For example, they have candies that combine the most delicate chocolate with hot spices or salt.

For most people, candy is a favorite treat that can not only please with its taste, but also lift their spirits and add energy. These sweets of various types have been prepared for several centuries, and the name of the sweets (the list of which is presented in the article) has changed significantly during this time.

This article will tell you about what types of sweet treats are produced by confectionery companies today, how they differ and what they are called.

When did they appear?

Sweet treats, the forerunners of our beloved candies, have been loved in different countries since ancient times. Thus, the culinary experts of Ancient Egypt created sweets from honey, lemon balm, orris roots, cane and dates, and the ancient Romans created sweets from boiled poppy seeds, nuts, honey mass and sesame. In Rus' they loved a delicacy made from maple syrup, honey and molasses.

Candies that looked similar to modern ones began to be produced only in the 16th century in Italy. This is due to the fact that sugar was established, without which it is impossible to make sweets. Initially it was believed that this was a rather strong drug, and it was sold only in pharmacies. Over time, candied fruits in sugar, they were the ones who received the name of sweets, ceased to be considered medicines, and became popular sweets.

What it is?

The word “candy” itself came into Russian from Italian, where confetto means “pill, candy.” It was originally used by Italian pharmacists to name candied fruit pieces sold as medicines. The form - "candy" - appeared somewhat later in the 19th century, when Italian carnivals became popular, in which participants threw confetti - fake plaster candies - at each other.

Today, candy refers to sweet confectionery products that vary in shape, taste and structure.

What are they?

The modern assortment of sweets is so large that confectioners have come up with many classifications. We are interested in what types of candies we can buy in the store, the names of which may differ subtly from different manufacturers. The most popular and in demand by Russian buyers are:

  • Caramel. Consists of molasses and sugar.
  • Lollipops. One of the easiest to produce, obtained by boiling molasses, sugar or the resulting composition is flavored and poured into special forms. The name of the candies is listed below.

Lollipops in paper wrapper;

Soft lollipops - monpasier;

Liquorice or salty candies;

An elongated or oblong-shaped candy. The names and photos of such “pencils” and “sticks” are presented below.

Truffles are elite round-shaped chocolates filled with a special French cream - ganache. It is made from butter, cream, chocolate and various flavorings. The outer surface may be coated with crushed or ground nuts, wafer crumbs or cocoa powder.

Chocolate stories

Chocolate candies, beloved by many, appeared thanks to the famous navigator Hernando Cortez, who discovered the American continent. It was he and his associates who brought cocoa beans to Europe and introduced Europeans to chocolate. Monk Benzoni contributed to the fact that the Spanish monarch, and after him his courtiers, began to regularly consume chocolates to maintain health. Subsequently, the fashion for chocolates spread to other countries, where influential people used them as medicine. Until the 17th century, only confectioners in Spain made chocolate and sweets from it, and sent sweets to many royal courts. Over time, the secret of making chocolate sweets became known to other countries, but until the end of the 17th century they were made only by hand.

How did sweets appear in Russia?

The first confectionery factory for the production of chocolates was opened at the end of the 17th century by the French confectioner David Shelley. Until the 19th century, Russia did not have its own candy production, and the delicacy was brought from abroad, or prepared by special cooks in the kitchens of rich nobles. The first Russian confectionery factory was opened in St. Petersburg only in the middle of the 19th century.

What were the candies called before?

As already mentioned, until the 19th century, sweets were either imported into our country from abroad or produced at home in the estates and palaces of nobles. For sweets made at home, the names were given descriptively, taking into account the shape, method of preparation, size, and the fruits and fruits used. The book “The New Perfect Russian Confectioner, or a Detailed Confectionery Dictionary,” published at the end of the 18th century in St. Petersburg, gives such funny names for candies as Strawberry scones and Green Apricots in caramel, Jasmine lollipops and Aniseed sugar snacks, Cherry marzipans and Apricots in lollipops.

Industrial names

The opening of the first Russian confectionery factory led to the emergence of many different types of sweets at the beginning of the 20th century. At first, French recipes and names of sweets predominated, the list of which was not very large:

  • "Baton de Gralier";
  • "Finchampagne";
  • "Creme de Risien";
  • "Boule de gom";
  • "Creme de noison";
  • "Maron Praline" and others.

