  • chicken carcass weighing no more than 1 kg;
  • 150 g leek;
  • 10 fresh champignons;

  • 2 bell peppers;

  • a few cloves of garlic;
  • butter and vegetable oil;
  • salt and spices for chicken;
  • mayonnaise.

Cooking method:

White fish in champagne

Ingredients:

  • 600 g of any white fish (hake, cod, halibut);
  • 200 ml heavy cream;
  • 4 heads of red onion;
  • 3 tablespoons vegetable oil;
  • a small bunch of greenery;
  • salt and ground pepper;
  • 200 ml champagne.

Cooking method:

  1. Clean the fish carcass from scales, gut it, cut off the head. Transfer the fish to a baking dish lightly greased with vegetable oil. Fill the belly with chopped herbs mixed with salt. After this, cut the fish into portions using a sharp knife.
  2. Chop the onion and fry it lightly in oil. Place half the onion on the fish. Now carefully, so as not to wash off the onion, pour champagne into the mold. Bake the fish in the oven at 200 degrees for 25-30 minutes.
  3. While the fish is baking, you need to prepare the sour cream sauce. To do this, pour the cream into the onions remaining in the frying pan, bring the mixture to a boil and boil for several minutes.
  4. Pour the sauce over the finished fish. Now it can be served on the New Year's table.

Meat soufflé “Kisonka”

If there are small children in the house, then you should prepare a particularly tender and healthy New Year's dish for them, for example, an airy soufflé.

Ingredients:

  • 0.5 kg of a mixture of boiled chicken and veal;
  • 1 slice of white bread;
  • 1 egg;
  • 100 ml milk;
  • 50 g butter.

Cooking method:

On New Year's Eve, along with traditional dishes, you always want to try something new. First of all, this applies to salads. Ingredients:

  • large chicken breast;

Cooking method:

  3. Grate the cucumbers on a coarse grater and lightly squeeze out excess moisture. Cut the tomatoes into small cubes, add salt and place in a colander for a few minutes to drain the juice.
  4. Mix sour cream and mayonnaise in equal parts. Separate a third of the cheese and set it aside for decoration.
  5. Finely chop the chicken fillet and place on a plate in the shape of a watermelon slice. Coat the meat with sour cream and mayonnaise sauce. Place mushrooms and sauce on top, and on them a layer of finely grated cheese and chopped egg yolks. Cover the yolks with sauce, sprinkle with egg whites and brush again with sour cream and mayonnaise mixture.
  6. The salad base is ready. Now you should move on to decoration. To do this, the outer edge needs to be decorated with grated cucumbers. Next add finely grated cheese. And finally, cover the salad with tomatoes, simulating watermelon pulp, and olives, simulating seeds. To soak the layers, the salad must be kept in the refrigerator for at least an hour. Only after this can it be placed on the table.

Shrimp salad in orange cups

Ingredients:

  • 4-6 large oranges;
  • 300 g boiled shrimp;
  • 3 tbsp. canned corn;
  • 2 boiled eggs;
  • 0.5 cups cooked rice;
  • mayonnaise;
  • a little dill.

Cooking method:

  1. Wash the oranges, divide each into 2 parts. Carefully remove the pulp from the halves. Cut the edges into cloves.
  2. Set aside some dill and a few shrimp for garnish. Chop the rest and mix with the chopped pulp of one orange and rice. Add finely grated eggs, corn and mayonnaise to the mixture.
  3. Fill improvised orange cups with salad. Place whole shrimp and greens on top.

French tongue terrine

Traditionally, jellied meat is present on the Russian New Year's table. If you want something unusual, this time you can replace the Slavic version with an interesting Romanesque analogue.

Ingredients:

  • beef tongue;
  • 100 ml meat broth;
  • 100 ml dry white wine;
  • half an orange;
  • ¼ cup sun-dried tomatoes;
  • ¼ cup pitted olives;
  • 1 tbsp. mustard;
  • 3 tsp gelatin;
  • parsley and basil;
  • salt and ground pepper.

Cooking method:

  1. Place the tongue in the pan and wait until it boils. Remove the limescale and place half an orange in the pan. Cook the tongue for 2.5-3 hours over low heat. An hour after the start of cooking, the water should be slightly salted. Add the required amount of salt 30 minutes before the end of cooking. Soak the finished tongue in cold water for about 10 minutes, then peel and cut into medium-sized cubes. Mix the tongue with olives, herbs and tomatoes, cut as desired, and table mustard.
  2. Mix half a glass of broth and dry wine with pre-soaked gelatin. Gently heat the mixture until the latter dissolves. It is best to do this in a water bath. Cool the mixture a little, pour it onto the tongue with vegetables, stir.
  3. Place the mixture in a mold lined with plastic wrap on the inside, lightly greased with vegetable oil. Place in the refrigerator until hardened. When the time comes for the New Year's feast, you need to turn the mold over, put the terrine on a dish and cut it.

"Bird's Nests"

Snacks, although they are not the most “honorable” dishes on the table, play an important role in its decoration. It is especially important to pay attention to preparing unusual snacks if there are children at the New Year's table.

