What forms are suitable for baking in the oven? How to cook in ceramic dishes in the oven

Connoisseurs of pottery will certainly choose an environmentally friendly ceramic form. The dishes are not harmed by salts and acids, and dishes cooked in them retain their vitamins and do not lose their great taste. Ceramic products are easily washed from dirt. Their original appearance is also worth attention - modern models look stylish, and thanks to bright colors you will fill your kitchen with color and a bright mood. Such kitchen utensils can also be placed on the holiday table to make it more convenient to place portions on plates.

Heat-resistant glass forms are also not far behind. Many housewives like the absolute transparency of the products; the condition of the contents can be monitored throughout the entire cooking process. Glass is hygienic and practical; in this form, food is baked evenly and remains hot for a long time after removal from the oven.

Like ceramic cookware, glass cookware is also quite suitable for stewing vegetables and meat, preparing casseroles and sweet pastries. It is recommended to place molds made from these materials in a not yet heated oven, and only then turn it on.

In the catalog of our store you will find high-quality kitchen utensils made of stainless steel; they also do an excellent job of stewing and baking. The high thermal conductivity of the material allows you to speed up the cooking process. Do you like aluminum molds? Such models are also present in our product list. If treated with care, products even made of thin metal will last for years.

Bright colored silicone molds

To create unusual-looking pies and cupcakes, you can use silicone containers. They are quite heat-resistant (withstand up to +250 degrees), and it is easy to remove the contents from them, since the material is elastic. Silicone is certainly not afraid of corrosion, but it must be handled carefully; you cannot cut the cake in this form. Also, do not wash the container with a hard brush.

A wide variety of baked goods are made in silicone molds:

  • cookie;
  • cakes;
  • eclairs;
  • cupcakes.

You can also cook savory dishes in them, for example, meat soufflés. The original shape of the finished product will certainly decorate any table. But before putting the contents into the container, place it on a baking sheet in advance, since due to the lack of rigidity of the body, the dough may overflow when transferring the molds to the oven.

I will not undertake to make a comparison, since I only have two glass forms and I use them extremely rarely due to their size and shape. One is very large, thick-walled, of the well-known PYREX brand, the second is simpler and smaller, unfortunately, I can’t say anything about the manufacturer, there is no marking on the form. I have no complaints about them, it’s just that my personal experience with their practical use is small. Although I can still note that they can be easily washed after baking using baking soda.
But regarding ceramics, I can present my impressions and recommendations in detail.
It all started with this recipe, I remember it well, and thanks to Olya and her husband! After reading the recipe, I didn’t seem to be impressed, but at the same time, you know, it happens - I was hooked! And I began to look for a ceramic form, especially since ceramics, in principle, are my great love - vases, pots, dishes... Fortunately, my first purchase was a ceramic saucepan with a lid DEKOK (Austrian brand). This is just a magical pot! its unsurpassed advantage is that it is suitable for use both over an open fire and in the oven. And for the first time I baked meat according to the specified recipe in it, if you look at the link, you will find my extensive impressions about this. Since then, for almost three years now, I have had this saucepan in almost daily use - simmering, stewing, baking are my favorite methods cooking and it is perfect for this. The only drawback for some may seem to be its volume, it is small, it seems like a liter and a half, but for me it is just perfect. So - the practical qualities are excellent, I highly recommend it. She is obedient when cared for. During this time, of course, it has already fried a little, but these traces are little visible, since it is dark brown in color, and besides, for the most part it still has to work with fatty foods. In general, using the same baking soda is enough for me to wash it; sometimes, due to an oversight, the bottom gets slightly fried - everything washes off perfectly after soaking, the hard side of a sponge or a wad of foil removes everything without difficulty or effort.
As you can imagine, after this saucepan I couldn’t stop)))
I’ll just list the manufacturers, from what I have and have personally tested in practice, all forms are excellent in use (and in baking too) and in care:
- thick-walled porcelain with glass polishing from BergHOFF from the Bianco series, just super;
- ceramic glazed small dishes for portioned baking (and serving, by the way, too!) from BergHOFF, also from the Geminis series; in the same series there are larger pans with a very beautiful color;
- lighter and thinner, but just as excellent from Cuizimate, imported from Thailand, I can’t name the exact material, but it looks like glazed ceramics;
- porcelain food warmers from STAHLBERG (Gipfel), super, they worked equally well when roasting meat and baking, an additional bonus - they are very good for serving, I love them, I have two different volumes and shapes;
- there is a pot and a couple of forms from Borisov ceramics, also not bad, in any case very reasonable in price, but for some reason they are used more for serving, although they are heat-resistant and quite suitable for use in the oven;
- recently we have on sale products made from red clay made in Ukraine, there is no exact indication of the manufacturer, they are positioned as handmade, they are not subject to mandatory certification, so I can’t give more accurate information, but I really like them, I took a sausage maker with a lid and a couple bowls, porridge is simply wonderfully baked in the oven, if you’re interested, I have a photo of this dish in my album, you’ll understand what I mean, it’s recognizable, I’ve also seen it in recipes from site users;
- and the last thing, this is my dream for now, but the recommendations were received from a very authoritative and respected source: a ceramic baking pot, which is also suitable for use on an open fire, from the Sacher brand.
I hope my experience will be useful to you at least to some extent)))

