Brushwood recipe with condensed milk. Brushwood with condensed milk

As a child, my grandmother often prepared very interesting sweets for us in a large cauldron. She caught them with a slotted spoon, and then she only had time to sprinkle a little powdered sugar before we happily reached for these “curls.”

They crunched in the mouth, as if someone had stood nearby and broken a whole bunch of fragile dry branches. Can you guess what we liked to eat? Of course, this is a gorgeous thin crispy brushwood!

Nowadays it can often be found in sweets or culinary stores. They will sell you a whole package of these delicious cookies, and they will weigh only 200-300 grams. It is so light and airy!

Why don't you make this delicacy yourself? A minimum of products and time, and the joy of your household will be much greater than from a store-bought dessert.

Real classic brushwood looks as if it consists of a thin airy crispy crust. It’s as if you’re holding large chips in your hands, only made from sweet, unleavened dough, which swells with delicate bubbles in hot oil. By the way, the latter appear thanks to the vodka added to the composition, which you won’t even taste.

The cookies don’t have time to soak up the oil because they fry in literally a matter of seconds. People ignorant of the culinary process may think that you prepared this delicacy in the oven.

By itself, this pechevo may not seem too sweet. Therefore, it is additionally sprinkled with powdered sugar.

We will need:

  • Flour – 250 gr.
  • Egg – 2 pcs.
  • Sugar – 2 tbsp. l.
  • Vodka – 1 tbsp. l.
  • Salt – 1 pinch.
  • Powdered sugar - to taste for sprinkling.
  • Sunflower oil – ½-1 cup for frying.

Preparation:

1. Sift the flour so that it is more saturated with oxygen. Pour 200 g into a cup. and mix it with granulated sugar. Season with a small pinch of salt.

Grandma always said that you need to add a little salt to sweet pastries. This way the taste of all other components is better revealed.

2. Break the eggs into the flour mixture and pour in a spoonful of vodka. Start kneading the dough. First you can do this with a spoon, and then with your hand.

3. Remaining 50 gr. Pour flour onto a work surface and transfer the thick dough into it. Knead it well so that it becomes an elastic and at the same time very tight ball.

Then cover with a bowl and let stand for about 20 minutes. After this time, the dough will become smoother, more homogeneous and a little softer and more pliable.

4. Using a rolling pin, turn the bun into a translucent rectangular layer. It should be so thin that the surface on which it is rolled out can be seen through. In fact, the thickness should be literally 1-2 mm.

Cut equal strips with a knife or a curly cutter. In each of them, cut holes 2-5 cm long in the middle.

5. Carefully lift one end of the workpiece and turn it through the cut several times so that the sides of the strip turn into twisted flagella. Repeat this with all the rolled out dough ribbons.

6. Pour oil into a deep frying pan and heat it. With quick movements, transfer 2-5 rolled products into a frying pan and fry on both sides for 5-10 seconds until golden brown.

The brushwood cooks very quickly, so it is better not to leave the stove so that it does not turn into coal.

7. Catch the finished crispy curls with a slotted spoon or tongs and place them on a paper towel if you are afraid that they are still a little saturated with oil.

Carefully transfer to a large plate and sprinkle powdered sugar on top to your liking.

Delicious Crimean brushwood with vodka dough recipe

Crimean brushwood is considered the most delicious and famous in our country. Skilled housewives prepare it according to a recipe with vodka that is almost a hundred years old.

Thin, folded sheets of dough are dropped into boiling oil and deep-fried for just a few seconds. The resulting sweetness is so crispy and airy that you want to immediately eat it all at once, down to the very last crumb.

We will need:

  • Flour – 1 cup.
  • Water – ¼ cup.
  • Egg – 1 pc.
  • Vodka – 2 tbsp. spoons.
  • Salt – 1 pinch.
  • Sunflower oil – ¾ cup.
  • Powdered sugar - to taste for sprinkling.

