1 medium head of cauliflower,
250 ml milk,
200 g hard cheese,
2 tbsp. melted butter,
2 tbsp. flour,
salt, nutmeg, chopped parsley - to taste.

Preparation:
Peel the cauliflower and divide into small florets. Boil them in salted water. Drain the cabbage water into a separate bowl. Take 250 ml of decoction, add spices and seasonings to taste. Melt the melted butter in a deep frying pan, fry the flour until pinkish, add broth and milk and stir well. Cook over low heat, stirring, until the sauce thickens. Season with nutmeg and herbs. Combine the boiled cauliflower with the sauce, fill the pancakes and place them in a baking dish. Sprinkle grated cheese on top and bake in a hot oven until the cheese melts.

Ingredients:
300 g minced beef,
425 ml tomatoes in their own juice,
2 tbsp. ketchup (optional),
1 carrot,
1 onion,
1 tbsp. vegetable oil,
salt, pepper - to taste.

Preparation:
Cut carrots and onions into small cubes. Place the minced meat in a frying pan with vegetable oil and fry until golden brown, stirring occasionally. Add the fried onions and carrots, then the tomatoes along with the liquid (lightly crush the tomatoes with a fork), add ketchup and simmer for 5 minutes. Then season to taste and fill the pancakes. Serve with salad.

Ingredients:
600 g savoy cabbage,
300 g sweet yellow and red peppers,
600 g Krakow sausage,
200 g sour cream,
3 tbsp. vegetable oil,
1 onion,
green onions.

Preparation:
Blanch the savoy cabbage leaves for 2 minutes and cut into large pieces. Cut the pepper, onion and sausage into cubes and fry in vegetable oil. Add cabbage, stir and fry for 8 minutes, then add sour cream, simmer and season with salt and pepper. Fill the pancakes and pour the resulting sauce over them.

500 g mushrooms,
400 g ham,
150 g smoked bacon,
300 g onion,
300 g hard cheese,
2 stacks sour cream,
4 eggs,
1 bunch of parsley,
2 cloves of garlic,

Preparation:
Cut the bacon, onion and ham into cubes, boil the mushrooms and cut into large pieces, also cut the cheese into cubes. Mix, season with chopped garlic and parsley, salt if necessary. For the sauce, mix sour cream, 2 eggs and 2 yolks, season and mix. Fill the pancakes, place them in the pan and pour the sauce over them. Sprinkle with cheese and bake for 20 minutes in a hot oven. Serve with green salad.

Pancakes stuffed with beans

Ingredients:
1 can of canned beans,
250 g minced meat,
1 can (240 g) tomatoes in their own juice,
3 tbsp. tomato sauce,
200 g Mozzarella cheese,
1 onion,
1 tbsp. olive oil,
salt, pepper - to taste.

Preparation:
Drain and rinse the beans. Fry finely chopped onion in olive oil. Fry the minced meat until crumbly, add the tomatoes along with the liquid and mash them a little with a fork. Add tomato sauce and simmer a little. Add beans, season with salt and pepper, stir and heat over medium heat. Fill the pancakes, roll them into tubes and place them in the pan. Sprinkle with crumbled cheese and place in the oven for 15-20 minutes.

Ingredients:
500 g sauerkraut,
200 g sausage (ham),
100 g bacon,
100 g butter,
100 g cheese,
1 onion,
1 green bell pepper,
4 tbsp. meat broth,
1 tsp cumin,
¼ tsp. marjoram,
salt - to taste.

Preparation:
Cut the bacon into small pieces, place in a deep frying pan and put on fire. Add chopped onion, sauté until translucent, add cabbage and other diced ingredients. Simmer everything together for 10 minutes and cool. Fill the pancakes, place in the pan, sprinkle with broth and cover with foil. Bake in the hot oven for 15 minutes, then remove the foil, place cheese slices on top of the pancakes and place back in the oven to melt the cheese.

Ingredients:
150 g smoked salmon,
1 young zucchini,
½ lemon
150 g heavy cream,
½ bunch of basil
salt, pepper - to taste.

Preparation:
Peel the zucchini, chop and squeeze out the liquid. Remove the zest from the scalded lemon. Cut the basil leaves into thin strips. Mix the cream with salt and pepper, add basil and lemon juice to taste. Finely chop the fish and sprinkle with lemon juice. Cut thin pancakes into quarters, spread with cream sauce, place some fish on the wide part and roll into rolls. Pin with toothpicks.

100 g natural yogurt,
500 ham,
3-5 bunches of radishes,
3-4 cloves of garlic,
5-7 tbsp. greenery,
salt, pepper - to taste.

Preparation:
Cut the ham and radishes into small cubes, mix with chopped herbs and garlic squeezed through a press. Mix yogurt with salt and pepper, combine with ham and stir. Fill the prepared pancakes.

