I first tried zucchini in batter, the recipe for which you see on this page, during my student years in Dnepropetrovsk in a small cafe. And recently, when I visited Dnepr, I again saw them on the menu in the same cafe! Twenty years later!
It's amazing how popular all these summer vegetables are here in the south! And now is the time to cook them.

Over the years, I myself have cooked fried zucchini in batter more than once. Simple ingredients and quick preparation make this dish irreplaceable. You always need to dip them in flour and egg, but you can vary the top coating by mixing white crackers, grated cheese, nuts or garlic.

To avoid frying them in batches in a frying pan, I cook them in the oven for 20 minutes at 180 degrees Celsius. That's all! Crispy on the outside and soft, tender on the inside, cheese-breaded zucchini is ready!

  1. 3-4 young thin zucchini (I used zucchini);
  2. 1/2 cup flour;
  3. 1 egg;
  4. 1/2 cup breadcrumbs;
  5. 1/4 cup of finely grated cheese (I used suluguni);
  6. salt - to taste.

Wash the zucchini, cut off the edges, cut into pieces about 10 cm long, and then cut each piece into 5-6 long thin “sticks”.

Turn on the oven and let it preheat to 180 degrees Celsius.
Line a baking sheet with aluminum foil and grease with vegetable oil.
In a wide, shallow bowl, beat the egg until smooth.

Pour flour into another bowl.
And in the third bowl, mix breadcrumbs with cheese, grated on a fine grater.

Dredge each squash stick in flour, shake off excess flour, dip in egg and finally roll in breadcrumb/cheese mixture.
Place the sticks prepared in this way on a baking sheet at a short distance from each other.
Spray them with oil using kitchen spray.

Bake the cheese-crusted zucchini on the middle rack of the oven for 15 minutes, or until the breading is golden brown.
Remove the baking sheet from the oven and use tongs to turn each squash stick over to the other side.
Return the pan to the oven and bake for another 5 minutes.

Hot zucchini in batter, baked in the oven, sprinkle with salt to taste. You can also sprinkle with additional grated cheese.
Serve the battered fried zucchini with your favorite sauce in a cup.

Grate the cheese on a coarse grater.

Grind the herbs finely in a coffee grinder and mix all the dry ingredients.


Wash and dry the zucchini. Cut off the edges and divide the vegetables into 8-10 parts.


Pour the oil into a suitable tray and place the zucchini sticks in it. Mix.

This dish has a very interesting structure and non-trivial taste. These sticks are low in calories and are suitable for dietary nutrition. You can cook it for a late dinner or take it with you to work for a snack. When cooled, the crispy properties of the finished dish disappear; this does not affect the taste.   • zucchini or zucchini - 4 pcs.
  • hard cheese - 100 gr.

  • dried oregano - 1/2 teaspoon
  • dried basil - 1/2 teaspoon
  • garlic powder - 1/4 teaspoon
  • salt - 1 teaspoon
  • vegetable oil - 2 tbsp. spoons
  • fresh parsley - 2-3 sprigs, optional.

How to cook diet zucchini sticks with a crispy crust

1. Turn on the oven and preheat to 180 degrees. Cover the baking sheet with baking parchment and set aside for now.

2. In a small bowl, combine hard cheese grated on a medium grater, all spices, salt and mix.

You can choose seasonings to suit your taste. You can replace the basil and oregano with rosemary, dried parsley, dill, or use Indian masala seasoning if you like your treats a little spicier.

3. Cut the zucchini into long sticks, place in a bowl, add vegetable oil and mix thoroughly so that the vegetables are coated with oil on all sides.

If you wish, you can use any oil: nut, pumpkin, sesame, olive or regular sunflower. In this case, dietary zucchini sticks will have a new flavor.

5. Place the zucchini sticks on a baking sheet, skin side down, sprinkle with a mixture of cheese and spices and bake in a hot oven for 15 minutes until golden brown and crispy.

How to make crispy zucchini sticks

We cut the zucchini (you don’t have to peel them if they are young) into sticks 7-10 cm long, 1 – 1.5 cm thick. The thickness of the sticks should be the same, plus or minus, so that they cook at the same time.


To make the breading, pour the eggs into a bowl, add salt and stir until smooth.


In another bowl, put grated cheese on a medium grater, breadcrumbs, finely chopped garlic, salt, pepper, Provençal herbs. Mix thoroughly. As you understand, you can use any spices to suit your taste.


We take each stick one at a time and first lower it into the eggs.


Then roll in breadcrumbs and cheese.


Place the zucchini in a mold greased with a small amount of vegetable oil.


Place the mold with the zucchini in an oven preheated to 190 degrees C and bake for about 20-25 minutes. Baking time depends on the oven and the thickness of the zucchini slices.


Place the finished zucchini sticks on a plate and serve immediately.

I offer a very simple and tasty zucchini appetizer that is prepared very quickly. It’s better to eat the sticks hot, they crispy, if they cool down they’re also delicious, but they won’t be as crispy anymore, but still delicious!!!

We will need:

2 small zucchini,
2 eggs,
hard cheese - 80 g.,
breadcrumbs 100-120 g.,
Flour - 100 g.
Ground black pepper, Provençal herbs, salt to taste,

Cooking method.

We cut the zucchini into plates 1-1.2 cm thick, and then into cubes in length. Sprinkle with salt and leave for 30 minutes to release the juice.

Beat the eggs into a bowl, add a little salt, and beat. You can add squeezed garlic, but I didn't want to. Lately, I've been kind of careful about it. Mix bread crumbs, grated cheese, pepper and herbs.

We wash the zucchini from salt and dry it. Pour flour into a bag, add cubes of zucchini and shake well so that everyone is covered in flour.

Prepare a baking sheet, lightly grease it with vegetable oil or line it with baking paper.

Now I’ll tell you how to cook conveniently. Place a bowl of beaten eggs and breading next to it. With your right hand, dip well into the eggs.

Then we take it with the left hand and bread it, and with the left hand we place it on a baking sheet, it’s simple.

If someone is left-handed, change hands. Sprinkle oil on top.

Place in the oven for 10-15 minutes, depending on the thickness of the zucchini, until the breading on top is browned. Adapt the temperature to your oven, mine was 180-200 degrees, you can turn it over once, but I didn’t do that.

Place on a plate, very tasty served with ketchup, I used yellow tomatoes

I like it when baked zucchini is not completely soft. and they crunch a little.

I still have the breading and beaten eggs. Since I bake the bread myself, so as not to waste, I brushed the bread with egg and sprinkled breading on top.

After a while the bread is ready and also has a crispy crust.