Preparation:

1. In a deep bowl, beat a fresh egg with a pinch of salt. Then add water with a couple of tablespoons of vodka and shake this mixture again until it becomes homogeneous.

2. Sift the flour and pour it into the egg mixture. Mix well, first with a fork, and then knead by hand until an elastic dough is obtained.

3. Divide the workpiece into 2-4 parts to make it more convenient to work further with small pieces.

4. Using a rolling pin, roll out three-millimeter thick ribbons, a couple of centimeters wide and any desired length (from 5 to 8 cm is quite enough). Make slits in the center of each strip and twist.

5. Heat oil in a thick-walled bowl and add several pieces of workpieces into it to deep-fry for a few seconds on both sides.

6. All that remains is to place the brushwood on a plate and dust it with sweet sugar crushed into powder.

Well, eat, of course, washed down with hot aromatic tea!

Video on how to prepare thin crispy roses

Today we will look at different options for preparing your favorite delicacy. Each new recipe will include a new dough recipe.

This method also differs in that it produces a completely different form. This kind of brushwood is baked somewhat less frequently than its standard versions. Because these rose-shaped items seem to take more time. But in reality this is not entirely true. It will take almost the same amount of time.

But how beautiful they turn out!

Here in the dough we use only flour and eggs, and literally a spoonful of cold water (there is a recipe where water is not even added). But my grandmother always said that at least a teaspoon should be added to any baked goods. The dough with its addition becomes more “fluffy”, that is, tender.

Please note that the dough recipe does not use sugar at all. Therefore, you need to generously sprinkle the roses themselves with powdered sugar. They can also be served with condensed milk, and they are very tasty with honey. You tear off the petals, dip them in a rosette of honey, and wash them down with aromatic, delicious tea.

Imagine how delicious it is!

Friends, be sure to prepare. The recipe is not only delicious, but also very beautiful!

Crispy tasty brushwood cooked with milk

With milk, not only pancakes turn out thin and tasty, but also brushwood. Although it only requires 3 tablespoons, it still adds a more delicate taste to a delicious sweet snack, and thanks to it the dough can be rolled out very thin.

An aromatic note of vanilla, added during kneading with flour, will fill the whole house with a pleasant aroma that will make you want to immediately taste the baked goods.

We will need:

  • Flour – 1.5 cups.
  • Egg – 2 pcs.
  • Milk – 3 tbsp. spoons.
  • Salt - 0.5 teaspoon
  • Powdered sugar - 2-3 tbsp. spoons.
  • Vanillin, salt - 1 pinch each.

Preparation:

1. In one bowl, beat warm eggs with milk at room temperature with a whisk until smooth.

2. Sift flour into another bowl. Mix it with a pinch of salt and sugar.

Don’t forget to add aromatic vanilla to this dry mass. Then pour in the egg-milk mixture and make a fairly soft and elastic dough.

3. Make 2-4 koloboks out of it and roll each of them to a thickness of one and a half millimeters.

4. Cut each rolled layer into five-centimeter squares and make a two-centimeter cut in the center of each of them. Pass one of the ends through the slot to make something like a bow.

5. Heat fresh sunflower oil in a cauldron. There should be enough of it so that the workpieces, lowered in one layer, float on the surface as if in deep fat, and do not fry, as if like potatoes in a frying pan.

Fry until the brushwood turns golden on both sides.

6. Remove the finished batch using a slotted spoon and place on an iron sieve to remove excess oil (usually there is none, but a lot depends on the quality of the sunflower).

7. Transfer to a beautiful plate and sprinkle with sweet powder.

Serve and eat with pleasure!

A simple recipe for making a lush delicacy using kefir

If you add kefir to the dough, you won’t get super-thin baked goods. However, you will be provided with delicious lush twisted sticks, which look very similar to thin sweet elongated baursaks!

The brushwood on this fermented milk product turns out to be very tender and porous on the inside, and the outside is covered with a golden brown crust, which will have a pleasant crunch when fresh.

