They complement each other, and by using dried grapes we can reduce the amount of sugar in food. After all, the vast majority of connoisseurs of our works are children, and we prepare this dish for them too.

Ingredients:

  • cottage cheese - 500 g,
  • sour cream - 5 tablespoons for semolina,
  • semolina - 2 tablespoons,
  • eggs - 1-3 pcs,
  • sugar - 3 tablespoons,
  • vanilla sugar - 1 teaspoon,
  • raisins - 50 g,
  • butter - 1 tablespoon (for greasing the pan),
  • a small pinch of salt,
  • 2 spoons of sour cream for soaking,
  • 1 tsp starch.

In a separate container, mix semolina with sour cream so that it swells while we prepare the cottage cheese.

Wash the raisins and scald them with boiling water.

Beat the eggs into the cottage cheese and pour in the swollen semolina. Add sugar, salt and vanillin to taste.
To prevent the finished casserole from falling off, add a spoonful of starch.

Mix everything and prepare the mold. Grease it with soft butter, sprinkle with breadcrumbs, semolina or flour.

Spread the entire mixture evenly and spread sour cream on top.

This is necessary to prevent the formation of a dense crust, which does not allow air to escape from the cottage cheese and, as a result, the casserole falls off. With sour cream the crust turns out very thin.

You can serve it with yogurt, jam or jam. But we love regular and not too sweet.

Step 1: prepare the raisins.

First of all, heat the kettle with purified water. Then put the raisins in a deep plate and pour boiling water over them so that the liquid is above the level of the dried fruits. 1.5 – 2 centimeters.
Leave the raisins as is for 3 – 4 hours, then drain the water, dip it with paper kitchen towels, place the dried fruits in a dry deep plate and immediately proceed to the next step.

Place the required amount of cottage cheese in a deep bowl. Add chicken eggs, sour cream, sugar, vanilla sugar and a pinch of salt.
Mix these products thoroughly until smooth using a mixer, food processor or immersion blender.


Then add raisins, 6 tablespoons of semolina and baking soda to the resulting mass.
Mix all the dough ingredients again with a tablespoon until smooth.
Let it brew for a while 15 – 20 minutes so that the semolina swells and the soda reacts with the sour cream.

Step 3: Prepare the oven and baking dish.



Meanwhile, turn on and preheat the oven up to 180 degrees Celsius.
Grease the mold in which the dessert will be baked with a thin layer of butter and sprinkle the bottom with a tablespoon of semolina.

Step 4: form and bake cottage cheese casserole with semolina.



After 15 – 20 minutes transfer the curd-semolina dough into the prepared form, level its surface with a metal kitchen spatula and sprinkle with a tablespoon of semolina. A layer of semolina on the surface of the dough is needed so that during baking the casserole is covered with a golden brown, crispy crust.
Place the pan with the dough in the preheated oven and bake the dessert for 40 – 45 minutes.
Then we put oven mitts on our hands, take the pan out of the oven and place it on a cutting board that was previously placed on the kitchen table.
Let the cottage cheese casserole cool slightly.

Step 5: Bring the dessert to full readiness.



Then sprinkle it with a thin layer of powdered sugar through a fine mesh sieve.
Cut the food into portions and place them on dessert plates using a kitchen spatula. If desired, serve each portion of the casserole with fruits, berries, nuts, any cream or melted chocolate, and serve to the sweet table.

Recipe for cottage cheese casserole with semolina and sour cream

Mix semolina (3 tablespoons) with sour cream (5 tablespoons), mix lightly with a spoon and leave for 30 minutes for the semolina to swell.


Combine 300 g of cottage cheese in a bowl with two eggs, three tablespoons of sugar, vanilla sugar, salt and baking powder.


Using an immersion blender, mix the ingredients into a homogeneous creamy mass. It took me 2 minutes.


30 minutes after the start of cooking, the semolina swelled significantly, absorbing some of the sour cream. Combine the curd mass with semolina and sour cream. It will be enough to simply stir them with a spoon until smooth.

The dough for cottage cheese casserole with semolina and sour cream turns out to be very liquid, and don’t let this bother you. In the process of preparing the cottage cheese casserole, the semolina will absorb the liquid components of the casserole and the dough will turn out incredibly tender, slightly porous and elastic.

In order for the oven to be preheated at the right time, turn it on now and set the temperature to 180 degrees.


Take a baking dish. A springform pan is not suitable for making biscuits, since the dough for making cottage cheese casserole with semolina and sour cream is liquid and will flow out through the joints of the parts of the springform pan. It is best to use any ceramic or glass baking dish; silicone is also fine.

Grease the bottom and walls of the mold with a small amount of butter and sprinkle with semolina. Then pour the dough for making cottage cheese casserole into the mold. At this point, the oven has already been preheated to 180 degrees. We send the form with the dough into it and time it for 50 minutes.
