Oven-baked potatoes with chicken and mushrooms can probably be called one of the most popular dishes, which is ideal not only for everyday life, but also for the holiday table. Traditionally, champignons are used for this dish, but people who are well versed in mushrooms can easily replace them with forest mushrooms.

To prepare potatoes with chicken and mushrooms in the oven, prepare all the products according to the list.

Cut the chicken legs into 3 pieces each. You can buy legs or thighs separately, whichever you prefer.

In a bowl, mix sour cream and tomato ketchup. You can also use tomato paste. Add pepper and salt to taste.

Place chicken pieces into the resulting sauce, mix well and add chopped garlic.

  • 600 g chicken drumsticks
  • 600 g potatoes
  • 250 g champignons
  • 3 small onions
  • 1 medium carrot
  • 3-4 cloves of garlic
  • 50 g cheese
  • 50 ml sour cream
  • 50 ml vegetable oil
  • salt, ground pepper

Cooking method:

  1. Wash the chicken legs well and place in a bowl. Sprinkle with salt and pepper and stir.
  2. Pass the peeled garlic through a press and add to the legs along with sour cream. Stir and leave to marinate for 30 minutes.
  3. Meanwhile, prepare the vegetables. Cut the peeled potatoes and carrots into slices. Transfer them to a deep bowl, add washed and coarsely chopped mushrooms. Add salt, ground pepper and vegetable oil. Stir.
  4. Cut the peeled onion into slices.
  5. Place the prepared vegetables and mushrooms in a 20 x 28 cm dish and distribute the onion pieces on top.
  6. Place chicken legs on top of all ingredients. Place the pan in the oven and bake at 200 C for about 1 hour. During this time, the dish should brown.
  7. Sprinkle chicken legs with grated cheese. Return the dish to the oven for 5 minutes to melt the cheese.
  8. Serve hot chicken legs with mushrooms and vegetables, sprinkled with chopped herbs.

In the afternoon, my beloved husband wrote to me: “Come on, today you’ll cook something quick and that’s it? So that we don’t spend a lot of time in the kitchen... We’ll just sit together a little longer after work and talk. Throw the chicken in the oven and add something on the side, and that’s it! Let it cook there itself...” So what? The idea is tempting! But why cook separately the meat and the side dish separately when you can make two dishes in one package? This is how I came up with this recipe along the way. — chicken drumsticks baked with mushrooms and potatoes in mayonnaise-cheese-milk sauce!

Chicken drumsticks baked with mushrooms and potatoes include:

  • Chicken drumsticks – 5 pcs.;
  • Mushrooms – approximately 350g. (I had frozen champignons);
  • Potatoes – 3-4 pcs. medium size;
  • Mayonnaise – 4-5 tbsp;
  • Milk – approximately 0.5 tbsp;
  • Cheese – 50-70g;
  • Garlic – 2-3 cloves;
  • Salt, pepper - to taste.

Method for preparing chicken drumsticks baked with mushrooms and potatoes:

Rinse the chicken drumsticks and place them in a baking bag. Sprinkle with salt (just a little, it’s better not to add salt than to oversalt) and seasonings to taste. Since I made it with mushrooms and garlic, I decided that adding herbs might be too much. So I sprinkled the drumsticks with a small amount of the pepper mixture.

I poured frozen mushrooms into the bag and added peeled and cut potatoes into large pieces.

I added mayonnaise and grated cheese to the bag, squeezed the garlic using a garlic press, and poured in the milk.

I carefully tied the bag and tried to mix everything in it as evenly as possible. I put it in the already warm (but not hot) oven. For the first 15-20 minutes, I didn’t make any holes in the bag for steam to escape and turned it over several times so that everything would be coated more evenly with the sauce and it would heat up equally (the mushrooms were frozen). And only then I made several holes and baked at a temperature of 180-200°C for another 40-50 minutes (since I prefer to play it safe and overcook the meat rather than eat it raw).

When there are 5-10 minutes left until the end of cooking, the top part of the bag can be cut off so that the meat and vegetables are slightly browned.
Transfer to plates and enjoy the melt-in-your-mouth chicken and tender, aromatic potatoes as a side dish!

If you are sorely short of time to cook, and your gluttonous family eats one and a half kilos of food at a time, then the best way out is to master cooking in the oven. 1. We start by preparing a mayonnaise marinade in which mushrooms and chicken will be marinated. Add ketchup to the mayonnaise, you can use any ketchup, and spices. We do not add salt. Mix well.

2. After washing fresh champignons from various contaminants, cut them into two parts. If the mushrooms are not particularly large, you can leave them whole.

3. Place clean pieces of chicken and champignon halves into a spacious cup. Pour in mayonnaise filling, mix thoroughly and let stand for at least 30-40 minutes. The longer the meat and mushrooms are marinated, the tastier and more tender they will be.

4. Peel the potato tubers, wash them, cut them into large pieces, add a little salt and place them in a baking dish.

5. Place pieces of chicken, mushrooms and mayonnaise sauce in which they were marinated on top of the potato wedges.

6. Bake at 180 degrees. This will take a little more than one hour. To ensure that the chicken and champignons are browned on all sides, after about 30 minutes, carefully mix the contents of the mold. You can even stir it a couple of times, it definitely won’t be too much.

The dish turns out golden brown and incredibly juicy. It does not require a side dish as it includes potatoes. Therefore, we supplement it only with fresh vegetables and serve it on the table.
