You don’t always have time to prepare a complex dish, so in such a situation a simple recipe for minced beef meatballs will help out. You can buy cured meat ready-made or make it yourself. Appetizing meat balls, without using any gravy, only seasoned with spicy spices, can be prepared in half an hour. They are perfect for both a main course and a snack.

Beef is a very tasty lean meat, without a specific smell. If you season your ground beef properly, it will stay juicy and your meatballs will be delicious. As additives, it is enough to use salt, crushed black pepper and dry seasonings to taste. This recipe will contain very little dried herbs, red hot pepper and garlic. Before cooking, minced meat with spices must be kneaded well with your hands and left at room temperature for 15-20 minutes. These tips will help keep the meat juicy without overpowering its flavor.

Finely chop the onion head and fry it in a small amount of vegetable fat. The onion should cook well, changing its bitter smell to a sweetish aroma - then it is ready, even if it turns slightly brownish.

After frying, add the onion to the prepared minced meat along with the remaining oil. If the onion pieces are large, you can chop them again with a knife or blender.

From the seasoned minced meat you need to roll small balls with a diameter of no more than 4 cm. Leave the meat pieces to “rest” for 10 minutes.

Melted lard is well suited for frying - generously grease the bottom of the pan with this fat. Instead of lard, butter is also suitable, but it is worth remembering that when frying it creates a strong crust. Place the meat balls on the frying pan, with a small distance from each other.

The meatballs are fried over medium heat, first without a lid, for 2-3 minutes on each side. When the meat is well cooked on both sides and remains raw on the sides, then cover the pan with a lid so that the resulting water vapor does not escape. Periodically, you need to shake the pan, or open the lid and turn the meatballs over with a spatula, pouring over the rendered fat.

Ready-made minced beef meatballs can be served with pita bread and ketchup. Also, simply serve the dish with fresh tomatoes, lettuce and green onions. As you can see, the meat remained juicy and not overdried.

  • Instead of ground beef, you can use ground veal, the meatballs will be even more tender.

Step-by-step preparation of the dish

We prepare all the necessary products. Peel the carrots. Remove the skins from the onion and garlic. Measure the required amount of rice.

Cut the defrosted meat into medium pieces and pass through a meat grinder. Add one onion and garlic here. Salt and pepper the finished minced meat and mix so that the salt and pepper are distributed evenly.

Rinse the rice thoroughly with cold water several times. As a result, the water with which we washed the rice should become clear.

Place ground beef in a separate bowl. Add rice and raw eggs there. Mix the whole mass thoroughly until smooth.

From the resulting mass we form meatballs. The diameter of the meat circles is approximately 4 centimeters.

Let's prepare the gravy. To do this, grate the carrots on a fine grater.

Cut the onion into half circles.

In a preheated frying pan, fry the carrots and onions with the addition of refined sunflower oil. We determine the readiness of vegetables by the transparency of the onion.

Pour cold water into a glass bowl. Add tomato paste, flour and salt to it. We send all the spices there. This time I used curry, meat seasoning and suneli hops.

Add gravy to the fried vegetables. And bring to a boil.

Pour the resulting gravy into a heat-resistant bowl in which we will cook the meatballs.

Submerge the meatballs in the gravy. There is no need to place the meat balls close to each other. Because when baking they will increase in size.

To prevent the top side of the meatballs from drying out, cover the dish with a lid or foil. Bake the dish in the oven at 220 degrees for about 30-40 minutes.

Most often, housewives prepare meatballs from minced beef in tomato sauce. However, it is not necessary to simply fill the workpiece with diluted paste. You can do it much more elegantly and end up with a delicious dish. To do this, a piece of stale white bread is soaked in milk, squeezed and put through a meat grinder with half a kilogram of beef, an onion, mint leaves, herbs (taken according to your taste and in a fairly large quantity), a clove of garlic and hot pepper without seeds.

Half a glass of rice is boiled until half cooked and mixed with meat. Meatballs are formed from ground beef, fried until crusty and placed in a saucepan. For the gravy, chopped onions and garlic cloves are fried in a spoon of oil. Two crushed tomatoes without skins and selected spices are poured into it. Once it boils, the gravy is salted and sweetened with sugar, after which it is kept on fire for a couple of minutes. The prepared sauce is poured over the meatballs. They simmer for ten minutes under the lid.

