Salad "Bunch of Grapes"

For any holiday, family celebration or romantic dinner salad will do with chicken “Bunch of grapes”. This original dish both adults and children really like it, and simple ingredients and simple execution make its preparation accessible.

Ingredients:

To prepare the “Bunch of Grapes” salad for two large dishes(8-10 people) we will need:

  • Smoked or boiled chicken breast – 500 grams.
  • Chicken or quail eggs, hard-boiled - 4-6 pieces.
  • Cheese durum varieties, Russian or Dutch will do - 400 grams.
  • Walnuts - 50 grams.
  • Garlic - 2-3 cloves.
  • Mayonnaise - 500 grams.
  • Apple - 1 piece (optional).
  • Grapes – 400-500 (preferably seedless).
  • Parsley or celery for garnish.

Preparation:

There are two variations of preparing the “Bunch of Grapes” salad:

  • Forming the salad in layers.
  • Mixed salad.

For the first preparation option, we will need two flat plates on which we will lay out and serve our salad. It makes sense to immediately divide the food into two parts for each plate. We form all layers in the form of a grape brush.

Layered salad “Bunch of grapes”

  1. The first layer is cheese grated on a medium grater.
  2. Lightly coat the top with mayonnaise mixed with garlic.
  3. The second layer is chicken breast. To do this, you can take ready-made smoked breast or boil chicken fillet. The breast should be finely chopped or disassembled into fibers and placed on a plate. Lightly coat the top with mayonnaise mixed with garlic. Advice: Chicken fillet will be softer and juicier if you add salt to it in the broth at the end of cooking.
  4. The third layer is eggs grated on a medium grater.
  5. The fourth layer is an apple grated on a coarse grater. Lightly coat the top with mayonnaise mixed with garlic.
  6. The fifth layer is finely chopped nuts. They can be chopped or crushed in a blender or mortar. Coat the top well with mayonnaise-garlic sauce.
  7. Decorate with wine berries cut in half, giving the dish the appearance of a bunch of grapes. First remove all the seeds from the berries.
  8. We decorate the top of the resulting bunch with greenery.

Salad "Bunch of Grapes"

For the second recipe you will need the same ingredients. This dish is especially delicious with smoked chicken.

Preparation:

  1. First, we cut or disassemble the chicken breast into fibers.
  2. Add chopped small cubes eggs and grated cheese on a medium grater.
  3. You don’t have to add the apple (this is to taste); instead, you can finely chop 200 grams of Chinese cabbage. Peking cabbage will add airiness to the finished dish.
  4. Add a handful of pre-chopped nuts.
  5. Crush two or three cloves of garlic into mayonnaise and season the chopped ingredients well with this sauce.
  6. By placing the ingredients on a plate, they are given oval shape in the form of a bunch of grapes.
  7. The dish is decorated in the same way as in the first recipe, with slices wine berries seedless and decorated with parsley or celery.

This is enough good recipe holiday salad– the ingredients in it are combined harmoniously and very interestingly. Salad " Bunch of grapes» original not only in appearance, but also in taste. The first "Ah!" you'll hear it when they see the salad, the second one when they try it.

  • 1.5 handfuls of shelled pistachios (or other nuts)
  • 100 g cheese,
  • 500 g chicken meat,
  • 1/3 medium head of Chinese cabbage or iceberg lettuce,
  • 200 gram pack of mayonnaise,
  • ½ teaspoon mustard (I used Dijon)

Preparing the “Bunch of Grapes” salad

This salad is sometimes made into layers. But I assure you, this makes no sense at all, because under bright decoration no one will see these layers from the grapes. So our task is simplified - we just need to cut everything into smaller pieces and mix. But you will have to tinker a little with the decoration, especially if you have grapes with seeds. If you manage to get a large and beautiful quiche, then you can prepare the salad in 15-20 minutes. So, first we need to boil or fry the chicken. You can take any part without skin. I have a regular fillet, which I quickly fried until golden brown.

