Autumn is the time for zucchini, and this vegetable is widely used in cooking. Zucchini is baked, fried, stewed, and even made into soups. I want to offer you an interesting recipe for zucchini stuffed with meat and breaded and fried in a frying pan. So, let's get started preparing this wonderful self-sufficient dish.

We take such products as in the photo.

We clean the zucchini, cut it into rings 1 cm wide. And we make such holes inside each circle.

We make minced meat as for cutlets. That is, add salt and pepper, if necessary. Soak the bread and mix with minced meat. We also chop the onion and add it to the minced meat. Fill the holes in the zucchini with meat, as in the photo.

Beat the eggs lightly with salt. Dip our cutlets into eggs, then into breadcrumbs. If the meat seems to fall out, don’t worry, the breadcrumbs will stick the cutlets together.

Fry the zucchini in oil on both sides. The heat needs to be reduced and fry slowly, as the zucchini needs to be cooked through. Place the finished zucchini stuffed with meat on a paper towel.

We call this dish “navy-style zucchini,” because if you replace zucchini with pasta in the recipe, you get a well-known folk dish.
Zucchini goes very well with fried minced meat. The zucchini is soft, tender, moist, and the minced meat is crumbly and tangible. And all this is salty, filling and tasty.
During the preparation, I was still slightly upset.
The zucchini turned out to be some kind of wrong. They roasted for almost an hour until they began to soften at least a little. It usually takes ten minutes for the zucchini to cook completely. And here the minced meat was ready a long time ago, and during this time I managed to cook the soup, and the zucchini was crispy and remained so.

1~2 onions, ~400g minced meat, 3 young zucchini (~1kg), 1 clove garlic, 1 teaspoon salt, pepper




Wash the zucchini. Cut into strips with a cross section of 1 cm.
Place a deep frying pan (saucepan) on maximum heat, pour in vegetable oil and add a finely chopped clove of garlic.
After 30 seconds, add the chopped zucchini and stir.
Fry, stirring occasionally, until soft and lightly browned.




Before finishing frying, salt the zucchini (0.5 teaspoon of salt).




Add the minced meat to the onion, add a little salt (0.5 teaspoon of salt) and pepper. Turn the heat to maximum and fry with constant stirring until the meat is cooked (4~5 minutes).
Remove the pan from the heat.
When the zucchini is ready, add the fried minced meat to it, stir and fry everything together for about 1 minute.
When serving, sprinkle with chopped herbs.

How to fry zucchini with ground meat in a frying pan

By the way, instead of minced meat, you can use finely chopped meat. It will take a little longer to prepare, but the result will be more impressive.

  1. Peel the onion and finely chop it. If the onion turns out to be very caustic, periodically wet the knife in cold water.
  2. Heat the frying pan over low heat and add a little vegetable oil. We remember that the fattier the minced meat we choose, the less oil we will need.
  3. Add the onion and fry until translucent, stirring occasionally. It will take 3 minutes.
  4. Peel and chop the garlic, and then add to the onion. Stir again and fry for another 2 minutes until a characteristic garlic smell appears.
  5. Place minced meat in a frying pan. At first it will become crusty, so you need to constantly break it with a spatula and stir. Fry the minced meat until it becomes homogeneous and loses its red meat color.
  6. Salt and pepper to taste.
  7. While the minced meat is fried, prepare the zucchini. To do this, we wash them and get rid of excess moisture. Cut them into thick rings and then into large cubes. Don't make the pieces too small, otherwise they risk turning into a puree.
  8. Add the zucchini to the minced meat, now the whole secret of how to fry is not to dry it out. When frying the minced meat, juice has already released, but if it is not enough, you can add a little water. Stir and leave to fry for another 10 minutes. You will need to stir 1 or 2 more times during the process.
  9. Finely chop the greens, choose the one that goes best with the meat. For lamb it can be cilantro or tarragon, for chicken it can be parsley, and green onions will fit perfectly into a dish with pork. A minute before turning off, add the greens to the minced meat and mix again.

