Pollock is fried, stewed, baked, boiled, cutlets and pies are prepared. But still, this fish turns out juicy and tender when baked in the oven.

Let's start cooking pollock fillets in the oven. For cooking, I took pollock carcasses and filleted them, but you can also buy ready-made fillets.

2. Inspect the carcass and clean it if necessary. I especially ask you to pay attention to the abdomen. Sometimes there remains a black film in it that gives a bitter taste. So if it exists, it’s better to get rid of it.

3.We also get rid of scales and unnecessary fins. Afterwards, rinse well again and wipe with a paper towel.

4. Cut pollock into pieces.

5. Prepare a mixture of salt, pepper and spices. Rub the fish pieces with the mixture and leave for 15-20 minutes. During this time, salt and spices will penetrate into the very middle of the fish.

Good spices include basil, thyme, rosemary, and ground coriander.

6.When the fish is salted, it must be fried in vegetable oil.

17. We can say that all the preparatory steps are over, all that remains is to connect everything beautifully together.

  • 6 fresh frozen pollock fillets;
  • ¼ lemon;
  • medium onion;
  • 5 large spoons of apple juice;
  • salt and seasonings.

  • any hard cheese – 50 g;
  • ground black pepper, spices – 0.5 tsp;
  • salt - to taste.

Cooking method:

  1. Boil the prepared fish in water with a little salt, cool the fish, remove the bones and cut into several servings.
  2. Cut the onion into half rings, lightly simmer in 50 grams of butter, add mushrooms, salt, sprinkle with spices and simmer over low heat for 15-20 minutes.
  3. Prepare the sauce: 25 gr. sauté the flour in butter. Add hot milk, stirring, salt, add spices to your taste and simmer over low heat for 5-7 minutes.
  4. Grease the bottom of the saucepan with oil, sprinkle with ground breadcrumbs and place part of the fish in the first layer. Salt and pepper the layer of mushrooms on top, pour half the sauce over it. Place the remaining ingredients in the same order, pour over the remaining sauce and cover everything with cheese.
  5. Bake the dish in the oven at 180-160°C until golden brown.

Pollock with potatoes in cream sauce

To make pollock dishes juicier and more caloric, they are poured with butter or seasoned with sauces. Sour cream and cream sauces go best with fish.

Ingredients:

  • pollock fillet – 500 g;
  • butter – 80 g;
  • cream 20% fat – 100-150 g;
  • ground crackers – 20 g;
  • flour - 1 tbsp;
  • potatoes – 600 gr;
  • parsley root – 50 g;
  • onions – 2 pcs;
  • greens – 1 bunch;
  • a set of spices for fish and salt to taste.

Ingredients:

  • fresh pollock – 4 medium carcasses;
  • carrots – 2 pcs;
  • onions – 2 pcs;
  • fresh tomatoes – 4 pcs;
  • bell pepper – 2 pcs;
  • cauliflower – 300-400 g;
  • vegetable oil – 75 g;
  • hard cheese – 150-200 g;
  • green dill, parsley, basil - a couple of sprigs each;
  • fresh garlic – 2 cloves;
  • black pepper and sweet peas - 5 pcs each;
  • salt - to your taste.

Cooking method:

  1. Heat the sunflower oil in a deep frying pan, fry the bell peppers, onions and carrots cut into strips, then add the tomatoes in slices.
  2. When the vegetables are fried, pour in 100-200 grams of broth or boiled water, let it boil, place the cauliflower, disassembled into small florets, into the frying pan and simmer for 10 minutes.
  3. Separate the pollock fillet, wash, cut into slices and salt. Chop the peppercorns and sprinkle on the fish.
  4. Place the fillet pieces in a frying pan with vegetables and simmer over low heat for 10-15 minutes.
  5. Place fish and vegetables in portioned pots, sprinkle them with finely chopped parsley, dill, basil and garlic, sprinkle grated cheese on top.
  6. Place the pots covered with lids in a preheated oven and bake for 45 minutes at a temperature of 180-160°C. 10 minutes before cooking, you can open the lids of the pots.

Pollock in the oven with zucchini and sour cream sauce

Fish prepared according to this recipe is tender and flavorful. Instead of sour cream sauce, you can bake pollock with mayonnaise and sprinkle with ground wheat breadcrumbs.

Cooking time – 1 hour 40 minutes.

Ingredients:

  • pollock – 500 gr;
  • flour – 25-35 g;
  • fresh zucchini – 700-800 g;
  • vegetable oil – 50 g;
  • butter – 40 g;
  • sour cream sauce – 500 ml;
  • lemon juice – 1-2 tbsp;
  • salt and pepper to taste.

Sour cream sauce:

  • sour cream – 250 ml;
  • butter – 25 g;
  • wheat flour – 25 g;
  • broth, but can be replaced with water - 250 ml;
  • salt and ground black pepper.

Cooking method:

  1. Sprinkle the prepared portioned pieces of fish with salt, pepper, lemon juice and let stand for 15-20 minutes.
  2. Bread the fish in flour and fry in hot oil.
  3. Separately, simmer the zucchini cut into slices in butter until light golden brown.
  4. Prepare sour cream sauce: lightly fry the flour in butter, mix the sour cream with boiling broth and add the sautéed flour, stirring. Stir the sauce so that there are no lumps left, and boil for 2-3 minutes, season with salt and sprinkle with pepper.
  5. Place the fried fish in a saucepan, cover it with zucchini slices, pour in sour cream sauce, sprinkle with grated cheese and bake in the oven for 40-50 minutes at 190-170°C.
