Stuffed loaf with herring is a delicious and original quick appetizer that is perfect for a holiday table or a hearty breakfast. You can take it with you on a picnic, to the country house, as well as to work or on the road as a snack. The stuffed loaf looks beautiful when cut and holds its shape well; it is usually cut into 20-22 slices, so you get quite a lot of tasty and complete sandwiches. To prepare this snack, take a sliced loaf; it has a denser crumb, unlike an airy baguette, otherwise there may not be enough filling. For the filling we will need the following ingredients: herring fillet, butter, processed cheese, chicken eggs, boiled carrots and some fresh herbs. This filling tastes similar to false caviar made from herring and carrots - a very tasty miracle spread for sandwiches.

  • Sliced loaf – 1 piece
  • Salted herring – 1 piece
  • Butter – 100 g
  • Processed cheese – 90 g
  • Chicken eggs – 2 pcs.
  • Carrots (medium) – 1 pc.
  • Green onions – 30 g
  • Dill greens – 20 g
  • Salt to taste

How to cook stuffed loaf with herring

First, boil the carrots and chicken eggs. Wash the carrots thoroughly, put them in a saucepan with boiling water (do not add salt to the water) and cook over low heat for 20 minutes until tender.
We also wash the chicken eggs and place them in a saucepan with cold salted water so that during cooking the shells do not crack and the whites do not leak out. We put the eggs to boil hard - this is 7-8 minutes from the moment of boiling over medium heat.
Meanwhile, prepare the other ingredients. Cut the loaf crosswise into two halves and remove all the crumb. To do this, cut out the same distance in a circle with a sharp knife, about 1.5 centimeters from the edge, remove the crumb with your hands and place it in a bowl. We cut it out again... and so we take out the crumb along the entire length. Try not to cut through the crust of the loaf, but if you do, it's okay.
Tip: To prepare this snack, it is better to take a non-fresh loaf, let it lie in a bag for a day. And also, take a sliced loaf (it has a denser structure), and not an airy baguette, otherwise there may not be enough filling.

Then use your hands to break the loaf crumb into small pieces.

Wash the green onions, dry with a paper towel and cut into thin rings.

We also wash a small bunch of fresh dill, dry it and chop it finely. You can take any greens, for example, parsley, I only had dill.

Place the chopped greens in a bowl with pieces of loaf and mix.

Cut the butter into small pieces and add to the loaf crumb mixed with chopped herbs. The butter should be at room temperature and soft, so take it out of the refrigerator in advance.

Grate the processed cheese on a coarse grater. You can take any cheese you like, and it’s better if it’s hard, not pasty, so that it’s easy to grate it. And soft cheese can first be placed in the freezer for a few minutes.

Cool the boiled eggs in cold water, peel them and grate them on a coarse grater.

The carrots are already cooked. We check readiness with a knife; it should gently enter the carrot. Then cool it, remove the thin skin and grate it on a coarse grater.

Now fillet the herring. Of course, you can buy ready-made fillets in the store to reduce the preparation time for the snack. But personally, I prefer to use a whole herring carcass, it is more tasty than fillet. In fact, filleting herring does not take much time, you just need to know some small details. So, we cut off the head of the herring, it is better to do it with an oblique cut, this way all the pulp is removed from it. Then we cut the lower belly, remove the entrails and dark film, remove the skin, starting from the head, and remove the fin. Now we divide the herring into two halves with our hands, carefully separating the fillet from the ridge with the rib bones. All that remains is to clean the fillet from small bones. It is convenient to do this with special tweezers, or simply carefully remove all the seeds with your fingers.
Cut the herring fillet into thin strips, and then into small pieces and add to the total mass.

Mix everything well and taste it; you can add a little salt to the filling, taking into account the degree of salinity of the herring.

Our filling is ready, it turned out very tasty and has the right consistency, not dry, so there is no need to add mayonnaise here to prevent the loaf from getting soft. Now we stuff the halves of the loaf with the prepared filling, compacting it well with a spoon. Before serving, take our stuffed loaf with herring out of the refrigerator and cut it with a sharp knife into slices approximately 1.5 centimeters thick. This makes about 20 complete, tasty and filling sandwiches; they look appetizing and hold their shape well. I recommend to everyone!

Bon appetit!
