How to cook fish on the grill?

As a rule, a picnic menu is not complete without a dish such as grilled fish. To prepare it, take 6-8 salmon steaks and rub with white pepper, coarse sea salt and sprinkle with lemon juice. Wrap each piece in foil, topped with fresh chopped parsley and lemon slices. Leave to marinate in a cool place for 20-30 minutes. Bake in foil on a wire rack for 20-25 minutes, turning over from time to time.

Grilled vegetables This is a great alternative to fried foods. And in terms of vitamin content, they will give a head start to any other dish.
Vegetables (mushrooms) can be cooked on a grill, skewers or directly on coals, after being wrapped in food foil. It is better to fry sweet peppers, mushrooms, zucchini, onions, eggplants, and tomatoes on skewers, after drizzling them with olive oil. You need to pepper and salt when the vegetables are ready.

You can make delicious salads from grilled vegetables. Here's a good recipe.

Ingredients:

Eggplants - 2 pcs.;
zucchini - 1 pc.;
sweet pepper - 2 pcs.;
onions - 1 pc.;
Cherry tomatoes - 12 pcs.

Ingredients for marinade:

Water - 1 l;
salt - 2 tbsp. l.;
sugar - 1 tbsp. l.;
vinegar - 2 tbsp. l.

Dressing ingredients:

Olive oil - 2 tbsp. l.;
honey -1 tsp;
pepper - a pinch;
greens - to taste.

1. Peppers need to be peeled and cut into slices.
2. Wash the eggplants and zucchini, dry and cut into thin slices.
3. Prepare a marinade from water, salt, sugar and vinegar. Pour it over the eggplants and leave for 30 minutes.
4. Mix honey, olive oil, salt and pepper. Place all the vegetables in a bowl and pour this mixture over, stir.
5. Heat the grill pan, lay out the vegetables in one layer and fry for 1-2 minutes on each side.
6. While the pepper is hot, place in a plastic bag, leave for 15 minutes and remove the skin.
7. Finely chop the greens, cut the onion into thin rings.
8. Prepare the dressing by mixing olive oil and honey.
9. Stir vegetables, add herbs, onions and dressing.

What's a picnic without fresh spring salads?

We most often make egg salad with radishes and cucumbers.

Ingredients:

Chicken eggs - 2 pcs.;
cucumbers - 2 pcs.;
radishes - 5 pcs.;
green onions - 2 stalks;
sour cream -3-4 tbsp. l.;
salt - to taste.

Preparation:

1. Boil hard-boiled eggs.
2. Wash the vegetables well under running water.
3. Cut radishes and cucumbers into thin half rings.
4. Chop green onions.
5. Cut the eggs into cubes or circles.
6. Mix all ingredients, add salt and season with sour cream.

Potatoes can simply be baked in a fire. To do this, just wash it and put it in hot ashes. But, you need to wait for the fire to burn out.

Can you cook potatoes baked in foil. You need to wash it well and make several transverse cuts on each potato, not reaching the end, so that you get something like an accordion. In these slits, place any food that matches your taste (slices of bacon, cheese, ham, smoked sausage). Season with salt and pepper, wrap in foil and place on a grill over the fire. Bake for 25-30 minutes.

Sandwiches can also be cooked in foil on a wire rack. Grease the bread with butter, place sausage or ham, baked meat, a slice of cheese on it, and cover with bread greased with butter. Place on foil, wrap and bake until the cheese is melted.

Lavash appetizer with cheese– this is also a suitable position for a picnic. The good thing about it is that it can be prepared from various ingredients that you have on hand. Take thin Armenian lavash, fill it with any filling and cheese, grated on a fine grater, wrap in foil and bake on a wire rack for a few minutes until the cheese melts. You can use meat, vegetables, seafood, herbs, fish, and sausage as filling.

Many people's picnic menus include champignons on skewers. We prepare them as follows: peel large champignons, grease with vegetable oil, salt and pepper. Thread onto skewers and bake.

You can also pre-marinate the champignons. To do this, add lemon juice, salt and pepper to taste and let it brew for about 5 hours. Place on skewers and fry.

