To enhance the aroma and taste of baked goods, add vanillin, orange or lemon zest, cinnamon, as well as nuts, sesame seeds, raisins, soaked dried fruits, and poppy seeds. In some recipes, sugar is replaced with honey.

Various ways of preparing charlotte - in the oven, in a slow cooker or in a frying pan - give scope for culinary imagination.

To make the charlotte fluffy and airy, the dough uses well-sifted flour with baking powder, chilled chicken eggs, and softened butter. And all this is well beaten with a mixer.

Classic charlotte with apples in the oven (simple recipe)

This is the traditional, simplest recipe for making charlotte. We prepare the pie quickly, one, two, three times.

Once - cook the apples, this will take 5 minutes. Two - knead the dough, another 5 minutes. Three - bake for 30-40 minutes. Cool and decorate. An hour later we eat the pie. Appetizing, with a wonderful crispy crust and apple aroma.


Ingredients:

  • medium-sized apples - 8 pcs.
  • sugar - 0.5 - 1 tbsp.
  • eggs - 4 pcs.
  • flour - 1 tbsp.
  • butter - for greasing the mold
  • lemon juice - 1 tbsp. l.
  • baking powder - 1 sachet
  • brown sugar - 2 tbsp. l.
  • vanillin - on the tip of a knife
  • liqueur - 1 tbsp. l.

Preparation:


Wash the apples, cut them in half, remove the core and seeds. Cut into large slices so that during baking they do not turn into chips or get lost in the dough. Place in a bowl. When exposed to air, apples quickly darken; sprinkle them with freshly squeezed lemon juice and use a ceramic knife to cut them. To ensure that fruit retains its shape when baking, choose varieties that are strong or slightly underripe. Ripe and soft fruits will spread into porridge.


Beat the cooled eggs with a mixer until foamy, add sugar in portions and continue beating until thick foam. Add vanillin.


Sift the flour, add baking powder. Add it slowly and combine with beaten eggs and sugar. Mix gently from top to bottom in one direction. Add 1 tablespoon of any alcohol-containing drink. As the alcohol evaporates, it saturates the dough with air, making it fluffy, airy and crispier. Mix everything carefully.


Take a springform baking pan with a diameter of 18 cm, with high sides, line it with parchment and grease it with butter. Place chopped apples and sprinkle with brown sugar. Pour in the batter and lightly shake the mold to fill all the voids. If there are a lot of apples, you can lay out a second layer and fill it with dough.


We arrange the remaining apples beautifully in a circle shape.


Preheat the oven. The baking temperature is 180 degrees. The apple pie will be ready in 30-40 minutes. We check the readiness with a wooden skewer; if the inside is not baked, but the top is already browned, cover the top with baking paper.


Let cool and release from the mold. Sprinkle the top with powdered sugar or decorate with fresh berries.

Ingredients:

  • apples - 3-4 pcs.
  • sugar - 0.5-1 cup
  • kefir - 1 tbsp.
  • walnuts - 300 gr.
  • flour - 3 tbsp.
  • butter - 200 gr.
  • baking powder - 1 sachet
  • soda - 1 tsp.
  • cinnamon - 1 tbsp. l.

Preparation:


Cut the apples into large slices. Place in a deep plate, add walnuts, chopped into medium pieces, and mix.


Add sugar to softened butter and grind until smooth.


Add kefir and mix gently.


Sift the flour, preferably twice. The more we saturate it with air, the more airy the dough will be. Add baking powder and soda to the flour and mix. You may ask, why add baking soda if there is baking powder? If the ingredients contain fermented milk products, fruit juices or honey, then they additionally require soda, since they cause an acidic reaction.


Combine the mixtures and mix well. Kefir dough is the most popular and economical option for baking. Ours turned out to be neither liquid nor thick, but viscous.


Grease the springform pan with butter and sprinkle with flour. Place the dough on the bottom and level it out.


Place apples and nuts on top, maybe in two rows. There should be a lot of them, then the pie will turn out with a pronounced apple taste and aroma. Sprinkle with cinnamon and brown sugar and bake in the oven for 30-40 minutes at 180 degrees.

Ingredients:

  • apples - 2-3 pcs.
  • cottage cheese - 200 gr.
  • sugar - 150 gr.
  • eggs - 4 pcs.
  • flour - 200 gr.
  • butter - 20 gr.
  • baking powder - 10 gr.
  • sour cream - 3 tbsp. l.
  • liqueur - 1 tbsp. l.

  • salt - to taste

Preparation:

  3. Mix the baking powder with sifted flour and add to the egg-butter mixture. Mix well. According to this recipe, the dough turns out like a cake, not very thick and viscous.
  4. We sort out the raisins and wash them well.
  5. Peel the apples and cut into medium slices.
  6. Place raisins and apples in the dough, mix quickly and carefully. Place in a greased silicone mold with high sides. Using wet fingers, level the surface and push the protruding parts of the apples into the dough.
  7. Preheat the oven to 180 degrees. Cover the charlotte with baking paper and bake for 1 hour. Check the readiness of the dough with a wooden skewer. When the dough is baked, remove the paper and brown the top of the pie for 10 minutes.
  8. Remove the finished apple pie from the oven and let it cool. Sprinkle with powdered sugar and decorate with ripe raspberries.