editor-in-chief of the website "M.Vkus"

A modern housewife can hardly imagine her life without an oven or mini-oven, in which you can cook a pie or pizza, bake a duck, make roast beef or fish in foil with herbs. Baking is also one of the healthiest cooking methods and quite dietary, because if you wish, you can do without the use of fats. The modern kitchen utensils industry offers a huge number of different baking dishes. In today’s M.Vkus review, we’ll figure out what they are, which ones they are, and for what purpose they should be purchased.

1. Split round pie pan

Not a single housewife who loves to please her family and guests with homemade pies can do without such a form in the kitchen. Charlotte, cupcake, cheesecake, crumble, multi-layer cakes and even cottage cheese casseroles - all these and many other pies are easiest to prepare in this springform form. When the cake is ready, you use a spring to make the sides wider and remove the top of the pan. At the bottom, the pie can be served. The ideal option is to choose a pan with a good non-stick coating likeTefal Easy Grip 25 cm made of high-quality carbon steel, resistant to mechanical damage and severe temperature changes. Both sides are coated with a special non-stick material, so you don't need to grease the bottom and sides with a lot of oil. The mold is easy to clean and can be washed in the dishwasher. The diameter of 25 cm is perfect for baking a pie for a small company or a family of 4-6 people.

2. Cake or muffin tin

If you like crumbly raisin muffins or chocolate muffins, then it makes sense to purchase a special form. Depending on which option you like best, you can choose the appropriate shape. For example,for 6-12 muffins . Usually it is a silicone or metal rectangle with portioned niches for cupcakes. Baked goods are easily removed from a silicone mold, while in a metal mold it is more convenient to place a paper mold and pour the dough into it. If you prefer one large pie for the whole family, thenbrick-shaped how they baked in the Soviet confectionery industry,in the form of a relief pyramid or even ring-shaped . The latter option works especially well with marbled cupcakes.

3. Roasting dish for meat, fish, vegetables

It is most convenient to bake meat, fish, vegetables, and prepare a variety of casseroles, including lasagna, in square or rectangular shapes. They can be either metal, glass or ceramic. Let’s say right away: if you not only want to cook delicious dishes for your family, but also don’t mind taking beautiful pictures of them and posting them for everyone to see on social networks, then the ones that look most beautiful in photographs are colorful ceramic shapes .

The most practical option is heat-resistant glass containers with plastic lids. First, you cook a large portion of meat in French, lasagna with Bolognese sauce, or bake vegetables and mushrooms under a cheese crust, eat some of it, and cover the rest with a lid and put it in the refrigerator directly in the same form. We advise you to pay attention toTefal Clip&Close containers made of high-strength glass that can withstand severe temperature changes. Due to this, you can use it for cooking in the oven or microwave and store it in the refrigerator or even freezer. The plastic lid, made of safe, BPA-free material, securely closes the container, so it can be transported without any problems. The form can be washed in the dishwasher. You can choose from containers with a volume of 0.2 l, 0.5 l, 0.9 l, 1.3 l and a large one of 2 liters.