Menu for an outdoor picnic for a birthday

A trip to nature is always a long-awaited event for residents of large and stuffy cities, and if there is also a significant reason for this, for example, the birthday of a friend or loved one, then joy knows no bounds.
In nature, every person relaxes, becomes more alive and active, and what is also very important, everyone develops a good appetite in the fresh air. This is exactly what those who organize a birthday celebration in the form of a picnic need to remember.
It is very important to carefully consider the menu and take everything necessary so that guests can enjoy freshly prepared dishes with pleasure. Holiday organizers can choose two options: either prepare all the food at home and simply take it with them in containers, or take a grill, prepare the food and cook all the dishes in front of the guests. This will make the cooking process even more exciting, and it may even become part of the entertainment program. But no matter how the food is prepared, it is important that it is convenient to eat it in nature, because often only a blanket or tablecloth laid in a clearing serves as a table. Here are some ideas for those looking for an outdoor picnic menu for a birthday:

Snacks

After the guests have arrived for the holiday, they need to be treated to something immediately. And simple snacks are best for this. It is advisable to make them at home before leaving, because in nature it is not so easy to cut meat and vegetables beautifully. You can make meat, cheese or vegetable plates with various sauces. It is advisable to chop meat nut, carbonate, smoked lard and several types of sausage.

On another plate you can put regular hard and soft cheese, braided cheese, as well as processed and curd cheeses. Vegetable cutting should also be as varied as possible. In addition to cucumbers, tomatoes and bell peppers, you can chop carrots and onion rings. Also, many people love greens, olives, and beans, so it’s worth stocking up on these products.

In addition to bread and sandwich buns, take lavash with you, and as soon as the grill is ready, prepare a delicious snack with tomatoes and cheese in a few minutes. In this way, guests will satisfy their hunger a little and will be able to wait for the main holiday dishes. For more details, see the link on our website.

Salad with tomatoes and champignons

You can also make a salad as an appetizer. It’s also better to cut it at home in advance. This salad is just right to sit for a while before being eaten. As an idea: it’s better to immediately put the salad, for example, in plastic glasses with lids, then guests can easily eat it without knocking over anything or getting their clothes dirty while they put the dish on disposable plates. In order to prepare this salad with mushrooms and tomatoes, you will need:

  • 400 grams cherry tomatoes
  • 200 grams of fresh champignons
  • basil and green onions to taste

for refueling:

  • four tablespoons balsamic vinegar
  • four tablespoons olive oil
  • ground pepper and salt to taste
  • one and a half teaspoons of sugar

First you need to wash the tomatoes and herbs, dry them on a napkin and cut them. Basil and onions are cut as finely as possible, and tomatoes are cut in half. After this, you need to clean the champignons and cut them into several pieces lengthwise.
Then the dressing is prepared. To do this, vinegar is mixed with oil and spices. Then the tomatoes are mixed with herbs, mushrooms, poured with dressing and everything is mixed well. After this, the salad can be divided into portions and left in the refrigerator for at least three hours. You can make this dish before heading out into the countryside and put the glasses of salad in a cooler bag.

Main course

Not a single trip to nature is complete without barbecue, and meat cooked over a fire certainly becomes the highlight of any holiday. Everyone has their own recipe for delicious kebab, and the most important thing in this matter is to properly marinate the meat. Moreover, this does not always take a lot of time; if you use, for example, mayonnaise, spices and kiwi, then it will take a little more than an hour for the meat to be ready for frying - and during this time you can just get to the place of celebration. All that remains is to light the grill. For step-by-step photos, see the link on our website.

Wings on the fire

By the way, you can fry not only pork, but also chicken wings. They turn out very tasty and crispy. By the way, you can also marinate chicken in mayonnaise sauce. Or make soy-honey sauce. To do this, add 2 tablespoons of honey and mustard to the soy sauce. If the honey has thickened, heat it up a little. Salt and seasonings to taste.

Champignons on the grill

As a side dish for meat dishes, you can bake vegetables, or, for example, champignons. By the way, the cooked ones taste very similar to meat, so this dish can be made when there are those who do not eat meat as guests, or when there are a lot of people, and there is a possibility that not everyone will get enough of the kebab.

The best companion for meat dishes is, of course, potatoes. It can also be baked on the grill, but it will be faster to feed guests if you prepare this side dish in advance. At home, you can boil the potatoes, drain the water, add butter, herbs, onions, close the pan, wrap them in paper, then wrap them tightly in a large towel and put them in the trunk. This way the potatoes will retain their heat and can be served with freshly cooked kebabs. If you don’t like plain potatoes, you can make mashed potatoes or stew potatoes with vegetables.

Hamburgers

As an addition to all dishes, or at the end of the holiday, when everyone is hungry again, you can prepare fresh cutlet sandwiches that can be served hot. Here's what you'll need to make hamburgers outdoors for, say, five people:

  • 5 cutlets: 500 grams of ground beef, one large onion, 100 grams of any hard cheese, 100 grams of breadcrumbs, olive oil, pepper and salt
  • 5 buns
  • bulb
  • 5 plastics of processed cheese
  • leaf salad
  • big tomato
  • sauces to taste

First you need to make cutlets. You can form them at home on the eve of the holiday, then freeze them and take them to the place of celebration in a cooler bag. First you need to grate the cheese and finely chop the onion. Then the onion must be fried in olive oil, cool slightly and mixed with minced meat and grated cheese. You can add salt and pepper, mix the mixture well, form cutlets and roll them in breadcrumbs. Make a small indentation in the middle of each hamburger patty to prevent the patties from losing their shape.

