Frozen dough must be thawed first. This usually takes about half an hour to an hour and a half at room temperature.

  1. Defrosting time depends on weight and release form. In any case, you should remove the dough from its packaging, place it on a floured surface, and cover the top with something, for example, a bag. This is done to prevent part of the dough from drying out.
  2. When you notice that the puff pastry has become soft and pliable, roll it out a little and then cut into equal squares with a side of approximately 10 centimeters. Cover the pieces again with something.
  3. Now let's take care of the berries - rinse them thoroughly under running water, remove the tails, and also cut off the green or damaged areas. Dry the berries using paper napkins or towels. Finely chop the strawberries into cubes and place in a deep container.
  4. Add starch and sugar here and mix everything thoroughly. We try to act as carefully as possible - we must not deform the berries, otherwise they will release juice, and we are trying to preserve it. If you notice that all the pieces are coated with sugar and starch, then stop stirring and move on to the next step.
  5. Now we place our berries in the center of each piece of dough. The filling should occupy approximately half the area of ​​the square and lie in one layer.
  6. We take two opposite corners and fasten their tips to each other. We do the same with the other two corners.
  7. Then we pinch the places where we have holes left. As a result, you should have envelopes with the seams in the shape of a cross.
  8. During baking, some boiling juice will come out of the berries. To prevent pressure from tearing our puff pastries, we make small punctures in the upper part; this can be done with a toothpick, skewer or fork.
  9. We set the oven to warm up to 200 degrees, and in the meantime we cover the baking pan with parchment.
  10. Separate the yolk from the white and place it in a small bowl. Add just a little sugar and beat a little with a fork.
