But when I started making such pancakes often, I already took butter in a piece on the basis that 1 tablespoon of melted butter is approximately 20 g of lump butter.

Another nuance in the list of ingredients is the presence of powdered sugar instead of granulated sugar. This is not the most fundamental question. But still, using powdered sugar makes the dough more homogeneous.
This, perhaps, is all the subtleties of choosing products for a sacred action. Let's get started.


First we need to melt the butter. But since we still need to melt the chocolate, I propose combining these two processes into one. So, put the butter cut into cubes in a separate small bowl. Break some chocolate into random pieces. Then you can melt it in your favorite way.

It is best, of course, to use a water bath. But since I’m always in a hurry somewhere and don’t have time to do anything, I always melt it in the microwave. I just put a bowl with butter and chocolate in the microwave, set the power to medium and turn it on for 2-3 minutes. After this, I stir the mixture and, if necessary, heat it a little more.

I'm temporarily setting aside the chocolate and butter. Again, I heat half the milk (that is, 250 ml) in the microwave; there is no need to boil it, the main thing is to bring it to the temperature of the chocolate-butter mass. I pour the warm milk into the melted chocolate and butter, stir and leave it alone for a while.


While the chocolate mass is cooling, I combine all the dry ingredients of the recipe: flour, powdered sugar, salt and cocoa. I stir. Please note that I do not use baking powder or soda at all, because the crepe dough is already very rich.


All that remains is to prepare the eggs. To prepare crepe pancakes, eggs need to be beaten. But not white, just a little. A mixer or blender is perfect for these purposes. But a regular whisk will do the job just fine.

Pour the beaten eggs into the mixture of dry ingredients and mix gently. Pour the remaining cold milk there. And add the chocolate-milk-butter mixture into the dough. Mix the dough well.

At first glance, it may seem to you that the dough is very liquid even for pancakes. Don't let this moment bother you. This test needs to be allowed to sit. Preferably two hours. But if there is no time, then one hour will be enough. During this time, the chocolate and butter will thicken the dough a little.

As time passes, stir the pancake batter. If you notice that there are some lumps, it is better to break them up. Or strain the finished dough through a very fine sieve. To tell the truth, I have never done this before; after all, we cook for our family, and not for a culinary competition.

Sometimes it happens that some pieces of chocolate have not dissolved (or have already thickened so much that they have formed small lumps). Don't let this scare you. You can thoroughly knead the dough with a spoon until smooth. Or you can leave pieces of soft chocolate, they will be like a kind of sweet topping for pancakes.

Just before cooking, I add a couple of tablespoons of vegetable oil to the dough. This is necessary so that you do not have to grease the pan during cooking. And the pancakes won't burn.


It's time to bake pancakes. You need to heat the frying pan and lightly grease it with vegetable oil before the first pancake (I try to do this with a silicone brush). Now pour a little dough into the frying pan with a ladle, distribute it in a circular motion over the entire surface of the frying pan and bake the pancake on one side until the edges begin to dry out a little. Then carefully turn the pancake over to the other side. We bake in half the time as on the first side. I usually move the pan slightly: if the pancake begins to move around on it, then it’s definitely time to remove it.

It must be said that, of course, it is very convenient to bake pancakes in a pancake pan, because it has practically no sides. You know that dry edges on pancakes come from the fact that we involuntarily pour batter onto the sides of a frying pan that is not suitable for this? So they dry out. If you pour the dough carefully, in the middle of the pan, then the edges will not be dry.

In any case, we stack the finished pancakes, and then there are two options (you can use both at once): either grease the edges of each pancake with butter, or cover the pancakes on top with a plate so that the pancakes do not dry out.

This amount of dough yields about twenty pancakes of fairly large diameter. I'm sure the family will ask for more. Therefore, I immediately suggest: bake, if not a double portion, then at least increase all the ingredients by one and a half times.

The pancakes turn out very interesting – black, unusual, but very, very tasty! They can be served with a sauce (a little sour would be nice - cranberry, cherry or orange), or you can make sweet rolls with banana or cottage cheese from them.
