DIY peanut butter recipe. Peanut butter at home - cook without chemicals! Recipes for homemade peanut butter with sugar, honey, cocoa, nuts

Many people have heard or seen in American films such a product as peanut butter, which is spread so deliciously on bread and various pancakes. What else can you make from peanut butter? In addition to the fact that it can be spread on any baked goods, the paste is also used as a filling for baked goods, used in various desserts and sweets, and also added to sauces and meat dishes. We'll tell you how to make peanut butter at home, it's quite easy, but you can't do without a blender; we'll describe the technology in more detail using recipes as examples.

For homemade paste, it is better to take raw peanuts and cook them yourself. As a sweetener, it is better, of course, to use honey, or, in extreme cases, powdered sugar, because... Sugar doesn’t dissolve well and you’ll end up with grains of butter instead of smooth and homogeneous.

Ingredients:

  • raw peanuts - 340 g;
  • honey - 30 ml;
  • refined oil - 15 ml;
  • salt - 5 g.

Preparation

We wash the peanuts well and blanch them in boiling water for just a couple of minutes, and then rinse them with ice water. This treatment with a temperature difference will greatly facilitate the process of peeling and grinding. After washing, place on a baking sheet with parchment and put in the oven for 10 minutes, stirring occasionally. After the nuts have cooled, pour them into a bowl and cover with another bowl of suitable diameter and shake very vigorously, while the husks are well separated from the kernels. Then it will be enough just to sift through a large sieve. Pour the peanuts into a blender and start grinding, first you will get crumbs, then flour, then the mass will begin to gather into a lump and only after 15-20 minutes the nuts will begin to release oil and you will get a homogeneous paste. This process is slow, so the blender needs to be allowed to cool from time to time, and the mass must be mixed and scraped off the walls.

Add butter, preferably not aromatic or peanut butter, honey of a mild taste and fine salt. Mix again and put in a jar for storage.

How to make chocolate peanut butter at home?

This recipe is for making a paste from unshelled but roasted peanuts. At the same time, the skins will give the final product not only a beautiful brown color, but also be saturated with fiber, which helps protein foods to be better absorbed.

Ingredients:

Preparation

Wash the peanuts and fry them in a frying pan or in the oven until golden brown, but it is worth remembering that they have a large heat capacity, so you need to stop cooking them when they just start to turn golden, then they will go further on their own. Pour the nuts into a blender and grind for 15-20 minutes, depending on the power of the blender, remembering to mix and let the device rest. To make the grinding process easier, you can add oil and salt first and tilt the blender bowl in different directions during the process. At the end, add cocoa and honey and, if the paste turns out to be too dense, you can dilute it a little more with oil.

Store-bought peanut butter costs quite a lot of money. To enjoy its delicious taste and save money, you can make pasta at home. It is very easy to do, but only if you have a powerful blender or food processor with the “Chopping” function in the kitchen.

What kind of peanut butter is there and what is needed for it?

Peanuts can be used to make salty, sweet and crunchy paste. Crunches are small whole pieces of peanuts that are evenly distributed throughout the plastic mass.

To prepare the pasta you will need:

  • roasted peanuts;
  • salt;
  • vegetable oil;
  • cold boiled water;
  • all kinds of additives to taste.

These products will be needed to make all kinds of pasta.

Salted peanut butter

Using this recipe, you can make a paste from 250-300 g of peanuts.

  • Peel the roasted peanuts. Place it in the blender bowl and turn on the device at the lowest speed.
  • After 1 minute, increase the speed and do this until (gradually increase the speed) until the peanuts turn into crumbs. If your blender has a “Turbo” function, then switch to it. If not, simply grind the peanuts until they are moist - this can take anywhere from 5 to 15 minutes.
  • As soon as the peanut crumbs become wet and begin to release oil, pour in half a teaspoon of regular unflavored vegetable oil. The oil will help the paste become more uniform and flexible. Add some salt along with the butter. Taste the resulting paste and if you think it is not very salty, add salt.
  • Peanut butter, even if you add vegetable oil to it, may turn out a little dry. It depends on the speed of the blender and its power. To make the product even more plastic, pour 1-2 tablespoons of chilled boiled water into the paste.

Sweet peanut butter

Make this paste in exactly the same way, but add only a couple of spoons of liquid honey to the ground wet peanuts. If the paste is not very flexible, add a spoonful of water.

Peanut butter with crunches

Grind 50-70 g of peanuts to coarse crumbs. Pour it into a saucer, and pour the remaining 250 peanuts into the blender bowl. Make a savory or sweet paste. Place it on a plate and mix with peanut pieces.

Peanut butter with all kinds of additives

For these types of peanut butter, prepare a neutral base. This means that you do not need to put any vegetable oil, salt, or honey in it. For plasticity, add only a little water. Then you can add to the neutral paste:

  • dark chocolate melted in a water bath – 50-70 g;
  • chopped walnuts;
  • sesame seeds.