Such a beautiful and tasty deep-fried delicacy is usually served during tea drinking, always sprinkled with sweet sprinkles.

We will need:

  • Flour - 3 cups.
  • Kefir – 1.5 cups.
  • Egg – 1 pc.
  • Sugar – 3 tbsp. l.
  • Soda, salt - ½ tsp each.
  • Sunflower oil – 2 tbsp. l. + for frying.

Preparation:

1. Pour kefir into a deep cup and stir soda in it. Wait until the bubbling reaction begins (usually 5 minutes after combining the ingredients).

Then add a fresh egg, sugar and salt and a couple of tablespoons of butter. Beat the kefir mixture until smooth. Add the sifted flour in parts and mix until it is convenient to do it with a spoon or whisk.

2. Transfer the contents of the bowl to the work surface of the table and knead with your hands into a fairly pliable dough. Roll it into a bun and cover with a waffle towel so that it does not have time to dry out during the 20 minutes of proofing.

3. Cut off a third of the dough and roll it out into an even layer. Do the same with the remaining two parts of the test.

4. Cut into rectangles and make a slot in each of them. You can continue to fry them as they are, but the ends of these strips rolled through a hole 1-3 times will look much more interesting.

5. Brown the products in hot oil on both sides. During the time it is deep-fried, the dough will increase in volume and become nice and golden brown.

6. Place on paper napkins for a few minutes, and then put them in a deep bowl or tray. Sprinkle powdered sugar on top through a strainer.

Brushwood is very tasty both hot and cold. You can even dip it in honey, jam or condensed milk. Wash it down with milk, jelly or any favorite hot drink.

Brushwood with sour cream - step by step recipe

Pechevo is made even more fluffy with sour cream. These crispy donuts! Both adults and children will be crazy about them. And the subtle aroma of vanilla will drive any gourmet crazy.

In this recipe, the baking topping can be kept minimal, because the dough will be sweet on its own.

We will need:

  • Sour cream 20% – 200 gr.
  • Flour – 250 gr.
  • Powdered sugar – 100 gr.
  • Sunflower oil – 1 cup.
  • Vodka – 20 gr.
  • Vanilla sugar – 20 gr.
  • Egg – 2 pcs.
  • Sugar – 2-3 tbsp. l.

Preparation:

1. Remove all ingredients from the refrigerator in advance and warm to room temperature. Break the eggs into a deep bowl and beat them with sugar. Then add rich sour cream and whisk thoroughly again.

2. Pour vodka into the egg-sour cream mixture. It will evaporate during frying, but will add airiness to the dough.

3. Mix vanilla sugar with flour and sift them into the liquid mixture. Start kneading first with a spoon and then with your hands.

4. Knead the dough well so that it becomes elastic and does not stick to your hands.

You may need to lightly dust the surface of the table with flour, but do not overwhelm the dough with it - it may become tough and then the brushwood may turn out just as tough.

5. After 15 minutes of proofing, roll out the finished dough into a rectangle half a centimeter thick. Cut it into equal strips and make slits in them.

6. Form twigs from each ribbon of dough. It is enough to twist them through the slot only 1-2 times.

7. All that remains is to deep fry the beautifully rolled dough. Since the brushwood is quite thick and the dough was prepared with rich sour cream, it should be simmered for about a minute, not forgetting to turn it over during this time so that both sides are browned and fried.

8. The finished crumpets should lie on a paper mat for a couple of minutes to remove excess oil. And then they can be sprinkled with white or colored powder and served.

It is also very tasty to serve them with condensed milk or honey.

It would seem that what’s wrong with this... Thin dough fried until crispy, but it brings so much joy and pleasure to children. And the parents, like seeds, will gnaw on the tender strips. Particularly delicious with sweet milk tea.

Even if you don’t have powdered sugar in your house, brushwood will still come in handy for treating unexpected guests. It takes just a few minutes to prepare it, and the conversation at the table accompanied by a light “crackle” can last for the whole evening.

