  • 250 g butter
  • 200 g sugar
  • 5 eggs
  • 1 tbsp. flour (140 g)
  • 1 teaspoon of baking powder (you can quench 0.5 teaspoon of baking soda with vinegar)
  • 120 g starch (if you have corn starch, use it, the taste will be subtler)
  • 300–400 g cherries (you can use frozen ones, but they must be thawed first)

How to cook:

1. Preheat the oven to 200°C.

2. Beat the softened butter with a mixer, adding sugar in small portions. Add eggs one at a time, beating thoroughly after each.

3. Combine the sifted flour with baking powder and starch and also add it into the dough in small portions, constantly whisking.

4. Line a springform pan with parchment (we used a pan with a diameter of 22 cm) and grease with a small amount of butter.

5. Pour the dough into the mold, place a cherry on top, carefully press each cherry into the dough.

6. Bake the charlotte with cherries for 30–40 minutes.

Charlotte with apples and plums

What do you need:

  • 3 apples (we had green strong apples)
  • 1 lemon
  • 4 eggs
  • 5 plums (or 1 orange)
  • 130 g flour
  • 100 ml cream 20% fat at room temperature
  • 60 g sugar
  • 1 pinch of salt
  • vanilla sugar - for sprinkling apples
  • powdered sugar, cinnamon - for decoration

How to cook:

1. Preheat the oven to 190°C.

2. Peel and seed the apples and cut into medium-sized cubes. Sprinkle with lemon juice, sprinkle with vanilla sugar and zest. Add the plum halves (if you use an orange instead of plums, separate the citrus into slices and cut each slice in half).

  • 150–200 g of any berries (frozen can be used)

How to cook:

1. Preheat the oven to 180°C.

2. Melt the butter, cool slightly and mix with milk, sour cream, eggs, lemon zest and vanilla.

3. In another bowl, thoroughly mix the sifted flour with baking powder, then add sugar and mix again. Combine with products from 2 items. At this stage, do not use a mixer and do not get carried away with mixing, there are no lumps - the dough is ready!

4. Chop the chocolate into small pieces and add to the dough. Then add berries. Mix very carefully from bottom to top.

5. Line the springform pan with parchment and fill with dough. Bake for approximately 50 minutes.

  • 1/3 teaspoon baking soda

  • 150 g sugar
  • 1 teaspoon vanilla sugar
  • 2 eggs
  • 120 ml milk
  • 2 large apples (we used Granny Smith)
  • 5 tbsp. spoons of brown sugar
  • juice of half a lemon
  • butter - for greasing the pan

How to cook:

1. Heat the oven to 190°C.

2. Mix the sifted flour with baking powder and soda, add spices and salt.

3. Beat softened butter with regular sugar and vanilla. Add the eggs one at a time, without stopping the mixer.

4. Mix flour with whipped butter. Pour in the milk and mix thoroughly again. At this stage, it is better not to use a mixer and mix the dough with a wooden spatula.

5. Peel the apples, carefully cut out the core and cut into thin discs.

6. Line a springform pan (we had a pan with a diameter of 24 cm) with parchment, grease the surface of the paper with butter and evenly sprinkle the bottom and sides with 1.5 tbsp. spoons of brown sugar. Sprinkle with lemon juice and sprinkle again with 1.5 tbsp. spoons of brown sugar.

7. Pour half of the dough into the mold and carefully place half of the apples. Fill with the second part of the dough. Place the remaining apples on top. Sprinkle apple pucks with 2 tbsp. spoons of brown sugar. If desired, you can core the remaining apples into heart shapes and fill them with cranberries before baking.

  • 50 g butter
  • 2 eggs
  • 50 ml grape seed oil (easily replaced with olive oil)
  • 130 g brown sugar
  • 1 teaspoon vanilla sugar
  • 210 g flour

  • 0.5 tsp salt
  • zest of one lemon
  • zest of one orange
  • 60 ml milk
  • 300 g seedless red grapes (choose medium-sized grapes, this is important!)

How to cook:

1. Melt the butter and cool to room temperature.

2. Mix eggs with grape oil, sugar, vanillin and melted butter, beat well with a mixer.

3. Mix the sifted flour with baking powder, salt and two types of zest.

5. Line a springform pan (we had a pan with a diameter of 22 cm) with parchment, lay out part of the dough, place half of the grapes on top, and fill with the remaining dough. Bake for 10 minutes, then remove the pan from the oven, sprinkle the remaining grapes over the dough and bake for another 30-40 minutes.

