We use white flour from premium wheat. Sift it into a bowl with high sides. Add baking powder, cinnamon, ginger, cloves, and nutmeg. Arm yourself with a kitchen whisk and mix thoroughly in a circular motion so that all the spices are evenly distributed throughout the flour mass.

Pour kefir into a separate large container (fat content does not matter), you can use homemade or store-bought kefir. Add granulated sugar, salt, and vegetable oil. Stir with a spoon. It is desirable that the sugar crystals dissolve.

Add the yolks. Continue stirring until smooth.

Add flour mixture in small portions. Stir with a spoon first. Once the dough has thickened well, transfer it to a dusted board and continue kneading with your hands.

Knead until a soft ball of dough forms that does not stick to your hands. Cover with a cloth and let the gingerbread dough rest for 25-30 minutes at room temperature.
