Chicken in cheese sauce in a frying pan

This recipe came to me one day when I was tired of the usual meat gravy. Thanks to the cheese and ham, the sauce turned out to be so aromatic and tasty that you want to cook it more and more often.

  • Chicken (fillet) - 300 gr.
  • Processed cheese - 1 pc.
  • Flour - 2 tbsp.
  • Leek roots
  • Salt - 1/2 tsp.
  • Olive oil - 20 gr.

How to cook chicken fillet with cheese sauce

Step 1.

Peel the onion and rinse thoroughly. Chop finely with a knife.

Step 2.

Cut the chicken fillet into neat small slices. We used chicken thigh for the sauce. Therefore, first, we will peel it and remove bones, and then chop it into small slices. But in principle, you can just use chicken breast fillets.

Step 3.

Pour oil into a frying pan, add onion, fry until golden brown.

Step 4.

Then add the chicken. Close the lid and simmer for another two to three minutes.

Step 5.

We dilute flour in 200 grams of water. Mix thoroughly so that no lumps remain.

Step 6.

Add the prepared mixture to the frying.

Step 7

If necessary, you can add more water or sour cream. Depends on how thick you want the sauce. Salt the sauce and leave on low heat for a few more minutes.

Step 8

Meanwhile, prepare a small saucepan in which the sauce will cook. Pour the sauce into a saucepan and grate the cheese. The cheese should begin to melt, giving the sauce a rich, thick white hue.

Step 9

Cover the pan with a lid, simmer the sauce over low heat for another five minutes, and remove from the stove. The cheese sauce is ready.

Step 10

The cheese sauce can be served in a separate dish. This cheese sauce is perfect for any porridge, noodles or mashed potatoes.

It is worth noting that the main secret of the taste of this gravy is the cheese. Therefore, to prepare the sauce, choose aromatic cheeses with additional tasty ingredients: herbs, mushrooms, and even better, ham.

The basic recipe can be slightly modified and a cheese and mushroom sauce can be prepared. You can add almost any mushrooms; we will use champignons.

— Chicken breast fillet — 600 gr.
— Mushrooms (champignons) — 250 gr.
— Hard cheese — 100 gr.
— Sour cream — 200 gr.
- Sunflower oil
- Salt
- Pepper

Cooking chicken with mushrooms and cheese sauce

1. Cut the breast fillets in a way convenient for you. It doesn’t matter whether it’s in strips or cubes, as long as it’s not large. Add salt and pepper and leave to brew for ten minutes.

2. Fry the champignons in a frying pan; when all the liquid released from the mushrooms has evaporated, add sour cream and continue to simmer for 3 minutes.

3. In a separate deep frying pan, fry the chicken until almost done. Then pour in the previously prepared sauce and simmer for 7 minutes, tightly closing the lid.

4. Coarsely grate the cheese and add to the chicken, continue cooking until the cheese is completely melted.

Sauces based on cream and cheese serve as an excellent addition to a variety of dishes and give them a special taste, juiciness and perfectly stimulate the appetite. The liquid base of the sauce is cream, the additional part is blue cheese, spices and herbs. That's all.
Ingredients:
Chicken fillet 2 pcs
Blue cheese (danablu, roquefort) 50 g
Cream (15%) 150 ml
Olive oil 3-4 tbsp.
To taste Salt, black pepper, nutmeg, dry dill, flour
Considering that the recipe is very simple and everything is prepared very quickly, I advise you to first prepare the chicken fillet and prepare the sauce. Wash the chicken fillet and remove any remaining fat. Cut the meat into small pieces - the size of a walnut. Season with salt and pepper to taste, add 0.5 tsp. dry dill. Stir and let marinate briefly while you prepare the sauce.

In a small saucepan, bring the cream to a boil. As soon as the cream begins to boil, reduce the heat to low and stir with a fork. Crumble the blue cheese little by hand and add it to the cream. The cheese dissolves quite well in the cream and makes it thicker. When the cheese has completely dissolved, add salt to the sauce, a pinch of nutmeg and just a little fresh ground black pepper. Let the sauce simmer over low heat for 5-7 minutes. Be sure to stir so it doesn't burn.