4. Round baking dish with low sides

Lovers of French quiches, bright open pies and pizza cannot do without this form. As in the case of a springform pan, it is better to choose utensils made of high-quality metal. It is from this material that such forms are most often made. When purchasing, carefully consider the choice of side height and diameter. Depending on what exactly you prefer to cook more often,look for a suitable form.

For quiches and open pies, it is better to take an option with a raised wavy side, likeTefal Easy Grip 27 cm (J1628314) , while for pizza a wide shape with a very low side, like this one, is more suitableTefal Easy Grip 34 cm (J1629014) . If you can’t decide and cook both pies and pizza, then it’s better to buy the middle option. For example,Tefal Easy Grip (J1629714) with a diameter of 28 cm and a side height of 4 cm. All these forms are made of high-strength carbon steel and with a high-quality non-stick coating. The textured surface of the bottom prevents the dough from sticking, and special recesses allow you to remove the finished dish in its entirety, preventing it from breaking. A special feature of these forms is the wide, textured handles, which greatly facilitate the task of removing hot dishes from the oven.

5. Cast iron goose pan or duck pot

If you are a fan of stewed dishes, then it makes sense to purchase a special goose or duck pot. The best option is made of cast iron, with a massive heavy lid. Perhaps you still have one from your grandmother, because a modern cast iron casserole dish of good quality will cost you a pretty penny, so it’s better to ask your elderly relatives if they have such utensils gathering dust on the mezzanine or in the country. In addition to poultry, you can stew meat with vegetables, potatoes, cabbage in it, cook soups or even porridge in the oven. Due to the uniform heating of thick cast-iron walls, dishes come out as if from a Russian oven.

Just keep in mind that a large bird will not fit entirely in the duckling pan, and besides, in the duckling pan it is not so much baked as stewed in its own juices. So if you prefer to cook a whole duck or goose, adding a side dish in the form of potatoes, chestnuts, apple slices or vegetables, then we recommend purchasing a wide baking tray likeTefal Easy Grip (J1627414) measuring 42 by 25 cm. High sides will protect the oven from leaking meat juices, and the non-stick coating will allow you to clean the dishes in a matter of minutes. In addition to poultry, this form is convenient for preparing meat, fish, cutlets, and cookies for a large company.

Here, in fact, is the entire set of molds that you might consider purchasing to go with the tray of your oven or mini-oven. Of course, our list does not include all the forms that can be found in the store. For example, there are rectangular ones with high sides for regular or meat bread, oval ones, in the shape of a star or heart, and silicone ones for different types of cookies. It’s impossible to count all the options, so the final choice should be made based on what exactly you cook in the oven most often. The main thing is to buy dishes of good quality so that they serve you for a long time and are safe for the health of your family.

High-quality containers meet basic operating requirements: withstand high temperatures, provide good thermal conductivity, have non-stick properties and good wear-resistant characteristics, are practical and durable.

Classification by material

Most modern baking dishes are made of stainless steel. They are durable, practical and wear-resistant. Thanks to the thin sides of the steel pan, baked goods cook faster even at low temperatures.

The heating rate depends on the type of metal used to make the mold. Containers made of light stainless steel heat up more slowly than those made of dark steel.

Steel molds have different types of internal coating - tin, aluminum and Teflon.

Important! Only metal molds have a removable design. In such containers, the sides can be of different thicknesses - thin (2 mm) and thick (1 cm).

High-quality steel products have a reliable design, properly sealed seams, and are resistant to deformation and mechanical damage.

A practical and durable material that is popular with consumers. Cast iron containers are used for preparing homemade baked goods, desserts, and for roasting meat, fish and vegetables.

They have a reinforced bottom and thick walls for even heating of food. Cast iron cookware prevents burnt bottoms and soggy middles.

They are characterized by good thermal conductivity and fast heating, which leads to faster baking. Aluminum containers are intended for preparing cookies, cake layers, muffins, muffins, tartlets and pizzas.

When using the mold, it is necessary to adhere to the exact cooking time. This will prevent the food from burning or undercooking.

