Weight of white and yolk

A whole egg weighs 50g. The yolk makes up 1/3 of the egg and weighs 17g. The white makes up the remaining 2/3 of the egg and weighs approx. 33 g. And accordingly, 21 whole eggs = 1 kg 36 whites = 1 kg 53 yolks = 1 kg.

The average size, or rather weight, of a raw yolk is 25 grams for the largest egg.

As scientific experiments show, the minimum weight of the yolk starts from 18 grams. At its highest potential, it can reach as much as 27 grams, of course this is for extremely large eggs, which many consumers are afraid of, because I think that the chickens that lay them are stuffed with something.

A typical average chicken egg weighs only 60 grams, the weight of the yolk in the egg is 32-35% and this is about 21 grams for the raw yolk. The weight of the boiled yolk is similar, about 20 grams. Let's take the weight of one chicken egg as 100%, the weight of the shell as 12%, the weight of the white as 56% and 32% as the weight of the yolk.

Accordingly, the larger the egg, the larger the yolk. In this case, there are double yolks.

When buying eggs in a supermarket or household, we don’t often think about their weight.

Basically, the buyer looks at the cost of the packaging, sometimes only at home noticing that the eggs in it are too small in size.

There are actually many different types of chicken eggs.

First of all, eggs are divided into dietary (this period applies to eggs during the first week after laying by chickens) and regular table eggs (stored at room temperature for three weeks, and in the refrigerator for all 8 weeks).

  1. The average egg weighs approximately 50-55 grams.
  2. Smaller eggs are usually laid by pullets, the weight of such eggs is approximately 35-40 grams. And there are also very large eggs - selected ones, such as those laid by adult chickens.
  3. A selected egg weighs approximately 65-75 grams, respectively, a package of a dozen selected eggs can easily be twice as heavy as the same package of pullet eggs.

Since eggs are always sold not by weight, but by quantity, it can be difficult for the buyer to correctly determine the favorable cost of a particular package. It is for this reason that there is a system for labeling eggs by category.

What do the letters on egg markings mean? Is it possible to determine the weight of an egg from them?

According to Russian laws, all eggs that go on free sale must be marked according to their quality with a certain set of letters and numbers.

  • If the first letter in the egg labeling is capital D, then the egg is dietary and must be sold within seven days, then it is considered a table egg.
  • If the first letter is a capital C, then the egg is an ordinary table egg (can be stored for about 25 days from the date on the package).





Next, to the letter indicating the category, another letter or number is added, indicating the category of the egg by weight.

  • The letter B means that the egg is of the highest category and weighs at least 75 grams.
  • The letter O denotes selected eggs weighing from 65 to 75 grams.
  • Eggs lighter than 65 grams are marked with numbers: 1 - an egg of the first category weighing from 55 to 65 grams, 2 - an egg of the second category weighing from 45 to 55 grams and 3 - an egg of the third category weighing from 35 to 45 grams.

The marking must be placed both on the packaging and on each individual testicle.

So if the DV is marked in ink on an egg, this means that it weighs at least 75 grams and is dietary. If the egg is marked C1, it can be stored for up to 25 days, and its weight varies from 55-65 grams.

This would make it possible to more accurately determine the proportions of ingredients when preparing homemade face and hair masks. In fact, everything is quite simple here.

In order to find out how much a chicken egg weighs without a shell, you can make simple calculations based on the ratio: shell - about 10%, yolk - about 30%, white - about 60% of the total weight of the egg.

Thus, if we have an egg of the first category, we can calculate that with a total average weight of 60 grams, the shell weighs approximately 6 grams, the yolk weighs approximately 18 grams and the white of one egg weighs approximately 36 grams.

It is a little more difficult to separately calculate the weight of all the components of eggs of the highest category, since they do not have an upper weight limit. How much the yolk of a premium chicken egg weighs or its white is most easily determined using a home culinary scale.

It is interesting to note that, as it turns out, the weight of a chicken egg is a rather relative value. Despite the fact that the average testicle weighs about 50-60 grams, in the world of eggs there are both real giants and midgets.

So the world's largest egg was laid by a chicken in 1956 in America. The weight of this egg was 454 grams (about what our standard package of 10 eggs weighs). And the smallest testicle was registered in 2011, also in the USA (in Charleston). Its weight was only 3.5 grams.