6. Let the cake rest for 15 minutes, remove from the pan and cool completely on a wire rack.

Tsvetaevskaya charlotte

Oddly enough, this recipe is the closest to the original French recipes from two centuries ago. Take apples that are juicy, ripe and aromatic. Sour cream can be replaced with very heavy cream of 33% fat content or higher - it will turn out even tastier. If you can find natural vanilla, add it; the aroma will be stricter, subtler and more solemn. Use the best eggs you can find. If store-bought, then it should be category C0 and the packaging date should not be older than a week. The recipe is designed for a mold measuring 25 by 18 cm.

Ingredients:

For the test:
150 g butter,
1-1.5 cups flour,
½ cup sour cream,
1.5 teaspoons baking powder (baking powder).

For filling:
1 glass of sour cream,
1 cup of sugar,
1 egg,
1 teaspoon vanilla sugar,
2 tbsp. spoons of flour,
4-6 large apples.

Preparation:
Melt the butter and cool. Sift flour with baking powder. In a large bowl, mix flour with sour cream and pour in butter. Knead the dough. Dust with flour and spread the dough over the bottom and edges of the pan to form sides.

Wash the apples and dry them. Cut out the core and cut into thin slices or slices. Spread evenly over the surface of the dough.

Place sour cream in a bowl, add sugar, vanilla sugar and egg. Beat well with a whisk. Add flour, mix well. Pour the mixture into the mold and shake the mold a little so that the filling is better distributed among the apples.

Bake for 50 minutes at 180 degrees. The finished Tsvetaeva charlotte can be served hot or cooled.

Almost an original old recipe, as if the pie was made in England at the end of the 18th century. The most interesting thing is that preparing such a charlotte is even easier than using the usual biscuit dough. Remove the zest from the lemon. Peel and seed the apples, cut into cubes, pour in lemon juice and sprinkle with sugar. Grease the pan thickly with butter. Soak slices of white bread in the egg-milk mixture and line the bottom and edges of the pan with slices. Lay the bread overlapping, avoiding any gaps.

Melt some butter, pour it over the dried bread cubes and mix with the apples and zest. Place the apples in the mold. Cover the apples with slices of bread dipped in milk mixture. Bake for 40-50 minutes at 200 degrees.

Leave the finished charlotte in the switched off oven for 10 minutes, then place on a dish and serve hot.

Charlotte in Swedish

This is an original Swedish recipe, which contains natural cinnamon and vanilla, rare in Russia, as well as dark cane sugar. All this gives the pie an exotic, dense aroma.

4 apples,
1 glass of flour,

    Pour warm milk over the crackers. Leave for 30 minutes. Squeeze.



    Add butter (60 g), egg, rum, vanilla sugar, powdered sugar (40 g), salt. Mix the mass.



    Separate the yolks from the whites.



    Rub the cottage cheese through a sieve or grind with a blender.



    Add yolks, powdered sugar (80 g), stir the mixture.



    In a mold greased with butter or margarine and sprinkled with breadcrumbs, place half of the mixture of breadcrumbs.

    The first time I froze apples, I was afraid that I had spoiled the product. It turned out that I was afraid in vain. They make excellent cottage cheese casseroles and sponge pies. Moreover, under the influence of temperature, the fruits literally spread out, become soft, tender and simply melt on the tongue. I liked the taste much better with frozen ones than with regular ones. Both fresh and frozen apples are suitable for all recipes.

    Products:

    • Kefir – 250 g
    • Sugar – 2 tbsp.
    • Salt - a pinch
    • Egg – 2 pcs.
    • Flour – 160 g
    • Baking powder – 0.5 tsp.
    • Sunflower oil – 2 tbsp.
    • Vanillin - sachet
    • Apples – 350 g

    Preparation:

    • Sift flour with baking powder into a cup
    • Place kefir with eggs, vanillin and sugar in another container
    • Mix the contents of two bowls using a mixer
    • At the end add sunflower oil

Its smell repulsed me, but one day I added a teaspoon of spice to the pie and did not regret it. A hint of cinnamon gave the simple charlotte an exquisite aroma and taste.

    You will need:

    • Cottage cheese – 250 g
    • Semolina – 200 g
    • Sugar – 150 g
    • Egg – 3 pcs.
    • Baking powder – 1 tsp.
    • Sour cream – 100 g
    • Apples – 4-5 pcs.
    • Vanillin

    Preparation:

    • Beat cottage cheese together with sour cream until smooth. If there are any curd lumps left in the dough, you will feel them, and when you knock them out until smooth, you won’t even realize that there is curd in the composition
    • Mix semolina with baking powder
