And if you show your culinary imagination by adding some ingredients and making an appropriate presentation of the dish, then such an appetizer can even be served at the holiday table. After all, a snack table is not complete without fish dishes, so why not serve herring in sour cream sauce instead of the classic one, the recipe with a photo of which I offer.
What’s interesting is that this appetizer is prepared in a matter of minutes; the longest stage is disassembling the herring into fillets and removing small seeds. This is a mandatory procedure, since the presence of bones in such a snack is unacceptable. But on the other hand, you will be rewarded for your efforts; the appetizer turns out amazingly good, because next we pour the herring pieces with sour cream and dill sauce, give the appetizer time to soak, and serve it to the table.
If I prepare such an appetizer for dinner, then I boil the potatoes as a side dish and serve them either whole or crushed.

Ingredients:
- lightly salted herring (preferably fillet) – 400 g,
- sour cream (15-25% fat content) – 200 g,
- fresh dill – 50 g,
- lemon fruit (for fresh juice) – ½ pc.

If you bought ready-made fillets of lightly salted herring, we still look through it for small bones and be sure to remove them. (And if you have a herring carcass, then it’s very easy to fillet it - cut off the head, fins and tail. And then rip open the belly and remove the entrails. Remove the skin from the fish and remove the backbone, thus disassembling the carcass into two fillets.
Cut the fish into small slices.




We wash fresh dill in warm water and dry it thoroughly with a napkin, and then only finely chop it.




We wash the lemon fruit with hot water and cut it in half.
Mix sour cream with finely chopped dill and lemon juice.






To make the sauce more fluffy, beat it a little with a whisk. If the sour cream has sufficient fat content, the sauce will have a good consistency.








Leave the herring in the sour cream sauce for 10-15 minutes so that it is soaked, and then serve.

An excellent dish for lunch that everyone in my household loves: herring stewed in sour cream. Herring in sour cream turns out nourishing and incredibly tasty: sour cream gives the stewed fish tenderness and juiciness. An appetizing appetizer of stewed herring is an excellent addition to potato, vegetable or rice dishes. It’s very easy to prepare herring in sour cream according to my recipe: and the delicious fish stew, with an incredible aroma, will delight everyone.

Ingredients:

  • one kilogram of fresh frozen herring;
  • one glass of sour cream;
  • 2 onions;
  • salt and spices - to taste;
  • greens - to taste;
  • vegetable oil - for frying;
  • flour for dredging fish.

  1. Defrost the fish at room temperature (do not do this in a microwave oven or in hot water), remove the fins and head, and cut off the tail.
  2. We remove the insides of the herring and remove the black film.
  3. Cut the herring into portions (if you wish, you can remove the seeds, I won’t do this).
  4. Salt and pepper to taste, mix.
  5. Peel the onions and cut them into thin quarter rings.
  6. Pour vegetable oil into a frying pan and heat it up.
  7. Dip pieces of herring in flour and place in heated vegetable oil.
  8. Fry on one side until golden brown, turn over and immediately sprinkle with chopped onions.
  9. Cover the pan with a lid and simmer over low heat until the onion becomes soft and transparent.
  10. Then pour sour cream over the fish and onions. Sprinkle with any herbs (to your taste), cover the pan with a lid.
  11. We simmer the fish in sour cream for about 5 minutes: we need the sour cream to melt. Immediately turn off the heat and you can serve the herring in sour cream on the table.

Today we will prepare a dish from peoples close to the sea, or more precisely, closer to Holland, in short, where herring is found.

I don't know what kind of weed they smoke in Holland, but it's "hot" and I wouldn't be smart enough for that combination.

Ingredients:

A couple of spiced herrings

A couple of onions

A bunch of greens (dill + parsley)

Sour cream 100g.

Potato

100gr. butter

A glass of milk

A couple of chicken eggs

Thin lavash or bread

Ground black pepper (to taste)

Well, now I’ll complain about the herring,

What began to be sold in our stores was far from being “spiced-salted herring”; they began to pack it in vacuum packaging and plastic jars. After consuming all this for a couple of years, I came to the conclusion that people had completely forgotten what “spicy-salted herring” was, I had to refuse store-bought herring.

I grew up in the USSR, there was normal herring, made according to GOST, not over-salted and did not fall apart in my hands into something unclear!

In short, I opted for the “Alutersky” fresh frozen herring, it is beautiful and large, and most importantly, you can see from it how many times it has been frozen, if it is not at all beautiful, then there is no point in taking it, but if it just begs to be picked up, that means IT!

I remembered a joke:

Well, we already do it at home according to GOST, 3 days is not a long time, you can be patient!

This is how I salt it.

