1. We start preparing kefir flatbreads with the filling. Grind the cottage cheese with a fork so that there are no lumps, otherwise they will not allow you to roll out the cakes thinly. It is allowed to twist in a meat grinder.

2. Now add salt and pepper to taste, add one egg. Mix until the mixture is evenly distributed.

3. First wash the onion well and dry it with a towel. Cut it very finely and mix it with cottage cheese: the filling is ready. The ingredients for khychin flatbread are the same.

4. Divide the curd filling into ten parts, and roll each into a ball. Let's put it aside for now.

8. After dipping all the pieces in flour and flattening them a little, leave them for a while: this will make it easier to roll out. Although you can do it right away, since the dough is very soft and regular.

9. Make some flatbreads. Place the filling in the middle. You need to seal the edges of the dough in the middle, leaving the filling inside without air.

Attention: Be sure to sprinkle it with a small amount of flour so that the dough does not stick to it. Knead the mixture until it becomes elastic and dense. We should have dough like dumplings. Next, give it the shape of a ball and leave it for 10 minutes aside. Let him rest, and in the meantime we will prepare the filling.

Step 3: prepare the dill.


Wash the dill well under running water, shake off excess liquid and place on a cutting board. Using a knife, finely chop the greens and immediately pour them into a clean plate.

Step 4: prepare the cottage cheese.


Place the cottage cheese in a small bowl and mash it with a fork. This must be done so that the filling is obtained without obvious lumps.

Step 5: prepare the filling for the flatbreads.


Place paprika, finely chopped herbs, and salt to taste in a bowl with cottage cheese. Using a tablespoon, mix everything thoroughly until a homogeneous mass is formed. That's it, the curd filling is ready!

Step 6: prepare cakes with cottage cheese in a frying pan.


When the dough has rested a little, use a knife to divide it into small pieces depending on how big you want the cakes to be. Now, with clean hands, roll each into a ball and dip both sides into a mound of flour right on the kitchen table.

Using a rolling pin, roll out the dough into a thin layer of thickness no more than 2–3 millimeters.

Place a couple of tablespoons of curd filling in the middle of each flatbread and begin to form the dish. With clean hands, gather the edges of the dough into the middle so that from the outside they look like khinkali, and pinch them carefully.

Now carefully roll out each “bag” on both sides to a flat cake. Important: try to do this so that the filling does not start to fall out, especially in those places where the dough is very thin.

When all the tortillas are ready, place the pan over medium heat. Heat the container well and place the dough and filling one by one. Attention: There is no need to lubricate the frying pan with vegetable oil, since the cake already contains this component (therefore, the dish should not stick or burn at the base of the container). Fry everything on both sides until a golden crust appears on the surface.

Using a wooden spatula, transfer each flatbread onto a large flat plate and do not forget to grease it with a piece of butter pinned on a fork. At the end, we turn off the burner and begin to serve the dinner table until our dish has cooled down.

Place the cottage cheese in a bowl with high walls. Add sour cream and beat in eggs. Using a mixer, beat the ingredients until smooth. Salt and add sugar. Mix. Add baking soda slaked with lemon juice and vegetable oil. Grind well.