The finished cutlets must be fried on a wire rack on both sides until a dark crust appears. All that remains is to cut the buns into two parts, dry them and lay out the lettuce leaves. Then you can put the cutlets, pour over your favorite sauce, add cheese, onion rings, tomatoes and cover the burgers with the top of the buns.

Stuffed pepper

You can cook vegetables very tasty over real fire, and it will be very convenient to eat stuffed bell pepper halves. Here's what you'll need for this dish:

  • six peppers
  • 300 grams parmesan
  • four cloves of garlic
  • 100 milliliters olive oil
  • 50 grams chopped walnuts
  • canned corn
  • fresh basil

In this case, it is better to make the filling for the peppers at home, and fill the vegetables and bake them outdoors. First you need to grate the cheese. It is better to immediately put 100 grams in a container, since the cheese will be needed for sprinkling already stuffed peppers. After this, peel the garlic and finely chop the cloves. Then you need to mix the oil with garlic, walnuts and finely chopped basil leaves.
Then you need to peel all the peppers from the seeds and cut them in half lengthwise. Eight halves should also be sent to a container, and four halves should be cut into small cubes.
After this, we finish preparing the filling. Fry the chopped pepper until soft, add the resulting cheese mixture and corn. After five minutes, remove the pan from the stove. The finished filling must be cooled and stored in the refrigerator.
In nature, all that remains is to place the halves of the peppers on the grill, bake them for a few minutes on the inside, then stuff them, sprinkle with cheese and put on the grill for some more time until the skins darken and become soft.

Banana boats

You can even cook dessert on the grill. Bananas are best for this. The tasty delicacy can be decorated in the form of boats; for this you will need foil. Here are the required ingredients:

Lemonade

Of course, a picnic is not complete without alcohol, but you also need refreshing drinks. And you don’t have to buy them, because you can make real delicious lemonade. To do this you need:

  • five lemons
  • 800 grams of sugar
  • one and a half liters of water

First you need to peel the lemons. Then the skin must be finely chopped, placed in a deep container, covered with all the sugar and set aside for one hour. After this, you need to boil water, pour it into a container with lemon zest and wait about thirty minutes. At this time, you can squeeze out the juice of all the lemons, strain it and after time add it to the water with the lemon peel. If desired, you can immediately lay out the peel, or you can leave it and pour the lemonade into transparent bottles.

Here is one example of a menu for a birthday celebrated outdoors, but, of course, you should always proceed from the wishes of the birthday person and the taste preferences of the guests.

Ideas for celebrating a birthday in nature should be significantly different from all other celebration options, that's for sure.

I tried to collect all the most interesting things so that you can choose the right ideas for your holiday.

Let's solve the most important question. Which? This is a question of who exactly will organize everything and make the birthday party in nature truly memorable.

OPTION 1:
we do everything ourselves

OPTION 2:
book a holiday with a trip to nature

Option 1: We do everything ourselves!

Until the end of the article there will be ideas for those who are ready to arrange a memorable holiday for their loved ones. Honestly, it’s not that simple, you need a clear preparation plan and lists of necessary things, otherwise in the pre-holiday bustle you can forget the most necessary things.

Let's treat you!

1. Take ready-made food so that guests can safely wait for hot food

This is advice from many years of picnic experience. People usually come to nature in the morning, few people have time to have breakfast, and the road is long...

There must be a supply of ready-to-eat products, tea and coffee in thermoses, otherwise preparing a shashlik will not turn into a festive expectation, but a nervous process in which the coals take too long to light, the meat takes too long to fry, etc.

What you can take as a morning buffet:

Ready sandwiches
pies with salty and sweet fillings
spring rolls
pieces of fried meat in breadcrumbs or round flat cutlets (it’s convenient to make hamburgers with them)
fresh and salted vegetables
washed fruits
tea, coffee, juices

2. For the grill menu

Of course, on a birthday in nature, you want to see such treats that do not happen during home feasts.

There are so many marinade recipes that I won’t risk describing them here, I’ll just remind you what can be cooked on the grill.

