Preparation

    Chop about half a medium-sized fork of young cabbage, you will need 250-300 grams (no more, otherwise the filling will turn out too watery and will not bake well). Finely chop the white root part of the green onion with a knife. Heat a mixture of butter and vegetable oil in a frying pan, and simmer the cabbage and onions. Since the vegetables are young, 10 minutes is enough for them to become soft and excess moisture to leave the pan. At the very end of cooking, add salt and cool.

    Chop the hard-boiled eggs into cubes. Finely chop the green onion stalks and dill - they will make the filling incredibly aromatic and tasty. Mix with cabbage. Adjust the amount of salt and pepper to taste. The filling is ready.

    Turn on the oven to preheat to 200 degrees. For the dough, combine kefir (room temperature, fat content does not matter), eggs, salt and sugar in a bowl. Pour in the flour and baking powder sifted through a sieve, mix thoroughly with a whisk or mixer. The consistency of the dough should be similar to that of pancakes, similar to thick sour cream.

    Grease the baking dish generously with vegetable oil. Pour in about 2/3 of the dough and place the filling on top. Take a mold with a diameter of 25 cm or more. If the pan is too small, the cake will not bake properly.

And that’s why we bake them mainly on weekends or holidays. But sometimes, someone at home will ask you to bake delicious pastries during the week. So you can’t refuse...

And for such cases, there are recipes for so-called quick pies. They are made quite simply, the dough literally takes 5 minutes to prepare, and rests for another 15 minutes. Well, while it’s baking, you can spend time with the children or yourself. Such baked goods have only one drawback: they are eaten as quickly as they are prepared. And even faster... And it’s always not enough. So knowing this, I usually always bake two pies at once. So that everyone is already full for sure.

People call them aspic; I have also come across the name “vegetable charlotte”. And in fact, they can be made with different fillings, not just vegetable ones. You can add ham, sausage, fish, and cheese - everything will be delicious!

Here it’s either your imagination running wild, or whatever you find in the refrigerator. But today we are preparing two of the simplest options with cabbage. The dough and filling are the same in both cases. Only the order in which the products are placed has been changed, and in the second option cheese has been added for variety.

We will need:

  • cabbage - 350-400 gr
  • onion - 1 pc.
  • egg - 1 pc. For filling
  • egg - 2 pcs. for test
  • kefir - 450-470 ml
  • butter - 1 tbsp. spoon
  • salt - to taste
  • sugar - a pinch
  • soda - 1 teaspoon (partial)
  • vinegar - to extinguish soda

Preparation:

1. Cut the onion into thin half rings.


Fry it in vegetable oil until golden brown. Do not overcook so that the filling turns out uniform and light in color. Pour 1/3 cup of water and simmer the onion until the water has completely evaporated.


2. Chop the cabbage into smaller pieces so that it fries faster.


Add it to the onion. Today I have young spring cabbage. Therefore, there is no need to fry and stew it for a long time. 13-15 minutes is enough. First, fry it in an open frying pan for about 5 minutes, then pour in 1/3 or even a little less of a glass of water, add salt to taste and cover with a lid. Simmer over low heat for no more than 10 minutes. Stir occasionally to prevent burning.


3. While the cabbage is simmering, knead the dough. To do this, pour kefir into a large bowl. Add salt and a pinch of sugar. Quench the soda with vinegar and add to kefir, mix. Beat in two eggs. Mix again.


To knead the dough, use either a spoon, a whisk, or a mixer. I use a whisk. The dough is not difficult and mixes quite easily.

4. Now slowly stir in the flour. If you have time, it is better to sift it and saturate it with oxygen. This will make the baked goods rise and become taller.


There is no need to add all the flour at once to avoid lumps. Pour in about half a glass.

Knead the dough until smooth and leave for 15 minutes. During this time it will become more uniform, and if we didn’t even notice and left small lumps, they will disperse. We got it like not very thick sour cream. Typically, dough of this consistency is used to make pancakes.


5. While the dough was being prepared, the cabbage was already cooked. Now you need to add eggs to it. I usually add them boiled. But today I had little time, and I didn’t cook them in advance. Therefore, I drive them raw directly into the frying pan, and stirring them, fry them together with the cabbage.


Everything is fried quickly, in 1-2 minutes. This quick option saves me time today. I have two pies, so the filling with two eggs is double.


6. Put the oven on preheat, we need to get a temperature of 180 degrees. During this time, we prepare the mold, I take a glass one and grease it well with butter.

The first cake will be baked just like that in the mold, for the second we will use baking paper. The paper is needed to make it easier to remove it from the mold. Ready, he is capricious and does not always want to get out of it on his own.

Apparently he “always wants to be in shape.” Therefore, we don’t skimp on the oil; we give it a fairly thick layer. If we use baking paper, we also coat it thoroughly with oil. Otherwise you will have to eat directly with the paper. It will bake so hard that it won't come off.

7. Pour half of the dough into the prepared pan.


Now lay out the filling and carefully level it out. We try to keep the cabbage on the surface, without drowning it in the dough.

8. Pour the remaining dough on top of the filling. Flatten it using a tablespoon.


9. Place the dough in a preheated oven and bake for 40 minutes.


10. Take it out and grease the top with butter. Cover with a wide board and turn over.

Well, did he jump out right away, or is he being capricious? I hope right away. But if it still doesn’t want to come out, then we carefully turn it back over and carefully pick it up from the edges with a silicone spatula. Then we turn it over again. Now it's definitely out. Cover it with a large flat plate and turn it over again.