Ingredients:
300 g peas,
250 g ham,
250 g cheese,
200 g mushrooms,
4 tomatoes,
500 ml broth,
40 g vegetable oil,
40 g flour,
cheese for sprinkling,
nutmeg, salt - to taste.

Preparation:
Cut the cheese and ham into cubes. Chop the mushrooms and fry in vegetable oil. Scald the tomatoes with boiling water, remove the skin and cut into cubes. Boil the pre-soaked peas. For the sauce, fry the flour in vegetable oil until pink, pour in the broth and stir well. Boil for 5 minutes until thickened. Add ham, cheese, mushrooms and tomatoes to the sauce, heat but do not boil. Combine with peas and fill pancakes. Place in a greased pan, sprinkle with grated cheese and place in a hot oven for 15 minutes. You can use chickpeas instead of peas.

200 g frozen vegetable mixture,
300 ml vegetable broth,

Rinse the spinach thoroughly to remove sand. Finely chop the onion and garlic and fry in a frying pan with 2 tsp. oils Add the spinach and cook over medium heat until all the liquid has evaporated. Add salt and spices, stir and let cool. Cut the tomatoes in half, cut the feta into small cubes. Combine with spinach, fill the pancakes and roll them into rolls.

Pancakes with potatoes

Ingredients:
600 g potatoes,
200 g bacon,
1 onion,

Preparation:
Cut the peeled potatoes into slices and place in cold water. Heat oil for frying, drain potatoes, dry and place in a frying pan. Cover with a lid and fry until golden crisp. 10 minutes before the end, add the diced onion and bacon, reduce the heat and fry covered. Cook uncovered for the last 5 minutes. Season to taste with salt and ground pepper. Fill the pancakes, roll and serve.

Ingredients:
850 g frozen mixture of green peas and carrots,
1 box feta cheese
100 g hard cheese,
1 bunch of parsley,
salt, ground black pepper - to taste.

Preparation:
Place frozen vegetables in a saucepan, add a little water, cover with a lid and simmer. Add grated cheese, chopped parsley, season with salt and pepper. Fill the pancakes, roll them into an envelope, place them in a baking dish, place feta on top and place in the oven at medium heat for 20-25 minutes.

Ingredients:
400 g frozen currants,
250 g cream cheese,
4 eggs,
120 g sugar,
80 g butter.

Preparation:
Mix cheese with butter and sugar. Beat until fluffy. Beat the egg whites until stiff peaks form. Sort the currants and rinse. 250 g cottage cheese,
20 g raisins,
3 eggs,
1 lemon,
200 ml cream,
100 g natural yogurt,
50 g powdered sugar,
1-2 tbsp. Roma,
vanilla pod.

Preparation:
Rinse the raisins and scald with boiling water. Combine cottage cheese and yogurt in a bowl, add powdered sugar and mix. Add 2 yolks, vanilla beans, lemon zest (after scalding it), and mix. Fill the pancakes by spreading the mixture over the entire surface and rolling them into a roll. Cut each pancake in half diagonally and place them in a greased pan. Beat 1 egg and 2 whites with cream, add rum, stir and pour over pancakes. Place in a non-hot oven for 25-30 minutes. Sprinkle with powdered sugar before serving.

4 tbsp. soft cream cheese,
2 tsp vegetable oil,
2 tsp lemon juice,
2 tsp honey,

Ingredients:

For filling:

  • Minced pork – 0.5 kg
  • Onion - one head
  • Pigtail cheese – 40 grams
  • Spices: thyme, nutmeg, barbecue spices, pepper, sugar, salt
  • Refined sunflower oil for frying


For pancakes:

  • Medium fat cow's milk – 1 cup (25 ml)
  • Filtered or boiled water – 1 glass (250 ml)
  • First grade white wheat flour – 1.5 cups (6 tablespoons with a large top)
  • Chicken eggs – 2 pcs.
  • Sugar – 1 tbsp. l.
  • Salt – 0.5 tsp.
  • Refined oil – 2.5 tbsp. (2 for dough, 0.5 for greasing the pan)


Preparation:

1. First, prepare the pancake dough. To do this, combine all these ingredients in one deep bowl and beat them with a blender or mixer until smooth.

Flour should be added last and in small portions, a couple of tablespoons between beatings, so that there are no lumps.


2. Now grease the frying pan with vegetable oil and heat it over medium heat. When it warms up very well, we begin to bake pancakes, pouring the dough in small portions using a ladle. By rocking the pan, we ensure that the dough spreads over it in an even thin layer.


Fry the pancakes on both sides for 30 seconds.

To easily turn the pancake, use a knife to pry up its edges, insert a spatula under the pancake to the middle of the frying pan and, making sure that the pancake is not burnt anywhere, turn it over, supporting it by the edge with your free hand.

