Some of the most favorite vegetables are cucumbers and tomatoes. They go well with meat and fish, potatoes, pasta and cereals.

Salads with various additives and dressings are made from them, and various gravies, sauces, and juices are also prepared from tomatoes.

Cucumbers for gastritis

The main component of cucumbers is water, 95% of it in the vegetable. It is the presence of such an amount of water that makes them a low-calorie dietary product that is recommended for people with excess body weight.

In addition, they are rich in vitamins C, B, A, PP, E, and microelements - phosphorus, potassium, sodium, magnesium, iron, manganese.

The cucumber diet is useful in many cases: with its help you can rid the body of accumulated toxins, excess water and salt, and remove stones from the kidneys and gall bladder.

But, despite the dietary properties and beneficial composition, cucumbers are prohibited from being consumed for certain diseases: heart defects, atherosclerosis, pyelonephritis, cholecystitis, pancreatitis, hypertension, hepatitis.

How does the stomach of a gastritis patient react to eating cucumbers and is it possible to eat them at different stages of the disease?

All green vegetables, entering the stomach, contribute to the increased production of gastric juice necessary for their processing.

If a cucumber enters the body of a person suffering from gastritis with high acidity, hydrochloric acid will be released in large quantities, which will cause heartburn.

The more cucumbers eaten, the stronger the attack. Therefore, in case of acute gastritis and during exacerbation of chronic gastritis, cucumbers are completely excluded from the diet.

When the acute period has passed, the condition has returned to normal, you can gradually introduce a small slice of peeled cucumber into the menu.

For chronic gastritis, during periods of remission, it is also allowed to eat fresh cucumbers, but not more than 200 - 300 grams per day and without the skin.

When growing them, various chemicals are used, which are contraindicated for healthy people, and in case of diseases of the digestive organs, they can cause severe poisoning.

As for cucumbers from a jar - canned, pickled, salted, it is better to refrain from eating them if you have gastritis with high acidity.

To prepare such preparations, use salt, vinegar, acetic or citric acid, and in some recipes hot pepper.

All these ingredients irritate the gastric mucosa, so canned and pickled cucumbers are undesirable even during periods of stable remission.

But pickled and canned cucumbers will be a good choice for hypoacid gastritis (with insufficient levels of hydrochloric acid).

Of course, you can eat them in small quantities, but one or two cucumbers with the main dish will contribute to the production of gastric juice.

But there is a way to diversify your table with cucumber dishes without fear of damaging your stomach due to gastritis. You can subject the vegetable to heat treatment, preparing interesting and unusual dishes from it.

  1. Stewed in sour cream sauce. For this dish you need half a kilogram of cucumbers, 100 grams of low-fat sour cream, 1 onion, 1 tbsp. flour, a few tablespoons of olive oil, a little salt, turmeric. Lightly simmer the chopped onion in half the oil, add cucumber slices and simmer for 5-7 minutes. Separately, heat the other half of the oil, add flour with turmeric, after 2 minutes add sour cream, warm the mixture a little. Mix with cucumbers and onions, simmer covered over low heat for 15-20 minutes. The dish can be eaten on its own or as a side dish with meat.
  2. Baked in the oven. Cut 2 large cucumbers into rings. Mix 2 tbsp in a bowl. hard cheese, half a glass of breadcrumbs, a little salt, basil. If your health allows, you can add a little garlic. Separately, beat 2 egg whites, dip the cucumber rings first in the egg whites, then in the breading mixture, place on a baking sheet greased with vegetable oil, and bake in the oven for about 20 minutes.

Having undergone such processing, vegetables become more suitable for dietary nutrition for gastritis; the level of substances that stimulate the production of gastric juice decreases in them.

Tomatoes for gastritis

Tomatoes are widely used in cooking in many countries. Without them there will be no Italian pasta and pizza, Bulgarian ketchup, or Ukrainian borscht.

They contain a storehouse of useful substances: carotene, fiber, zinc, potassium, vitamins C, E, P, PP, B9, a minimum of calories and excellent taste.

Tomato contains a unique pigment that colors vegetables red - lycopene.

It has antioxidant, antifungal, antimicrobial properties; accelerates the breakdown of fats, normalizes cholesterol levels, improves appetite, suppresses pathogenic intestinal flora, reduces the risk of developing cardiovascular diseases and cancer.

Tomatoes are champions in lycopene content, and its concentration increases when tomato juice or puree is boiled, so ketchup or sauce will be no less useful than fresh tomatoes.

But despite all the advantages, tomatoes are still contraindicated for patients with gallstone disease, pancreatitis, hypertension, and those prone to allergic reactions.

But is it possible to eat them if you have gastritis? At first glance, it seems that it is impossible, since tomatoes contain acid and it will have a negative effect on a sore stomach.

But in fact, tomatoes, unlike cucumbers, are not prohibited for gastritis. When there is no exacerbation, they can be eaten in the amount of 250-300 grams. per day, and during exacerbations, be careful and reduce consumption to 100-150 grams.

