All this is mixed, add more vegetable oil on top and put it in the refrigerator. In two hours the caviar will be ready. This will be golden, lightly salted caviar that does not have a fishy smell, which will not be a shame to put on the festive table.

A prerequisite when choosing caviar must be that it is ripe. It is defined by clearly visible eggs, like beads, and no cloudy or mushy mass! If there are still pieces of film left in the caviar, remove them with a toothpick or fork, or simply with your fingers. Season the caviar generously with salt and pepper.

What products are used:

  • Caviar of any river fish – 500 g.
  • Onions – 200 g.
  • Butter or Suluguni cheese - 25 g.
  • Salt and pepper - to your taste.
  • Vegetable oil, a quarter cup (about 40 g).
  • Chopped dill.

How to fry caviar:

  • Since we have already washed the caviar, let’s move on to preparing other products. So, finely chop the onion and fry it in vegetable oil until tender.
  • Without turning off the stove, add salted and peppered caviar to the fried onion. There should be quite a lot of oil in the pan, since the caviar should be saturated with it and not seem dry after cooking.
  • Fry the caviar, stirring it occasionally. During cooking, it will change its color: from marsh-olive to pinkish-orange. Moreover, in the finished state, the caviar should be of a uniform color. These pancakes are prepared from the caviar of any river or sea fish, but we suggest using pike caviar, which has the highest protein content - about 29%!

What products:

  • Pike caviar – 500 g.
  • Chicken egg – 1 pc.
  • Wheat flour - 0.5 cups, or a little less.
  • Salt and pepper - to taste.
  • Vegetable oil – 400 g.
  • Greens, butter.

How to cook pancakes:

  • Mix the prepared caviar, as well as the egg and flour until smooth. Salt and pepper to taste. The consistency of the finished pancake mass should be the same as for traditional pancakes. To be sure, the caviar can be passed through a meat grinder, but even without these manipulations the mixture turns out to be quite liquid.

  • Vegetable oil – 50 g.
  • Chicken eggs – 4 – 5 pcs.

  • Cream 20% - half a glass.

Cooking process:

  • Season the prepared caviar with salt and pepper and fry in a frying pan in oil.

Cooking caviar in nature is no more difficult than at home, but how much fun it is! And most importantly, only fresh caviar can be this tasty. The cooking process takes approximately 20-30 minutes.

Having previously cut the film around the caviar bags, place the caviar in a bowl (preferably a deep plate) and fill it with hot (not boiling!) salt solution. Next, mix with a fork or a twig with the knots, and collect the film over these knots. It is not recommended to scrape caviar from the film with a knife, since a third, and in inept hands, even half of the caviar bursts and becomes unusable.

While you knead, the caviar swells, absorbs the salt solution and by the end of the process it becomes the same consistency when it softly melts on the tongue. You can eat such caviar not only in the form of sandwiches, but also just in tablespoons. Impressive? Please note that such caviar is not stored for a long time. Although the warning is of course stupid - how can such a delicious thing be stored for a long time...

Nothing prevents us from preparing caviar according to the same recipe (see above) at home. But there are still nuances. At home, you can make caviar for long-term storage, say, for the New Year and even longer.

Let's start with the fact that at home it is not necessary to remove the film with a fork or twig. Dump the caviar into a bowl and pour in slightly cooled boiling water. If caviar smells like mud, then when treated with hot water, the muddy smell disappears. In addition, the eggs become more watery and when eaten (this is especially noticeable in large caviar), the eggs burst between the teeth and delicious salty juice splashes out.

Next, take a mixer with a whisk and beat thoroughly. The entire film will remain on the mixer whisk, while the caviar remains intact. We rinse the eggs under cold water and remove small films that reach the surface of the water. You need to rinse it very well, I rinse it at least 10-15 times.

We drain the water and see that the caviar has become similar to millet in both color and size. We place the caviar on cheesecloth, hang it and let the water drain. After 15-20 minutes, pour the caviar into a bowl and salt with fine salt (not iodized) to taste. Lightly salted caviar turns out to be the most delicious, but it cannot be stored for a long time.

Therefore, I separate the caviar for long-term storage and for the next meal, and salt each portion differently. After salting, mix the caviar well with a spoon. From the color of millet, caviar turns into an amber transparent product with a small foam on top. Place the caviar in the refrigerator for 5-6 hours, after which you can safely eat it.

This is a classic recipe, but there is always room for imagination. For example, many people not only salt the caviar, but also add black pepper and even a little sugar. Second option: after the caviar has been salted, you can add butter (vegetable oil), chopped dill to the required amount of caviar and mix in a mixer. After this, all that remains is to spread this minced caviar on a piece of toasted bread and savor it.

There is one more trick. If you want to taste and cook real red caviar yourself, then buy ungutted pink salmon, although it is not often found in this form. As a rule, caviar is found in one of several pink salmon.

Moreover, the amount of caviar in it will be comparable to the volume of a medium-sized jar weighing 200-250 grams purchased in a store. Thus, you will not only buy fish, but will also be left with a very decent bonus, which will be almost more expensive in cost than the purchased fish .

Ingredients: caviar of any river fish - 250 g, egg - 1 pc., milk 100 g, salt, pepper to taste.

This is a dish from my childhood, my grandmother prepared it. Simple, tasty and very filling. Mix the caviar, peeled from the film, with a small amount of milk, add one egg and salt. Pour the resulting mixture into a heated frying pan with heated vegetable oil and fry (you can do it on both sides). A dish prepared in this way is so nutritious that you can eat it all day.

Caviar pancakes

Ingredients: caviar of any river fish - 250g, egg - 1 piece, medium onion - 1 piece, medium carrot - 1 piece, flour - 1-2 tbsp, salt, pepper to taste.

Grate carrots and onions on a fine grater. Mix everything with caviar, egg, spices and flour. You need very little flour, otherwise the pancakes will turn out tough. Spoon the resulting mass into a heated frying pan with oil and fry on both sides until cooked.

Caviar casserole with bread

Ingredients: fresh caviar - 300-400g, milk - 100 ml, onions - 100g, wheat bread - 100g, fat - 20g, salt - to taste, herbs - to taste.

Pass the caviar and wheat bread soaked in milk through a meat grinder or beat with a mixer, add finely chopped onions, salt, pepper, place in an even layer on a frying sheet greased with fat, and bake in the oven until golden brown.

When ready, just cut the casserole into portions and sprinkle with finely chopped herbs.

Caviar baked in the oven

Ingredients: 300 gr. fish roe, 0.5 kg beans, 2/3 cup milk, 2 tbsp. spoons of sour cream, 2 tbsp. tablespoons melted butter, 1/2 bunch of dill, 1/3 teaspoon tarragon, salt to taste.

Pour cold boiled water over the beans overnight, then cook over low heat until they become soft. Place the finished beans in a colander to drain the liquid, and then pass through a meat grinder or beat in a mixer along with the caviar.

Pour boiled cooled milk into the resulting mass, add tarragon and salt and mix everything thoroughly. Grease the mold, place this mixture in it, spread sour cream on top and place in a preheated oven.

Bake over medium heat until fully cooked. Serve the finished casserole hot, sprinkled with chopped dill.