How to store peanut butter

Transfer the finished paste into a suitable jar or food container and store it in the refrigerator. Before use, remove and let stand on the kitchen counter for 5 minutes. In the warmth it will soften a little and will be easy to spread on sandwiches.

What to eat with peanut butter

Peanut paste is traditionally consumed with fresh bread or crispy toast. It is used to make sandwiches: bread – pasta – other products. Other products include: jam, fresh berries, banana slices, etc. – this is combined with sweet or neutral pasta. Salty pasta goes well with greens, fried bacon, and fresh onion rings.

Peanut butter isn't just for sandwiches. It makes an excellent marinade for grilled meat or fish (the salty paste must be diluted with water and any spices added). You can make wonderful spaghetti with pasta. To do this, pasta is boiled until Al Dente (slightly undercooked) and after draining the water, the following products are added: neutral pasta (1 tbsp), soy sauce (1/2 tsp), lemon juice (1 tsp). It is better to decorate this dish with chopped green onions, which really highlight the peanut flavor of the sauce.

How often do situations arise when you want to have a tasty snack, avoiding sandwiches with butter or sausage! If your soul regularly asks you to drink tea with “something tasty”, while you count calories and don’t want to overeat, this is also your option - find out how to prepare peanut butter at home and put a freshly prepared treat in the refrigerator for snacking. By the way, the paste can be stored for up to six months in a regular refrigerator - very convenient.

Peanut Butter Recipe

  • Peanuts (I have unshelled, unroasted) - 300 gr.
  • Honey - 1 heaped tablespoon
  • Salt - 0.5 teaspoon

How to make peanut butter at home:

You can buy nuts for the paste already shelled, but I had the most common ones on hand, so I used them.

First you need to roast the nuts. Pour into a frying pan with a wide bottom (so that the nuts are poured in one layer), put on low heat and fry until golden brown.

There is no need to grease the pan! Nuts can also be roasted in the oven: sprinkle in an even layer on a baking sheet and dry at 180 C for 10-15 minutes.

Then pour the nuts into a bowl and cool slightly.

It is very easy to remove the skin from fried fruits using regular peeling. You can rub the peanuts between your palms or take 3+4 nuts in your hands and grind them with your hands. It is more convenient to do this on a flat plate of large diameter. Feel free to involve children in this process - they will really enjoy shelling peanuts and participating in the process.

The shelled peanuts need to be reheated in the pan before being put into the blender. The heated fruits will form a paste much faster, thereby making the blender’s work easier and reducing the cooking time significantly.

Place the heated nuts in a blender. Now the fun begins - the transformation of tanned handsome men into a homogeneous mixture.

By the way, you don’t have to remove the peels from the nuts - in this case the paste will have a rich chocolate color.

We set the highest speed (in my blender this is the “Turbo” mode) and start buzzing. First you will see dust that looks like coconut flakes. At such a moment, I can’t even believe that the paste can be spread on bread. In fact, you are only at the beginning of the journey. Add 05 teaspoons of salt, 1 tablespoon of your favorite honey and continue the process.

After 10 minutes of beating, you need to look into the blender bowl again: the paste will begin to turn into a creamy consistency. Oil will begin to separate. At first it will look like plasticine or modeling mass. Keep whisking and soon the mixture will become more homogeneous. If your paste is too thick, you can add vegetable oil (many recipes call for this). You will need 2-3 tbsp of oil. spoons.

I prepared nut butter at home in 15 minutes. Cooking time depends on the power of your blender and whether the peanuts are heated or not.

Note: peanuts contain large amounts of vitamin D, E and the entire B group. We should be grateful to homemade peanut butter for protecting our hearts, since peanuts are powerful antioxidants that prevent the cardiovascular system from pathologies.

A delicious snack is ready. Bon appetit!

Calorie content

The calorie content of the dish is very high, so you should not abuse this delicacy. 100 g of product contains about 550 calories. Excessive consumption of peanut butter leads to obesity.

Other cooking recipes

There are many recipes for making peanut butter:

- without oil

If you do not use vegetable oil during cooking, you can add water, then the finished product will become more liquid and easier to spread.

- without honey

If you or your loved ones are allergic to honey, replace this ingredient with maple or sugar syrup, Jerusalem artichoke syrup, agave, stevia, etc.

A great way to get chocolate spread is to add cocoa powder to peanuts. For 200 gr. It will be enough to add 20 grams of raw nuts. grated milk chocolate in a bar or dark chocolate bar.

You can add other seeds, nuts, dates, raisins, figs and other dried fruits to the paste to suit your taste - it all depends on your preferences and desire to experiment.

For example, once at a party I tried homemade pasta with large pieces of peanuts that crunched on my teeth - I really liked this addition. But it’s very simple - put a few nuts aside, and at the end, after preparing the paste, crush them into large crumbs and add to the main mass!

