  2. Place a stick of butter in a small ladle/saucepan, add sugar and, stirring, melt over low heat. There is no need to boil the mixture - as soon as the sugar grains are completely dissolved, turn off the heat.
  3. Pour cocoa powder into the hot oily liquid, thanks to which the dessert will turn dark and acquire the taste of chocolate.
  4. Next, pour in milk at room temperature. Mix vigorously until smooth.

This is how we always made dessert chocolate sausage in childhood, and I remember this taste: very chocolatey and not at all cloying, moderately sweet, pleasant, creamy, but not greasy.   • sugar cookies – 400-450 g,
  • milk (2.5%) – 5 tbsp. l.,
  • sugar – 200 g,
  • cocoa powder – 4 tbsp. l. with a slide,

How to make chocolate sausage from cookies

First, I suggest preparing the nuts. You can use any nuts in this sausage, but, in my opinion, it turns out tastier and more harmonious with walnuts. We check the nuts for the presence of shell residues and partitions, remove all excess and place the nuts in a dry frying pan. You can warm them whole, as is, or pre-chop them and then warm them up. I mash the nuts using a wooden masher directly in the frying pan. Grind finely or coarsely – at your discretion.


Afterwards, heat the chopped nuts until they crackle slightly and a bright nutty aroma appears - this is, on average, 5-10 minutes. Stir the nuts periodically during the process to prevent them from burning.


During this time, you can grind the cookies into crumbs. If you like the cut sausage to have more large fragments, you can break some of the cookies into large pieces. Of the modern devices for crushing cookies, a blender is ideal. And the old fashioned way - with the help of the same masher. The second option suited me better. To prevent cookie crumbs from scattering all over the kitchen, put the cookies in a bag, release the air, tie and knead the cookies. Simple, fast and convenient.

Now prepare the chocolate and milk mixture. Mix cocoa powder with sugar. To achieve the homogeneity of the chocolate mass as quickly as possible, it is better to sift the cocoa.


Add milk to the dry mixture and stir everything thoroughly. The mass turns out to be quite thick.


Add diced butter to it and place the container on the stove, turning it on to medium heat.


Heat the mixture, stirring constantly, until the sugar is completely dissolved. The mixture should not boil. The result should be a homogeneous chocolate mass, without grains of sugar or cocoa.


Divide the cookie-nut crumbs into two parts: leave about 2/3 in a common container (in it we will knead the chocolate mass - the basis of the sausage), pour 1/3 and put it aside for now. Then pour the entire chocolate mixture into a common container.


Knead the mass until smooth, then add the remaining cookie and nut crumbs in parts until the mass becomes thick, viscous and quite plastic. The mixture should not spread or, on the contrary, be too thick and dry. In the first case, the finished sausage will not hold its shape well; in the second, it will crumble during molding and crumble when slicing. You can focus on large parts - they should not fall out of the chocolate mixture. Another option for checking consistency is that you can easily form something out of the mass, a ball, for example.


Now you can form the sausage. Cover the work surface with cling film folded in 2-3 layers, or with foil/parchment. We spread part of the chocolate mass on it, giving it the shape of a rectangular bar (this is easier than trying to immediately form a perfectly even sausage). Now this block is not very even and neat, but later we will easily fix this.


We wrap our bar in film and tightly twist the film around the edges, like a candy wrapper, thereby forcing the chocolate mass to become denser. Now you can roll the sausage, giving it a more neat round shape. From the specified amount of ingredients I got 3 small pot-bellied sausages.


We hide the formed chocolate sausages in the freezer for about 1 hour, after which you can take them out and remove them from the film. It is better to store the dessert in a “package” in the freezer, cut into slices on the top shelf of the refrigerator.

Cut the sausage into slices and serve! The slices turn out perfectly smooth, the sausage does not crumble and is very easy to cut. Yummy!
