The classic recipe for almond cookies according to GOST is suitable for those who remember the taste of real cookies, which many of us ate as children. The step-by-step macaroon recipe just involves mixing the very easy-to-make dough and baking.

To make cookies, you don’t need to fry the almonds - grind them straight into crumbs

Ingredients:

  • almonds – 120 g;
  • flour – 30 g;
  • egg white;
  • sugar to taste.

Cooking method:

  1. Grind the almonds and add sugar. The amount of sugar can be varied at your discretion: some people like sweeter cookies, while others, on the contrary, like savory baked goods.
  2. Add the whites and beat with a mixer.
  3. Place the resulting mixture in a water bath and heat until the sugar dissolves. You can also heat it over low heat with constant stirring.
  4. Add flour, mix thoroughly until smooth. The consistency of the dough should be of medium thickness - approximately like pancakes.
  5. Line a baking sheet with parchment, grease with butter, and sprinkle with flour. Using a spoon or a pastry bag, place small cakes from which the cookies will be baked.
  6. Bake in an oven preheated to 190°C. Cooking time can be from 8 to 15 minutes depending on the features of the oven.

Almond flour cookies

Almond flour macaroons are an even easier recipe, requiring just three ingredients. Cookies are prepared on the basis of almond flour: it is advisable to use coarse flour to make the products more aromatic and with a pronounced taste.

You can also prepare flour yourself: to do this, the almonds are peeled and ground in a coffee grinder.

Ingredients:

  • egg whites – 1 pc.;
  • powdered sugar – 80 g;
  • almond flour – 80 g.

Cooking method:

  1. Pour the flour into a deep bowl, mix it with powdered sugar. Mix the dry mixture thoroughly.
  2. Beat the whites separately until stiff peaks form.
  3. Mix the whipped whites and dry mixture, knead the dough - if you want the cookies to be more fluffy, then the dough can be made thicker.
  4. Place the mixture on a baking sheet with a teaspoon, sprinkle with powdered sugar (it is advisable to sift it first).
  5. Bake at 180°C, approximate time - 15 minutes. During this time, the crust of the products should become crispy, and inside they will be soft and viscous.

Remember that during baking the dough will spread over the baking sheet, so when laying out the raw mass, leave a distance of 4-5 cm between the “cakes”

Flourless macaroons

Flourless macaroons are the perfect recipe for sweet, but at the same time low-calorie baked goods. This dessert turns out very tasty, aromatic, tender, airy.

Ingredients:

  • almonds – 300 g;
  • egg – 1 pc.;
  • sugar – 150 g or to taste;
  • vanilla sugar to taste.

  3. Beat the egg (completely, not just the whites), add it to the dry mixture.

Sugar-free macaroons are another example of low-calorie baked goods. There are several cooking options: you can replace sugar with honey, or you can use stevia instead.

Ingredients:

  • almonds – 120 g;
  • proteins – 3 pcs.;
  • stevia – 2/3 tsp;
  • vanillin to taste;
  • flour – 30 g;
  • starch – 10 g.

Cooking method:

  1. Grind the peeled, unroasted almonds into crumbs.
  2. Add the whites to the resulting flour and grind again in a blender. There is no need to pre-beat the whites!
  3. Mix starch, flour, stevia and vanillin, add to the resulting mixture.
  4. We bake cookies - for convenience, you can use silicone molds for making muffins.

  1. Take 150 grams of nuts. Grind them until very fine. It is better to grind with a blender or coffee grinder so that the consistency of the product is more like flour. Then during cooking it will be distributed evenly and give that wonderful taste that we all want to get. It is very important that the blender is dry, otherwise all the nuts will stick to the wall.
  2. Pour sugar into the ground nuts (some people prefer to use brown sugar, it is considered much healthier).
  3. Take three eggs, separate them from the yolk into a separate cup (the yolks can be saved for another dish).
  4. Add the egg white to the mixture and beat with a mixer for about 2 - 3 minutes. It is important to obtain a homogeneous foamy mass. Transfer the resulting mixture to a saucepan or any deep container that is not afraid of fire. Place on the stove and stir from time to time. We wait until the product begins to bubble and foam, but we must be quite careful.

    Be careful not to let the sugar start to burn. Otherwise, the cookies will turn out tough, with lumps.

  5. Carefully add the sifted wheat flour, continuing to stir. For better results, reduce the heat. It is very important to get a mass that is not too thick and not too liquid. The consistency of the dough should resemble dough for.
  6. Preheat the oven to 180 degrees. While our oven is heating up, take out a baking sheet and place permanent baking paper on it. Place the butter in the microwave for 15 - 20 seconds until it melts. Grease the paper with oil. Using a spoon or pastry bag, spread the finished dough. The shape of the cookies can be very different (it all depends on the imagination of the pastry chef), but the easiest is the circle shape. It is important to leave space between the cookies to prevent them from sticking to each other. The approximate diameter is 3-6 centimeters (some people prefer to make cookies the size of five rubles, so they look much more interesting and children love them very much).
  7. Place the baking sheet with macaroons in the oven for 15 - 20 minutes. It is important that our baked goods take on a delicate golden hue and can be taken out. Sprinkle with powdered sugar, let cool for 30 - 40 minutes. Now our cookies can be served.
  8. Depending on your taste preferences, you can add some ingredients. Many people like to pour melted chocolate over the finished dessert and add coconut flakes to get a more exotic taste.