Tell us how you make peanut butter? What additives are especially harmonious in it? If you have any questions about the recipe, be sure to ask, don’t hesitate.

Peanut butter is rightfully considered a favorite delicacy for children and adults. The product is not only tasty, but also healthy. Peanut butter is used to prepare cakes, pastries and other desserts; it is used as a stand-alone snack for tea. Experienced housewives developed their own cooking recipes through trial and error. Let's consider each of them in order.

Peanut butter: a classic of the genre

  • honey - 35 gr.
  • sunflower oil - 145 ml.
  • crushed salt (not iodized!) - 6 gr.
  • peanuts - 575 gr.

From the ingredients received you will get about 680-700 grams. final product.

  1. To start cooking, you need to purchase high-quality peanuts. If possible, buy purified and dried ingredients without salt, otherwise you will ruin the taste of the finished treat.
  2. You can purchase unshelled raw peanuts, but this will require extra time to shell. On the other hand, the husk is easily removed during heat treatment. It dries and falls off, requiring only a little effort on your part.
  3. After purchasing the raw materials, start preparing them. Fry the peanuts in a frying pan until golden brown. If possible, use the oven for these purposes. Preheat the device to 190 degrees, prepare a baking sheet. Place the nuts on it in one row and place in the oven for 5-8 minutes.
  4. The duration of frying affects the quality of the final product - the color and astringency of the paste. If you want a soft, slightly sweet mixture, soak the peanuts for 5 minutes. For those who like a sugary sweet composition, it is recommended to fry the raw material for 8 minutes.
  5. Cool the finished product to room temperature, then grind in a blender or meat grinder until it becomes grains. If you prefer to use a food processor, first split the nuts in half.
  6. In cases where unshelled peanuts are used, the husks must be removed before grinding, otherwise they will contribute to bitterness. You can also grind nuts in a coffee grinder; the main thing is to avoid overheating the device.
  7. After grinding, the peanuts need to be passed through a kitchen sieve 5 more times. After grinding, add honey, vegetable oil (necessarily refined) and salt to the ground peanuts. If desired, you can replace sunflower oil with olive, almond or odorless sesame oil.
  8. Pour in the oil slowly so that the peanut groats absorb the mixture gradually. First pour in a tablespoon, stir, then another, stir again. The consistency of the paste depends on the amount of oil added. The more it is, the thicker the product will be.
  9. Stir the mixture with a fork and transfer the mixture to a hermetically sealed container. Place in the refrigerator for long-term storage. The shelf life is 2 months, but it is recommended to use the composition in a shorter time.

  • fine salt - 12 gr.
  • peanuts - 465 gr.
  • peanut butter - 35 ml.
  • granulated cane sugar - 35 gr.
  1. You can use extra virgin olive oil, as well as vegetable, peanut, and rapeseed oil. Granulated sugar is used as a sweetener, but it can be replaced with honey. If you don't add sweetener, the paste will have a nutty aftertaste.
  2. As mentioned earlier, it is better to use shelled nuts, which you will not have to waste energy on later. Wash the raw peanuts and place them on a towel until completely dry.
  3. Turn on the oven, preheat to 180 degrees, at this time take a baking sheet. Brush it with a little oil to form a thin layer. Arrange the nuts in one row and place in the preheated oven for 6 minutes.
  4. After the expiration date, leave the nuts to cool to room temperature, then chop them in a convenient way. You can use a coffee grinder, a blender, a food processor, or a meat grinder. If you prefer the latter option, it is recommended to further pass the resulting cereal through a sieve.
  5. Now mix the mixture with salt, granulated sugar/honey, and peanut butter. Now place the ingredients in a blender or mash with a fork, as is more convenient. If the paste is too thick, dilute it with drinking water.
  6. You can prepare a homogeneous paste or make a composition with pieces, it all depends on personal preference. If desired, add chocolate, nutmeg, cocoa or cinnamon to the mixture. After cooking, transfer the entire mixture into a microwave-safe container and place in the refrigerator.

  2. Once the crystals have melted, turn off the burner and cool the mixture to room temperature. At this time, pour peanuts into the blender bowl and grind them to a fine grain. Pour in vegetable oil, fine salt, sugar syrup. Process the mixture with a blender again.
  3. To adjust the thickness of the paste, use vegetable oil. When you bring the mass to a homogeneous consistency, transfer it to a glass jar and seal it. Store the product in the refrigerator for no longer than 1 month.

  3. Mix all the ingredients again and pour in the sunflower oil in a thin stream. At the same time, bring the mixture to a homogeneous consistency using a fork or blender. Pour the finished paste into a container, seal it, and store in the refrigerator for no longer than one month.

  4. When the pasta is ready, pour it into a container and cover with a lid. Use as an independent snack for tea, prepare cakes, grease cake layers. Store in the refrigerator for no longer than 1.5 months.
