Dumplings that are steamed turn out more fluffy and tender. Usually the filling for steamed dumplings is berry: cherry, currant, strawberry. But you can also cook dumplings with cottage cheese, potatoes, and meat. It is especially convenient to steam dumplings with berries, since they do not boil over and turn out whole and juicy. The main thing that goes into the recipe for steamed dumplings is, of course, the dough. The dough for boiled dumplings is very similar to dumplings. For steamed dumplings, the dough is made completely differently.

Products:
Flour - 500-600 g,

Preparation:
Sift flour into a large bowl, add slaked soda and egg, pour in kefir and knead the dough. Place it on a floured table and knead the dough with your hands until it stops sticking to your hands. The dough should not be hard. It should be soft and fluffy. Let the prepared dough rest for half an hour.
While the dough is settling, we will prepare the filling. The berries need to be sorted, cleared of twigs or stalks, depending on which berries you took, and dried.
We have prepared everything, now you can start making dumplings. As you can see, the recipe for steamed dumplings at home is very simple.
Roll out the dough into a layer about 0.5 cm thick. There is no need to make the dough very thin. Our dough is delicate, it can easily tear. Using a glass or cup, cut out circles from the dough. Usually steamed dumplings are larger than those that are boiled. Place berries in the middle of the circle, add a spoonful of sugar and cover the dumpling.
Next comes the most important thing, the steaming process. Take the wide pan itself and place a sieve or colander on it. The colander should have frequent holes; there are some that look like a sieve. Place the dumplings in a colander at a distance from each other and cover the colander (sieve) with a lid. Dumplings should not touch the water. Prepare in 7-8 minutes.
The most advanced method is to place the dumplings in a steamer for 7-8 minutes. If you don’t have a double boiler, a sieve, or a colander, then cover the pan with gauze and place the dumplings on the gauze, and cover the top with a bowl or lid.

Steamed cottage cheese dumplings

Today I cooked dumplings... “Ha, dumplings!” - you might think, who can be surprised with them... But dumplings are not simple. They are made from curd dough, steamed... To be honest, I am a big fan of cottage cheese, but I have never put it in dough for dumplings. But in vain! Because such products turn out lush, soft and very tender. In general, a dumpling idyll!

Steamed dumplings made from curd dough with berries

We will need:
Cottage cheese - 200 g
Eggs - 2 pieces
Sugar - 80-100 g (original 125 g)
Flour ~ 300 g
Soda - 1\2 teaspoon
Berries or fruits to taste or season

Preparation:
Grind the cottage cheese or rub through a sieve, mix with sugar and eggs until smooth.
Add sifted flour with soda (do not dissolve the soda).
Knead elastic dough.
On a floured surface, roll out the dough into a layer ~0.5 cm thick.
Cut out circles of the dough of the desired size, for example with a glass.
Pour a little sugar into the center of each circle, place berries on top and form dumplings.
Place the dumplings in a steamer; the bottom can be greased with vegetable oil.
Cook for 6 minutes after the water boils.

P.S. The dumplings turn out tender, airy and very tasty. I liked the steaming option much more than the classic one in water. Compared to the original recipe, I halved the amount of ingredients and reduced the amount of sugar. From this amount of products you get 20-24 dumplings, depending on the size. How many berries or fruits you use depends on your desire; it will take about 1 cup of berries. Do not defrost frozen berries first. I don’t know how to sculpt beautifully, so I got simple ones. I advise lovers of dumplings to try. If you make these dumplings with potatoes, do not use sugar at all, but add half a teaspoon of salt. Help yourself

Steamed dumplings with berries


We will need the following ingredients:

For the test:
. 1 glass of kefir, yogurt or whey,
. 1 egg,
. 3 cups flour,
. 2 tbsp. spoons of vegetable oil,
. 1 teaspoon of soda without a slide,
. a pinch of salt;

For filling:
. 400 g of berries of your choice (this could be strawberries, currants, cherries, raspberries and even mulberries),
. 2-3 tbsp. spoons of sugar (depending on the sweetness of the berries),
. 1 teaspoon of starch.

