Kefir in biscuits can be replaced with yoghurt, fermented baked milk and other fermented milk products. But they should not contain chemical dyes, preservatives, or sugar substitutes. Many cannot tolerate heat and behave unpredictably when exposed to high temperatures.

Adding butter to biscuit dough is a delicate matter. Very often it peels off from the total mass and comes in lumps. To prevent this from happening, the liquid ingredient is gradually introduced into the oil, first in small portions. The temperature of the products should be the same.

Any biscuit will be tastier if you add vanilla, cinnamon, raisins, berries, coconut, and fruits. There are a huge number of options and they can be found in any kitchen.

Soda is often used in kefir biscuits, but it is very important not to overdo it and use it strictly according to the recipe. Otherwise, the baked goods will have an unpleasant taste and a specific smell.

A simple recipe for kefir sponge cake in the oven is very practical and ideal for those who want to surprise everyone with a delicious dessert that no one can resist. Despite the fact that it is recommended to eat sweet pastries in moderation, such a delicacy will be an ideal addition to any tea party.

In addition, sugar can be replaced with natural sweeteners, and low-fat kefir for the dough.

Simple chocolate version

This recipe for kefir sponge cake in the oven can be modified. Instead of kefir, you can use lemon yogurt and skip cocoa. The full list of ingredients looks like this:

  • 3 eggs;
  • 125 grams of kefir;
  • 200 grams of sugar;
  • 125-150 ml sunflower oil;
  • 170 grams of flour;
  • 1 package of powdered yeast;
  • 70 grams of cocoa;
  • salt.

How to cook?

Pour 3 eggs into a bowl. Beat them and then add the sugar until well mixed. You can use healthy and natural sweeteners instead of white sugar. This could be cane or brown sugar or even stevia. Then add kefir and mix well. After this, pour in sunflower oil. When the mixture is smooth, add the yeast and then the cocoa. Add flour and knead the dough.

Before placing it in the oven, you must grease the entire pan. This is to prevent the dessert from getting stuck and breaking when you remove it. As soon as you put the dough in the mold, immediately place it in a preheated oven and bake at 170-180 degrees for 30-40 minutes.

It is important not to open the oven before the cake is ready because it may sink and become tough.

Lemon pie

This kefir biscuit in the oven can be prepared using either a full-fat dairy product or a light one. This cake is quite dense and rich, so it is ideal to spread it with fruit jam or serve it with fresh berries. You need the following:

  • 200 grams of kefir;
  • 30 grams of vegetable oil;
  • 40 grams of flour;
  • 25 grams of corn flour;
  • 4 eggs, separated;
  • 2 teaspoons vanilla extract;
  • half a teaspoon of lemon zest;
  • 80 grams lemon sugar (with lemon extract).

How to cook?

Preheat the oven to 150 degrees. Beat kefir and butter. Add the yolks one at a time, beating well before adding each. Add the flour and corn flour to the mixture and stir until the dough is smooth and free of lumps. Add lemon zest and stir until completely combined.

In a plastic or metal bowl (clean and dry), add the egg whites and beat lightly. Add a third of the sugar and beat until soft peaks form. Slowly add the remaining sugar a little at a time, whisking continuously. Continue until fairly stiff peaks form and the mixture is thick and dense.

Fold the egg whites into the batter in three stages. Use a plastic or wooden spatula and stir gently so as not to displace all the air from the mixture. Transfer the dough to a tin tin lined with greaseproof baking paper. Place the pan in a deep baking tray filled with hot water, level almost to the top edges (leave a 2.5cm edge). Bake on the bottom rack of the oven for 1 hour.

After this, remove the pie from the oven and with a sharp movement, place the pan from a height of about 20 cm onto a hard surface. This will stop the cake from sinking and prevent it from shrinking too much as it cools. Remove it from the pan immediately and let cool.

After cooling, this kefir sponge cake, baked in the oven, should sit for 2-3 hours (or overnight) before serving.

Berry option

If you are new to the world of baking, this recipe is for you. This is a light airy sponge cake that is ideal as a dessert for tea. In addition to the standard flavoring - vanilla - fresh raspberries should be added to the dough. This will provide original taste and aroma.

In addition, you can prepare this kefir biscuit in the oven without butter or refined sunflower oil, which are considered unhealthy. Instead, add coconut oil to the dough, which can be purchased at health food stores. What you need:

  • a glass of kefir;
  • two cups self-raising flour;
  • a glass of white sugar;
  • half a glass of soft butter or vegetable oil;
  • 3 large eggs;
  • a little vanilla essence;
  • a small pinch of salt;
  • fresh raspberries (blackberries, blueberries, etc. - any berries you wish).

What to do?

Preheat the oven to 180°C. Pour kefir into a bowl. Add flour and sugar, throw in a small pinch of salt. Then add half a glass of oil, vanilla extract and eggs. Beat until you have a smooth, glossy dough. Add fresh berries to it and stir. Pour into the mold (don't forget to grease it with oil if it's not silicone). Bake for 45 minutes - 1 hour, depending on the features of your oven. Sprinkle the finished pie with powdered sugar and serve chilled.

