Heat the oil in a frying pan, fry the eggs until cooked, but do not let them brown, remove from the frying pan and set aside. Heat the oil again, put the tomatoes in the frying pan, add salt so that the tomatoes release their juice, add sugar, it removes the sourness of the tomato, after a couple of minutes pour 2-3 tablespoons of water, maybe a little more (if the tomatoes are not very juicy). I love this dish not in a dry version, but when there is a lot of sauce. After another couple of minutes, put the eggs back into the frying pan, mix everything well, pour in Shaoxing (chef’s) wine, oyster sauce, sesame oil, pepper, salt to taste and after 30 seconds turn off the frying pan. Transfer to a plate and sprinkle with green onions.

The dish can be eaten alone, with rice or, as is sometimes eaten in northern China, with noodles.

If the tomatoes are “plastic”, you can add a tablespoon of tomato paste when frying. In this case, the Chinese add ketchup, because rarely anyone knows about tomato paste.

This dish, in principle, can be prepared in a wok, in any frying pan, and even in a slow cooker or in some kind of pot.

Other variations of this dish:
- first fry the tomatoes and, when they are almost ready, pour in the beaten eggs. But here, due to lack of experience, a problem with the consistency of the eggs can occur - if the tomato sauce is too thin and you start stirring the eggs at the wrong time, they can turn into an unpleasant slurry.
- do not beat the eggs, pour them into the heated frying pan and start stirring quickly, then add the tomatoes. I personally don’t like this option because I just don’t like it when the eggs are unevenly beaten (personal quirks).
- fry the beaten eggs as in my recipe, just without taking them out, add raw tomatoes. I have cooked this option for quite some time before, but the sauce is not so rich or the eggs are too overcooked.