Cooking method:
Mix kefir, egg, salt. Add sifted flour and soda to them. Knead the dough.

Add vegetable oil during kneading. Knead the dough until it no longer sticks to your hands.

Cover the dough with a napkin and let rest for 20 minutes.

Mix sugar with starch. Starch is needed to prevent juice from leaking out of the dumplings during cooking.

Form small balls from the dough and roll them into flat cakes. Place a few berries in the flatbread, sprinkle a little starch-sugar mixture and carefully pinch the dumpling.

During the cooking process, the dumplings will almost double in size, so you need to place the dumplings in a container at a large distance from each other so that they do not stick together.

Steaming dumplings requires the presence of a double boiler, pressure cooker or other special device. For example, you can successfully use a colander inserted into a pan or, as a last resort, cover the pan with gauze. Cover the top of the pan with an inverted bowl to create a double boiler effect.

Steam the dumplings for exactly 5 minutes.

Mix the finished dumplings with butter and serve hot with sour cream.

Ingredients for steamed blueberry dumplings

For the test:
1 egg
1 glass of kefir (250 ml)
0.5 teaspoon salt
1 tablespoon sugar
1 teaspoon baking soda

Quench the soda in kefir.
Mix the egg with sugar and salt, then with kefir and then with flour.

Or you can make the dough by pouring a heap of flour, make a hole and put the rest of the ingredients in there, but if the dough is with soda, then I prefer to do it the first way.
Then there are also two ways:

Dumplings with poppy seeds

Dish ingredients - dumplings with poppy seeds:

  • Flour - 2 tbsp.
  • Water - 1 tbsp.
  • Poppy – 250 g
  • Salt - ½ tsp.
  • Sugar - ½ tbsp.
  • Vegetable oil - 2-3 tbsp. l.
  • Honey (candied) - 2 tbsp. l.
  • Jam - 3 tbsp. l.

How to cook dumplings with poppy seeds:

Rinse the poppy seed thoroughly and pour boiling water over it. Then almost immediately drain the water and place the poppy seeds on a napkin to dry. Crush the poppy seeds in a mortar, then add honey and 1 teaspoon of sugar. Continue pounding until the mixture becomes homogeneous.

Knead the dough from flour, warm water, salt and butter. Let the dough sit for about an hour. When the dough is ready, fill the dough pieces with the poppy seed filling. Boil dumplings in boiling water and serve hot - with syrup, compote, uzvar or juice.

  • Vegetable oil – 1 tablespoon;
  • Granulated sugar - 4 tablespoons;
  • Soda – 0.5 teaspoon.

Preparation:

  1. First, knead the dough. Take the kefir out of the refrigerator and let it warm up to room temperature. Beat it with soda and egg. Then we begin to mix the flour into the liquid mass. Knead a non-sticky, elastic dough. We pack it in cling film and send it to rest in the refrigerator.
  2. Meanwhile, beat the egg and sugar until white foam appears. Then vigorously stir the egg mixture into the cottage cheese. You can add a little more sugar to taste.
  3. Roll out the dough on the table into a layer about 0.5 centimeters thick. Cut out circles using a cup or glass. Place a tablespoon of filling on each circle and carefully pinch the edges.
  4. If you cook in a double boiler, you need to lightly grease the bowl with vegetable oil.
  5. Place the dumplings so that they do not touch each other. Turn on the cooking program for 12 minutes.

Dumplings without eggs with steamed cherries

Dumplings with cherries are great for a children's menu or Lent. After all, the dough does not contain eggs.

So, let's start preparing steamed dumplings:

  • 200 ml very hot water;
  • Flour – about 2.5 cups;
  • Salt - half a teaspoon;
  • A tablespoon of sugar;
  • 150 grams of pitted cherries.