We chop the meat quite finely.

Then cut it just as finely Chinese cabbage or salad.

We clean the pistachios and then press them with the flat side of the knife, after which they can be easily chopped.

Three cheese on a fine grater.

Add mayonnaise and mustard. As for salt, the salad is a must try. In my case, the pistachios turned out to be quite salty, so I didn’t add additional salt to the salad. This salad needs to be mixed properly. Therefore, take a larger bowl and stir for 2-3 minutes so that all the dressing ingredients are evenly distributed. After all, from this mixture we will need to form a dense hill in the shape of a bunch of grapes. You can make a more classic triangular "bunch". I preferred the round one - usually these are the ones I try to choose at the market, so that they are denser, berry to berry.

Place the salad on the dish first in a heap, then press it with the inside of the spoon and smooth it with the outside.

Here our base is ready. Now it's the turn of the grapes. To process it, be sure to take a clean board! The berries should be clean, bright and shiny, as if they were hanging on a freshly washed bunch of grapes. Pinch off the grapes carefully so as not to damage the skin. Cut in half lengthwise and remove the seeds with a knife. Of course, with seedless grapes everything will be much easier. But I didn’t look for easy ways: I chose black grapes because they look the most impressive. But, alas, I have never seen such a large black quiche in nature, or rather, on sale.

We begin to lay out the halves of grapes from the “front” end of our bunch, that is, from the bottom.

If you want the salad to look neat, then try to make the rows even. The berries usually vary slightly in size. So if the row is uneven, you can correct it by taking larger or smaller grapes. Our task is to cover the salad itself with decoration as much as possible.

Press the berries closer together, but don’t overdo it! Be careful with the salad. Do not shake it too much, handle it carefully - although mayonnaise is a sticky substance, it is still not Moment glue, so with a sharp movement the grapes may fall off.

There may be some drops left on the plate after finishing work. grape juice. It's OK! Wipe the edges with a clean paper towel. And the final touch is a sprig of parsley. This is the “Bunch of Grapes” we got. I hope your loved ones will like it. Mine ate the salad in exactly five minutes.

Notes:

  1. This salad can be made without mayonnaise - replacing it with cream cheese (Almette, Buko or the more budget-friendly Karat).
  2. Pistachios can be replaced with walnuts, then the salad will have a slight bitterness. Or almonds, which will need to be lightly fried - in this case, the salad will acquire a more “nutty” taste.
  3. If you lay out a mound of lettuce, but it does not hold tightly, then add more to the salad. grated cheese, which is used not only for taste, but also to ensure that the salad holds its shape well.

When a holiday or family celebration is approaching, you want to surprise and please your loved ones and friends with delicious and unusual dish. Try cooking incredible delicious salad Bunch of grapes with smoked chicken and pistachios. I received so many compliments when preparing this salad that with a clear conscience I offer you its recipe.

  • 300 g smoked chicken breast fillet
  • 200-250 g salted unshelled pistachios or 100 g peeled and toasted walnuts
  • 400-500 g seedless grapes
  • 400-500 g Iceberg lettuce or Chinese cabbage
  • 100-120 g hard cheese
  • 3-4 pickled cucumbers
  • 2-3 eggs
  • 2 cloves garlic
  • 200 g mayonnaise
  • lettuce leaves for decoration

Quite voluminous, designed for a large company. For a family of 4, use half the ingredients.

Preparation:

Set the eggs to boil. Let's start peeling the pistachios. I had a bag weighing 220 g, in the end there were only 80 g of pure kernels, but this is enough for a salad.

Now chop the pistachios with a knife, not very finely. The pistachios in the salad are saturated with moisture and become soft.

It’s no less tasty if you use walnuts rather than pistachios in the salad, lightly fried in a dry frying pan, and the time savings is significant.