In terms of thermal conductivity characteristics, ceramic cookware is not inferior to cast iron products. Slow and even heating ensures quality cooking.

Ceramic baking dishes are universal, they are intended for use in ovens and. Ceramic containers have thick, finely porous walls for proper heat distribution.

This ensures that food simmers slowly and retains nutrients.

The Teflon coating can withstand high temperatures, so it is convenient to cook dishes in such containers that require a cooking temperature of over 200 degrees.

To ensure long service life for Teflon containers, it is recommended to use wooden or silicone spatulas and spoons for them. The inner coating of Teflon cookware is made of aluminum or stainless steel.

For those who rarely prepare pastries, disposable paper baking dishes are the best option. They are made of multilayer parchment, paper or cardboard and are resistant to high temperatures.

Products are presented in blocks of 36, 24, 12, 6 pieces on a single monolithic base or separate stands.

This type of baking dish is made of heat-resistant tempered glass that is resistant to low and high temperatures, microwaves and abrasives. The material is able to retain heat, so dishes in such dishes cool down gradually.

Glassware is used for preparing charlottes, pies and casseroles from vegetables, fish and meat. Glass is safe for use in gas and microwave ovens.

The material is able to withstand a temperature range from -41 to +230 degrees, so such containers are intended for baking and freezing foods. They do not require constant lubrication.

To get the finished dish, you need to carefully turn the sides of the container inside out. Silicone containers of different diameters and colors are intended for preparing homemade baked goods and confectionery products.

How to use baking dishes

Any baking dish is subject to strong heat during use. Therefore, it is important to follow simple safety rules to avoid possible problems.

  • Metal products cannot be used in microwave ovens. To care for stainless steel molds, mild detergents and special sponges are used.
  • Aluminum molds are intended for cooking in ovens only. Mild soap solutions or soda are used as care products.
  • Teflon with non-stick coating. To care for such containers, mild household chemicals without abrasives are used. It is better to replace hard brushes and metal scrapers with soft, moisture-absorbing sponges.

  • Silicone. Before use, such molds should be thoroughly greased with oil. Silicone products are intended for use in ovens and microwaves. They are not suitable for cooking on electric or electric stoves.

To care for silicone, use a neutral detergent or soap solution applied with a sponge. To avoid damaging the silicone, it is not recommended to cut or pierce baked goods with sharp objects.

  • Glass containers are designed for preparing dishes in the oven and microwave, and for storing food in the freezer. Glass does not tolerate sudden temperature changes, so a hot mold can only be rinsed with warm water.
  • For care, soap solutions, soft sponges and brushes are used.

  • Ceramic. This type of cookware is suitable for cooking in ovens. It is resistant to high temperatures, but sensitive to mechanical damage. Care consists of washing with neutral household chemicals using soft sponges.
  • Paper. They are disposable tableware, so they do not require maintenance. Before use, it is recommended to thoroughly lubricate the inner surface with oil. After cooking is completed, the mold is cut and disposed of to remove the finished product.

Ceramic baking dishes

Today, the modern market offers a wide range of baking dishes. A variety of designs, shapes, materials - making a choice is sometimes very difficult. Each variety has its own characteristics, which you need to know about before purchasing food utensils.

Ceramic containers are in great demand because they allow you to cook food using a minimum amount of fat. Meat or fish cooked in ceramics acquires an extraordinary taste and aroma. In this form, dishes that require slow simmering turn out very tender.

Ceramic baking dishes are in demand in establishments that specialize in healthy eating, since a more environmentally friendly material than ceramics simply cannot be found. Even when exposed to high temperatures, such dishes do not emit any harmful substances and do not oxidize when in contact with an acidic or alkaline environment.

