Delicious yeast dough for pizza. Regular yeast and quick yeast pizza dough Regular yeast dough for pizza

Although the first pizza was baked in Italy, today this dish is not only widely known beyond its borders, but is also one of the most popular in the world. It is not surprising that there are many recipes for pizza dough, but the classic version contains only a few ingredients:

  • yeast

The peculiarity of yeast dough is that it cannot be prepared in 15 minutes. It takes time for the yeast to activate and the dough to increase in volume. Depending on the recipe, it may take from 1 to 4 hours. This is worth taking into account, but there is also a plus: the direct participation of the cook in the process is not required, that is, while the dough is being prepared, you can go about your business.

What products to choose for cooking?

Of course, pizza dough can be kneaded using any flour, but for the classic recipe it is better to use premium wheat flour with a high gluten content. In this case, the dough will turn out obedient and flexible, it will stretch and roll out well, and the pizza will not crumble after baking.

The proportions of ingredients may vary from recipe to recipe. Often other components are included, which allows you to get an interesting and unusual result. For example, olive oil is often added to the dough. This is especially true for the American version of dough preparation. Olive oil can be replaced with another vegetable oil, such as sunflower.

The five most commonly used ingredients in yeast pizza recipes are:

In addition, yeast pizza dough can be kneaded not only with water, but also with milk or almost any fermented milk product. You can also include eggs in the dough - in this case it turns out more dense. Additives such as spices and aromatic herbs will not be superfluous. They will add zest and sophistication to the pizza and add originality to the familiar taste.

Sometimes you want to erect a monument to those who invented pizza! In fact, for me, there is no more favorite product in the world, which always seems so appetizing, aromatic and tasty that neither children nor adults can resist it. Surprisingly, in our family, homemade pizza with yeast dough has always turned out simply magnificent, in no way inferior to its counterparts prepared in pizzerias equipped with professional equipment - maybe it’s because of my mother’s special recipe, who bakes real culinary masterpieces in an old oven?

Deciding to check this out, today I rewrote this step-by-step recipe for yeast-based dough so that each of you, dear cooks, could try it yourself, quickly receiving a product that exactly meets all expectations.

Did you know? The classic pizza dough recipe calls for making a starter with dry instant yeast and then baking it in a special oven heated to 400 degrees. It is clear that such conditions are unattainable for most housewives. Therefore, culinary geniuses came up with a new version of the recipe that allows you to get delicious results using a conventional oven.

Preparation time: 60 – 120 minutes.

Kitchen appliances

  • Several capacious bowls with a volume of 400-800 ml, teaspoons and tablespoons.
  • Fork, steel or wooden whisk.
  • Towels (preferably linen or cotton).
  • Non-stick baking tray or muffin tin.
  • Baking paper if necessary, a sieve, a sharp knife and oven mitts.

Also, keep your blender or food processor with variable speed at the ready.

You will need

Filling
Dough
  • 1 kg of wheat flour;
  • 500 ml purified water;
  • 8 g table salt;
  • 110 – 120 ml olive oil;
  • 8 – 10 g dry yeast.
Additionally
  • 30 g butter margarine;
  • a little flour for dusting.

According to this recipe, you can make quick yeast pizza dough with milk instead of water, since the first gives the products incredible fluffiness and airiness, and the second makes the pizza crust rougher during baking, but it can also be prepared using wet yeast. In addition, you can use absolutely any combination of ingredients for the filling, adding mushrooms, sausage or boiled meat. However try not to overload the filling with ingredients.

Cooking sequence

Preparation

  1. Pour water or milk into a deep bowl; the ingredient should be at room temperature.

  2. Add the yeast and stir with a spoon or spatula until completely dissolved.

  3. Add salt and stir a little more, trying to ensure that the grains disappear.

  4. The next step is to add olive oil, stir and leave the mixture for five minutes.

  5. Grind the tomatoes in a blender or cut into slices - whichever you prefer.

  6. Cut the onion into rings, grate the cheese on a grater or using a food processor.

  7. Mix the tomato paste with sugar and salt, beat for a minute or two with a blender.

  8. Taste the sauce - if it is too sour, add a little more sugar.

Important! In fact, the main thing in straight yeast dough is the sourdough, so be sure to make sure that there are no drafts in the room during its short proofing. If you don't do this, your pizza dough may end up rubbery and won't rise.

Dough

  1. Sift the flour into the deepest bowl and make a well in the middle.

  2. Pour approximately half of the prepared starter into it.
  3. Mix the mixture with a spoon, trying to do it with confident, strong movements.

  4. Pour in a little more liquid, remove the spoon and begin manual kneading.

  5. Having added the remaining leaven, we continue active kneading for about fifteen minutes, almost without stopping, kneading a very plastic, soft and viscous dough.

  6. If the dough sticks too much to your hands, sprinkle it with a little flour and continue kneading.
  7. Then we divide our dough into several parts: each will become a preparation for one pizza

  8. After this, cover the container with the dough with film or a towel and place it in a warm place for an hour or two.

  9. Then we knead the dough and begin to assemble our product.

Assembly and baking

  1. Set the oven to heat up to 180-200 degrees.

  2. Now grease the baking sheet with creamy margarine.

  3. Roll out the dough on the kitchen table, trying to give it as round a shape as possible.

  4. Then we let the layer “reach” a little, about ten minutes.
  5. Coat it with the prepared sauce, you can also sprinkle chopped herbs on top.

