  • Cottage cheese - 500 g.
  • Eggs - 4 pcs.
  • Butter - 30 g.
  • White flour - 150 g.
  • Sour cream or melted butter for dressing - 30 g.

Preparation:

1. Well-pressed, fresh, non-acidic cottage cheese is rubbed through a sieve or passed through a meat grinder twice.

2. Separate the whites from the yolks of four eggs.

3. Place the butter in a deep cup and grind with the yolks, adding them one at a time.

4. Add grated cottage cheese, a pinch of salt to the resulting mixture and mix with a spoon,

until you get a homogeneous mixture.

5. Beat the whites until foamy and place on top of the curd mass.

6. Sift the flour over the whites and knead the soft dough with a spoon.

7. When the dough becomes quite thick, but not yet smooth, turn the dough out onto a floured work surface, this could be a table or cutting board.

8. For convenience, you can divide the dough into several parts. Roll the prepared part of the dough into a sausage, about 2 cm thick. Patting the top with a knife, give the dough a slightly flat shape.

9. Cut the dough into small pieces, constantly rolling the knife in flour.

10. Pour 3 liters of water into a saucepan, bring to a boil, add about 3 teaspoons of salt. Place the dumplings in boiling water and stir. Close the lid, let it boil and reduce the heat.

11. Cook the dumplings for about 5 minutes, at a constant boil. Place the finished dumplings on a dish with a slotted spoon.

12. Pour the dumplings with sour cream or melted butter.

We serve very tasty and easy-to-prepare dumplings to the table.

5. Add another spoonful of flour and mix again and observe the consistency. We need the dough to be very soft, sticky, but at the same time not liquid.

If you shift the flour, the dumplings will be beautiful, smooth, but tasteless. They will be so dry and dense. If you add little flour, the dumplings may fall apart during cooking.

We have kneaded all the dough and will not add any more flour.

6. Sprinkle the table with flour and lay out the dough. The dough turned out sticky, moist, and soft.

7. Now you need to roll out the dough. Roll it out with your hands into a sausage. We got a lot of dough, so we divide it in half.

8. Roll out half. Here you don’t need a lot of flour for rolling. Roll out as thick as you wish. If you want larger dumplings, make them thicker, smaller, thinner.

7. Take the dough out of the refrigerator, add flour to the table, knead it a little and form small sausages from it. Cut the dough into 2-3 pieces to make it easier to work with.

8. Turn on the stove and put on the water. Bring it to a boil.

How to cook classic lazy dumplings

If you want to make dumplings according to all the rules, then wipe the cottage cheese. If you don’t have time for this, and the dish itself is lazy, then simply mix the product with egg, sand, and semolina. Add a spoonful of oil.

Another very tasty variation of lazy dumplings made from cottage cheese with flour, but also with berries. If we don’t have fresh cherries, take them from the freezer. You can also use berries in your juice, just pour them into a sieve in advance, remove excess juices.

Ingredients

  • 180 g cherries;
  • egg;
  • 300 g cottage cheese;
  • 3 spoons of semolina;
  • 2/3 tbsp. flour;
  • 50 grams of sugar;
  • 50 grams of sour cream.

How to cook

Curd dough is prepared in the usual way. Combine cottage cheese with cereal and add sugar and salt. Grind everything together, add one large egg. Let it sit, then add flour. We determine its quantity ourselves.

While the dough is standing, remove the seeds from the berries. If the cherries are frozen, let them thaw completely. Otherwise there will be too much juice.

Roll out the entire dough into a long ribbon 5-7 cm long. Place a row of cherries in the middle until the very end. We make a tube so that the filling is inside.

Now this tube needs to be cut. We try to make pieces with berries inside, cut between them. Then we compact each one so that the cherry does not “pop out”.

Cook in the most usual way for a couple of minutes after surfacing. Serve with sour cream, you can sprinkle with sugar or cinnamon powder.

In fact, this is just an example of sweet lazy dumplings. In addition to cherries, you can take cherries, pieces of fresh or dried fruit. Dumplings don’t have to be cooked in water; they also turn out great steamed, the filling doesn’t fall out, and the juiciness is preserved.

  • wheat flour - 1 tbsp.
  • butter - 3-4 tbsp

1. How to make lazy dumplings with cottage cheese in literally 5 minutes? First of all, take a clean bowl and mix all the ingredients in it.

2. Gently knead the dough with your hands, it will be tender and soft.

3. Then form it into such a cool roll, like in this photo, and cut it into pieces.

4. Final stage. While you are preparing the dough, place a pan of water on the stove; you can add a little salt to the water to your taste. As soon as the water boils, throw in the resulting curd dumplings and cook until they float to the surface. Next, stir them and cook for another 5 minutes until done.

Important! To prevent the dumplings from sticking to the bottom, as soon as you place them in the pan, do not forget to stir.

5. Decorate them with berries, now the season is just beginning, you can decorate them with strawberries, raspberries and even cherries, or with melted butter and sour cream. For the kids, I add sugar on top to make it sweeter and tastier. Bon appetit!

In this option, I decided to add poppy seeds for sophistication, aesthetic appearance, and unusual taste. No flour is used here, but they are prepared with semolina.

  • cottage cheese 9% - 400 g
  • sugar - 4 tbsp. l
  • semolina - 4 tbsp. l
  • salt - a pinch
  • egg yolk - 2 pcs.
  • flour (for rolling) - 6 tbsp. l
  • poppy seeds (optional) - 1-2 tsp

1. Take the cottage cheese, if it is grainy, crush it with a fork or potato masher. Sprinkle with sugar and salt, stir.

2. Then beat in the egg yolks. Nothing bad will happen if you add proteins. They will just be more moist and you will have to add more flour. And I wanted to show you this cooking option without flour. Add semolina and leave this mixture to stand for 25 minutes so that the semolina swells properly.

As the semolina swells, sprinkle with poppy seeds if desired.

3. Next, roll up this sausage roll and flatten it a little with your hand. Using a kitchen knife, make lazy dumplings from it, just cut it into square or diamond-shaped pieces. Roll them in flour.

  • Cottage cheese – 500 g
  • Flour - 1 tbsp.

  • Check the quality of semolina (it often harbors insects), measure out the required amount.

  • Break eggs into a bowl with cottage cheese, add sugar and salt. Grind until smooth.

  • Peel the potatoes, cut into large pieces and boil in salted water until soft. Mash to make mashed potatoes.

  • Place cottage cheese, pureed through a sieve, on top.
  • Mix everything with your hands until you get a homogeneous mass. Prepare in advance for the fact that this will take quite a bit of time. So in fact, this recipe will only be useful to hardworking housewives.
