squid broth, add salt and pepper, and cook the soup until the potatoes are ready. When serving, place squid in each plate, pour over the soup and sprinkle with finely chopped herbs.

Raw squid can also be added 2-3 minutes before turning off the soup, as in the following recipe

Mushroom soup with squid

Ingredients:

250 g squid fillet

4-5 medium potatoes

2 medium carrots

1 onion

50 g dried mushrooms

20 g vegetable oil

2 teaspoons flour

5 glasses of water

Salt, pepper, herbs to taste

Soak the dried mushrooms for 3-4 hours and cook in the same water until soft. Strain the finished broth and rinse the mushrooms. Prepare the sauté. Fry finely chopped carrots and onions in vegetable oil with the addition of tomato paste and flour until the mass becomes homogeneous and the onions are transparent. Peel the potatoes and cook in the broth until tender, then add salt and pepper, add chopped squid fillet without skin, boiled chopped mushrooms, season the soup with sauté, cook for 2-3 minutes and serve. However, squid can be cooked in soup for a longer time. To do this, they are first fried so that the crust does not allow them to decrease in volume. After 30 minutes the squid becomes soft again. You can verify this by preparing hodgepodge according to the following recipe.

Solyanka with squid

Ingredients:

300 g squid

1 onion

2 pickled cucumbers

1 tablespoon tomato paste

3 tablespoons vegetable oil

2-3 cloves of garlic

ground black pepper, parsley or dill, salt to taste

Lightly beat the peeled and washed squids, cut into small pieces and fry in oil. Lightly fry the chopped onions and place them together with the squid in a saucepan, add tomato paste, peeled and sliced ​​pickles, finely chopped garlic, salt, ground black pepper, and water. Cook covered for 30-40 minutes.

Before serving, sprinkle the solyanka with finely chopped parsley or dill.

Squid stewed with vegetables

Ingredients:

500 g frozen squid meat

2 medium onions

1.5 cups milk

2.5 cups flour

3 tablespoons butter

salt and ground pepper to taste

Thaw and clean the squid carcasses. Chop into lengthwise strips, add salt to taste, roll in flour and fry.

Finely chop the onion and lightly fry in vegetable oil until transparent. Then sprinkle it with flour and continue to fry for another 5-7 minutes, stirring continuously.

Place the onion in a saucepan, add milk, bring to a boil and add the fried squid. Sprinkle all this with salt, ground pepper and simmer over low heat for 25-30 minutes, covering the saucepan with a lid.

Serve on a platter, garnished with chopped parsley or dill. Boiled or fried potatoes are good as a side dish.

Here is a recipe for squid stuffed with onions, eggs and mushrooms.

Ingredients:

6 squid carcasses

150 g ham

200 g champignons

2 medium onions

0.5 cups rice

100 hard cheese

4 tablespoons mayonnaise

Vegetable oil for frying

Thaw, clean the squid carcasses and boil in salted water for 3 minutes. Boil the eggs hard and cut into cubes. Cut the ham into cubes too. Finely chop the champignons and fry with onions, boil the rice and cool, grate the cheese, mix everything and add mayonnaise.
Fill the squid carcasses with the resulting minced meat, place on a baking sheet, brush with mayonnaise, cover with foil, place in the oven preheated to 200 C and bake for 15 minutes. After this, remove the foil and bake for another 5-10 minutes.
Useful tips

To make the squid meat more tender, you can pre-beat it. It is better to undercook squid than to overcook it. For greater softness, instead of boiling the squid, blanch it with steam for 3-4 minutes. It is recommended to add half a lemon or a bag of black tea to the boiling water where the squid is cooked.
