Cooking method

Cut the pork into cubes and fry in a frying pan until golden brown. Add chopped onion.

Cut the potatoes into strips and add them to the meat. Chop the cabbage.

Lubricate the pita bread with mayonnaise, lay out the potatoes and meat. Add cabbage and pour sauce over everything.

Wrap the filling in pita bread, fry the prepared shawarma in a heated frying pan without sunflower oil. The dish is ready to eat.

Shawarma is a traditional name for all dishes, the meaning of which is to roll thin pita bread into a roll with a different set of ingredients inside. Real shawarma, as the Arabs invented it, is prepared with halal meat, herbs and spices. Of course, this option does not suit us. And fortunately, shawarma can be made vegetarian just by refusing to use meat in it. Instead of meat, we will prepare a filling of fried eggplant, juicy sweet tomatoes, purple onions and paprika cheese!

The recipe is very simple, the list of ingredients is accessible, and the homemade version is superior in taste to store-bought fast food, especially since it’s not so easy to find where vegetable shawarma is sold.


By the way, lavash is a universal product, and it comes in very handy when you need to prepare some kind of snack to take with you, for example, for work, school or a picnic. You can cook it, you can also wrap chickpeas, feta cheese with herbs, tofu with fried mushrooms, spinach with feta in an unleavened flatbread, and even make a sweet filling.

Ingredients for 2 large servings:

  • 2 packs of lavash (total weight 240 gr.)
  • 2-3 medium sized eggplants
  • 1 large tomato or 3 small ones
  • 1 purple onion
  • 1 small bunch of dill and parsley
  • 1 processed cheese with paprika or any cheese grated on a coarse grater + 1 tsp. ground paprika
  • mayonnaise (lean or sour cream)
  • vegetable oil
  • salt and black pepper if the cheese is not salted

Vegetarian lavash with eggplant and tomatoes

It is better to take Armenian thin lavash; it is elastic, so the food will not break through it.

Preparing vegetables:


Finely chop the greens.


Cut the tomato into large cubes.


Onion - in half rings.


Slice the eggplant lengthwise.


It is better to salt the eggplants and let them stand for 20 minutes so that they are not bitter. After this, drain the liquid that has drained from them and fry for 3-4 minutes on each side. We do this over high heat, pouring a little vegetable oil into the frying pan.


Cut the processed cheese into thin slices.


Having cut the pita bread into two parts, we draw a “path” of mayonnaise. Sprinkle finely chopped herbs on top (in this case it is parsley and dill).


Place the eggplant on the greens, followed by the blue onion.


Blue is best as it is not bitter and very juicy. Next is the tomato, you can lightly add salt and pepper.


In this case, processed cheese is taken with the addition of pepper, but you can also use the classic creamy flavor or another cheese of your choice.


We try to lay out the filling so that the edges of the pita bread remain free. Roll the pita bread together with the filling into a tube.


At the same time, put the frying pan on the fire and heat it up quite well. There is no need to pour oil, as it is necessary for the ingredients to simply warm up and the cheese to melt.


After five minutes, the shawarma can be turned over on the other side and covered with a lid. After 3-4 minutes, turn off the heat and let stand for a while.