Ingredients:

  • 0.5 kg of large champignons;

  1. Cut the peeled carrots into circles 0.5 centimeters thick. Cut out a small triangle from each circle. This will be the beak. The remaining shape will become penguin feet.

Cooking method:

Stirring constantly, wait until the chocolate is completely combined with cream and sugar. In the same way, dissolve the softened butter in the cream.
  3. Cool the finished ganache slightly, mix with cookies and raisins. Using cling film, form 2 sausages from the resulting mass. Place in the refrigerator until completely frozen. Serve the “sausage” on the table, cutting into circles of the desired thickness.

Fruit baskets

Ingredients:

  • 1 cup flour;
  • 200 g butter margarine;
  • 1 cup granulated sugar;
  • 5 chicken eggs;
  • 3 tablespoons potato starch;
  • fruits and frozen berries;
  • whipped cream.

Cooking method:

Preparation:
Cut the apple and potatoes into slices, herring, lemon and cucumber into slices, and the onion into half rings. Sprinkle the apple with lemon juice. Coarsely chop the dill. Place the prepared ingredients on skewers in the following sequence: first a few onion rings, then slices of lemon, cucumber, herring, a slice of potato, again a slice of herring and on top - a slice of apple. Appetizer "Olivier" on bread"

Ingredients:
2-3 boiled potatoes,
½ cup canned green peas,
1 onion,
2 boiled eggs,
1 boiled carrot,
2 pickled cucumbers,
1 jar of smoked capelin caviar,
1 pack of rye bread,
1 can of pitted olives
dill greens,
mayonnaise.

Preparation:
Peel the potatoes and carrots and cut them into small cubes. Cut the onion into cubes, pour boiling water over it to remove the bitterness, and dry. Chop the eggs, add them to the potatoes and carrots, add peas, chopped pickles, onions, mayonnaise to the total mass, add salt and mix. Break the bread into squares of equal size. Place about 1 tbsp per square. lettuce, cover with a second piece of bread, top it with a little capelin caviar, an olive and a sprig of dill. Do the same with the rest of the bread. Carefully place the appetizer on a beautiful dish and serve to the New Year's table.

Salad with ham and persimmon “The holiday is coming to us”

Ingredients:
2 persimmons,
200 g ham,
150 g canned corn,
2 tomatoes
2 tbsp. mayonnaise,
⅓ stack. pomegranate seeds,

Preparation:
Peel and finely chop the persimmons, cut the tomatoes into circles, and cut the ham into strips. Mix all the ingredients and season the finished salad with mayonnaise. Sprinkle with pomegranate seeds and garnish with herbs.

New Year's fish in lemon under curd manto

Ingredients:
2 lemons,
200 g cottage cheese 9% fat,
2 salted herring fillets,
1 tbsp. cream 30% fat,
salt, fresh herbs - to taste.

Preparation:
Cut the herring fillet into cubes. Wash the lemons, cut in half and remove the pulp. Place the fish cubes on the lemon halves and sprinkle lemon juice on top. Grind the cottage cheese with the juice of half a lemon, salt, chopped herbs and stir until a homogeneous creamy consistency is obtained. Whip the cooled cream and gently fold it into the curd cream. Transfer the resulting mass into a bag with a cut off corner and pipe the cream onto the lemons and herring. Serve the finished dish immediately to the table.

Salad “Miss of the Year 2016”

Ingredients:
1 beetroot,
1 carrot,
100 cabbage,
100 g Krakowska sausage,
1 handful of walnuts,
100 g French fries or chips in strips,
mayonnaise, salt, sugar - to taste.

Preparation:
Chop raw beets and carrots into thin strips or grate them on a grater for Korean carrots. Also chop the cabbage thinly, salt it, add a little sugar to taste and rub it with your hands so that it produces juice. Cut the sausage into strips. Fry the nuts in a dry frying pan, cool and chop them. Place carrots, beets, French fries, sausage and cabbage in separate mounds on a large platter. Apply a mesh of mayonnaise on top and sprinkle with nuts. The finished dish is mixed on the table.

Hot eggplant boats with pork

Ingredients:
2 eggplants,
300 g minced pork,
200 ml natural yogurt,
1 pomegranate,
50 g sesame seeds,
2 tbsp. vegetable oil,
herbs, salt, spices - to taste.

Preparation:
Cut the eggplants in half, scoop out the flesh to form boats, salt them and leave for 1 hour. Fry the minced meat in vegetable oil until half cooked, add salt to taste and season with spices. Rinse the eggplants, squeeze them out, place them on a baking sheet, fill them with minced meat and bake in the oven at 180ºC for 40 minutes. Mix yogurt with sesame seeds, add salt, add spices and pour the resulting mixture over the finished boats. Separate the pomegranate into grains, sprinkle them on the boats and garnish with fresh herbs.

Layered salad with smoked chicken “Zhelanny”

Ingredients:
200 g smoked chicken fillet,
3 fresh cucumbers,
150 g pickled mushrooms,
1 onion,
4 boiled eggs,
4 tbsp. mayonnaise,
salt, herbs, spices - to taste.