Lemon dessert with syrup

You can make a simple kefir sponge cake soaked in aromatic syrup in the oven. For it you will need:

Using an electric mixer, beat the eggs and sugar for 4 minutes or until pale and creamy. Add lemon juice and zest, then beat for another minute.

Mix flour, kefir, butter and egg mixture until smooth. Spoon into the prepared pan and bake for 45 minutes, or until a skewer inserted into the center comes out clean.

While the kefir sponge cake is baking in the oven, prepare the syrup. Place the zest in a saucepan of boiling water for 1 minute. Drain the water and remove the zest. Combine sugar, lemon juice and 2 tablespoons water in the same saucepan and heat, stirring, over low until sugar dissolves. After this, simmer over low heat for 3 minutes, or until the syrup becomes thick, and then add the zest. You should have 125 ml of finished impregnation (half a glass).

Then take the finished biscuit. Using a kebab skewer, make approximately 15 holes throughout the entire surface of the pie. Gradually pour half of the hot syrup over the sponge, allowing it to flow in. Leave the cake in the pan for 30 minutes. Then take out the dessert and spread the remaining syrup on its surface.

Blueberry option

Biscuit with fresh berries is a favorite delicacy for many. It is common knowledge that when kefir is used in baking, it gives the dough a richer texture. When cooking, it is better to evenly distribute it on top, and when the dessert is ready, it will turn out very beautiful when cut. Some berries will remain on top, some will be in the middle, and only a few will sink to the bottom.

This one in the oven is super easy to make and turns out good every time. You can use all types of berries. What you need:

  • 1 cup all-purpose flour, sifted;
  • half a teaspoon of baking powder;
  • half a spoon of baking soda;
  • 1/8 spoon of tea salt;
  • 50 grams of unsalted butter, softened;
  • 2/3 cup sugar;
  • half a teaspoon of pure vanilla extract;
  • 1 large egg;
  • 1/2 cup kefir;
  • 1 cup blueberries (or other berries).

How and what to do?

Preheat the oven to 180 degrees. Line the bottom of the springform pan with parchment paper. Lubricate it from the inside with oil.

Place flour, baking powder, baking soda and salt in a medium bowl.

In a separate bowl, beat the butter and sugar until light and fluffy. Add vanilla extract and egg and continue beating until very creamy and light in color.

Keeping the mixer speed on low, add the flour mixture in 2 batches, pouring in half a cup of kefir in between. Mix until an even mixture forms.

Transfer the dough to a springform pan. Scatter the berries evenly over the top. Bake until the sponge becomes golden. This will take about 20-35 minutes, depending on your oven.

Once the cake is cooked, let it cool (in the pan). After about 40 minutes, remove the biscuit.

The beauty is that there are a lot of baking recipes on this basis - you can prepare a whole range of delicious biscuits. And you don’t even need to mention the variety of fillings: you can make cakes with honey, top the cakes with cream and apples, or decorate the top with fresh berries.

A simple and easy eggless sponge cake recipe.

The recipe for a sponge cake without eggs can be regarded as dietary, since it is based on no heavy rich component. Among other things, such baking is easier to prepare, and many people prefer this option, as they consider it easier. To prepare you will need:

200 ml of kefir (it is advisable to choose one that is not very fatty, one percent will be enough);
Sifted wheat flour in the amount of 2 glasses;
A glass of white sugar;.
A teaspoon of baking soda;.
6 tablespoons of vegetable oil (preferably without a distinct odor);
If you wish, you can also add a bag of vanilla sugar (be careful, it is sugar, not pure vanillin) or a little cinnamon.

The ease of this recipe is that there is no need to beat the eggs to a certain density, here you just need to mix the ingredients together. The only thing you have to work on is to achieve complete homogeneity of the dough, so that there are no clots of flour or whole grains of sugar left in it. This dessert is baked at two hundred degrees in the oven. The baking time for the described portion is half an hour.

Advice - do not give in to the temptation and look into the oven during the baking process, much less slam the oven door. No type of sponge cake likes this - it may simply settle.

  1. Take kefir of any fat content.
  2. It doesn’t matter what it is, fresh or expired. In some cases, it is better to use a slightly fermented sour milk product.
  3. Kefir should be heated a little, but not overdo it, so that the product does not curdle and turn into cottage cheese.
  4. The temperature of all components should be approximately the same, including the dishes used for preparing the dessert.
  5. For fluffiness, it is better to sift the flour several times - this way it is saturated with oxygen.
  6. It is not recommended to mix the dough many times so as not to lose the air bubbles that ensure the fluffiness of the cake.
  7. By the time it's baked properly, preheat the oven.
  8. Do not allow cold air into the oven until the cake is completely baked - it may settle. It is better to check readiness when the dough has shrunk a little.
  9. Remove the biscuit from the mold very carefully, without damaging the texture, so as not to fall.
  10. To prevent the cake from crumbling after soaking, let it cool under a paper towel.

Following the proposed rules for preparing an airy sponge cake, it will always turn out tasty and fluffy.