Meat shish kebab
chicken kebab (by the way, you can eat it without vinegar, and the semi-finished product can be made at home and heated over a fire directly in foil. Children always want everything quickly)
fish on the grill
seafood
baked vegetables (zucchini, zucchini, eggplant, tomatoes, onions, bell peppers)
in a pot you can cook fish soup or meat sauce with herbs
pilaf

3. Don't forget:

Drinking water in small bottles
juices
bread, buns, cookies
ketchup and mustard
salt, sugar, seasonings
disposable tableware and tablecloths
good knives, ladle, slotted spoon
corkscrew
wet wipes
garbage bags
silicone gloves to reduce hand washing
set of skewers and grill
folding grill, coal
quick ignition agent

Disposable foil trays for prepared kebabs and vegetables
folding furniture or inflatable chairs
raincoats
spare clothes for children
mosquito repellent
rolls of foil and cling film to cover food from flies and wasps
first aid kit with plaster, peroxide, painkillers
a compact tent (if children don’t start playing in it, you can put all the bags, packages and backpacks in the tent, which always spoil the natural landscape with their appearance and ruin all the photographs)

We design a dacha (clearing, gazebo)!

There are ready-made paper decorations that can be turned into voluminous balls, stars and pompoms in a couple of seconds.

Ready-made paper decorations

That's the problem. All these decorations are quite LARGE and you don’t need so many of them to decorate a room. The price is very reasonable, they are sold folded and fold up very easily, literally in a couple of seconds. Rate my work, I dedicated a separate article to each type of decoration:

Here is a selection of articles with examples:

Large

Paper multi-colored

And here's another

Do you know what forfeits are?

Let's entertain our guests!

Now we are talking about a family holiday, but there may be options here:

  1. gathered adults of different generations from 18 to 90 years old
  2. At the festival there are many young families with small children from 1 to 9 years old
  3. Families with children from 1 to 17 years old came to visit you
  4. there are no small children, but there are teenagers aged 12-17 who are bored in adult company

Agree, in each of these cases the program should be different.

Free scripts for children and teenagers

  • (especially suitable)
  • Board games: high-quality cards for the games “Crocodile”, “Mafia”, “Alias”, “Svintus”, etc.

All together: 2 to 92

The most difficult case, the tasks for such a company are the most difficult to come up with.

If you feel that adults would like to have some fun with their children, let me remind you of a few time-tested fun games. Yes, you will need to buy some things, but then you will use the most successful props for many, many years.

  • If there is a place for outdoor games, there are always those interested for volleyball, badminton and frisbee, don’t forget to throw balls, rackets and frisbees into your backpack. Often there are no clearings for such fun, you need something less active, read on!

  • Fanta. Just like that, people also start dancing and start reading funny poems, but in forfeits there are very unexpected ones. Naturally, you also buy all sorts of funny little things and say the phrase “I’ll give this prize to phantom number...5!” In the second half of the party, for some reason, everyone is amused even by the wording of the task, and even more so by the execution. Books with tear-off forfeits are sold in bookstores.

  • Limbo. A fun dance activity with a stick, which is held horizontally by two assistants at a height of 1.5 meters. The dancers go through the first circle under the stick and line up for a new circle. Just lower the stick 10 cm lower...
  • Dance battle. The most difficult thing here is the selection of music. If you have the Internet, there are no such difficulties, but in nature, for such a competition you need to pre-record fragments of famous dance tunes on disk: lambada, dance of little swans, lezginka, duck dance, tango, hip-hop, macarena, rock and roll, etc. d.

  • You can take an interesting one fun scenario with family games. For example, on our website we have
  • Darts. If it is very difficult to involve men in all the previous entertainments, then when they see darts, they immediately leave their place at the festive table and line up with darts. There are quite budget options. Hang it on a tree and compete! By the way, darts can be replaced by ring throw, it's fun too! Take a closer look at the game "Towns". All sets are for sale, just don't forget!

  • Face painting, Popuas and Indians. If an outdoor birthday takes place during the hot season, divide the guests into two teams and organize a body art show. Children are generally delighted with the idea that they can paint not only part of their face, like at all other holidays, but their WHOLE BODY! Adults also find colorful excitement. It would be nice to prepare small accessories - feathers, Hawaiian flower beads, paper ribbon skirts, bracelets, thin plastic masks and funny glasses. Get your camera ready, these are memorable shots!
  • Team games. Honestly, if no one has experience in conducting such games, everything is not very interesting. A good presenter knows how to make a “candy” out of the most banal task. Just in case, let me remind you about tug of war and running in bags.
  • Relay races. In nature, you can drag water in ladles and pour it into a jar, carry bagels on your head during an obstacle course, “string” all team members on a string, inflate or pop balloons at speed, etc.
  • Strongman competition. It's very easy to do, and the excitement around the prize 5-liter keg of beer is always very big. It needs to be held at arm's length for as long as possible. You can replace the “barrel” with arm wrestling.
  • Launching lanterns, cold fountain, firecrackers. Celebrating a birthday outdoors should also have a beautiful ending. Launching Chinese lanterns is a very beautiful tradition. The main thing is to do everything correctly, it will fly beautifully and there will be no accidental fires. There are no “contraindications” to cold fotans. These are just silver splashes in honor of the birthday boy!