Preparation:

  1. Sift the flour into a heap onto the table. We begin to gradually add hot water to the center and knead the dough. It should be elastic, and at the same time not too hard. As soon as the dough is ready, put it in the refrigerator to rest under film.
  2. Sprinkle the pitted cherries with sugar and place in a sieve to drain the juice. Don't pour it out! In the future, we will dilute the juice with water and boil it a little. Make a sweet sauce for serving dumplings.
  3. Roll out the dough into a layer. The optimal thickness is 0.5 centimeters. Using a cup, cut out circles. Place a tablespoon of filling in the center of each and carefully seal the edges. Steamed dumplings with mushrooms in a slow cooker

Steamed dumplings with mushrooms are a wonderful hearty dish. We will cook it in a slow cooker on steam mode.

  • Water – 1 glass;
  • Flour - 3 cups (depending on quality, you may need more or less);
  • Salt - half a teaspoon;
  • Mushrooms – 200 grams;
  • Onion – 1 large onion.

Preparation:

  1. Let's start with the test. Heat the water almost to a boil. Pour salt into it, add oil and mix thoroughly. Start adding flour half a glass at a time and knead the dough. It should be elastic and not too hard. Let the dough rest in the cold.
  2. Finely chop the onion. We also cut the mushrooms into small cubes. Fry in vegetable oil until golden brown.
  3. Roll out the dough. Cut out circles using a glass or mug. Place the filling in the middle of each juice. Its quantity should be varied depending on your taste. Place a steaming rack in the multicooker and grease it with oil. Set the steam mode for 15 minutes. Place the dumplings on the grill and close the lid. Serve dumplings with sour cream.

Dumplings with mushrooms and potatoes

  • Potatoes – 2 tubers;
  • Onion – 1 large onion;
  • Mushrooms – 100 grams.

Preparation:

Steamed dumplings on kefir with potatoes and cracklings

These dumplings are quite a high-calorie dish, but very tasty. The perfect lunch for cold winter days. For cooking we will need the following products:

  • 250 ml kefir;
  • 500 grams of flour;
  • Half a teaspoon of soda;
  • Half a teaspoon of salt;
  • Egg – 1 piece;
  • Potatoes – 4 large tubers;
  • Butter - a tablespoon;
  • 130 grams of lard with streaks of meat.

Preparation:

  1. Let's do the dough first. Lightly heat the kefir and add baking soda and salt. Lightly beat. Add the egg and mix vigorously again. We start adding flour. Knead the elastic dough and put it in the refrigerator.
  2. Peel and boil the potatoes. Drain the water, leaving a little broth. Using a masher, make puree. Heat the frying pan and lay out the lard, cut into thin strips. Fry it until you get cracklings. Add them to the puree. We also add butter to the crushed potatoes and add salt if necessary.

Dumplings with cherries

Ingredients:

  • 600 g flour.
  • 200 ml kefir (can be replaced with sour milk or yogurt).
  • 1 egg.
  • 600 g cherries.
  • 150 g sugar.
  • 0.5 tsp soda
  • 0.5 tsp salt.

Preparation:

  1. Preparing cherries. Wash the berries. The seeds can be removed or left. Place the berries in a colander and leave the juices to drain while you prepare the dough. If there is a lot of juice left on the cherries, you can blot them on a paper napkin.
  2. Test preparation. Mix kefir, egg, salt, soda and 2 tablespoons of sugar.
  3. Kneading the dough. Add flour and knead into a soft, non-stick dough. If it still sticks after adding all the flour, add a little more.
  4. Formation of blanks. On a floured table, roll out the dough into a layer 2-3 mm thick. Cut circles with a glass or cup.
  5. Formation of dumplings. Sprinkle a little sugar on each circle and place the berries on top. Pinch the edges. Make sure that the edges are pinched really securely, otherwise the filling may fall out.
  6. Steaming. Pour water into a bowl and place dumplings on a wire rack. Set the “Steam cooking” mode. Cook for 20 minutes covered.