Let's take care of the chicken. I had smoked breast weighing 500 g, for the Bunch of Grapes salad, 300 g of pure meat is enough, otherwise the smoked taste will overwhelm other flavors. I recommend using breast fillet rather than legs.

So, cut the chicken into small cubes.

We cut the pickled cucumbers into small cubes, 3-4 cucumbers 9-10 cm long are enough.

Three cheeses on a coarse or medium grater.

Cut the eggs into small cubes.

Let's start with the Iceberg salad. I like this salad because its leaves have a very pleasant, slightly sweetish taste, and it does not lose elasticity when stirring the salad and has a pleasant crunch. But there is also a drawback - the petioles are very bitter. Therefore, we will disassemble the head of cabbage into individual leaves and from each we cut out a petiole - the thickened lower part of the leaf.

If you use Chinese cabbage, I still recommend cutting out the stalks for better salad consistency.

Cut the prepared leaves into medium squares.

In the largest salad bowl or saucepan, mix all the salad ingredients - smoked chicken, pistachios, cucumbers, cheese, eggs, chopped Iceberg, pressed garlic and season. Mix very carefully, first with two forks, then with a spoon, trying to prevent the chicken pieces from falling apart. There is no need to add salt, the smoked chicken fillet is salty enough, the pistachios are salted, and so is the mayonnaise itself. Taste it, you can add some salt if it seems like there is not enough salt.

Wash the bunch of grapes, let the water drain, and separate all the berries from the branch. Cut each berry in half. It is advisable that the grapes be seedless; you can use both dark and light. If this is not found, you will have to tinker and remove the seeds from each half with a knife.

Now take a larger flat dish and lay it out leaf salad, we post lettuce mass and try to give it the shape of a bunch of grapes. Advice: post it in small portions, gently pressing with a spoon. It turns out something like this:

Grapes go well with chicken, cheese and other savory ingredients. This combination gives us delicious salads. Recipes with photos of Bunch of Grapes salad presented below will help you prepare this dish. What ingredients are needed for this salad?

Salad Bunch of grapes with chicken and cheese

The dish according to this recipe turns out to be very satisfying and high-calorie, but nevertheless incredibly tasty. You will need the following products:

  • 300 g chicken fillet;
  • 100 g Dutch or any other hard cheese;
  • 3 eggs;
  • 200 g mayonnaise;
  • 300 g grapes (preferably boneless);
  • salt to taste;
  • 1 bunch of parsley for decoration.

Salt the water and boil it in it chicken fillet. Cut it into cubes. Boil the eggs and grate on a coarse grater. Grate the cheese too.

You need to lay out the salad in layers, greasing each layer with mayonnaise. In this case, mayonnaise based on quail eggs. It will perfectly highlight the taste of this delicate dish. The first layer is chicken, then eggs and finally cheese. The top of the salad should also be coated with mayonnaise. Press the dish down lightly until it forms a semicircle.

Remove the grapes from the branches, wash and cut each berry in half. Place the grape halves on the salad and make a “tail” out of the parsley. Externally, the dish should resemble a real bunch of grapes.

How to prepare salad Bunch of grapes with nuts and apples

This recipe is easier and more unusual. Here is the list of products:

  • 300 g boiled fillet Chicken;
  • 200 g grapes;
  • 150 g walnut kernels;
  • 3 eggs;
  • 1 large sour apple;
  • 100 g cheese;
  • 200 g mayonnaise;
  • parsley and salt to taste.

Boil the eggs, grate them and cheese on a coarse grater. Chicken breast cut into small cubes. Walnuts chop finely with a knife. First peel and core the apple and grate it. Wash the grapes, cut each berry in half. If necessary, remove the seeds.

Layer the salad in the following order: chicken, half the nuts, eggs, apples, cheese, the other half of the nuts. Lubricate all layers except the last one generously with mayonnaise. Place the grape halves on top and garnish the dish with parsley.