Over time, the French name for chocolates began to be translated into Russian, and “Creamy Venus”, “Cat’s Tongue”, “Girl’s Skin”, “Salon” appeared on sale, designed in accordance with Russian grammar. However, in some cases, bilingual names of candies were also used, for example, “Studded with pearls, or Coriandor perle.” Russian confectioners called the new sweets they created themselves in Russian and often used names associated with images of the fair sex: “Sophie”, “Marianna”, “Merry Widow”, “Fisherman”, “Marsala”. Educational series were also produced, for example “The Riddle”. On the candy wrapper of such sweets there was a simple riddle. Before the revolutionary events of 1917, chocolate series “Sport”, “Geographical Atlas”, “Peoples of Siberia” and others were produced.

Until the October Revolution of 1917, you could buy Tsar Raspberry or Tsar Fyodor Mikhailovich caramel. After him, the names of the candies changed dramatically. Caramels “Krestyanskaya” and “Krasnoarmeyskaya”, “Sickle and Hammer” and “Our Industry” appeared on sale.

However, most chocolates retain their French names: “Dernier Cree”, “Miniature”, “Chartreuse”, “Bergamot”, “Pepperment” and others. Such neutral names as “Squirrels”, “Tomboys” and “Bunnies” did not undergo ideological rethinking. Soviet names for new candies reflected current events and achievements. So in the 30s of the last century they produced: “Fight for Technology”, “Be Prepared”, “Sabantuy”, “Milkmaid”, “Chelyuskinites”, “Heroes of the Arctic”, “Conqueror of the Ice”.

Man's conquest of space in the 60s of the 20th century was reflected in the appearance of the “Space” and “Cosmos” candies.

Around the same time, it became popular to include the names of fairy-tale and literary characters in the names of chocolates: “Snow Maiden”, “La Bayadère”, “Blue Bird”, “Sadko”, “Little Red Riding Hood” and others.

Chocolate has long been synonymous with pleasure and delicious taste. When tasting it, people often close their eyes, trying to fully feel all the pleasure from the sweetness. After all, this product contains cream, milk and cocoa in ideal proportions. And many varieties of chocolate allow confectioners to interest anyone in their products without leaving them indifferent.

Today, many brands of chocolate bars, candy bars, candies and other products are produced in the world. At the same time, the 10 largest brands stand out, largely thanks to which we love chocolate.

KitKat. In 1935, Rowntree's Chocolate crunchy bars were launched in York, England. 4 small chocolate products were combined into one bar. In 1937, the new product was named KitKat. The product became so popular that it soon became an integral part of traditional English tea drinking. The bars themselves consisted of milk wafers coated with a layer of hot chocolate. In 1989, Rowntree was purchased by Nestle, and the KitKat brand began to actively promote itself in world markets. Naturally, the manufacturer did not stand still. Bars with a variety of wrappers, flavors and aromas began to appear on sale. Now you can find KitKat with strawberries and cream, mango, wild berries. For those who are on a diet, a special low-carbohydrate product is produced. However, it turned out that consumers still prefer the classic taste and 4-bar form. At least $300 million worth of crunchy bars are sold worldwide each year.

Mars. This brand is famous for its high sales around the world; Mars bars are eaten by the most people. The history of the brand and the entire company began in an ordinary American kitchen. There, Frank Mars and his wife began making inexpensive candies. In 1911, the company was born. When the developed company opened its branch in England, the Mars bar appeared on the market. Since then, the taste of the product has constantly changed, as has the form and packaging. Although the ingredients themselves remain the same, their proportions are constantly changing. The bar's rich flavor includes nougat, almond crumbles, caramel filling and a rich chocolate layer. Today "Mars" is produced in several varieties

Galaxy. When talking about chocolate taste, it is impossible not to mention this brand. Galaxy gives a person truly deep pleasure. The owner of the brand is the Mars company. This chocolate is very popular not only in England, but also in the Middle East and Africa. In many other countries we know this chocolate as Dove. This product in its varieties includes many components - milk chocolate and caramel, fruits and nuts... The brand appeared on the market back in 1960, and since 1986 it has been owned by the Mars company. This brand produces not only chocolate bars, but also a mixture for making hot chocolate, ice cream and other sweets.