Okay, all this is ranting, let's start the sacred rite, first of all we kick everyone out of the kitchen, because there will be scenes of flogging and dismemberment

We get everything prepared.

We put the potatoes to boil for mashing, a thing that is not so necessary, but desirable, because it will be a hundred times tastier.

Now we cut the herring, I don’t remember who showed it on TV, but it’s an interesting way of cutting, we peel the skin off the herring with a stocking, take the herring with both hands by the ends of the tail, twist it a couple of times around its axis, and then spread our arms in different directions!

The result is back fillet in one hand, belly with ridge in the other hand. If the fish is fresh, there will be no bones left in the back fillet!

The process of removing meat from the abdomen, I think, is not worth describing, this is what we have!

Now we take a sharp cutlass and chop the herring into pieces, not very small, but so that they are pleasant to put in your mouth, about 5x5 mm.

We also finely chop the onion and greens; if the onion is very “evil”, you can put it under boiling water for a couple of minutes, and then squeeze it to get rid of excess water.

We take a suitable container and put everything there, immediately sprinkle with ground black pepper, it’s better to grind it yourself, the aroma will be better. If there are any other wishes for spices, no question - the owner is a gentleman!

Now mix everything well, you can let the mixture sit for 10-15 minutes so that they become friends, or you can immediately add sour cream, I let them become friends.

While they are making friends, let's make mashed potatoes. Drain the water, mash the potatoes, add a glass of hot milk, then a hundred grams of butter, beat with your hands until fluffy.

What? Does not work? That's right, we beat in a couple of eggs, no... well, according to the technology, we put in the yolks, knead, beat the whites into a foam, then add them to the puree... ugh... I don't want to!

In short, we beat in the eggs and beat again, with our hands, with our hands... Well, not with our own, we take a man’s hands and beat them with them!

So, the puree is ready, we put it aside and start rushing around the kitchen in search of the herring, we find it, we look for sour cream, we find it too, put it with the herring and stir it!

All! Almost everything is ready, there is only a small thing left, you need to eat it beautifully and tasty! Here thin pita bread comes to our aid; we cut off a strip 15-20 cm wide from it. and spread with puree, it is still warm and spreads well.

We roll the pita bread with puree into a roll and wait for the puree to cool down. For this purpose, you can push the rolls into the refrigerator, the puree is no longer very hot and the refrigerator should withstand such torture!

Cooling, damn it, takes about thirty minutes, I can’t stand it at all, cut off a thin slice of black bread or loaf, put warm mashed potatoes on top, herring on top and try it!

How to make herring with onions in sour cream

I offer an excellent appetizer - herring in sour cream with apples. This is a popular and tasty dish of Polish cuisine. The combination of herring with apple, pickled onions and sour cream filling is excellent.

For such a dish, it is better to take sweet and sour apples, and high fat sour cream. Also process the herring fillet well so that there are no small bones in it. The dish can be tasted immediately after preparation, but it will taste best if you marinate the dish in the refrigerator for 3 days.

Preparation of the recipe “Herring in sour cream”:


Step 1

For work we will need ready-made herring fillets in pieces, sweet and sour apple, sour cream, mustard, vinegar, sugar, lemon juice, onion.


Step 2

Peel 1 medium onion and cut into thin half rings. Add sugar (0.5 tsp) and vinegar (1 tbsp). Leave for 10 minutes.


Step 3

Combine sour cream (150 g) with mustard (1 tsp).


Step 4

Peel apples (150 g), cut into thin slices and sprinkle with lemon juice (1 tbsp).

Ingredients:
500 grams of salted herring (fillet)
150 grams of apples
Lemon juice
150 grams of onion
1 cup sweet sour cream
3 tablespoons sour cream
1 bunch of dill
Apple and lemon, for decoration

Preparation:
Pour cold water over the fillets and soak for several hours.
At this time, change the water several times. And at the very end, wet it some more
half an hour in cold milk. Then cut into pieces.

Peel the apples, remove the seed chambers, and grate the pulp
with thick “eyes” or cut into pieces and sprinkle immediately
lemon juice.

Peel the onion, cut into small pieces, place on a sieve,
sprinkle with sugar and set aside for 2-3 minutes, then pour over
a lot of boiling water. Leave to cool.

Mix onions with apples. Add chopped herring.
Season to taste with salt, pepper and bell pepper powder.
Mix well. Place in a jar and close the lid
and place in the refrigerator for 1 hour.

At this time, beat the sour cream with a pinch of salt and mix with
sour cream. Season to taste with salt and pepper.
Chop the dill and leave a few branches for decoration.
Mix with sour cream sauce. Combine with herring.

Cut apples and lemon into layers. Place on the edge of the plate
covering layers of apples with lemon rings.