The zucchini with minced meat is ready and can be served.

Zucchini stuffed with minced meat in a frying pan, the recipe with photos of preparation of which is offered to your attention today, was recommended to me by an old friend of mine a couple of years ago. We met quite by chance in a minibus, when she was driving from her dacha with bags full of freshly picked vegetables. Of course, we talked about this and that, and when I asked what she was going to cook from her harvest, then she shared this recipe with me. I’ll say right away that I had doubts that the dish should be prepared exactly this way, and not the way I usually do it. But, I decided to trust the experienced housewife and did everything exactly as she said.
You can’t imagine how wonderful the zucchini turned out! I have never cooked or eaten anything like this before, my family was simply delighted. The fact is that, according to the classics, zucchini circles stuffed with minced meat must first be fried until crusty and then simmered in. And here is a completely different approach - circles filled with minced meat, breaded in egg and breadcrumbs and fried until cooked on both sides. My son called this dish cutlets in zucchini, and, in fact, he is absolutely right. It is only important to choose young squash fruits so that they are soft and tender, and cut them into circles no more than 1 cm thick.
By the way, I make minced meat for this dish in the same way as for cutlets, with the addition of onions and a bun soaked in milk. That's why my son named this dish that way.

- chicken table egg – 2 pcs.,
- onion – 1 pc.,
- white bread – 1 slice,
- salt and spices to taste,
- breadcrumbs – 1 tbsp.,
- vegetable oil – 3 tbsp.

How to cook with photos step by step





First, let's prepare the minced meat; even if we take store-bought, we need to grind it again in a meat grinder, adding finely chopped onion and a slice of white bread soaked in milk or water. Next, add salt and spices at your discretion and let the minced meat rest a little.




Next, we wash the zucchini and, without cutting off the peel (we take young fruits), cut it into thin circles, the thickness of which should be no more than 1 cm. Then carefully cut out the middle using a knife or spoon.




Now we make small balls from the minced meat and insert them into the hole of the zucchini. We press down a little with our hands, giving the product shape.






Then beat the eggs and add salt to them.
Dip the stuffed circles into the egg mixture and then sprinkle with breadcrumbs.




Place our zucchini in a frying pan heated with oil.




And fry on both sides over low heat so that both the meat and vegetables are cooked through.






Then we take the products out onto a paper napkin to remove any excess fat and immediately serve them hot.

How to cook zucchini stuffed with minced meat in a frying pan:

1. Take a young zucchini and rinse it under the tap with water. Cut the vegetable into pieces of approximately 4-5 cm. Cut out the pulp using a knife, or use a round dough mold.

2. To make the zucchini soft, first boil it in water. Place the zucchini rings into boiling water and cook over medium heat for 7-10 minutes. Zucchini should be half-raw.

3. Salt the minced meat, add a raw egg. Mix the minced meat until smooth.

4. Peel the garlic clove and pass it through a press. Add garlic and ground black pepper to the filling. Instead of pepper, you can add hot seasoning or spices for meat.

5. Pour boiling water over the couscous, cover with a lid and leave for 3 minutes. For one spoon of cereal, 2-3 spoons of water is enough. Loosen the cereal with a fork and pour it into the minced meat, stir. The filling is ready.

6. Carefully remove the zucchini from the hot water and place it in a frying pan; it does not need to be greased with oil. Fill the zucchini with minced meat.

7. For the sauce, mix water and sour cream, add salt and a little pepper. Pour sour cream sauce generously over the zucchini so that the filling has time to soak in. Cover the pan with a lid and simmer after the sauce boils for approximately 25-30 minutes. Then leave under the lid for 10-20 minutes so that the zucchini steams.

8. Stuffed zucchini is convenient to cook in a frying pan. And we serve this hearty and flavorful dish with a salad or vegetable appetizer. You can even serve it with boiled pasta.