  6. Place chopped onion on top and cover it with tomato slices.

  7. Generously sprinkle the workpiece with grated cheese and lightly press the layer.
  8. Let the raw pizza sit for literally three minutes.
  9. In the oven we place a baking sheet or mold with the workpiece.

  10. Bake for about fifteen minutes, then check the dough for doneness.
  11. If necessary, extend the baking time, then remove the baking sheet from the oven.
  12. Let the pizza cool slightly and transfer it to a serving platter.

Did you know? How to check the readiness of pizza? Simply take a wooden stick, skewer or toothpick and pierce the prepared product 5 cm deep. After this, take out the stick and use your fingers to touch the part that was just inside the pizza. A dry skewer indicates the product is ready, and a wet one indicates that it is too early to remove the pizza from the oven.

That's all! Your amazingly delicious pizza is completely ready! All that remains is to cut it into portions and serve, garnishing with fresh herbs, pouring mayonnaise sauce into a suitable container and preparing the appropriate drinks - tea, juice or compote.

Children also love to eat pizza with milk, and adults love to eat it with hot coffee. I bet your first pizza will fly off the table with incredible speed. Wrap the remaining pizza in a plastic bag and place in the freezer, because you will definitely have to make another pizza soon!

The cheese dish Pizza has won the hearts of millions of people around the world. It just so happens that it is customary to order it in pizzerias, but at home it turns out no worse if you approach the process correctly. The basis of any pizza is the dough, which contains 90% of the success of the dish.

Today I am sharing with you a recipe for classic yeast pizza dough. Those who wish can knead it with milk and add butter instead of olive oil. But, for me, this recipe is perfect and does not require any changes. Just be sure to let the dough rise a little, which is usually not required for pizza.

Ingredients for classic yeast pizza dough:

Pour three tablespoons of warm water over the yeast, add a pinch of sugar and stir well. Leave for 5-10 minutes for the reaction to occur.

Pour all the warm water into the container for kneading the dough, add the dissolved yeast and olive oil.

Add salt and sugar, stir.

Add flour gradually. Do not add all the flour at once. It is better to do this while kneading the dough. Sometimes it happens that you will need a little more or less flour, depending on its gluten content. It is better to have a maneuver in reserve.

Then the dough needs to be kneaded well. It is quite soft, manageable and sticky. If it sticks to your hands too much, you can grease your hands with oil. Leave the dough under a towel in a warm place until it rises a little. Then knead and you can cook the pizza.

The taste of pizza largely depends not only on the well-chosen toppings and a certain type of cheese, but also on the dough that was used in a particular recipe. Most often, when creating homemade pizza, one of the following recipes is taken as a basis.

To prepare this test you will need:

Water (0.25 l);

Flour (four glasses);

Egg (one piece);

Sugar (two level tablespoons);

Vegetable oil (for lubricating hands).

First you need to dissolve dry yeast and sugar in water. Then flour is poured into a separate bowl, one egg is driven into it and salt is added. After this, water with yeast and sugar is poured. The dough is kneaded. In this case, you need to lubricate your hands with vegetable oil so that the dough does not stick to them so much.

Place the well-kneaded dough in a warm place (on a radiator, in hot water, near the stove, etc.), first covering it with a warm towel. After about thirty minutes, it will come up a little and will need to be kneaded. After another half hour, the dough can already be used to make pizza: it should be enough for two or three large cakes or 4-5 small ones.

If the pizza filling will consist of ready-made products (sausage, tomatoes, cheese, etc.), then the crust first needs to be baked a little without it, and then add your preferred products. But, if, for example, you plan to use raw minced meat as a filling, then it must be laid out on raw dough, otherwise the meat will not have time to bake.

Extremely tasty yeast pizza dough. In addition, it cooks very quickly, and there are no special difficulties in the recipe. To prepare it you will need:

Slightly warm water (0.25 l);

Sugar (tablespoon);

Dry yeast (small package);

Olive oil (tablespoon);

Salt (pinch);

Flour (about 350 g).

Pour the yeast with warm water and wait until it rises. Then pour the flour into a bowl in a heap, make a depression in the middle and add sugar, salt, olive oil and suitable yeast there. Knead the dough with your hands.

After about five minutes, place the dough on the table, lightly dusted with flour, and continue kneading here for at least ten minutes. After this, return the dough to the bowl, cover with a towel and leave in a warm place for half an hour (approximately). When it rises, you can start making pizza.

The convenience of this recipe is that the resulting dough is perfect not only for making pizza, but also for baking delicious pies, chicken pies, flatbreads, etc. To create it you will need:

Dry yeast (one small package);

Slightly warm milk (0.5 l), can be replaced with water;

Flour (1 kilogram);

Salt (half a teaspoon);

Sugar (about 50 g);

Olive or sunflower oil (four tablespoons).

You need to pour milk or water into a bowl and add yeast there, as well as add salt, vegetable oil and sugar. Then you need to pour in flour, knead the dough (knead well) and leave in a warm place for 15-20 minutes, covering with a clean napkin or towel.
