  6. Pour refined sunflower seed oil into the frying pan. You can use butter.

  8. Let's wait until the cooked omelette cools down, and then cut it into thin strips.
  9. Cut off the green part from a head of Chinese cabbage.

  11. Roughly chop the compacted part of the cabbage fork and place it in a container of a blender or food processor.

  1. Hard boil chicken eggs.
  2. Let them cool, remove the shells and cut into small cubes.

  4. Pass the peeled garlic cloves through a press or finely chop them with a knife.
  5. Add refined olive oil, mustard and a pinch of salt to the garlic mass.
  6. Squeeze the juice from the lemon.
  7. Add freshly squeezed citrus juice to the marinade.
  8. Place chopped squid fillet into the prepared marinade mixture.

  1. Pre-boil the squid. Add salt, a little dill and black peppercorns to boiling water. Place the squid in water and cook for exactly 2 minutes, after which cool the squid.

2. Remove the pulp from the tomatoes and cut them into cubes. Place in a salad bowl.

3. We also pre-boil the eggs and, after they have cooled, cut them into half rings. We also put the eggs in the salad bowl.

4. Chop the green onions and dill.

5. Grate the cheese on a coarse grater.

6. By this time the squids have cooled down, cut them into thin strips and add to the salad.

7. Season the salad with salt, pepper and mayonnaise.

Simple and tasty squid salad with fresh cucumber without mayonnaise

This salad can be classified as Chinese cuisine. We prepare it without mayonnaise, and use only squid and cucumbers as ingredients.

We will need:

  • squid - 2 pcs.
  • fresh cucumber - 1-2 pcs.
  • soy sauce - 7 tbsp. l.
  • vegetable oil - 5 tbsp. l.
  • rice vinegar (can be replaced with regular table vinegar) - 2 tbsp. l.
  • sugar - 1 tbsp. l.
  • garlic - 2 cloves
  • sesame - 1 tbsp. l.
  1. Pour hot water over the squids and remove the films. Throw them into boiling water and cook for exactly 2 minutes. Rinse the squid with cold water and cut into beautiful thin strips.

2. We also cut the fresh cucumber into thin strips.

3. Chop the garlic into small cubes; we will use it for salad dressing.

4. Fry sesame seeds in a dry frying pan until brownish. Sprinkle the salad with sesame seeds.

5. Combine soy sauce, vegetable oil, vinegar and sugar in a bowl. Add chopped garlic. Pour this dressing over the salad and leave to soak for 10 minutes.

If you're not a fan of spicy foods, just don't add vinegar to your salad dressing.

A delicious recipe for squid salad with cucumber, egg and rice

Squid goes well with cucumber and egg. That is why there are many different salads with these ingredients. Pay attention to the very tasty salad with rice.

  • champignons - 150 gr.

  • garlic - 3 cloves

As you can see, salads with squid are easy to prepare. Although I must admit that I have not cooked them before, I thought that processing squid was a difficult task. Imagine my surprise when I first bought and cleaned them. It turns out that everything is very simple. But you still need to know some subtleties.

How to properly cook squid for salad so that it is soft

Squids are healthy because they consist of 20% protein. But it is precisely this quality that presupposes certain features of their preparation. The fact is that during prolonged cooking, the protein coagulates, which makes the squid as hard as rubber and unsuitable for consumption. Therefore, in order to cook soft squid for a salad, you need to adhere to the following rules:

  1. When buying a carcass, choose a white carcass, pay attention to the freshness of the smell. Carcasses should not stick to each other.
  2. Before cooking, you need to clean the squid as thoroughly as possible so that no films remain. Otherwise, hard lumps may form on the surface of the carcasses.
  3. The easiest way to remove membranes from squid is to pour hot water over the carcasses and leave for a few minutes. The film then comes off easily and is removed.

4. Be sure to remove the chitinous cartilaginous chord inside the squid fillet. Simply separate it from the carcass and remove all solid particles with your hands.

5. After cleaning the squid, boil them in salted water. In this case, after boiling, cook for no more than 2 minutes, even better 1.5 minutes. At the same time, do not leave the pan, but strictly monitor the time.

6. When the time is up, immediately remove the squid from the pan and place in a colander.

7. For 1 kg of fresh squid you will need 2 liters of water and 2 tbsp. l. salt.

8. For more flavor when cooking, add 2 tbsp to the pan. l. sugar, bay leaf, black peppercorns and 1 tbsp. l. vinegar.

9. Another reliable way to prepare soft squid for salad is to pour boiling water over them 2-3 times. This method is considered more reliable, since there is no danger of overcooking the squid. This filling is enough to prepare the squid for consumption.

10. If you missed the moment, overcooked the squid for more than 2 minutes and it became tough, don’t despair - you can save it. They will decrease greatly in volume, but after 30 minutes of cooking they will become soft again.

The meat itself can only be white. Pay attention to this; a different color is a sign that the seafood has already been defrosted. Do not buy such a product - when finished, it will be bitter and will not hold its shape well.

Before cooking, squid must be completely defrosted and cleaned. Dip them in boiling water for literally a second, as an option - you can scald them.

You will see that the skin has separated a little. Now it will be enough to rinse the carcasses under running water and it will be easily cleaned.

When heat treating, it is very important not to overcook them in boiling water. It is an unjustified increase in cooking time that ultimately leads to a “rubbery” taste.

Let's look at two ways to prepare soft squid:

  1. Boil a lot of water, salt it, add cloves, bay leaves, black and allspice peas and a slice of lemon. Using a slotted spoon, lower the carcasses into boiling water, one at a time, for exactly one minute. Use a timer or keep an eye on the time. Sprinkle the finished carcasses with vinegar;
  2. Boil water with spices, pepper, bay leaves, and cloves. Place seafood in boiling water and immediately remove from heat. After five minutes, remove them from the water and sprinkle with lemon juice.

If, despite everything, the squid turned out to be tough, then this can be corrected. Cook them for another half hour, after such a long processing the meat will become soft again, but, unfortunately, there will be no more beneficial substances left in it.