And although vodka is used in most recipes, this treat can still be eaten even by those who are driving. Ethyl alcohol will evaporate during frying and will not have the slightest effect on the body. Even a breathalyzer will not determine that the composition contained a small amount of alcohol.

Bon appetit and crispy pleasure with homemade brushwood!

Over the years, cooks have come up with a variety of baked goods for tea. Among all this tasty variety, you can remember brushwood. There are various variations in the preparation of brushwood, and recipes have been created with different additives. Typically, brushwood is made in the form of curls, which are fried in oil.

Brushwood can be prepared using different products. So, if you cook brushwood with ordinary water, then the baking will be tighter. If the brushwood is made with sour cream or kefir, then it will be airy and tender. If you want a more crunchy and crumbly version, then cook brushwood with the addition of vodka. Lovers of crispy, but at the same time softer brushwood, should use the recipe for making brushwood with milk.

One of the most popular options for preparing brushwood is baking with condensed milk. This product will add sweetness, pleasant aroma and unique taste to baked goods.

Brushwood with condensed milk

Product composition:

  • three chicken eggs;
  • 430 g condensed milk;
  • a tablespoon of vodka;
  • half a liter of vegetable oil;
  • 400 g flour;
  • powdered sugar.

Preparation progress:

  1. First you need to beat the eggs until foam appears. Add condensed milk to it, pour a tablespoon of vodka. Vodka can be replaced with brandy in this recipe. Shake the mixture very well until it becomes completely homogeneous. Add wheat flour to the prepared mixture, which we first sift through a sieve. Then knead the dough with your hands.
  2. Place the finished dough on the table and roll it out as thinly as possible with a heavy rolling pin. The optimal thickness is the thickness of the dough equal to the thickness of the knife blade. It is from dough of this thickness that you can prepare the most delicious and crispy brushwood.
  3. Divide the dough into strips, then cut each one in the middle. One half of the strip of dough must be inserted into the hole so that the result is classic loops made of brushwood. At this time, boil the oil in a saucepan or very deep frying pan.
  4. Place the prepared brushwood in a pan and fry in it for literally one minute (even a little less). It is imperative to ensure that the brushwood does not burn and stick to the bottom of the container. The finished brushwood should be carefully placed on a paper towel, where excess vegetable oil will drain from the sweets.

To serve, place the brushwood in a beautiful dish and sprinkle powdered sugar on top.

As usual, you can cook in a frying pan, in the oven or in a slow cooker. Choose your option and make your loved ones happy!

If you love all sorts of sweets and aromatic pastries, then you might be interested in this note:

Brushwood from batter on water with molds

I remember this type of brushwood from childhood, like from my grandmother. This is its super tasty USSR-Rovsky version, which our grandmothers loved to cook, and the most economical type. Although of course a lot of oil is used, I would not call it very economical 🙂, perhaps a low-budget option. These cookies are not for the lazy; you need to spend a lot of time.

And what a beauty it turns out to be simply lovely, the main thing in our time is to find such molds, but if they don’t exist, then you can buy them, as I did recently, or cook them without molds, but of course, using another recipe that is not a liquid dough as a basis.

We will need:

  • egg - 2 pcs.
  • water or milk - 1 tbsp.
  • sugar - 0.5 tbsp.
  • salt on the tip of a knife
  • vodka - 1 shot glass
  • flour - 1 tbsp.
  • frying oil

Cooking method:

1. Whisk the egg, sugar and salt until slightly foamy. Add milk and water to the eggs. Stir, then add vodka.

2. Why do you think vodka is needed here? In order for the crunches to take in less fat. Gradually add flour to the ingredients, mix well so that there are no obstacles, the dough should turn out liquid like sour cream.

3. Let it rest aside for 20 minutes with the lid closed. Now take a special figurative stick with a shape and place it in a heated frying pan with vegetable oil. Keep in the oil for 1 minute, and then dip the stick in the dough so that the dough sticks halfway to the pan.

