Each of us knows that the strawberry season is very short, and the price category of this product changes every time. But still, there is a way to prolong the pleasure of such a delicacy for longer, namely by preparing a very original drink at home - strawberry liqueur.

The drink prepared according to this recipe has a very rich aroma of fresh strawberries, a rather pleasant soft taste, and a beautiful red color.

All we need for preparation is:

  • cognac or vodka, alcohol if desired - 1 liter;
  • fresh strawberries – 1 kilogram;
  • sugar – 1 kilogram;
  • lemon juice -30 grams;
  • clean water - 0.5 liters.

Cooking method step by step:

The first step is to very carefully sort out the strawberries themselves, remove the missing fruits and separate the tails and stems from the fruit itself. After which they need to be washed under running water, then each berry is divided in half into two even parts.

In the next stage, we transfer our strawberries into a clean separate container (jar, bottle), fill them with cognac, vodka or alcohol, adding lemon juice. Close the whole thing very tightly with a lid.

It is important to take into account the fact that the alcohol covers the berries by at least two centimeters.

After this time, it is necessary to strain our liqueur through a sieve and carefully filter several times through a triple layer of ordinary gauze.

Now we will need our unaccounted for ingredients, namely a kilogram of sugar and water. Mix them in a saucepan and put on the stove. You need to wait until the water boils, and then let it stand for about five minutes, removing the resulting foam with a slotted spoon. You must wait until the resulting syrup cools.

Mix water with strawberry infusion and pour the almost finished drink into empty bottles. We just have to wait a little longer.

For seven or eight days we leave our strawberry liqueur in a dark place where room temperature is maintained.

Recipe for strawberry liqueur XuXu (Xu Xu)

Strawberry liqueur Xu Xu from the German brand “Georg Hemmeter” has a very bright raspberry color, which is achieved thanks to the dye, so you should not count on the identity at home. Also, homemade liqueur will have a richer taste and aroma.

For our recipe you will need the following ingredients:

  • vodka (can be replaced with any other alcohol) – 1 liter;
  • strawberries – 1 kilogram;
  • sugar – 1 kilogram;
  • clean, boiled water – 0.5 liters.

Cooking method:

We carefully sort the berries, rinse and clean off all excess. Then we cut it into four equal parts and put it in a regular three-liter jar.

Pour the selected alcohol to the very top and close our future drink with a lid. Then we leave it on the windowsill for about two weeks.

Periodically, you can open the container, thereby releasing the accumulated gas. After fourteen days, drain the tincture, carefully filtering through cheesecloth.

Bring the mixed water and sugar to a boil and cool to twenty degrees. Mix the liquids and after thorough stirring, distribute into bottles. After seven days of infusion in a dark room, everything is ready.

Quick recipe for making strawberry liqueur

The recipe for making liqueur given below is called fast because the cooking time takes about thirty minutes. And you can use it immediately after preparation.

We will need:

  • strawberries – 300 grams;
  • vodka – 200 milliliters;
  • sugar – 2 tablespoons.

Cooking method:

We wash the strawberries, after removing the tails. In a spacious container, blend it with a blender until smooth. Add granulated sugar and mix with our vodka, thoroughly mixing the resulting mass.

Strawberry puree will significantly reduce the strength of the vodka and become more viscous.

If the liqueur is too strong for your taste, you can dilute it with boiled water.

Fill everything with vodka, it is important that it covers all the berries completely, and place it on a windowsill or any other warm place for 7 days. Then we strain the tincture from the berries through gauze in two layers into another bowl.   • defrosted strawberries – 550 g;
  • sugar – 255 g;
  • vodka – 300 ml;
  • lemon – ½ pc.

Preparation

Place the berries in a blender bowl and puree them into a homogeneous puree, which we filter through a fine sieve. Because the mass is quite thick; this process is not quick, you can speed it up with a spoon, the main thing is that all excess remains in the sieve.     Mix the strawberry infusion with syrup, pour into a jar and forget about it for another 3-5 days. During this time, the liquor will become clearer and can be removed from the sediment and then filtered.

Ingredients

    Strawberries – 1.5 kg

    Schnapps or brandy – 1 l

    Sugar – 200 g

    Water – 200 ml

Cooking method

XuXu liqueur originates in Germany. In the 9th century, the Underberg Family began producing herbal tinctures, which were presented to the world at an exhibition in England.
Since 1939, production stopped due to problems with raw materials.
About 10 years later, the Underberg heirs resumed the production of tincture in small bottles, giving rise to the development of a new alcoholic drink. The recipe itself was originally taken from German bartenders who mixed strawberry puree with vodka.

If anyone doesn’t know, XuXu is a German liqueur made from fresh strawberries with vodka. Although, the name “liqueur” here is very arbitrary - the drink is not even sweet at all. But thick and very aromatic.
Honestly, I have respected “Ksyu Ksyu” since my youth - it’s very, very tasty. And from time to time I buy it for my beloved, exclusively.
But, apparently, over the years I have somehow become more tight-fisted, or perhaps my “toad” has grown up and is no longer strangling like a child, or excise taxes have become such that you can’t buy anything without a toad...

In general, I was returning from Tunisia, but in “duty free” and stocked up on all sorts of drinks while I was waiting for the flight. Well, I bought Ksyu Ksyu at the same time.
And while we were flying, my toad attacked me and started strangling me - and why was I, in my right mind and memory, given 22 euros for a liter of strawberries with vodka?!

It fit perfectly - the pulp goes away (although you literally have to wipe it with a spoon), but the strawberry seeds remain.
I had to fiddle with 1 liter for about 15 minutes. No rush.

The result is obvious! After filtration, even the color became more saturated.

And after a day in the refrigerator, Xu Xu was infused and did not even separate, as often happens with the original XuXu, which is supposed to be shaken before use.

This is such a delight - homemade Ksyu Ksyu. Even if you open a production facility, you can estimate the markup yourself, at the exchange rate of 22 euros per bottle.
But, lazy. And there will obviously be problems with the license.
So, make XuXu yourself, at home, as they say - you won’t regret it. Everything about everything - no more than an hour.

As for the jar with sugar and strawberries, it will need to be shaken several times and left for 2-3 days, the sugar should completely dissolve. Drain the syrup, add 200 ml of water to the jar, stir and drain the remaining syrup again.

Mix the strawberry infusion with syrup, pour into a jar and leave to infuse again for 3-5 days. The strawberry liqueur will lighten during this time and must then be filtered. You will end up with a delicious liqueur of a beautiful “strawberry” color. Although its strength will not exceed 15%, the aroma and taste will be simply divine.