Preparation:
Cut eggs, onions and smoked chicken into cubes, cucumbers into strips. Rinse the pickled mushrooms with cold water. Lay out the prepared ingredients in layers, coating each layer with mayonnaise: first eggs, then onions, mushrooms, cucumbers and chicken. Decorate the finished salad with fresh herbs and let it stand for a while so that the layers are saturated with mayonnaise.

Golden chicken legs with oranges, white wine, cinnamon and ginger

Ingredients:
6 chicken legs,
2 oranges,
3 tbsp. white wine,
2 tbsp. soy sauce,
3 cm ginger root,
1 tbsp. honey,
½ tsp. ground cinnamon,
¼ tsp. paprika,
vegetable oil,
salt.

Ingredients:
Wash the legs, dry, rub with salt and pepper and put in the refrigerator for a couple of hours. Using a grater, remove the zest from one orange and squeeze out the juice. Peel and grate the ginger. Stir in orange juice and zest, ginger, soy sauce, white wine, honey, cinnamon and paprika. Pour this marinade over the chicken legs and refrigerate for another 6-8 hours. Then place the meat on a baking sheet greased with vegetable oil and bake in the oven at 180ºC for 50 minutes. For the New Year's table, serve the finished hot dish with slices of fresh orange.

Pork "Purple Heart"

Ingredients:
pork,
5 onions,
2 tomatoes
1 pickled cucumber,
20 g hard cheese,
mushrooms (any kind, optional)
pitted olives,
mayonnaise.

Preparation:
Cut the onion into thin rings and fry it in a frying pan with vegetable oil until golden brown. Place the pork on a greased baking sheet, salt and pepper it, then top each piece with fried onion, thin slices of tomato, sliced ​​mushrooms, thin slices of pickled cucumber and sliced ​​olives. Sprinkle the pork decorated with vegetables with grated cheese, then apply a thin layer of mayonnaise and sprinkle with cheese again. Place the baking sheet in an oven preheated to 220ºC for 40-45 minutes.

Baked carp with cheese “New Year's feast”

Ingredients:
2 carps weighing 1 kg,
50-100 g Dutch cheese,
1 slice of bread without crust,
1 onion,
4 cloves of garlic,
1 tsp ground coriander,
3 tbsp. mayonnaise,
¼ lemon
½ tsp. Sahara,
salt - to taste.

Preparation:
Clean the carp, gut them, remove the gills, wash thoroughly, rub with salt and pepper and leave for a while. Cut the onion into rings, the lemon into slices, sprinkle with sugar and place the onion and lemon in the belly of each fish. Then chop the cheese and grind it together with the garlic in a blender, add coriander, mix everything and put it in a bowl. Add shredded bread and mayonnaise. Mix the resulting mass thoroughly. Place the carp on a baking sheet that has been previously greased with oil, and spread the cheese-bread mixture in an even layer on the surface of the fish. Place the baking sheet with the fish in an oven preheated to 180ºC and bake the dish for 30-40 minutes. After removing from the oven, decorate it with herbs, lemon slices or olive rings if desired.

Rabbit baked in foil in berry marinade

Ingredients:
1 kg rabbit meat,
a mixture of peppers and salt - to taste.
For the marinade:
400 g frozen black currants,
10 g ginger,
5 cloves of garlic,
2 tbsp. mayonnaise.

Preparation:
Grind black currants and peeled ginger in a blender, add garlic and grind everything again. Add mayonnaise and mix everything well again.
Rub the rabbit meat with salt and leave for a few minutes. Then rub it with the pepper mixture and leave for 10 minutes. Cover the meat with the berry marinade and leave it now for 40 minutes. When the time is up, carefully transfer the rabbit to foil, pack tightly and bake in an oven preheated to 200ºC for 45 minutes. Open the foil after the time has passed and let the rabbit brown. Before serving, cut the finished rabbit into portions and garnish with black currants and sprigs of fresh herbs.

Bananas in orange caramel

Ingredients:
2-4 bananas,
1 orange,
2 tbsp. Sahara,
ice cream,
sprig of mint.

Preparation:
Peel the bananas, cut them in half lengthwise, then into 2-3 more pieces. Pour sugar into a dry frying pan and gently melt it over low heat, then add bananas to the sugar, fry them on one side, turn them over and pour in the juice of ½ orange. Fry the bananas until the color changes and the sugar caramelizes. Then place the bananas on a plate, place 1-2 scoops of ice cream next to them, pour orange-caramel sauce over everything and garnish with a mint sprig and orange slices on top.

Banana dessert “Intrigue”

Ingredients:
1 banana
150 g cottage cheese,
50 g butter,
3 tbsp. Sahara,
2 tbsp. cocoa,
1 tbsp. sour cream or cream,
grated walnuts.

Preparation:
Mix cottage cheese with 2 tbsp. sugar and butter. Peel the banana, place it on a plate and carefully spread the curd mixture evenly on it with a spoon. Place sour cream, remaining spoonful of sugar and cocoa in a saucepan and melt over heat. While the resulting chocolate has not cooled, cover the curd mass with it, sprinkle the dish with chopped walnuts.