Important! The frying pan with oil should be hot, but the oil should not boil in it.

And now fry until cooked, that is, until it has a beautiful color. Don't worry, it will fall out of shape on its own.

Openwork, figured, lace cookies are ready! Oh, how great this looks. And with condensed milk or jam it will disappear in a matter of minutes.

Interesting! Have you ever heard about pink or salted brushwood? Today I found this little article in which I learned that if you make it without sugar, but only with salt, you can easily get homemade chips. Salt can be added to the oil for frying. To make these pastries pink, you need to add beet juice or raspberry juice to the dough.

Puff pastry brushwood in the oven

This option is the simplest, because the dough will be used store-bought, ready-made, so very little time will be spent preparing such a miracle. So, I suggest you look at this option:

Brushwood in a slow cooker

Of course, you can prepare this delicacy as a miracle assistant. To do this, take any version of the dough for brushwood and bake it, fry it in a multicooker bowl.

It's a pleasure to fry in it, because all the bowls are very deep. Pour in vegetable oil, heat the oil well on the “Frying” mode, and place the prepared crunches there. Easy and fast, and even without splashing at all.

Tatar brushwood

Well, in conclusion, I would like to show you a recipe for Tatar brushwood, or as they also call “Urama” or “Kosh tele” - oriental sweet roses. This version will not use powdered sugar, but instead will use a sweet coating of sugar.

We will need:

Dough:

  • egg - 6 pcs.
  • sugar - 2 tbsp
  • flour - enough to make an elastic dough, like dumplings
  • water or milk - 4 tbsp
  • soda - 0.5 tsp
  • vegetable oil

Sugar syrup:

  • sugar - 1 kg
  • water - 500-700 ml

Cooking method:

1. Mix all the ingredients for the dough and knead the dough. If desired, soda can be quenched in vinegar.

2. After kneading, let the dough rest for about thirty minutes, covering it with a towel.

You can take chopsticks to eat the roll.

4. Take a deep saucepan, add vegetable oil and heat it up high. Place these beautiful flowers in the deep fryer.

Important! When the syrup boils, do not forget to remove the foam.

Homemade sweet brushwood, just like when you were a child! Bon appetit!

You can use regular honey instead of sugar syrup. Just pour it over these baked goods.

P.S.By the way, you can cook Brushwood made from sour yeast dough. Here's a step-by-step video of this recipe:

That's all for me. Bye-bye everyone! See you tomorrow on this blog!

Khvorost with condensed milk is a variation of the traditional Khvorost cookie, which was popular in Russia back in the 1600s. These are crispy, curl-shaped cookies fried in fat. It should be noted that the delicacy acquires its characteristic crunch by adding strong alcohol to the dough. Traditionally, the dough consists of milk and sour cream, but today we will prepare a special version of cookies: with condensed milk. It gives the products sweetness, rich taste and aroma.

Ingredients

  • Eggs - 3 pcs.
  • Condensed milk - 430 g.
  • Vodka - 1 tbsp. l.
  • Flour - 400 g.
  • Sunflower oil - ½ l.
  • Powdered sugar

Preparation

Beat the eggs until foamy, add condensed milk and a tablespoon of vodka or brandy. Shake the mixture well until it is homogeneous.

Pour wheat flour into it, which must be passed through a sieve in advance, and knead the dough well with your hands.

Now you should put the dough on the table and, using a heavy rolling pin (it will be easier to work with it), roll out the mass as thinly as possible. It is recommended to roll it out to the thickness of a knife blade, then the structure of the brushwood with condensed milk will be ideal. We cut the layer into strips, cutting each one in the middle.

By inserting one half of the dough strip into the hole, we form traditional shaped cookies while the oil boils in the pot. Place the products in the pot and fry for about 45 seconds. Make sure the cookies don't start to burn.

Blot the finished sweets from grease on a paper towel, put them in a beautiful container and sprinkle with powdered sugar.