So someone came up with a recipe for making lazy dumplings with cottage cheese. As a result, you will spend much less time and will be able to enjoy this dish.

Ingredients:

  • Cottage cheese 5-9% - 0.5 kg.
  • Eggs – 2 pcs.
  • A glass of flour.
  • 3 tbsp. butter.
  • 2-3 tbsp. Sahara.
  • Salt to taste.

Recipe:

  1. It is advisable to grind the cottage cheese so that it becomes more tender. To do this, you can pass it through a sieve, a meat grinder, or spin it in a blender. If you're in a hurry, you can skip this step, but lazy dumplings won't be as tender.
  2. Break eggs into a bowl with cottage cheese, add sugar and salt, pour in melted butter and mix thoroughly until smooth.
  3. After this, gradually add flour and mix. Add flour in small portions and evaluate the consistency - the dough should not be too stiff.
  4. Flour your work surface, place the curd dough on it and roll into a sausage. Determine the width yourself, but don’t make it too thick. If there is a lot of dough, you can divide it into several parts to make it easier to roll.
  5. Press the sausage a little with your hand to make the sausage flatter. But not to the point of a cake, about 2 cm.
  6. Now, at a slight angle, diagonally cut the flat sausage into diamond shapes. So those lazy dumplings turned out. All that remains is to cook them correctly.
  7. Boil water in a saucepan, add a little salt to taste, and place the dumplings into the boiling water one at a time. Stir at the end to prevent them from sticking to the bottom of the pan. Wait until the lazy dumplings float to the surface and after this point cook for another 2-3 minutes. Ready!

Take them out with a slotted spoon, place them on plates and add something to your taste: butter, sour cream, or someone pours jam on them and makes a dessert out of them. It all depends on your desires and preferences.

  3. Form dumplings with any filling, place on cheesecloth, and steam the dumplings under the lid for 5-7 minutes. Leave some space between the dumplings - they will expand considerably.

The dough for dumplings with potatoes on kefir is prepared in exactly the same way as already described. But you can try the option without soda.

You will need:

  • flour - 4 cups;
  • kefir - 230 milliliters;
  • egg - 2 pieces;
  • salt - 10 grams.

Preparation

  1. Mix flour and salt in a large bowl, pour kefir into the mixture, and beat in the eggs.
  2. Stir with a wooden spatula in one direction.
  3. Continue kneading with your hands when the liquid part is already distributed in the mass, and finish when you achieve a dense consistency.
  4. Leave the ball under the bowl for half an hour.
  5. Divide the dough into 4-5 parts, alternately roll them into sausages and cut the sausages into bars.

Here's how you can make the filling for dumplings with potatoes using the same recipe using kefir.

You will need:

  • potatoes - 6 pieces;
  • onions - 2 pieces;
  • creamy margarine - 50 grams;
  • salt, black pepper - to taste.

Preparation

  1. Boil the potatoes in salted water and drain it completely after cooking.
  2. Make the mash while the potatoes are still hot.
  3. Finely chop the onion and fry in margarine.

  1. Finely chop the cabbage (you can use a blender).
  2. Finely chop and fry the onion in vegetable oil.
  3. Add tomato paste, stir, add cabbage and simmer until golden brown.

Egg-free option

Kefir dumplings without eggs (or with them) can be formed with any filling, for example with cottage cheese.

You will need:

  • cottage cheese - 500 grams;
  • egg yolk - 1 piece;
  • salt and sugar - to taste.

Preparation

  1. Grind the cottage cheese thoroughly to a uniform consistency.
  2. Mix cottage cheese with yolk.
  3. Add salt, sugar and mix everything well.

Kefir dumplings with cottage cheese, as with any other filling, can be cooked in two ways.

  1. Having lowered the products into boiling water, immediately carefully stir them with a slotted spoon and, as soon as they float to the surface, reduce the heat and cook for 30-60 seconds.
  2. Place a colander over the pan or stretch gauze, tying it over the handles of the pan. Place the products on cheesecloth and boil for 3 minutes on both sides, carefully turning over.