Retreat. The amount of cream and cheese for the sauce is very arbitrary. If you want a thick sauce, then reduce the amount of cream or increase the amount of cheese. But there is no need to use a thickener - such as starch or flour. They are completely unnecessary. By combining the ratio of cream and cheese, you can always get any thickness. Pour the finished sauce into a gravy boat or just a bowl. Cover with a napkin and let it stand. Meanwhile, fry the chicken.

Heat olive oil in a frying pan. Allow the oil to heat until light white smoke appears and the oil begins to crackle. Immediately place the pieces of prepared fillet into the oil, having first rolled them in flour.

Fry the chicken fillet pieces in oil until golden brown. Reduce heat and cover the pan with a lid. Let the chicken pieces simmer for about 10 minutes. During this time, the chicken will be completely ready.

Place the fried fillet pieces on a plate. Pour warm sauce over and garnish with herbs, if desired.

Serve chicken with sauce only hot. I don't think a reheated dish will taste good. However, we didn’t try. I think that such a sauce would be quite appropriate for fried fish. For example, try frying pollock or cod fillets and topping them with a creamy blue cheese sauce.

Bon appetit!

Hello, dear friends! Today we have a chicken theme again, and the subject of our culinary research will be chicken in cheese sauce. This is an excellent hot dish, it is easy and simple to prepare, and despite some sophistication and unusualness for the Russian menu, chicken in cheese sauce is a very economical dish. The basis for its preparation is chicken thighs and processed cheese (the products themselves are quite inexpensive), and the result is a hefty portion of delicious hot food, which is very good both with and without a side dish. Well, the best side dish for such chicken in cheese sauce would be potatoes in any form - fried, boiled or stewed, but the ideal side dish for our hot dish is potatoes baked in the oven.

By the way, the cheese sauce that we will learn how to prepare today is perfect not only for chicken, but also for other meat, fish and vegetable dishes. So let's prepare:

Chicken in cheese sauce.

We will need:
Chicken thighs - 800 g;
Processed cheese - 400 g;
Tomato - 1 piece;
Onion - 1 piece;
Garlic - 4 cloves;
Vegetable oil - 1 tbsp. spoon;
Herbs, salt and spices - to taste.

Let's prepare it like this:
Cut the prepared chicken thighs into two parts, place them in a heated frying pan, add 2 cups of water and simmer covered for 40 minutes.
Meanwhile, finely chop the onion and fry a little in vegetable oil, add the same finely chopped tomato to the onion and fry it together with the onion.
Now prepare the sauce: add chicken broth to the fried onions and tomatoes. let it boil and add melted cheese grated on a fine grater into the boiling broth. Next, reduce the heat and heat our sauce until the cheese is completely melted. After this, add chopped herbs and garlic and after 2 minutes remove the cheese sauce from the heat.

What could be tastier than chicken in cheese sauce with spaghetti?! The perfect combination of juicy chicken pieces, smooth cheese sauce and pasta al dente. As they say, there is pleasure in every spoon...

And a nice bonus - the dish is prepared very simply and quickly! Chicken fillet in cheese sauce is the perfect dish for a family lunch or dinner.

  • Chicken fillet (I used chicken breast) – 600 g
  • Milk or cream (10%) – 2 cups
  • Cheese (it is better to use Parmesan) – 150 g
  • Garlic – 3-4 cloves
  • Italian herb mixture - to taste
  • Ground black pepper - to taste
  • Salt - to taste

Preparation:

So, let's start cooking! Please note that in order for the chicken breast in cheese sauce to be soft and juicy, it is very important to properly prepare the chicken. Thaw the fillet in advance and leave it for 30-40 minutes at room temperature, as meat just taken out of the refrigerator will cook unevenly and some pieces may turn out tough. Wash the chicken fillet and dry it with a paper towel; excess moisture will not allow for quick frying and the fillet may turn out a little dry.

Cut the chicken fillet into small strips.