The finished side should become golden brown, but no more; You shouldn’t overcook the pancakes, otherwise they will become brittle


The specified amount of ingredients will yield about 10-14 pancakes, depending on the size of the pan. But if this is a very small pancake maker, then there will be enough dough for 20 pieces.


3. Now prepare the filling. To do this, cut the onion into small cubes and fry over medium heat for 5-7 minutes until golden brown.


4. Mix minced meat, fresh or defrosted, with spices and salt and add it to the onion. Fry it over medium heat, stirring occasionally until fully cooked.


The minced meat is fried quickly, so it will take no more than 15 minutes.


5. Now all that remains is to assemble the prepared elements. First, take the braided cheese and carefully separate it into fibers. We will use them to tie pancake bags.


6. Place 2 tablespoons of meat filling into each pancake.


And we collect the pancake into a bag, collecting its edges with an accordion.


And we tie it with a cheese ribbon.

Stuffed pancakes with minced meat and rice

You can also add rice to the minced meat as a filling.

For pancakes, I suggest making yeast dough. If you don't like this, use the previous recipe.

Ingredients:

Pancake batter:

  • 1 liter of warm milk
  • 1 glass of warm water (250ml)
  • 3 eggs
  • 1 heaped teaspoon salt
  • 2 heaped tablespoons sugar
  • 2 teaspoons dry yeast
  • 600 g flour
  • Sunflower oil for frying
  • 50 -70 g butter for frying pancakes

For filling:

  • 500 g minced meat
  • 3 tablespoons rice (dry)
  • 1 onion
  • Salt, ground black pepper

Preparation:

1. Pour warm milk and water, salt, sugar and yeast into one deep bowl. Break the eggs into it and mix well. After this, stir in the flour little by little so that there are no lumps. It is most convenient to use a mixer.


After this, remove the dough for 1 hour in a warm place.


2. Make the filling by mixing boiled rice, fried minced meat and onion fried until golden.

If the minced meat was prepared without spices, then do not forget to salt and pepper it


3. When the dough has settled, you can start baking pancakes. We do this in the classic way, pouring a small amount of dough onto a hot and oiled frying pan.


And baking it for 30-40 seconds on each side. After removing from the pan, coat them with butter on top so that the pancakes remain soft and elastic.


The specified amount of dough will make 10 large pancakes.

You can bake any pancakes you like. The main thing is not to put a lot of sugar in them when cooking.

How to cook pancakes with meat and potatoes: video recipe

Here is a very interesting recipe for making minced meat filling with meat and potatoes. I haven’t tried this one yet, as I literally just came across it. For some reason, it never occurred to me to make minced meat in which meat and potatoes are twisted together. I think this is a very interesting move.

And again, an unusual way to cook stuffed pancakes. At first glance, you won’t be able to tell whether they’re pancakes or pies.

Moreover, the dough is prepared as usual pancake dough, only the pancake is made a little thicker so that nothing falls apart

  • 1 liter of milk
  • 1 tsp salt
  • 1 tbsp. Sahara
  • 3 cups (250 ml) flour

  • 1 tsp soda
  • 1 tbsp. vegetable oil

  • mushrooms - 200 g
  • minced meat - 500 g

Preparation:

1. There is nothing unusual in preparing pancake dough: take a bowl of flour, add salt, sugar and eggs to it and start mixing, gradually pouring in milk.


When the mixture becomes homogeneous, add vegetable oil. At the very end, add soda, quenched with vinegar. That is, add literally a tablespoon of 9% vinegar to a saucer with soda and stir quickly. And while the soda is sizzling, pour it into the bowl with the dough. Mix thoroughly again.

Baking soda is needed so that the pancakes turn out airy and with holes when frying.


The dough is ready, let's move on to the filling.

2. First, fry finely chopped onion over medium heat along with carrots, grated on a coarse grater. Literally 5 minutes.

Then add finely chopped fresh or defrosted mushrooms to the pan.

Mushrooms should be taken that do not require preliminary heat treatment, for example, champignons


We also fry the mushrooms for no longer than 5 minutes, after which we add the minced meat to the frying pan. And fry until done for 15-20 minutes, remembering to stir occasionally.


3. Now everything is ready to create the stuffed pancakes.

Heat a frying pan over medium heat and grease it with oil. Pour in a portion of the dough so that it is evenly distributed throughout the pan.


When we see that the dough has already baked along the edges, put the meat and mushroom filling on one half of the pancake.


And cover them with the other half and do not press it down too much with a spatula.

The trick here is that when you cover the filling, the dough on top is not yet baked. Then it will stick to the bottom half and you will get a whole “pie”


Fry the resulting half for another 30-40 seconds, then turn the pancake over and fry the other half for another minute so that the dough inside is well baked.


As soon as one pancake is cooked, immediately pour in the next portion of dough.
