  1. Let's start cooking delicious and tender choux pastry on milk. To do this, beat two eggs, salt, sugar and 500 milliliters of milk into a saucepan. We take a saucepan, because later we will brew everything in it on the stove. Mix everything thoroughly with a whisk until it has a homogeneous consistency.
  2. Now add the sifted flour one spoon at a time. Make sure that no lumps form. Mix everything thoroughly. We bring our mass to a consistency - like pancake dough.
  3. Now put the pan on the stove and cook our choux pastry over medium heat until thickened. Do not leave the stove, stir with a whisk without stopping. When you feel the dough has thickened, remove it and transfer the pan to a work surface. If it turns out that there are small lumps in the dough, don’t worry, they will disperse during kneading.
  4. While the dough is still very liquid, mix it in a saucepan using a whisk. When it thickens, we transfer it to the work surface, where we will knead the choux pastry for dumplings by hand.
  5. Since the dough is very sticky, it is impossible to knead it with your hands - you need to pour a pile of flour on the table, lay out the dough, sprinkle more flour on top. And at the first stage, select the thickness of the dough. The dough will be very warm, but not scalding. Therefore, it is pleasant to knead it: it is very alive.
  6. When the dough becomes thick enough, begin adding flour in very small portions. Until we get a smooth, soft dough that does not stick to our hands.
  7. You can also check how well your dough is kneaded. To do this, place it on a clean table and press down firmly - the dough should not stick to either the table or your hands. Also cut a piece of dough and look at the cut: it should be uniform. The dough should cut well and not drag on the knife blade.
  8. Now we collect the dough, round it, cover it and leave it to rest for 20 minutes.
  9. While the dough is resting, we will prepare the curd filling. I don't recommend cooking it in advance as it will become soggy. It is collected immediately before making dumplings. The cottage cheese should preferably be dry. If you have very wet cottage cheese, place it on cheesecloth the day before. I prefer to add only sugar to the cottage cheese. This is what my mother did - and it was very gentle. But you can add both an egg and sour cream: the main thing is to make sure that the filling is not liquid.
  10. I really like to cook dumplings, dumplings, manti with choux pastry. Because paste is able to retain more moisture than flour, and therefore the dough turns out moister - but at the same time it holds its shape, is viscous and rolls out perfectly. This dough can be boiled, baked, fried - whatever you want.
  11. Once the dough has stood, you can start rolling out and making dumplings filled with cottage cheese. Roll out a small piece of dough to a thin layer.
  12. Using a glass or mug, cut out circles from the dough (the size of the dumplings). We collect the remaining dough and put it aside.

Make sure that the cottage cheese does not get on the joint between the edges of the dough, help yourself with your finger and slightly deepen the cottage cheese into the middle of the dumpling. This is how we make all the other dumplings.
  14. Some of the dumplings can be put into bags and put in the freezer. This is how you will always have it quick breakfast, lunch or dinner.
  15. Next, to boil them, take a pan of water, put it on the fire, add salt. When the water boils, do not reduce the heat, but carefully throw the dumplings into the pan. Take a slotted spoon and stir so they don't stick to the bottom. And when all the dumplings rise to the top (float), let them cook for 2 minutes. And you can take it out using a slotted spoon.

  1. First, let's prepare the “correct” dough. Pour the flour into a deep bowl, add a pinch of salt and a glass of warm water.

  2. Knead the dough and knead it with your hands for at least five minutes. The dough turns out quite tight. But don't be scared and spare no effort. Delicious dumplings are worth it. When your dough is ready, it will resemble plasticine in structure. Cover it with a kitchen towel and leave to “rest” for half an hour.

  3. For now, get to work preparing the filling. Curd filling For dumplings we will have savory. Place the cottage cheese in a separate bowl, beat in the egg and add a little salt.
  4. Mash the cottage cheese thoroughly and mix well until smooth. The filling is ready.

  5. Cut 1/3 of the dough and roll it out thin pancake. The thinner it turns out, the tastier your dumplings will be.
  6. Take a glass or cup and cut out circles from the dough. This way, all your dumplings will be the same size. Discard excess dough (crumple it and use it when you make the next batch of dumplings).

