Minced turkey – 500 g.
red onion – ½ head,
hard cheese – 50 g.
garlic – 1 large clove,
egg – 2 pcs.
oatmeal or bran - 2 tbsp. l.
salt, black pepper - to taste.

Preparation:

– chop the onion and garlic with a knife, chop the flakes with a blender, cut the cheese into cubes;
– place the minced meat in a bowl, add eggs, onion, garlic and ground oatmeal, salt and pepper;

- mix everything thoroughly until smooth;

– form cutlets from the resulting mixture, putting a piece of cheese inside;
– put the finished semi-finished products in a mold and pour in a little hot water or broth;

— bake in the oven (at 180° C) for 30-35 minutes;

Turkey with cheese and oatmeal are ready. Serve with any side dish (rice, buckwheat, durum pasta), or with stewed or fresh vegetables.

After all, they are prepared without oil and are only treated with steam coming from boiling water, which makes them very tender and juicy. Today we had a desire to cook steamed turkey cutlets. To prevent them from turning out dry (turkey meat, as you know, is not particularly tender), add a little lard pork and melted cheese to the minced meat. And instead of the usual piece of bread, we use grated potatoes - this will not only add juiciness to the finished cutlets, but also slightly change their taste for the better. Such turkey cutlets are usually prepared in a double boiler or slow cooker, but since we don’t have such devices in our house, we’ll use a pressure cooker. Ingredients:

  • turkey fillet – 1 kg;
  • pork belly with lard – 300 gr.;
  • processed cheese – 140 gr.;
  • spices (ground pepper, paprika, salt);
  • garlic;
  • onions - 2 small heads (or 1 large);
  • potatoes - 2 small tubers;
  • chicken egg;
  • semolina – 40 gr.;
  • vegetable oil (for lubricating dishes);
  • mayonnaise – 30 gr.
  • For greater juiciness, you can supplement the ingredients with a small piece of butter.
  • Cooking time for steam cutlets is about an hour.

How to cook steamed turkey cutlets:

We thoroughly wash all the meat, peel and rinse the vegetables. Cut the prepared products into small pieces and grind (preferably twice) in a meat grinder until minced.

Grate the peeled potatoes and melted cheese on a fine grater, add to the cup with the chopped meat, and mix. In principle, the cheese can be processed in a meat grinder along with the rest of the ingredients.

Season the minced meat with spices, add egg, mayonnaise and semolina.

After thoroughly mixing, leave the meat mass alone for ten minutes, then roll it into small cutlets.

Immediately place the required amount in oiled tiers with pressure cooker holes, which we place on a pan of boiling water.

We’ll put the rest of the cutlets directly on the board into the freezer, that is, we’ll store the finished semi-finished product. There were 23 pieces in total.

With water boiling moderately in a saucepan, steam the turkey cutlets for 30 minutes. Serve still hot with any side dish.

It is enough to simply cut the breast meat into pieces that are convenient for loading into a meat grinder. Meat from thighs and especially drumsticks must be separated from skin, bones and cartilage.

Scroll the pieces of turkey meat into a meat grinder along with onions and, if desired, garlic. These vegetables will give the cutlets the necessary juiciness and improve the taste.

The procedure is simple and guarantees that all cutlets will be the same size.

Form the patties into the desired shape: round, oval with a blunt end, or oval with a pointed end.