11. Cut into portions and place on plates.


Serve with sour cream and sweet tea. As a rule, after 10 minutes there is not even a crumb left from the baked goods. But we have an answer to this unpleasant circumstance in the form of a second product, which is also about to be ready.


As an alternative, I suggest an interesting conversation at the table for now. Time flies quickly over a mug of tea, and now the second one is already “ripe.”

For us, he is already ripe. And now I’ll tell you how to do this option, we call it “lazy”. Now you will understand why.

Lazy cabbage jellied pie with egg

In essence, this is the same pie, only we do not put it in a mold in layers, but mix the dough together with the filling. And we post it in this finished form. But so that you don’t keep returning to the first recipe, I’ll quickly describe this one too.

We will need:

  • cabbage - 350-400 gr
  • onion - 1 pc.
  • egg - 1 pc. For filling
  • cheese - 100 gr.
  • egg - 2 pcs. for test
  • kefir - 450-470 gr
  • flour - 300 g (2 cups without a slide)
  • vegetable oil -4-5 tbsp. spoons
  • butter - 1 tbsp. spoon
  • salt - to taste
  • sugar - a pinch
  • soda - 1 teaspoon (partial)
  • vinegar - to extinguish soda

Preparation:

1. Fry the onion, add shredded cabbage to it, add salt and fry and simmer for 10 - 15 minutes. Add either a diced boiled egg or a raw egg to the cabbage filling and fry it together with the cabbage. There is no need to fry the boiled meat, just cut it.

2. Prepare the dough from kefir, eggs and flour. Don't forget to add salt, a pinch of sugar and soda.

3. Mix the finished dough with the filling. Pour the contents into a generously greased mold. For this baking option, I use baking paper, which also needs to be thoroughly greased.


4. Place in an oven preheated to 180 degrees. Bake for 20 minutes.


5. During this time, grate three hard cheeses. After 20 minutes, sprinkle cheese on the top, and put it back in the oven for another 20-25 minutes.


6. Take out the finished baked goods and transfer them to a flat plate. Cut and serve hot, with sour cream and tea.


When they had eaten both pies, they began to study public opinion on the subject - “Which one tastes better.” At first they said they were both delicious. After some time, they thought about it and said that after all, the first option looked more like a pie. Two layers of dough, and in the middle there is filling. The second is that it’s unclear where the dough is and where the filling is. And in general, it’s not clear what the filling is, and the dough doesn’t look like dough.

  • Today we prepared dough with kefir. But you can use both sour cream and mayonnaise to prepare it. Or maybe half half of one, and half of the other. Or all three components in equal proportions. Pour the prepared dough over the cabbage. We often pierce it with a spoon or knife so that it penetrates downwards.

Grease the mold. Chop the cabbage into large strips, add spices to it, you can limit yourself to just salt or add garlic, different types of pepper, and herbs. Then knead it with your hands and place it on the bottom of the prepared form, but there is no need to compact it, let it be a loose mass.

Salt the eggs, add a pinch of sugar, pour kefir into them and beat. Add flour and ripper. Now just mix everything.

Pour in the shredded cabbage, smooth the dough and sprinkle it with white sesame seeds.

Send the pie with young cabbage to bake. At 180 degrees it will cook in about 40 minutes. The time largely depends on the diameter of the mold and the thickness of the filling.

Cabbage goes well with meat products. If you have some minced meat, meat or lard, you can safely add them to the filling. Sausages and smoked meats, boiled rice, and mushrooms will also fit perfectly here.

  • Wheat flour – 1.5 tbsp;

  • Soda – 1 tsp;

  • White cabbage – 250 g;
  • Onions – 0.5 pieces;
  • Vegetable oil – 40 ml;
  • Fresh herbs - 0.5 bunch;

How to make a quick pie with cabbage from jellied dough with kefir

First of all, to bake a homemade cabbage pie, make the filling. To do this, remove the top damaged leaves from the head of cabbage, and then finely chop the cabbage. For the filling, also peel the onion. Chop the onion (or half, depending on size) into small pieces with a knife.

Pour vegetable oil into the frying pan. Once the oil is hot, add the chopped cabbage and onions to the pan. Season the ingredients with salt and ground black pepper. Stir.

Simmer the white cabbage until tender, stirring it occasionally (10-15 minutes). At the end of stewing, add chopped fresh herbs, after washing and drying them.

Leave the finished filling to cool, and start preparing the dough for the pie. By the way, you can already turn on the oven. Set the temperature parameters to 180 degrees. So, combine kefir and sour cream in a bowl. Add baking soda and mix ingredients. Next, break a couple of chicken eggs into the mixture. Mix the ingredients well with a whisk.

Start adding wheat flour and salt (about a teaspoon) to the mixture. Immediately whisk the flour into the mixture using a whisk.

The jellied dough for a quick pie with cabbage is ready. It is similar in consistency to thick sour cream.

Grease a baking dish with any fat. Sprinkle the bottom and sides with breadcrumbs. Spread half of the dough over the pan.

Place the cabbage filling on the dough. Level it out.

Fill the cabbage filling with the remaining dough. Place the pie in the oven to bake.

After 15 minutes, remove the pie from the oven and make cuts on the surface for beauty. Brush the cake with beaten egg and sprinkle with sesame seeds. Return the pie to the oven for another 20 minutes.
