I had two special considerations when making blueberry puff pastry puffs. First, I added more starch to make the filling more viscous, although I could have simply evaporated the blueberries and sugar more. And secondly, I baked the puff pastries in two batches, and after 30 minutes the second part of my dough separated from the table even worse. Either you need to sprinkle more flour on the table, or roll out the dough on a sheet of parchment paper. Consider these points. The puff pastries were not damaged; during baking, all the irregularities were smoothed out, because... The dough has risen a lot, but the second batch is not as perfect as the first.

I use corn starch because... I find it more subtle and delicate than potato.

Wash the blueberries and place them in a saucepan or saucepan.

Add sugar, shake and leave for 20 minutes.

Place on the fire and, stirring, bring to a boil. That's how much juice I got!

Sprinkle starch over the blueberries and sugar and stir. I added the same amount of starch, because... It turned out too liquidy.

Spread the defrosted puff pastry on a table dusted with flour (my dough is 220 x 480 mm in size).

Roll out the dough and use a knife to smooth out the edges to form a rectangle (I got a layer measuring 345x490 mm). Cut the dough lengthwise into three equal parts and crosswise into three equal parts.

Using the blunt side of a knife, roughly divide each workpiece into 2 parts (just mark without cutting). It will turn out like a “little book”. We put a little blueberry filling on one side, and on the second we make cuts with the tip of a knife, close the “book” and pinch the edges tightly.

Transfer the puff pastries to a baking sheet lined with parchment paper and place in the oven preheated to 200 degrees.

Bake for 15-30 minutes (depending on the dough) until deliciously browned.

Blueberry puffs are ready! When serving, sprinkle with powdered sugar if desired.

  7. When the dough is sufficiently defrosted and softened, roll out the dough sheets until they are approximately twice the size.
  8. First cut the layer of puff pastry into two parts.
  9. Then make a cross cut to divide the dough sheet into four parts.

Since there are two sheets of dough in one package, which we will divide into four more parts each, we get 8 tablespoons of blueberries. Place the berry in a deep cup, remove any twigs or leaves. Add 3 - 4 tablespoons of sugar and 1.5 tablespoons of starch.
Immediately turn on the oven to preheat to 180 degrees, prepare a baking sheet with parchment paper.

Defrost the puff pastry a little in advance, but not completely - it should be dense, but cut freely. Place a sheet of dough on a floured surface and cut into squares of the same size. Then roll out each square into a rectangle approximately 12 x 14 cm.
Then, retreating 1 cm along the edges, make cuts on one half of the rectangle, and place the prepared blueberries on the other (as already written above, a heaped tablespoon). Using a silicone brush, brush the edges with milk.

Thus, collect all the puff pastries and carefully place them on parchment. Brush the puff pastries with milk and sprinkle sugar on top.

Blueberry puff pastry puffs are ready and can be served immediately with hot tea or milk. Before serving, if desired, the baked goods can be sprinkled with additional powdered sugar.