If you are preparing steamed dumplings with kefir, the usual dough recipe is recommended, with soda - it doesn’t matter, with or without an egg. During cooking, place a high “dome” (for example, a deep bowl) over the pan - then the products will not fall off.

Secrets of mastery

So what is the best way to cook the dough for dumplings using kefir, steaming? Or a more familiar way, in water? And how to cut it so that it does not lose its properties?

It turns out that the “lushness” can be greatly influenced by how you cut the dough. Here are two different methods as an example.

Another factor that matters “output” is how the cooking occurs. The dough for steamed dumplings is drier, but with a very juicy filling (traditional Ukrainian method). And if it is immersed in boiling water, the shell will be especially soft and airy.

Experiment to understand which options are closer, clearer and more necessary to you. It doesn’t matter whether you steam the dumplings with kefir or simply boil them in water, in any case they have a very pleasant consistency and excellent taste. Plus they are easy to make. Both small children and sophisticated adults like this dish.

I remember how my mother cooked steamed dumplings, these are dumplings from childhood - fluffy, plump, with sweet cottage cheese. This is the filling our family loves.

Today I will try to steam steamed dumplings with kefir using the old method, without a steamer or special equipment. And I will need a piece of ordinary gauze for steaming.

Dumplings can be prepared with any filling - berries, cottage cheese, cabbage, etc. I have potato. To do this, boil the potatoes and mix them with fried onions in oil, salt and pepper to taste.

Separate a small piece from the dough, roll it into a rope and cut into equal parts. There is no need to roll out the dough - if it is kneaded correctly, it should turn out very soft. It is enough to flatten each piece with your hand, dipping it in flour so that it does not stick. The thickness of the cake is at least 2-3 mm.

Place the potato filling in the center of each flatbread and cover with a dumpling.

Dumplings can be made for future use and frozen, and then boiled as needed. Or cook it all at once.

For steaming, we will build the following structure: you need to take a pan with a wide top, pour one-third of the water into it and stretch the gauze along the edge so that it sag slightly without touching the water and holds tightly. Cover the pan with a lid and bring the water to a boil. When the water boils, the gauze will become wet, this is normal.

Place the dumplings on cheesecloth so that they do not touch the lid when covering. Steam dumplings on kefir with water constantly boiling for about 10 minutes without opening the lid. Cooking time depends on the size of the dumplings. You can take out one dumpling and cut it, checking whether the dough is ready.

The dumplings should increase in size and become fluffy. After removing one batch, immediately cook the next one.

Serve steamed dumplings with kefir immediately! Hot!

Flour – 500-600 g, one egg, 300 ml kefir, a teaspoon of soda or baking powder, half a teaspoon of salt. For the filling, take any berries.

Steaming dumplings

To make the dumplings tender, sift the flour into a large bowl, add baking powder or soda and an egg, pour in the kefir and knead the dough. Place it on a floured table and knead the dough with your hands until it stops sticking to your hands. The dough should not be hard. It should be soft and fluffy. Let the prepared dough rest for half an hour.

While the dough is settling, we will prepare the filling. The berries need to be sorted, cleared of twigs or stalks, depending on which berries you took, and dried.

We have prepared everything, now you can start making dumplings.

Roll out the dough into a layer about 0.5 cm thick. There is no need to make the dough very thin. Our dough is delicate, it can easily tear. Using a glass or cup, cut out circles from the dough. Usually steamed dumplings are made larger than those that are boiled. Place berries in the middle of the circle, add a spoonful of sugar and cover the dumpling.

These are the basic rules for making steamed dumplings at home yourself. Place the dumplings in a steamer for 7-8 minutes. If you don’t have a double boiler, then cover the pan with gauze and place the dumplings on the gauze, and cover the top with a bowl or deep lid. Bon appetit!
