We need about 300 grams of pitted cherries, so take 350 grams, although this is not important - if there are few cherries, 200-250 grams will be enough. I use a rather ancient device, but you can remove the seeds with a pin, a hairpin, a teaspoon, or just your fingers. The result should be 300 grams of pitted cherries. In winter, you can make brownies with frozen berries - it will turn out just as good. However, when you completely defrost the cherries, drain the juice from it (just drink it).

In a convenient bowl, combine 200 grams of good dark chocolate, which we break into pieces or chop with a knife, and 100 grams of butter. Despite the fact that it is recommended to melt chocolate in a water bath, it is much faster and more convenient to do this in a microwave oven in the Defrost mode. The most important thing is not to overheat the chocolate, otherwise it will curl into lumps. Then there will be no turning back. Every 5-10 seconds of heating in the micro, take out a bowl of chocolate and butter, mix everything with a spoon or fork. When the chocolate is hot enough, just stir it thoroughly - the pieces will completely melt from the heat of the butter. By the way, dark chocolate takes longer to melt than milk chocolate. Milk chocolate, unlike the bitter version, melts much longer. And in the classic recipe, its use is unacceptable, since the dough in this case will not acquire the characteristic brown color.

When the chocolate and butter are completely melted, they should be stirred. You should get a homogeneous mass. You need to add granulated sugar and cocoa powder to it. The mixture should be mixed using a spatula or fork.

The final touch in the process of preparing chocolate dough is the addition of wheat flour. It must be sifted and preferably of the highest grade. Mix everything thoroughly so that no lumps form.

So, the dough is completely ready, all that remains is to bake it correctly. To do this, you should use a mold that is suitable in size and shape.