The dish provides a fairly wide springboard for culinary imagination. For example, you can make meatballs from ground beef with sour cream gravy. For it, melt 2-3 tablespoons of butter, fry a couple of tablespoons of flour in it - you need to stir constantly so that there are no lumps left. In a separate frying pan, a 400-gram package of low-fat sour cream is heated until boiling. Once it foams, add flour. Stir vigorously again, and the last ingredient is a couple of tablespoons of tomato paste. Then salt and pepper are added, water if necessary (in case the sauce is too thick), and the gravy is poured into the meat balls.

The ground beef meatballs with cream sauce are good. For this, an onion is chopped and a medium-sized carrot is grated. Vegetables are simmered in melted butter until softened. Then half a glass of tomato juice is added to them. As a last resort, you can take pasta: five spoons. After boiling, three tablespoons of flour are stirred into the sauce. After a minute, a liter of warm broth is poured in a little at a time. A quarter of an hour of simmering the gravy on the stove - and you can remove it. Finally, the sauce is flavored with salt, spices and half a glass of the heaviest cream. The gravy works best when the meatballs are baked in the oven.

“Hedgehogs” with cheese

You can make your favorite dish even more tempting and tasty. To do this, just stuff the meatballs with something from minced beef. It tastes best with hard cheeses. Minced meat is prepared traditionally, only the onion is not ground with meat, but grated. In addition, an egg is driven into the base - one for every half a kilo of beef. The minced meat is peppered and salted; if desired, you can season it with your favorite spices.

A piece of cheese is cut into cubes (with an edge of about a centimeter). The minced meat is divided into balls. Each is made into a flatbread, with a slice of cheese placed inside. Now the cake is rolled into a ball again. And the minced beef meatballs with cheese are laid out on a greased sheet. They will bake for 15 to 20 minutes. The time depends on the size of the hedgehogs. You can serve it plain or with any of the sauces described above.

Minced beef meatballs in the oven Yugoslav style

The first stage of preparation is not much different from previous recipes. The only deviation: it is not the onion that is ground into the minced meat, but the sweet pepper. You can also add aromatic herbs. The meatballs are not fried, but are placed directly in the oven on a baking sheet. They are covered with foil on top. After a quarter of an hour, it is removed, and the balls are filled with sauce. To prepare it, combine a glass of sour milk, a melted cube of butter, an egg yolk and a spoonful of cumin, ground to a powder. Ground beef meatballs are cooked to a crisp over low heat. If you are not too fond of sour milk, you can replace it with curdled milk. But kefir is not suitable for this recipe.

It's hard to find a person who doesn't love ground beef meatballs. These meatballs turn out to be especially tasty if the minced meat is prepared with your own hands.

Cooking beef meatballs: recipe

If you cook this dish in a gentle sauce based on tomato paste and sour cream, the meatballs will turn out juicy and soft. Required ingredients:

  • beef (0.7 kg);
  • rice cereal (150 g);
  • one egg;
  • carrot;
  • large onion;
  • fat sour cream (150 ml);
  • butter (45 g);
  • 2 sachets of tomato paste;
  • spices, bay, salt, pepper.

Rinse the beef and grind through a meat grinder. Then peel the vegetables, cut the onion into cubes, and finely grate the carrots. Meanwhile, put a saucepan with rice cereal on the stove (cook until half cooked).

Stew onions and carrots until soft. Mix the prepared ingredients, add the egg and all the spices. Mix everything and form into balls. Then dip them in flour and fry them so that they retain their round shape. The fried beef meatballs are carefully placed in a saucepan with a fairly thick bottom.

Preparing the sauce for beef meatballs

Now you need to prepare the sauce:

  1. Melt butter in a frying pan, add sifted flour and mix.
  2. Then carefully pour in the sour cream and mix again to prevent the formation of lumps.
  3. Dilute tomato paste in 1.5 glasses of water and add to sour cream sauce.
  4. Reduce heat and simmer for another couple of minutes.
  5. After this, the meatballs are poured with sauce, laurel and peppercorns are added and left to simmer (at least a quarter of an hour).

Then turn off the heat, and let the beef meatballs with rice sit for another half hour. This way they will be even tastier and more tender.

Beef and bread meatballs

Instead of rice, you can add stale white bread. In this case, you need to prepare the following products:

  • beef meat (400 g);
  • cream (100 ml);
  • 1-2 pieces of stale bread;
  • garlic clove;
  • tomato paste (2 tbsp);
  • flour;
  • milk;
  • salt, pepper and spices.

The meat is passed through a meat grinder twice. Add salt, pepper, spices and cream. Then add the bread soaked in milk.

  • Form the dough into large balls, roll them in flour and fry. Dilute tomato paste in a glass of water and pour into a container with meatballs.
  • Add a little cream there too.
  • Bring the dish to a boil and simmer over low heat for 20 minutes.