Peel the garlic and flatten it slightly with the side of the knife. Heat vegetable oil in a frying pan and add prepared garlic to it. Once the garlic is lightly browned on both sides, remove it. The garlic gave up its aroma to the oil and we won’t need it anymore.

Place the chopped chicken in the prepared garlic oil and fry over high heat until it acquires a lighter color. The chicken should not be completely cooked, it just needs to “set” on top. To prevent the chicken from releasing juices in the pan and starting to stew, it is better to divide it into portions and fry it in several batches.

Transfer the fried chicken to a plate and cover with a lid to keep it warm. Set the chicken aside while you prepare the sauce.

Pour milk or cream into the pan in which the chicken was fried. I often cook with milk to make the sauce lighter. Immediately add the Italian herb mixture, salt and pepper. I had a couple of teaspoons of truffle paste left, which I also added to the sauce. If you don't have a mixture of Italian herbs, you can simply add dried basil and oregano.

Bring the mixture to a boil and add grated Parmesan. I usually buy pre-grated cheese to save time. All you have to do is wait until the cheese melts and the sauce is ready. Yes, yes, it's that simple!

Place the fried chicken in the sauce, stir and simmer covered for 10 minutes. Do not overcook the chicken breast in the pan as it may become tough.

Chicken in cream cheese sauce is ready.

Of course, you can serve chicken in cheese sauce with any side dish, but I still recommend trying this chicken with spaghetti or capellini. The sauce soaks the pasta and it becomes incredibly tasty! When serving, sprinkle the chicken pasta with grated Parmesan and garnish with a sprig of basil. And, of course, a glass of homemade wine will not go amiss.

Chicken fillet in cheese sauce

Preparation

If you don't have time to prepare dinner, then pay attention to the recipe for chicken fillet in cheese sauce. The dish is easy to prepare, but at the same time it turns out tasty and juicy. Preparation will take you only 30 minutes, and every housewife has the necessary ingredients in the refrigerator. Chicken fillet in cheese sauce is a great addition to any side dish.

Rinse the chicken meat well under running water.

Cut the fillet into small, portioned pieces.

Heat a frying pan, add vegetable oil.

Place the chicken fillet in a frying pan and fry the meat on both sides. Please note that if you have sour cream or low-fat cream, you must add additional flour to make the sauce thick. In this case, flour is added not to sour cream/cream, but as soon as the meat is browned. If you add flour to already boiling sour cream, lumps will appear that are difficult to deal with.

Add salt and pepper to taste. If desired, you can add your favorite spices and seasonings, such as basil.

Add sour cream, stir and simmer over low heat.

Grate the cheese and pour it into the pan.

As soon as the cheese melts, you can turn off the stove - the chicken fillet in cheese sauce is ready. The sauce should be thick.

Rice, potatoes or pasta can be a side dish for chicken fillet with cheese sauce. The dish laid out on a plate can be sprinkled with finely chopped herbs.

Bon appetit! We are more than confident that this dish will be popular in your family.

I add onions, it turns out richer and tastier)

Ekaterina Boranova, 12/09/2015

Thank you very much for the recipe and my family really liked it, although I didn’t make it exactly according to the recipe instead of sour cream I used mayonnaise but it still turned out delicious

For a cheaper option, you can use ready-made cheese sauce. In my opinion, it turns out even a little tastier (of course, it depends on the manufacturer of the sauce).

The fillet in cheese sauce turns out juicy, I really like it. I also cook not only fillet, but also the whole chicken in cheese sauce: I cut it into medium-sized pieces and also add mushrooms. It turns out sooooo delicious.

I cook chicken fillet in cheese sauce a little differently. Along with the chicken, I put mushrooms in a frying pan and fry until golden brown. And then everything is according to this recipe. It turns out delicious, similar to Julienne with chicken and mushrooms.

A very tasty dish, I’m a fan of chicken in all its forms and now I’ve added another chicken delicacy to my repertoire.

My family does the same thing, only they use processed cheese instead of regular cheese. It adds a little more subtle tint.