Cadbury. This brand is the best selling among all chocolate products. Its history dates back to 1824, when John Cadbury began his career as a confectioner in London. He opened his own cafe in Birmingham. Seven years later, he began producing cocoa and hot chocolate according to his own recipes. Then the main tools in his work were a pestle and a mortar. Interestingly, John Cadbury was a lifelong member of the Temperance Society. He considered his sweet products as a replacement for alcohol, which had destructive social functions. In 1913, his successors significantly changed the product, making it much more porous. The pride of the company, milk chocolate "Dary Milk", has been produced since 1905. Now the brand, under its own name, also produces cereals, milk and fruit chocolates and bars, and even crackers. Cadbury is a hot commodity for big business, and the company recently rejected a $15 billion offer from Kraft.

Toblerone. The packaging of this chocolate is very unusual, because it is made in the shape of a triangular prism. But even more people are attracted by the taste of this product. The chocolate recipe was invented in 1908 by Theodor Tobler and his cousin Emil Baumann. Back then it included nougat, almonds and honey, topped with chocolate. The name itself is a combination of the author’s name and the Italian word torrone (a special type of nougat). The very next year, enterprising confectioners registered their brand. Why chocolate has such an unusual shape is not entirely clear. Some people think that the triangle resembles the Matterhorn mountain in the Alps. And some believe that Tobler was inspired by a living pyramid of variety show dancers. There is even a political scandal associated with the name of chocolate. In 1995, Swedish politician Salin spent part of her working funds on a couple of these sweets. The case received great publicity under the name "The Toblerone Case". Salin herself left politics for a while, abandoning the fight for the post of prime minister. Today, chocolate comes in a variety of flavors - regular, white, fruit and nut, and honey.

Patchi. Using the best varieties of cocoa and hot chocolate, Lebanese confectioners have created a new variety for true gourmets. The company was founded in 1974 by Nizar. She immediately decided that it was necessary to make not just delicious things, but also to put them in exquisite and magnificent packaging. Patchi was initially positioned as a luxury attribute for the richest people. Today, chocolates are produced in a mixed Belgian-Swiss style. The brand is represented in 140 stores in 35 countries. The candies are famous for their decorations. Styles and colors can suit appropriate occasions or seasons. There are collections for holidays such as Christmas, Ramadan, Valentine's Day and so on. At the same time, natural ingredients are used in the candies - cocoa, milk powder, vanillin, roasted nuts and dried fruits. The Patchi brand owns the most expensive chocolate in the world. A box of 49 chocolates sold for 5,000 British pounds, it is part of the premium "Creme of the Society" collection.

Guylian. This famous brand of chocolate comes from Belgium. The company was founded by Guy Faubert. The name of the new product was given from a combination of the words Guy and Lilian (Faubert's wife). This is perhaps the most famous chocolate in the shape of sea shells today. Inside they contain delicate praline with nuts and various fillings. The brand's symbol is the seahorse, its use is protected by copyright. The company today sells its gourmet chocolates in custom-designed gift boxes, and also produces bars and truffles. In 2005, Guylian entered the Guinness Book of Records for creating the largest chocolate Easter egg of all time. It was exhibited in St. Nicholas, Belgium. 26 confectioners of the company worked on the miracle chocolate for 8 days. The sculpture turned out to be 8 meters high and 6 meters wide. It took 1950 kilograms of chocolate to make it.

Ghirardelli. In 1852, Italian Domingo Girardelli entered the US chocolate business. Having suffered a lot by that time from a series of financial losses and crises, he had no idea that over time the whole world would fall in love with his brand of candy. Their distinctive style was the irresistible taste and form of "Ghirardelli". Today it is the second oldest chocolate company in the United States. At the same time, here, like few other places, all aspects of chocolate production are controlled. Up to 40% of the cocoa beans are rejected to ensure a truly premium product. Then the fruits are fired and crushed to grains with a diameter of 19 micrometers. Italian masters today produce several varieties of chocolate, including unusual ones with a cinnamon or mint flavor. The company also produces other food products - chocolate drinks and flavored sauces. Today, the company's headquarters are located in the USA, and it is one of the leading chocolate brands in the world.