Advantages of ceramic forms

Ceramics are valued for many qualities:

  • This is an environmentally friendly dishware because it is made from clay.
  • The coating of baking dishes has increased resistance to mechanical stress. It is impossible to scratch it when cooking or washing.
  • Ceramics have anti-allergenic qualities.
  • Ready-made dishes in such dishes are environmentally friendly. They do not contain toxic substances that have been absorbed from the walls of the mold.
  • Such dishes heat up evenly and slowly, so the dish will not be burnt on one side.
  • Ceramic is ideal for baking because it retains heat in the dish for a long time.
  • Slow simmering with a minimal amount of fat or without adding it at all allows you to preserve all the beneficial substances, vitamins and microelements that are so necessary for the human body.
  • Ceramic baking dishes have another remarkable property - the ability to accumulate moisture and release it to the products during the cooking process. Experienced chefs immerse them in cold water for 10 minutes. Ceramics absorb moisture and when cooked, the dishes turn out unusually juicy, as they are delicately steamed.
  • Dishes prepared in a ceramic dish do not burn.
  • Ceramic baking dishes have a beautiful appearance, so they can be placed on the table.
  • In ceramics you can cook dishes not only in the oven, but also in the microwave.

Flaws

  • The disadvantage of ceramics is its fragility - such dishes are afraid of sharp impacts and falls.
  • Ceramic molds should not be placed in a hot oven, since a large temperature difference is detrimental to ceramic coatings.

Types of forms

Heat-resistant ceramics are made from special types of clay and coated with a low-melting glass alloy - glaze. It penetrates the pores of the clay and seals it. As a result, such dishes acquire a characteristic shine and smoothness.

Depending on the shape and area of application, there are several types of ceramic forms:

  • Pots. Standard sizes: capacity 100-150 ml (used for baking and stewing) and capacity 0.5 l - for cooking in the oven with further serving of first courses (a ceramic baking dish with a lid is supplied).
  • Casserole. This baking dish can come in a wide variety of shapes. For example, in the form of a pig or fish. The kit may come with or without a lid.
  • Cocotte makers. Small pots with elongated handles. Chefs use them to prepare and serve poultry, crabs, mushrooms, vegetables and other hot dishes.
  • Fondue. This form is used when preparing dessert with chocolate and fruit. The set also includes saucers and forks.

Ceramic baking trays can have a wide variety of shapes and capacities. They are used for baking pies, cookies, and preparing meat and vegetable dishes. Models with lids and handles are available, with characteristics similar to a traditional frying pan.

How to choose a quality ceramic mold

The choice of baking pan or pan largely depends on its size and shape, and the reputation of the manufacturer is a guarantee of a long service life.

For baking, use molds with low sides and handles. For cupcakes, dishes with grooved sides are perfect, which will give this delicacy an even more attractive and appetizing look.

Deep ceramic baking dishes with a lid are useful for stewing meat, vegetables and fish. They can be rectangular, round or square.

To bake biscuits, cakes and soufflés that require high temperatures, you need a round ceramic baking dish with high sides.

Yeast pies and shortbread cakes also require a round shape, but with thick walls and low sides.

Rectangular ones are suitable for lasagna and other casseroles.

Ceramic molds for baking bread have a standard, so to speak, “bread” appearance, but recently round, triangular, and baguette models have begun to be produced.

Cupcakes or baskets are baked in small ceramic molds.

Ceramic portioned baking dishes for cupcakes or aspic allow you to serve not only general, but also individual dishes.

Before buying a ceramic mold, you need to check the quality of the coating on the cookware, inspect the product in bright light for unevenness, chips and other defects. You can’t cook in such dishes because they lose their strength.

When choosing forms you need to consider:

  • the shape of the dishes, the thickness of the tray and the height of the walls;
  • what is the maximum temperature it can withstand;
  • warranty period;
  • all recommendations and rules for using ceramic baking dishes.

It is also very important that the baking dish matches the oven so that its rays can penetrate through the thickness of the walls of the pan and be evenly distributed throughout the dish.

How to use a ceramic baking dish: some recommendations

In order for ceramic dishes to last for a long time, it is important to follow some care rules:

  • Do not pour cold water into a heated dish or place food from the refrigerator in it. Also, ceramics should not be subjected to temperature shocks. It is forbidden to place cold ceramic dishes in a heated oven.
  • It is not advisable to wash the molds in the dishwasher as accidental chipping of the ceramic may occur. The dishes can be easily cleaned with a soft sponge and liquid detergent.