In addition, you need to remember a few simple rules that will help you choose and prepare tomatoes for gastritis in the right way:

  • tomatoes need ripe, sweet varieties, which have more pulp than juice;
  • Before eating, you need to remove the skin from them, since it is difficult for the stomach to process;
  • You can use juice or puree instead of tomatoes, in this form it will be easier for the body to absorb the vegetable;
  • if you add a little pumpkin or carrot juice to tomato juice, it will not only be beneficial, but will also have a healing effect for gastritis;
  • It is useful to eat tomatoes with foods containing protein, they will complement each other perfectly;
  • From time to time you can stew tomatoes with other vegetables - sweet peppers, zucchini, pumpkin, but eat such a dish only during remission.

Processed tomatoes are also allowed for gastritis if it is juice, tomato puree or homemade sauce without excess salt and spices.

It is better not to include salted, canned and pickled tomatoes in the menu for the same reason as cucumbers - a lot of vinegar and salt.

Industrially produced tomato products are also undesirable for gastritis, since no one can guarantee their quality and safety.

It is extremely dangerous to consume early vegetables due to the presence of nitrates in them, which have a detrimental effect on the body.

So, for gastritis, the consumption of cucumbers should be limited to 300 grams during remission; in the acute period, it is better not to eat them at all; tomatoes - possible, but without skin and only sweet ones.

Both vegetables, which have undergone minimal heat treatment, are healthier for the stomach than raw ones; it is advisable to buy them in the season when cultivation is not accompanied by the use of a large amount of chemicals, even better - vegetables from your own garden.

1. Wash all vegetables with cool running water, remove any drops with paper napkins or towels.

2. Cut radishes and cucumbers into semicircles.

3. Cut the bell pepper into cubes.

4. Cut the tomatoes in half, then into slices.

7. Put 30 g of walnuts, 2 pinches of black pepper and suneli hops into a mortar and grind thoroughly with a pestle. Add 2 tsp. white wine vinegar and 1 tsp. olive oil, mix.

In the original recipe, for 700-750 g of vegetables for dressing, take 40-50 g of walnuts, 2 cloves of garlic, 1 tsp. salt, 1 tsp. hops-suneli, 1-2 tbsp. l. wine vinegar, no vegetable oil required.

So I reduced the amount of all the ingredients and started adding a little olive oil. And salt last.

8. Chop the greens, cut half of the salad onion into thin half rings. We put them in a salad bowl with the rest of the vegetables, and add nut dressing there. If desired, you can add fresh lettuce leaves.

7. Add 2 pinches of salt and mix well. Let the salad sit at room temperature for 10 minutes and serve.

With cucumbers and oil and vinegar dressing

Ingredients

  • tomatoes - 1 kg;
  • cucumbers - 500 g;
  • onion - 1 pc.;
  • sunflower oil - 2 tbsp. l.;
  • vinegar - 1 tbsp. l.;
  • salt - 1 tsp;
  • ground black pepper - 1/2 tsp;
  • greens - a small bunch.

Cooking time: 30 minutes;
number of servings: 8-10;
cuisine: Russian.

How to cook:

1. Wash fresh tomatoes, cucumbers, and herbs with cool water. Remove excess moisture with a towel.

2. Cut out the stalk of the tomatoes. Cut into medium-sized slices. If you grind it, it will turn out to be porridge; If you cut it too large, it won’t be very convenient to eat.

3. Cut the cucumbers into thin half rings.

4. Peel the onion and cut into thin quarter rings.

5. Place the chopped vegetables in a salad bowl.

  • canned white beans - 400 g;
  • green onions - 1 small bunch;
  • basil (fresh or dried) - 2 tbsp. l.;
  • oregano (oregano; fresh or dried) - 2 tbsp. l.;
  • lemon juice - 2 tbsp. l.;
  • olive oil - 2 tbsp. l.;
  • salt - to taste;
  • ground black pepper - to taste.

Cooking time: 30 minutes;

When vitamins enter the body, they become coenzymes and interact with specific proteins. This is how biochemical processes in the body are regulated.

The roles are prescribed in advance, and a certain vitamin can only be incorporated into a protein specifically suitable for it. Antivitamins will also turn into coenzymes, but they will be complex.

Due to the specific structure of the protein, they may not be noticed at all, and as a result, the usual biochemical processes will be disrupted (in whole or in part).

  • Smoking (including passive smoking) and alcohol are the main enemies of vitamins. Especially, vitamins of group B, as well as C and K. One cigarette removes the daily dose of vitamin C from the body!
  • Most ascorbinase, which is the main antagonist of vitamin C, is found in zucchini and cucumbers.

In order for cucumber to be absorbed by the stomach without problems, the release of certain enzymes is required. But not a single enzyme matches those that the body needs to digest tomatoes. That is, one vegetable will be digested, while the other will begin to rot in the stomach. As a result, gases are formed.

Of course, as long as the person is young and the organs, especially the liver, are healthy and in perfect order, then there will be no problems when consuming tomatoes and cucumbers together. But by the age of forty, the liver may already begin to wear out. To prevent this from happening, it is better to always eat cucumbers and tomatoes separately.