Lindt@Sprungli. The history of the company begins in 1845. At that time, Rudolf Sprungli and his son owned a candy store in Zurich. They decided to expand their business and start producing chocolate. Rudolf's son acquired the Lindt company in 1899, and the company received its current name. However, the company is constantly developing, so in 1994 an Austrian chocolate factory was acquired, and in 1997 and 1998 - Italian and American. The brand offers one of the most unique chocolate flavors. The Swiss were able to bring a piece of art to confectionery products. For many years the brand remained the standard of what milk chocolate should be. In addition, the Swiss produce its varieties. There is a collection with dried fruits; the design styles and filling methods differ. After all, chocolate should be perfectly smooth. The company has 6 factories around the world. Their golden rabbits, Bunny, brought fame to the brand. These Easter chocolates have been sold every Easter since 1952. Each rabbit has a cute ribbon tied around its neck. Lindt@Sprungli has a wide range of products: dark and white chocolate with toffee, caramel, coffee, vanilla, pistachio, tangerine, cherry and many other flavors.

Ferrero Rocher. And as it should be, we will leave the best for last. Ferrero Rocher are large chocolate candies created by Italian confectioners and conquering the whole world. This treat features a whole hazelnut coated in milk chocolate, surrounded by Nutella filling and encased in a nut shell. Based on this candy, the brand created several more masterpieces - with the taste of lemon, forest year, pistachio, almond and hazelnut. Well, our most popular delicacy is “Raffaello”, where almonds take the place of the nut, but the essence of the candy remains the same. The candies began to be produced in 1982, each of them contains 73 calories. The wrappers are usually gilded or silver in color, demonstrating the elegance and luxury of the dish.

One can only be amazed at the variety of sweets on store shelves today. And this product certainly sells very well. After all, most people love chocolates and sweets, especially children. Now in our country there are quite a few producers of sweets. Confectionery factories have been built in Russia in many cities. You open it and think: which one should I eat? Which one will be the most delicious and which one do you want most? This issue seemed so serious to us that we even conducted a survey.

A box of chocolates, given as a gift or bought for a special occasion for tea, always presents us with a painfully sweet choice. Especially if it is not an assortment, but a set of chocolates.

What is the difference? In technology, thickness of glaze and variety of fillings. When making assorted sets, the filling is poured into a prepared chocolate mold. This is a more complex technology, and the icing in such candies is thicker. There are not many fillings: only 3-4 varieties.

In candy sets, the filling is of paramount importance. It is formed and then covered with chocolate glaze - it turns out thin. A set of candies can have as many fillings as you like; some handmade candies have more than 10 of them. However, the candies can be the same, for example, “Southern Nuts” or “Evening Bells”, although in this case it is no longer a set, but just candies in the box.

What candies are the most delicious?

All fillings from candy sets can be divided into 5 large groups:

  • Fruit in the form of marmalade or jam;
  • Liquor with alcohol filling;
  • With nuts of different varieties, crushed and whole;
  • Cream of a wide variety of varieties;
  • Marzipan and similar viscous fillings.

On the pages of the Alyonka online store on social networks, we conducted a survey to find out what type of filling our subscribers prefer. More than a hundred people shared their opinions on this matter.

We thought that most people would choose nuts; after all, they are a classic addition to chocolate. But the most delicious candies in the boxes, according to those with a sweet tooth, were those with a cream filling, and butter cream was especially often mentioned in the comments. And candies with nuts are only in second place. Judging by the results, fruit and marzipan are fillings for select connoisseurs: they received the least votes. The liquor stores found themselves in the middle, in an honorable third place in the resulting ranking.

Bonus: fortune telling with candy

There is a belief that before you eat something new, you need to make a wish. It’s even more interesting with sweets: you can immediately understand whether it will come true or not.

A simple option: the desire must be formulated in such a way that it can be answered unambiguously “yes” or “no”, i.e. it should be simple, and not consisting of several interconnected ones. Then mentally make a bet on the filling: white or dark, hard or runny, with or without nuts. You need to choose one parameter and determine what “yes” will mean and what “no” will mean. Holding the desire and the “markers” of the answer in your head, you should close your eyes, choose a candy and take a bite. What filling is the answer.

The complex option allows for the possibility of making a compound wish, but in such a way that each part can be answered “yes” or “no”. For example: go on vacation to the Maldives this summer. Then a “yes” and “no” form is specified for each part, for example: “to go on vacation” - fluid or not, “to the Maldives” - dark or light, “this summer” - with or without a nut. Then close your eyes, choose a candy and take a bite.

Entertainment for the evening is guaranteed. Two-layer candies and complex fillings add special intrigue. In addition, making wishes can be replaced by a game of “truth or dare”, you can come up with new interpretations for various fillings that will give answers intermediate between “yes” and “no”.