When creating a picnic menu, consider the basic requirements for food in nature. What should it be like? First of all, it’s filling – you always want to refresh yourself in the open air. And also convenient for transportation and so that you can easily eat it, preferably without the use of additional utensils.

And, of course, it is non-perishable for a long time - travel and lying in the sun should not harm such food. Snacks meet all these criteria. We offer interesting and simple recipes for snacks for an outdoor picnic that will help out any housewife.

  • salt.

To prepare the Hawaiian sauce, mix all the ingredients and stir until the starch is completely dissolved. Bring the mixture to a boil, reduce the heat to medium and cook for 2 minutes. The sauce is ready.

We prepare all the components of the kebab in advance. To do this, cut the chicken, onion, pepper and pineapple into large cubes, and the bacon into strips.

For one skewer we take 4 pieces of chicken and 3 pcs. pineapple, 2 peppers and onions, 2 strips of bacon.

Thread the edge of the bacon onto a skewer, followed by the chicken, then again the bacon, which wraps around the chicken on one side. Next comes pineapple and again bacon. Then peppers and onions, which we wrap together in bacon.

The last piece should be chicken and bacon. Lubricate the finished braids with vegetable oil.

Bake on the grill for about 10-15 minutes. Serve with hot Hawaiian sauce.

To prepare you will need:

  • whole potatoes;
  • garlic;
  • paprika;
  • yellow mustard,
  • parsley;
  • lemon juice;
  • parsley;
  • thyme;
  • rosemary;
  • oregano;
  • Cayenne pepper;
  • olive oil.

Wash the potatoes and boil them in their skins. Moreover, the tubers need to be slightly undercooked; they will then be cooked over the coals.

Peel the skins from the potatoes and dip them in the marinade. To prepare the marinade, you just need to mix all the ingredients.

The amount of spices is taken arbitrarily and can be adjusted depending on your own preferences.

We string the marinated potatoes onto skewers and send them to the grill.

Cook until a crispy crust appears on the tubers.

Snacks for a summer picnic: skewers of meatballs and puff pastry

To prepare you will need:

  • minced meat or chicken – 400 gr.;
  • yeast puff pastry – 250 g;
  • hard cheese – 70 gr.;
  • bread crumbs - 2 tbsp. l.;
  • chicken egg;
  • salt;
  • pepper;
  • parsley, dill.

We prepare minced meatballs at home. You can take chicken or a mixture of beef and pork. Add raw egg and grated cheese to the prepared minced meat.

To seal in the fat that will melt during frying, add some breadcrumbs.

Our meatballs will be given a piquant flavor by greens and spices, which we will also add to the minced meat.

Knead the mixture and transfer it to a container for transportation. At a picnic, we form small meatballs from the minced meat.

From the puff pastry you need to prepare strips, which we cut into a width slightly less than the size of the meatballs. The length of the strips will depend on the length of the skewers.

Since we will be stringing the dough in waves, we will need strips twice as long as the skewers.

We begin to form an appetizer with meatballs. We string the edge of the dough onto a stick, after it a ball of minced meat, again the dough, circling the meatballs around it. So we alternate the dough with the balls until the end of the skewer.

Grease the dough with vegetable oil. You can bake this appetizer on the grill or on a wire rack.

Serve the appetizer hot. You can sprinkle the finished meatballs with sesame seeds or cheese.

Picnic snack recipes: tomatoes with cheese on skewers

To prepare you will need:

  • cheese – 500 gr.;
  • tomato – 15 – 20 pcs.;
  • olive oil – 50 ml;
  • lemon juice;
  • salt;
  • pepper;
  • parsley.

This appetizer is prepared very quickly and goes well with any main course. Tomato shish kebab with cheese is also good as a stand-alone snack. Cut soft cheese into discs.

It is better to take tomatoes that are small but fleshy.

Thread the ingredients onto skewers. Prepare the marinade sauce by mixing oil with lemon juice, pepper and herbs. We dip the kebabs directly on the skewers into the sauce, where they will lie for literally 15-20 minutes.

Immediately place the pickled tomatoes and cheese on the grill. In just 10 minutes the original appetizer will be ready.