  7. Use a teaspoon to take a little filling, place it in the center of the circle and pinch the edges with your fingers. Pinch carefully so that the dumpling does not fall apart in the water.

  8. Take a saucepan, pour in a little more than half of the water, add salt (half a tablespoon of salt) and put it on the fire to boil.

  9. Drop the dumplings, one at a time, into the boiling water. After a minute, stir with a spoon.
  10. When the dumplings float to the surface, boil them for another five minutes.

  11. Remove the finished dumplings with a slotted spoon and transfer to a deep plate.

  12. Melt the butter in the microwave or on the stove and pour the butter over the hot dumplings. Stir.


    If the dumplings are not immediately poured with oil, they will stick together.

For filling unsweetened cottage cheese dumplings you can add chopped herbs. Some people prefer to add sour cream to the filling. I think that this is not a very good idea, since it is more difficult to make dumplings with sour cream in the filling. Due to the fat present in sour cream, the dumplings fall apart during cooking. In my opinion, an egg is enough.

If you want to make sweet dumplings with cottage cheese, instead of salt, add sugar to your taste. If you like the filling not too sweet, 3-4 tablespoons of sugar will be enough. Do you like it sweeter? Then feel free to put five. You can add a drop of vanilla or vanilla sugar to the filling for sweet dumplings with cottage cheese, as well as raisins, dried apricots, prunes, and nut crumbs.

Dumplings with cottage cheese are also prepared by steaming. This is what my mom always does. Dumplings prepared in this way are very different from those in my recipe. Step 1. Heat the kefir until it is warm. Do not heat too much, otherwise it will start to curdle.

Step 2. Melt the butter over low heat.

Step 3. Combine kefir, eggs, melted butter, salt, sugar, soda and mix everything well.

Don't forget to prepare cottage cheese for the filling. In this case, I made it from store-bought cottage cheese, but the taste is not at all the same as what the aunties sell at the market from their cows, homemade. I usually make it with this one, fatty and tasty. It’s delicious to eat just with sugar; you can’t eat too much of the store-bought stuff.

So, mix cottage cheese with sugar. Sugar is at your discretion; if you want it sweeter, add more. You can also add a raw egg to the cottage cheese.

Step 4. Add flour.

Step 6. Roll out the layer into the shape of a large pancake.

Step 7. In the rolled out layer, carefully squeeze out round pieces with a glass. First coat the edges of the glass with flour to prevent the dough from sticking.

Step 8. Use a small spoon to add cottage cheese to each circle. I understand your desire to put more cottage cheese, it will be tastier (I’m the same). But do not forget that the edges should stick well to each other, so that later during cooking the cottage cheese does not end up in the pan, so be reasonable.

Step 9. We fold our circle in half, it turns out to be a semicircle, with the cottage cheese in the middle. We connect the edges and, using fairly strong pressure, fasten them together along the entire semicircle. Then roll the entire flat area of ​​the dough into a braid.

This is done simply: start from the end and, as if folding the edge of the dough in half, press it with the outside of your thumb at an angle of 45˚. Move around the circle to the other end. My grandmother taught me how to “braid” a pigtail on dumplings when I was 6 years old. First I practiced on plasticine, and then she trusted me with the dough. Throw the finished dumplings with cottage cheese into boiling salted water, cook for 5 minutes after floating, remove with a slotted spoon to a plate, grease with butter and sprinkle with sugar. They can also be served with sour cream or jam, such as strawberry or .

The result was delicious dumplings. The recipe is very simple and affordable. By the way, in the recipe for dumplings, just like in mine, I used premium flour.

Vareniki, which you see on the plate and a few more behind the scenes, were made from half the dough and 2.5 store-bought packs of cottage cheese (180 grams each).

Place the remaining dumplings on a tray and put them in the freezer. After they are frozen, place them in a plastic bag and tie them so that the dough does not absorb the odors of other products stored in the container. freezer. Frozen dumplings with cottage cheese need to be cooked for at least 10 minutes, otherwise you risk eating half-baked dough.

If you have any unused dough left, you can also put it in the freezer and take it out at the right time. But it’s still not the same as freshly prepared.
